Cooking Corner

Comfort Food. Hmm. Thinking about comfort foods, several came to mind but Teacakes my great-grandma and grandma Evince Lane kept the cookie jar full of. It just always made me feel so loved. Some of my fondest memories are sitting on the couch with a hot cup of tea and dipping those delicious Teacakes into the Hot Tea. What a joyful memory. Jerry and Michelle Zavala are proud to call Mexia home. Jerry works at Arcosa in Streetman and Michelle works at Vera Bank. We are the parents of 5 kids and have 9 wonderful grands scattered in all directions. Michelle enjoys volunteering at Caritas and worshiping at Calvary Baptist Church. We both enjoy traveling and really love cruising. I am very proud of the legacy my grandma’s left to us. Family Recipes are a huge blessing in so many ways. Our grands know at Christmas the Teacake will be made and the stories will be told. That’s Comforting.

1 c. shortening 11/2 c. sugar 4 c. flour 2 eggs 2 tsp. Vanilla salt 1 tsp. Baking powder ½ tsp. Soda ¼ c. buttermilk

Mix sugar, milk, shortening and eggs Add flour, baking powder, soda and vanilla and salt. Take a little of dough and roll out on floured board And, cut with cutter. Sprinkle with sugar Bake at 350 for 10-12 mins

Parkview promoting health through annual fair By Roxanne Thompson roxanne@themexianews.com

With the new year well on its way, it’s a good time to do a few health checks and monitor how you are doing health-wise, and Parkview Regional Hospital has just the venue for you to do that. Their annual Health and Wellness Fair is Friday, Feb. 14, 9 a.m. to noon, at the Mexia Civic Center, 101 S. McKinney. Admission is free, so Mexia-area residents are encouraged to attend for free health screenings, helpful information and other freebies and goodies. Some of that information includes local options for health followups so you can skip that trip to Waco or Dallas and instead talk to a physician right here in Mexia. Parkview has many options that people may not realize. About 40 vendors are anticipated to be there to offer upto-date health advice; provide free health screenings, such

as tests of blood pressure, blood sugar and grip strength; and show attendees what else they can offer. The screenings can show areas you may need to follow up on. The health information can give you knowledge about health topics you have been wondering about. And you might find from the companies participating in the health fair that you can get service right here in Limestone County, so you don’t need to spend time and energy on trips to providers farther away. The vendors will represent a variety of health providers, such as primary health care, specialists, home health care, hospice care and others. Parkview Regional Hospital is teaming up again with the Mexia Area Chamber of Commerce and the Advocacy Center for Children and Crime Victims to put on the Health and Wellness Fair. Parkview and the other sponsors are encouraging residents to attend and take advantage of this opportunity to improve their health. “Parkview is committed to Making Communities Healthier,” said Bob Honeycutt, Parkview’s Chief Executive Officer. “This annual health fair not only provides necessary health and wellness information to our community, but it also allows Parkview to collaborate with other organizations and agencies in providing the best in medical care to the greater Mexia area.”

Some years are questions. Other years are answers. In 2016, I abruptly resigned from being a pastor and writing daily devotionals after doing so for 40 plus years. I was not sure of why I resigned. Pam and I lived in the old Bus Barn (as known locally) at Pt Enterprise on the family farm. In March of 2017, Pam’s father died very unexpectedly at age 84. Pancreatic cancer. Suddenly we had to care for Pam’s mother who had Alzheimer. Turns out that our plates were so full from 2017-2019 taking care of matters that I would not have had time to write or serve a church. We survived. Turns out I also had some undetected health issues. Last year after my 3-year sabbatical (or “recess in life” as one teacher called it!), I got back in the saddle. Events to suit any taste

The Massey Foundation 2020 calendar is rapidly filling up with events to suit any taste. There are numerous events planned for Limestone County in 2020 that include dining, art, music and more! Massey Minds provides book studies, book reviews, public speakers in the On the Fence and Casting Light speaking circuit. Three public art shows are on the calendar as well as a music event featuring a string quartet from Baylor University. The quartet will perform while guests are treated to a wine pairing prepared by a top Houston chef. Colonel Allen West will also be in Limestone County on February 13th. This is a tremendous opportunity to hear from Col. West at the Saving Texas Values event. The first ever Limestone County Christmas Bus Tour of Historic Homes will be held on December 5, 2020. This a tour you will not want to miss! Homes on the tour will be announced soon and dinner is included with the charter bus tour. Only 54 tickets are available for this Merry Christmas tour. Massey Foundation memberships are on sale through January 31, 2020. The cost of membership is $125 and includes free tickets for the Wine Pairing/String Quartet Dinner AND the Christmas Tour of Historic Homes! Skilled Care of Mexia received Deficiency Free Survey Skilled Care of Mexia recently completed their Annual State Survey and received a Deficiency Free Survey. In fact, this will mark the third consecutive year that the staff has earned a Deficiency Free Health Survey. The State surveyors look at many aspects of the facility’s operations including the care being provided to residents and the residents’ level of satisfaction with the care and the meals they receive. Skilled Care of Mexia staff have worked hard to provide quality care and to make the facility a safe, comfortable place for residents to call home. At Skilled Care of Mexia, each resident has a large bedroom with a greater sense of privacy than almost anywhere else. Our facility has in-room showers for each suite of two bedrooms. Wide hallways and high ceilings provide a bright, airy space. Residents also have access to an enclosed court yard where they can sit outside when the weather permits. Residents have daily activities provided by the Activity Director, community volunteers, and staff. Monthly favorites include Family Night activities like Hawaiian Lua and Family Bingo, and Musical Entertainers. In addition to Long Term Skilled Nursing Care, Skilled Care of Mexia also offers Short Term Rehabilitative Skilled Nursing Care, and Respite Care. They also offer Physical Therapy, Occupational Therapy, and Speech Therapy. The facility staff experience great joy from being able help a resident reach his/her own goal of returning home after having a medical procedure or recovering from an accident. Skilled Care of Mexia accepts Medicare, Medicaid, and most insurance. All rooms at Skilled Care of Mexia are certified to accept Medicaid. When speaking of Medicaid, any person who is qualified for Nursing Home Medicaid in Texas can choose where he or she wishes to reside, and they pay the same amount no matter which facility they choose to live in. Anyone is welcome to come take a tour and to try a free meal as well. We just ask that you call a few hours ahead of time so that we can have a meal prepared for you. Dietary staff routinely prepares Certified Angus Beef meals. Please feel free to come take a tour and let us answer any questions you may have.
