A
s we approach Christmas, Hanukkah and New Year ’s, veterinary hospitals prepare for a predictable month of seasonal pet problems. Our cats and dogs curiously watch our households transform with decorations, tempting foods on the countertops and new visitors in their territory. It is our responsibility to foresee potential problems before our pets get into trouble that might end up with an emergency vet visit. There are some cats that have been lazy all year until the
Christmas tree goes up. All of a sudden they are at the top of the tree knocking off ornaments or chewing on the wires of the lights. An electrical shock will do more than make his hair stand on end. Our hospital has treated cats with electrical burns or electrocution from biting into a string of lights. If Mr. Kitty wants to be a dare devil the lights must be unplugged when the family is not around to supervise. Many cats also have a fascination with string and artificial tinsel. A common and potentially life-threatening problem with

string ingestion is an intestinal blockage. This emergency requires abdominal surgery to remove the material before it causes perforation and peritonitis. Any sign that your cat enjoys chewing string or tinsel demands that you remove it all from reach immediately. For dogs, “Tis the Season” for food and fights. You just cooked a beautiful roast and yummy pie. They are sitting on the counter. Guests arrive in an hour. Time to go upstairs and get dressed

for the party. Thirty minutes later you walk into the kitchen and Fido has this guilty look on his face. Not only that but his belly is bulging and your food is gone. The Counter-Surfer has struck. The meal is gone, your dog is stuffed. The guests will be here any moment. Evening ruined. All preventable if you would have thought like your dog! He knew there was good stuff for him to pillage as soon as you were out of sight. You were out-smarted. I am amazed at the quantities of food that dogs have consumed when they raid the holiday tables. Many will start to vomit or have severe diarrhea afterwards. Call it dietary overload or garbage can gut, it usually means a trip to the vet.
Dog owners often assume that when families and their pets get together for the holidays at least the animals will be civil. Wrong! Putting unfamiliar canines, food, toys and territorial behavior together is a recipe for fights. Our hospital has treated many a dog bite wound that occurred during family visits. It’s best to put the toys and treats away to avoid the inevitable confrontation and watch for subtle signs that two dogs are ready to fight. Separation may be in order to avoid trouble. The holiday season is not all trouble for our pets. With the extra time off from work we can enjoy some quality time with them and give them one of their favorite gifts, extra attention
from their person. A trip to the park, some grooming, kind words or a play session on the living room floor are all good ways to make them happy and de-stress yourself at the same time. Have a happy and safe holiday.

ell, here we are again. That time of year where
we “Fall Back” and go from Daylight Saving Time (DST) to Standard Time. The time of year where we get off work
and find it already dark when we step outside. Standard Time is just plain horrible. Studies have shown that longer daylight evenings motivate people to get out of the house. The extra hours of daylight can be used for outdoor recreation like golf, soccer, baseball, running, going to the beach, etc. Longer daylight counteracts the sedentary lifestyle of modern
reducing pedestrian fatalities by 13%. Another study

NO! WE DON’T LIKE THAT! Recently, several states have proposed, or passed bills, in favor of permanent DST. However, they need congressional approval to abolish the time change. For this to happen, Congress first must pass a federal law allowing states to observe DST year-round, because today’s law, the Energy Policy Act of 2005, only allows states to opt-out of DST. Let’s all band together and make this happen!

Holiday Weather Fun Facts: • The coldest Christmas ever recorded on the island occurred in 1983 when the temperature went down to 11°. In 2015 the ghost of Christmas Past was probably wearing sunglasses and sunscreen when the temperature soared to 83°. • The coldest weather temperature ever officially recorded in Galveston is 5° which occurred on January 18, 1930. What about snowfall you may ask? In 2004, the island saw 4 inches of snow on Christmas Eve! That is a lot of lights. Secret Santa fun fact: A mysterious Christmas Gift from 1905! Is this Galveston‘s first secret Santa? On December 16, 1905—115 years ago— a beautiful Japanese-style vase “appeared” at the Rosenberg Library. The library had only been opened for a year and a half. The identity of the “Secret Santa” has never been discovered, but more than a century later, this thoughtful holiday gift can still be enjoyed by visitors to the library. Bob has played in bands that have backed up country legends like Hank Thompson, Ray Price, Jack Greene, Pam Tillis, and Dale Watson. Along with songwriting, Bob is also a talented cartoonist and has a self syndicated comic strip titled “Buffalo Gals”. The comic feature is about two cowgirls “Bess Winchester” and

IS MENTAL NOURISHMENT ON YOUR MENU?
T
he holidays are here, and with that comes the joy of being with family you may not see often. But sometimes the holidays have a way of emphasizing how much stress and pressure you are under every day in your life. The holidays tend to bring additional stress and distractions. So why not use the holidays as the springboard to begin attending to your “mental nourishment”? Mental nourishment can come in many forms. It can be as complex as a week-long meditation retreat or as simple as a 15-minute mind break. When we think of “mental”, we think of “brain”. The prefrontal cortex (PFC) is the thinking part of your brain. When you are doing goal-oriented work that requires concentration, the PFC keeps you focused on your goals. The PFC is also responsible for logical thinking, individual planning, monitoring, and successfully executing goals and using willpower to override impulses. That’s a lot of responsibility—no wonder it needs a break! Mental nourishment in the form of breaks can be attained in many ways. And you don’t always have to do the same each time to achieve the same benefit.
Some activities that allow your mind to rest and be re-nourished include: • Silence - just plain quiet. Give the universe 10 or 15 minutes to go on without you. During these few minutes, take the time to listen to the sounds around you, whether in your car, sitting outside or walking from one place to another. This of course means getting off your devices…phones, laptop, social media, television…OFF. • Time with your pet – give your pet a few minutes of your undivided attention. Pet them, talk to them, brush them. Look into their eyes and let them show you how much you mean to them, and they mean to you. • Power nap - Experts tell us that maximum recharging during a power nap is achieved by going from stage 1 sleep (that lovely ‘drifting off’ feeling) to stage 2 (slowdown of brain activity). Going any further is not advised. So how long does this process take? In most people, a power nap length of 15 to 20 minutes is just perfect. • Daydream – Let you mind wander for 10 or 15 minutes. Try to focus away from work, to-do lists or your cranky next-door neighbor. Instead, let you mind go to places of wonder like what does my cat think about when staring out of the window? Where have I been before that I really enjoyed? What did my town
look like two hundred years ago? There are so many ways to get lost in mind-wandering! • Meditate - The process of meditating is straightforward and easy: simply sit and practice. All you have to do is close your eyes, stay focused on your breathing, and let your mind do its thing. This is the one skill where you don’t have to strive to achieve something — just a place of stillness where no effort is required. There is no such thing as a good or bad meditation. There is only awareness or non-awareness. The moment you realize you’re lost in thought, that’s awareness, and that’s when you return to the object of focus (usually the breath). This is all you have to keep doing — return from your distracted thought to the breath, all the time honing your awareness. With perseverance, the periods between awareness and distraction will get longer and longer. While there are no specific guidelines for how much “mental nourishment” a person should incorporate into their lifestyle, making time to unwind and enjoy life is an integral part of maintaining good health. No time to get your mental nourishment in? There are 1,440 minutes in a day, and 10,080 minutes in a week. Surely you can carve out 10 or 15 minutes in each day to give yourself the mental boost it needs!

iving on the west end of Galveston Island has many advantages. It is uncrowded and friendly with low crime and a resort atmosphere. Communities like Jamaica Beach and Sea Isle offer a casual golf cart lifestyle while waterfront living allows you to park your boat and fish from your backyard. The area is affluent and upscale with tropical landscaping and well-tended homes and yards. What could be more ideal? As nice as this area is, it is somewhat a food desert. The tourist business drives much of the economic activity in Galveston. That business is mostly concentrated along the beaches east of 61st street and in the downtown strand area. The tourist dollars allow the diverse and abundant restaurants we islanders so enjoy, but they are not evenly dispersed across the island. Aside from a couple of small neighborhood restaurants, there is not much for residents of the west end to do. Cook at home or trek into town for dinner and drinks. Fortunately, there are off island options for west end residents. A few miles past the San Luis pass lies the small community of
Surfside Beach. Approximately 15 miles from the San Luis toll bridge, it is easily reached by car on the Blue Water Highway. Sparsely developed, the highway offers breathtaking views of the pass and the beaches of Brazoria county. Home to about 500 people, Surfside has some notable beaches, a county park and crabbing pier, and a nice walkway atop the jetties protecting the entrance to the port of Freeport. Among its several restaurants and lively beach bars lies the Red Snapper Inn. Long a favorite destination for this author, this family owned restaurant has been serving up the freshest and finest seafood for more than thirty years. Located on the left as you enter Surfside, this unassuming restaurant is easily missed. Look for the large red buoy and you have arrived. For more than 30 years, The Red Snapper Inn has been providing “Fresh sourced” seafood from local suppliers including Galveston’s own Katie’s Market. They take their motto very seriously: “OUR FISH SPENT LAST NIGHT IN THE GULF”. All their seafood is filleted and processed in house daily. It was 1987 when Ivan Stathopoulos found his Houston restaurant struggling with the oil recession and turned his eyes to this sleepy beachfront community. Originally opened part time and weekends only, his business prospered as his reputation for seafood merged with his Greek style of cooking caught on with the public. Expanding both his operating hours and restaurant capacity, it was obvious by 1991 he could use some help. Fortunately, help was at hand in the form of his son-in-law Lin Biar. Lin was already an experienced restaurateur and had carved out an impressive career with particular skills in Cajun Cuisine. The timing was fortunate as Lin was anxious to leave Oklahoma and return to coastal Texas where his considerable experience as a Cajun Chef would find a treasure trove of fresh seafood and a receptive audience. The resulting merger of traditional Greek cooking and the spicy earthiness of South Louisiana combined and evolved into the menu we see today. That combination proved to be a winner and the restaurant, formerly seasonal, decided to open year-round and has undergone three expansions, the last one in 1998.

REd snapper inn Ivan retired in 2007 and Lin, with his wife Stacie and their three daughters, have run the restaurant since. All three daughters have worked in the family business. Two have moved on with their lives, and only one remains at the restaurant. The menu at the Red Snapper is not extensive but it is wellhoned and offers something for every taste. Obviously, seafood commands many of their dishes. The emphasis is on fresh and their passion for that is obvious. This is not fast food. Most dishes are prepared to order. Expect twenty minutes or more for many of their Flounder and Red Snapper plates. An opening array of appetizers offers an insight into their kitchen. A hearty mix of Greek and Cajun sets the stage. Choose from delicious grilled fresh shrimp in a la grecque sauce char grilled to perfection or an oyster Brochette with meunier butter. Salads continue the trend. You can choose from traditional Greek salads with feta cheese and kalamata olives and have it topped with Cajun blackened shrimp or fish. A delicious pairing and an ample portion to serve as a stand-alone entree. Or, how about a gumbo and salad combination. Deep rich earthy gumbo teaming with fresh seafood and a side salad with their delicious Greek dressing or top it with a remarkable remoulade. Your choice.

Down home hospitality makes you feel welcome. A survivor of many storms, The Red Snapper is here to stay. Take the short scenic drive and enjoy a lunch or dinner and you will return. In the words of the late Justin Wilson, “ I guarantee it”.

A wide variety of Snapper and Flounder dishes are available. Baked, broiled, char grilled, blackened, stuffed, or topped, or both can be had. Too many to list here but all are creative and delicious. Be warned! Portions here are large. You will not leave hungry! More casual, but still delicious, are their hamburgers. A huge half pound patty perfectly char grilled and dressed with their home made chips is a substantial lunch for me. They offer variety of seafood po’boys and even a tuna salad on rye. Their non-seafood dishes are also well executed. A very good chicken fried steak reminds us we are in Texas. A huge belt breaking ground beef steak is char grilled and topped with caramelized onions. It is served with a side of vegetables and choice of potato. I really enjoy their baked potato loaded. It comes with butter, cheese, sour cream, and real bacon

Upstairs is more formal and much more sedate. With expansive decks that overlook Galveston Bay and the wetlands, it is a stunning setting for a romantic dinner watching the spectacular sunsets. A lament among residents is that the restaurant was long on beauty and charm, but never quite met their expectations for food and service. All of that is changing.

Chef Eric Aldis, a Katy, Texas native with an impressive resume and strong Galveston connections, has assumed the position of General Manager and Chef. Coming from the fabled Waterman’s Restaurant where he oversaw a dramatic turnaround garnering many accolades and much recognition, he is now turning his amazing talents to transforming this restaurant.. Galveston Waves publisher Michael Burke and I visited Eric recently to sample his new menu. We were both amazed at the depth and breadth of his offerings. Eric has built upon his experience and success and has created a menu that emphasizes his creativity with seafood and his deft hand at introducing Cajun and Latin nuances into his innovative dishes. His menu slants heavily towards seafood as befitting his experience and waterfront location. It is an ambitious menu and requires a sophisticated kitchen to execute.

The West End Marina and Restaurants Appetizers are one of the many areas where Eric’s expertise shines. We are pleased he has brought his shrimp kisses to his new venue. Many places have a bacon wrapped shrimp concoction and some are excellent. Chef Aldis takes his to a higher level than most. They are one of my favorites. He has a take on a shrimp cocktail called “Campeche”. It takes me back to some of the finest seafood I have enjoyed in Mexico. He pairs jumbo shrimp with smaller bay shrimp and fresh crabmeat and binds them with a delicious Pico de Gallo infused cocktail sauce garnished with fresh avocado. It is amazing. Several other dishes on his starter menu are exciting and well executed, but I will let you readers do the exploring. A couple of notable gumbos are offered as well as an array of salads which can be enhanced with a variety of add-ons. His seafood Cobb salad comes with shrimp, bacon, blue crab meat and heritage greens with cucumber, tomato and blue cheese crumbles with a lemon parmesan dressing that is a perfect entree for a light eater.A sampling of burgers and po’boys leads us to the heart of the menu, the seafood entrees. I may be unusual, but I enjoy my ocean fresh seafood simply grilled or broiled without toppings. A light Cajun seasoning and a lemon butter is all the dressing I need. The key is the freshness of the fish and the skill of the chef. Chef Eric does a large redfish filet just this way, and it is my favorite dish. He can also dress it up with shrimp, avocado, pico and garlic, and lemon butter if you like. Just order Redfish on the half shell if you prefer it this way. He can serve fresh Red Snapper anyway you choose, but he also does it Vera Cruz style with lump crab meat and his special sauce. It is amazing and worthy of the rather lofty price. He has several other grilled dishes many I have not tried but all
sound delicious. He offers a full array of fried seafood for those that prefer that style of cooking. Being part of the marina complex, the restaurant will prepare your fresh catch for you if you wish. Just check out the “Catch and Cook” option on their menu. Land lubbers will not be disappointed with his non-seafood selections. Most notable is his Cowboy Rib Eye. A huge bone-in cut aged and grilled to perfection and served in the Peter Luger NYC style. It certainly agreed with me and I am pretty fussy about my beef. It is not inexpensive, but good steaks never are. They have a notable beef tenderloin steak and pork chop, grilled chicken breast, and chicken fried steak entrees. The menu is evolving, and the kitchen is skilled so if you don’t see what you want, just ask - they may be able to accommodate you. Hours and days of operation vary. It is best to call ahead.

THEATRE REVIEW: THE GREAT AMERICAN TRAILER PARK CHRISTMAS MUSICAL By: Paul Hager
he Great American Trailer Park Musical with music and lyrics by David Nehls and a book by Betsy Kelso, began as a series of staged readings and workshops which led to a sold-out run at The New York Musical Theatre Festival (NYMF) in 2004, finally developing into a 2005 Off-Broadway run and a myriad of productions across the nation including one a few years back at ETC. A perennial favorite of Stages Repertory Theatre’s audiences in Houston, it is no surprise that when it came time for the inevitable sequel [although the creators label it a ‘companion piece’ and not a ‘sequel’], The Great American Trailer Park Christmas Musical was given its world premiere sold out production at Stages in 2013. If you were fortunate enough to see the aforementioned rendering at ETC, the setting and some of the characters will be familiar to you. This is not to say you had to see the other production to enjoy this one, although the Greek-chorus-esque opening number by “The Girls” – Betty (Candy Howard), Lin (Whiney Williams), and Pickles (Kelsey Perkins) does imply you are ‘returning’ observers to Armadillo Acres in Florida, where the December temperature hits 102 and all the inhabitants eagerly compete in the Mobile Home and Gardens (punny, right?) annual Christmas decorating pageant. All, that is except for Darlene Seward (Paige Thomas), an eternally angry soul who hates the holidays so much that she even sings “Christmas is for Dummies.” That puts her at odds with her Christmas-loving neighbor Rufus Jeter (Brian Chambers), a handyman whose many odd jobs include working as a Santa at the Dollar Store. Darlene undergoes a dramatic personality shift after she’s electro-
cuted while unhooking Rufus’ illegal cable-stealing hook-up. The question becomes whether she’ll retain her now-sunny and delightful disposition long enough for everyone else to have a merry Christmas. There’s also a curse to contend with involving a demon-possessed Christmas tree, as well as a serious threat to the livelihood of the trailer park from Darlene’s boyfriend Jackson (Brandon del Castillo) the owner of the local “Stacks” breasturant.
As Darlene herself says at one point in the show, “Some of this sounds downright ridiculous.” And it is. But that’s the fun in the show, which is definitely just as raunchy and almost funny as the original. I was fortunate enough to secure tickets to a limited seating Thursday night performance with my friend who likes the soundtrack to the original so much he plays it all the time. [Personal note - I can’t tell you how thrilled I was to be able to actually walk into this theater again and see two of my favorite fellow thespian friends taking tickets and talk to director Kim Mytelka at intermission even though we had to

remain masked and forgo the normal ‘theatre family’ hugs and kisses.] The talented cast gave the material a scatter-shotgun blast to our funny bones with spot-on delivery for these caricatures of characters. Musical direction by Keith Lalonde with his four-piece band (George Heathco, Randolph Kelly, Roland Medina) expertly accompanied [and never overwhelmed] the solid singers with top vocal honors in the cast going to Paige Thomas as Darlene. Kim Mytelka’s direction kept things moving at crisp pace and I always enjoy Jennifer Daugherty’s aptly fun choreography. Joey Colao’s lighting design appropriately drew focus where it needed to be on Thomas D. Boone’s terrifically tacky-tasteless trailer trash set. Now let me clarify my “almost as funny” note. When experiencing a show that’s a sequel [whether the authors call it one or not] one has to remind oneself they shouldn’t compare it to the original as far as content and quality go. Try as I might, I just couldn’t do it in this instance. I really felt like the plot [such as it was] and the musical lyrics themselves in the original were simply better written, fleshed out and generally all-round superior to the material in this version. Is the premise a one-note joke that goes a little flat the second time around? Possibly. Was there anything lacking in ETC’s production of it? Aw, hell no! Would I recommend their show to the point of wanting to see it again? Aw, hell YEAH! So, if y’all need to, just put a lump of coal in my stocking and call me Ebenezer.

seems like the obvious hide from all of us, castable cedar plugs and tuna at night was a combination I’d missed.
Cedar plugs cast like a bullet and are low cost compared to many other castable hard body subsurface swimmers. I’ve taken numerous kingfish, several ling and even red snapper on them. There’s no reason dolphin and wahoo won’t also try to eat ‘em. The obvious catch omission is tuna; that bulb went off while on a 48-hour trip after a kingfish stop on the way home. At times it
Most of my 4” and 6” models are rigged up on about 20” of 7 x 7 cable, a stop bead and single barrel crimp is located about 7” ahead of the cedar plug. All the cedar plugs I’ve modified into casters are by Snapper Slapper, www. snapperslapper.com. I also paint everything but the jig body either camo blue or green. The cable is 90# or up, giving cut off protection when targeting kingfish or wahoo. Incidentally, a 4” model weighed in at 1 ounce and a 6” at 2.23 ounces. Their weight plus rigging and great aerodynamics make them the great casters they are. The simplest conversion to a caster is to shorten the 6-foot section of mono they come with to about 24”, tie or crimp on a suitable swivel and you are ready to go casting. In my opinion, they are as versatile as the chrome diamond jig. Those I have on mono are rigged differently — I use 100# or 130# Sufix TM mono with my “0Poorman’s Fluorocarbon Treatment” to greatly reduce its surface reflection. I specified Sufix because their diameter per pound strength is less than others I’ve found. For instance, their 100# is .035 vs .039
hat is a castable cedar plug? It’s a modification of one of the world’s best tuna lures that have been used successfully around the world for many years in their trolling configuration. I came up with the idea of converting them to casters a number of years ago after watching their swim motion when being trolled at about seven knots behind the party boat Capt. John. I had a pair of 6” models to try and gave one to long time fellow fisherman Lee Bull, the “Yellowfin Tuna King of Conroe, Texas”. We trolled them about 150 ft. back. No strikes were had on this early morning pull, but the swim motion at troll speed had one of those light bulb flashes of mine go off...”Why not convert these cedar plugs to casters?” A high-speed reel could readily duplicate the troll speed on the retrieve.

which converts to 100# for the size 80#. I don’t have the stop bead and crimp ahead of the jig body when mono casting for tuna, ling, etc. The purpose of the stop bead and crimp is to stop the plug body there when it slides up the cable after the hookup since the body can possibly slide over the cable and the cable’s loop connection at the hook. The object is to stop the plug body before it gets to the swivel where a second strike by another kingfish or wahoo will likely result in a cutoff. If you find bare cedar plug bodies available, the hooks you need for 4” and 6” bodies are MustadTM 3412D Needle Eye in 8/0 and 10/0. Always carefully sharpen them if needed for increased hookups. Speaking of hookups, here’s a tuning point I saw while looking at cedar plugs in the 2013 Bass Pro Saltwater Angler Catalog. In bold print, which I hadn’t noticed before, were the words “Run it Right...Hooks Up!” The point made was cedar plugs have a heavy or bottom side. To find the heavy/bottom side, run a piece of mono through the bare cedar plug body, pull the mono tight in a horizontal position and spin the plug body on the tight mono. Do this spin motion and

you will establish the heavy or bottom side at the stop. Mark the rear flange with a permanent mark of some type — a small dot or line will do. I mark most of mine on the bottom side as a place for the hook bend to rest. For casting, I want the hook bend/point facing down. Since blowups and missed hookups are fairly common with near-surface use, the hook down has a better hookup percentage since the hook is the probable first contact for the attacking tuna, kingfish, wahoo, etc. The hook will seat firmly into place when the hook’s cable or mono loop is pulled tight through the plug body. This hook positioning looks to be one of those
When fishing these cedar plugs, a high-speed retrieve reel loaded with braided line is virtually a must. The high retrieve speed is important when targeting high speed predators and the braid gives many more hooksets than springy mono. Concerning backs and bellies; with the weighted side and hook down the body colors will seldom be “back up”. This random positioning of body colors gives the added look of a somewhat distressed and vulnerable target to a predator. Casting cedar plugs for tuna, it’s an open secret now; as casters, a whole new world has opened up. An old saying variation, “You can teach an old dog new tricks” refers to myself as well as cedar plugs. Castable cedar plugs, one of the best of my many offshore fishing innovations over the years. Don’t leave the dock without them, their catching ability is hot-hot-hot! They could be your next “go-to” lures!

Add all ingredients, bring to a boil, reduce heat to medium low, cover and simmer 2-3 hours stirring often. Add ½ cup pasta water and stir then add pasta ½ cup at a time. The sauce to pasta ratio is a personal preference. I prefer mine with extra sauce. Serve with a side salad, Texas chili pequin garlic cheese bread and a glass of Texas made Newsom Vineyards Cabernet.

Season the outside of the bacon. Sear each skewer then move off to the side for indirect cooking to avoid charring the rub if cooking over direct fire. Next move the skewers to nonstick foil and allow the bacon to render down while bringing the internal temperature to 165 and will keep the chicken moist.

Q
uarter the pineapple and season with The Juicy Pig™ BBQ Rub. Skewer the peppers, tomatoes, and pineapple. Place directly over high heat turning often until the skin starts peeling on the tomatoes & peppers and the pineapple gets a light brown color. Remove from heat and let rest. Peel tomatoes and pulse chop all ingredients in a food processor. Pour into a bowl and stir in dry ingredients. Cover and refrigerate a couple hours before grilling or overnight for best flavor.

even straight generations, dating back to the maternal side of Beau Rawlins’s family, have called Galveston home since the family immigrated to the island in 1880. Beau Rawlins and his 3 children still call Galveston home as they continue to run island-based, family businesses. From a grocery store started by Beau’s 2nd Great Grandfather, William Wendel Bean, on 29th and Avenue P, to Rawlins Residential Builders, as well as 4 different bars in Galveston and Tiki Island, the Rawlins family continues to make a name for themselves helping to build the community they cherish. Since the opening of Beau Rawlins’ construction company in 2001, RRB, Rawlins Residential Builders, he has taken his background in production building to a vast array of residential needs, such as renovations, remodeling, and new home construction. “We’ve remodeled over 100 homes on the island, and built over 50 new homes”, says Rawlins. With a concentration on flawless kitchen and bathroom designs, Rawlins Residential Builders features their designs and work on social media, via their Facebook page RRB, Rawlins Residential Builders. Whether it’s a modern look or a restoration of a historical home, Rawlins and his crew bring their extensive knowledge and expertise to every job while also continuing to treat each home as, exactly what it is, a neighbor’s home whom they will continue to enjoy even after the work is done. His other businesses, 4 bars, which include Bubba’s at Tiki, Bubba’s on the Strand, Bubba’s Beach Bar on Seawall, and the Old Galveston Club on Postoffice, are also extremely important to the community, serving as a safe haven after a literal storm, and the only place to get fresh food and camaraderie during a pandemic fueled lockdown. During the initial lockdown of Covid, Tiki had no easy access to fresh produce. In response, Beau started a farmer’s market at his Bubba’s location on Tiki that featured all local produce and products. “We had masks from a local named Athena Daily, fresh produce from Froberg’s, and I smoked meats on-site”, says Rawlins. “As a business community, we have to work together.” After hurricanes Ike and Harvey, Rawlins devoted his time and resources to rescuing families by boat and starting the rebuilding process. “With a group of people, we were boots on the ground in Friendswood and Dickinson, immediately during and after Harvey”, says Rawlins. They went on to rebuild 86 homes after Ike as well as remodeled an additional 29 homes suffering severe flood damage after Harvey. “I’m a roll with the punches kind of guy,” says Rawlins. “Now, that is with Covid. We are in survival mode as business owners.” With the recent reopening of his bars and the safety protocols in place, he is devoted to ensuring the bartenders and musicians are back to work and able to make a living, as they were without jobs for an extended period. Having served as President and a Board Member on the Galveston ISD school board for 9 years,

appy Holiday’s and Merry Christmas everyone. I think most of you agree this year must go. But before it goes, we have to celebrate by eating and drinking till our hearts desire. In the past Bunny has given you a drink recipe for her December columns. So, she won’t disappoint you this December. This time you are going to get a recipe that will knock your socks off. It’s homemade Eggnog! Yes, homemade! Why buy that carton stuff in the grocery store when you can make it yourself? And believe me, this is EASY and wonderful. You will never buy store-bought again. I was at a friend’s house last year, and he served it, and I couldn’t believe the difference. I begged him for the recipe this year, and he was kind enough to give it to me. So here it is.
Craig’s Homemade Eggnog Ingredients • • • • •
4 large eggs ¾ cups sugar ¼ teaspoon nutmeg ¼ teaspoon cinnamon 2 ounces of Bourbon *add more if you desire • 2 ounces cognac * same with this liquor • 1 ½ cup of whole milk (don’t bother with skim….it doesn’t cut it) • 1 cup heavy cream • Cinnamon sticks (optional) • Whipped cream (optional)
Directions In a large bowl, use your mixer to whip the eggs. Gradually pour in the sugar, nutmeg, and cinnamon. Add the bourbon and cognac. Then add your milk and heavy cream. Keep mixing till all is blended. Pour in airtight containers, such as mason jars or a large Tupperware. Let it sit for at least a day in the refrigerator to let the flavors combine. Before serving, shake the container, and pour into cocktail glasses. Top with whipping cream and add a cinnamon stick if desired. With this wonderful traditional beverage, you can dry out your turkey, and I don’t think anyone would mind or notice! Enjoy yourselves this season, and don’t sweat the small stuff.

Giving In A Year Of Chaos

C
a l ling all Islanders! Our island is hurting, and I am turning to you for help and healing. COVID19 has wrecked our island tourism industry and economy for all of 2020, and it appears it will go into next year as well. The island has been forced to cancel several major events, such as the Lonestar Bike Rally and, more recently, Mardi Gras 2021. In the past, these two events produced over one million people to the island from all over the country. Our local businesses, restaurants, and hotels are struggling to stay afloat due to a forced closed economy and government requirements to limited occupancy. This downturn is causing layoffs, homelessness, and more strain on our food banks and charitable organizations. This is where you come in as Islanders. Many of us are retirees who have learned to live off our retirement we worked so hard for, and many of us are not as affected by the virus because we own a home and have other resources. This is not to say we are not affected by the pandemic, we are, but I’m appealing to those who can help. Really that is “all” of us. I’m asking for kindness and charity during a difficult time. Christians are often asked to give of their time, talent, and treasure. Yes, I’m talking about money donations if you have it, but more important, your time and talent. Many of us Islanders have time on our hands to collect donations and serve at local soup kitchens and donation centers. Our talents may be in organizing and use of our vehicles to deliver donated goods. There are so many ways you can help.

You will be given hope to the hopeless. People will see that we Islanders still care about each other in times of need. I know Galveston will make a strong comeback; we always do. Whether we face terrible hurricanes or economic depression, we Islanders know how to bounce back. This pandemic is just a force of nature we will overcome! Stay safe and stay strong! “If you are elderly and have your own concerns for your health and finances, please stay safe and offer a simple prayer for those in need and those providing assistance. Prayer is always good!”

s we are getting into “winter” here on the island, it’s time to think about what you want to do in the garden and with the landscaping. Herbs are a wonderful addition to any garden or landscape. I love the idea of herbs in landscaping because it makes the landscaping so functional! If you are looking to attract butterflies, herbs are a great choice. Every herb blooms at least one time per year and the beneficial insects LOVE them! When thinking of gardening, cooking, and eating healthy, one cannot get away from the beauty and necessity of herbs. Regardless of your goal, whether it’s to grow healthy food for you and your family, to attract butterflies, to make your gardens beautiful, or to simply delight
your senses, herbs fit the bill. For the most part, herbs are perennials and hardy. Even in our erratic weather patterns in Texas, herbs have performed very well for me and have brought me much satisfaction and joy. As with most fresh food, when you have tasted the flavors of fresh sage, thyme, rosemary and more- you can never go back to the herb dust available for purchase off the shelves in supermarkets. The taste is just so amazing. And by fresh, I also mean the herbs harvested and dried by your own hands. And Just To Clarify A Few Terms: Herbaceous – means that a plant dies back to the ground in winter, but comes back each spring. You can have plants that are not herbs, but are herbaceous, and herbs that are not herbaceous! Perennial– a plant that returns year after year, can be evergreen or herbaceous.

olunteering at the Ronald House brings a sense of satisfaction and fulfillment to those who are willing to give a few hours to perform minor but essential tasks needed in the every-day function of a home as large as this one is. Twenty bedrooms, nearly all occupied at the same time, some families staying for only a day or two while others come for much longer visits up to a month or more in some cases. If you have special skills, training, hobbies or speak any foreign languages, please come share with us…can you lead a group in singing along with your musical talent…can you teach the children to speak a few words or sing a song in your native or learned language…do you know a special dance (think “chicken dance” or the “cha-chacha” or “folklorico”) all children love to sing and dance. Karaoke is a favorite if you own a machine! Duties that need to be done on a daily basis include acting as a receptionist and answering phone calls, preparation of rooms for incoming families, helping in the business office, cooking and baking, playing Bingo and hosting family activities as well as providing “arts and crafts” sessions. Host a party! Halloween, Christmas, Valentines, Easter, Birthdays…etc. We are always seeking friendly, energetic and creative volunteers… let that be you!
