The Wellness Kitchen has all you need to let your creativity play – whether as a cooking instructor or class participant.

State-of-the-Art Kitchen 5-burner gas cooktop

The heart of a kitchen is the stove. This cooktop fills the center of the kitchen with ample counterspace on each side for prep work. Two cameras point directly at the cooktop so attendees get a great view of what’s cooking.

Two large stainless steel ovens allow you to cook several dishes at once for maximum time management.

griddle, toaster, blender, microwave, small appliances + cookware Multiple countertop griddles (perfect for stations!), two double toasters, three Ninja blender, microwave and too many small appliances to list! Ample pots, pans and utensils are available too.

french door refridgerator/freezer

This combo houses your supplies prior to and during your demonstration or class.

three-compartment sink

An industrial-sized three-compartment sink for easy cleaning and disinfecting.

The space accommodates 40 for seated cooking demonstrations and 30 for hands-on cooking classes. Tables and chairs can be arranged several ways.

Student growth + development The Wellness Kitchen teaches graduate assistants, dietetic interns and other students in the field how to use their knowledge about food and nutrition to educate others. The unique, realworld setting helps these students apply their skills outside the classroom. Students work with University and Lincoln community members; answer nutrition questions; and help facilitate positive behavior changes in diet and exercise. They plan, implement and evaluate their own cooking programs and many go on to pursue full-time positions in employee wellness programs or nutrition.


The Wellness Kitchen gave me skills I’ll carry with me to my future career in nutrition. It allowed me to test my ideas and I’ve learned a lot through trials and successes. Host your next event at the Wellness Kitchen You supply the ingredients, we supply the location. The Wellness Kitchen is the perfect spot to host an office party (build the potluck here!), cultural celebration or your own cooking competition. Guests get to know one another and enjoy a great time learning something new! Reserve the Wellness Kitchen a minimum of two weeks prior to the your event by contacting Amanda at 402-472-0880 or arobine3@unl.edu. Rental includes access to the space and all equipment, as well as a kitchen supervisor. All reservations are first-come, first-served. $14/hour + $50 nonrefundable deposit

Cooking Demonstrations These events are great for large groups and feature a cooking instructor frontand-center. With the help of cameras and large screens, instructors lead the group in preparing meals for them to duplicate in their own kitchens. Each guest enjoys a taste. Our Wellness Team hosts a variety of cooking demonstrations each semester. Visit go.unl.edu/kitchen for a current schedule.

Hands-on Cooking Classes The Wellness Kitchen is the perfect environment to learn to cook or expand your skills. Classes include a cooking coach that will lead participants through each step of the cooking experience and will conclude with enjoying a delicious meal together. Come hungry! Our team hosts a variety of cooking classes each semester. Visit go.unl.edu/kitchen for the current schedule.

garlic & parmesan broccoli with potatoes Ingredients: • • • • • • • • •

3 tbsp olive oil 3 cloves garlic, minced 1 tbsp italian seasoning 1/4 tsp onion powder kosher salt and freshly ground black pepper, to taste 24 oz broccoli florets 16 oz baby potatoes, halved 1/4 cup freshly grated Parmesan 2 tbsp chopped fresh parsley leaves

Yield: 4 servings Serving Size: 11/2 cups Each Serving Provides: • • • • • • • • •

Directions: 1. Preheat oven to 400 degrees. In a small bowl, whisk together olive oil, garlic, italian seasoning and onion powder. Season with salt and pepper to taste. 2. Cut four sheets of foil, about 12 inches long. Divide broccoli and potatoes into four equal portions and add to the center of each foil in a single layer. Fold up all four sides of each foil packet. 3. Spoon the garlic mixture over the broccoli and potatoes. Fold the sides of the foil over the vegetables, covering completely and sealing the packets closed. 4. Place foil packets in a single layer on a baking sheet. Place into the oven and bake until tender, about 12 to 14 minutes. 5. Serve immediately, sprinkled with Parmesan cheese and parsley, if desired.

• 3 chicken breasts or 6 chicken cutlets, 1/4 inch thick • 1/2 red bell pepper, sliced • 1/2 yellow bell pepper, sliced • 1/2 green bell pepper, sliced

1/2 cup old-fashioned rolled oats 1 egg 1/2 cup milk 1/3 medium banana, mashed 1/4 tsp cinnamon 2 tsp maple syrup 1/4 cup fresh blueberries

Directions: Spray a medium to large mug with cooking spray. Combine all ingredients, except blueberries. Gradually stir in blueberries. Microwave on high for 2 to 3 minutes.

1. In a small bowl, whisk together the olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, cayenne (optional) and cilantro. Set aside. 2. If you purchased pre-sliced chicken cutlets, skip this step. If using chicken breasts, slice them longways into two even slices and firmly pound the chicken using the smooth side of a meat tenderizer to an even thickness of about 1/4 inch. 3. Place chicken into a large re-sealable freezer bag and pour marinade over top, making sure they are completely coated. Allow chicken to marinate for a minimum of one hour to overnight. 4. Once chicken has marinated, evenly place six bell pepper slices in the middle of the chicken cutlet, roll up and secure with a toothpick. Repeat this step until all the cutlets have been rolled up and place seam side down in a prepared baking dish. 5. Brush tops of chicken with remaining marinade and bake, uncovered, at 375 degrees for 25 to 30 minutes or until the juices run clear.
