Introduction to the program Fully Funded Franchisee

Introduction Welcome to the Bakers Delight Training Program. This program has been developed for potential franchisees looking to purchase their own bakery. Bakers Delight recognises the importance of having new franchisees trained to operate their own bakeries. A well-trained franchisee should be able to settle quickly into their bakery and start producing positive results in a short period of time. Bakers Delight has developed the Bakers Delight Training Program to ensure that all new trainee franchisees are equipped with the basic skills, knowledge and attributes necessary to operate a Bakers Delight franchise successfully. This course introduces you to the various aspects of running a Bakers Delight franchise and covers operational management, financial management, business management and people management. The program is completed within your training bakery, where you will receive ongoing mentoring and support from your training bakery franchisee and your training consultant. The program is divided into two sections: Part 1: Bakery Orientation On-job Orientation and Franchising Part 2: On-Job Bakery Training/Assessments Training Resources Folder Assessments Folder. Let’s look at each of these sections in more detail.

Part 1: Bakery Orientation (Week 1 – 3) Induction

The Bakery Orientation must be completed within the first three weeks of commencing in your training bakery. This section will induct you into the bakery environment using the relevant documentation as well as off-the-job requirements such as online learning programs (refer to Bakersville, page 7) Once you have completed the Orientation period, you will be required to meet with your Training Bakery Franchisee and Bakers Delight Training Consultant, who will conduct the 3-week review (as outlined in the Trainee and Trainer Obligations booklet). If the review is successful and you wish to continue with the training, you will be provided with the remaining training materials (refer to Part 2, listed below).

Franchising

The Franchising Assessment must also be completed within the first three weeks of commencing in your training bakery. Many of the tasks within this assessment would have been undertaken prior to commencing training. If you have any queries relating to this assessment, your Training Consultant will be able to offer assistance. This will be reviewed at the formal 3-week Review meeting. Part 2: On-job Bakery Training (Week 4 – 16)

On-job Bakery Training

The On-job Bakery Training is completed over the remaining 13 weeks of the program. It covers the following areas: Monitor and Manage Operations Finance Develop and implement operational strategies and procedures Baking Process Produce bread dough Scale and mould dough for intermediate proof Conduct final mould and final proof Bake bread Finish product Diagnose and respond to bread faults Production Management Complete post production and past sales information Determine daily production requirements Use of My Bakery reports to help determine production requirements Develop a production schedule Cyclical and daily cleaning schedule Production record maintenance Monitor Food Safety Program self-check

The Trainee Franchisee Suggested Training Program chart which is located behind the Cover Sheet in the Training Resources folder (Part 2) can be used as a guideline to commence and complete the allocated tasks. If your Training Bakery Franchisee is undertaking an activity that will assist you (e.g. recruiting staff) at Week 8, then even though the activity is to commence at Week 12 from the chart, it would be recommended to commence on that task at Week 8.

Consolidation The Consolidation component is completed once you are operating your Bakers Delight bakery. It provides you with an opportunity to consolidate your knowledge and skills through the completion of on-job checklists and other assessment tasks. Your consolidation period will vary, but will normally conclude around 1 year from when you commenced training. Your Training Consultant will discuss with you what evidence will need to be presented at the end of your consolidation period.

Assessment Plan sign-off The assessment process is as follows: Assessment Process Step 1:

Complete all tasks which are summarised on the first page of the Training and Assessment Plan. These may include: self-paced workbooks and activities (optional) courses portfolio of evidence workplace projects on-job demonstration/3rd party report theory and practical training tasks. You will need to work closely with your Training Bakery Franchisee to complete each task and obtain the information/resources required. The self-paced activities located in the Training Resources Folder (Part 2) are optional, however we do recommend you undertake the activities that you have gaps in (e.g. Baking Process). It is compulsory that you complete the following workbooks which will be in a workshop environment or self-paced: Diagnose and Respond to Bread Faults Cash Management Financial Reporting. The Training and Assessment Plan can be customised to reflect your knowledge and skills. Speak to your Training Consultant for more information.

Step 2:

The assessment tasks will be formally assessed by your Training Bakery Franchisee.

Step 3:

Once all assessment tasks are fully completed, the trainee and Training Bakery Franchisee meet with the authorised validator (Training Consultant) who will review the evidence presented & validate (or sign off) all training.

Step 4:

The training and assessment tasks and all associated evidence and documentation are collected by the Training Consultant.

Step 5:

The Training Consultant will upload evidence on the Learning Management System (LMS) and update details, then return all evidence to the trainee.

Step 6:

Feedback form to be completed by trainee and Training Bakery Franchisee.


Bakersville Bakersville is Bakers Delight’s new learning management system. It allows you to access your training records for any course you have completed or are enrolled in. It also allows you to access relevant online learning programs, which your Training Consultant will enrol you in for completion within the first 3 weeks of training. You’ll be able to access training at a time and location convenient to you. You’ll also be able to track your progress for any course you are currently completing.

Short courses There are a number of short courses which you are required to complete as part of the Bakers Delight Training Program. These can be completed in either a small group session (held at your local regional office or offsite) or as a 1-1 coaching session in the bakery. Current short courses in this program include: Cash Management and Financial Reporting Diagnose and respond to bread faults Senior First Aid Level 2 Food Safety Supervisor Program Develop Teams and Individuals. Your Training Consultant or the Training Administrator will advise you of upcoming course dates and enrol you into the relevant course. The cost of these courses is generally built into the enrolment fee of the program. Please check with your Training Consultant for clarification. Your Training Consultant will also be able to assist you with any further courses that may be of assistance to you.

Training and Assessment meetings with your Training Consultant and Training Bakery Franchisee Your Training Consultant will partner with you to provide guidance and support throughout the program. It is recommended that you meet or speak with your Training Consultant and Training Bakery Franchisee every week for an informal catch up, and every two to three weeks for a formal meeting to conduct an assessment review. These can be conducted either face to face, over the phone or a combination of both. Whilst meetings with your Training Consultant will be formally structured, they should also be an open, honest and relaxed forum for you to discuss the following: assessment tasks completed objectives of the previous week objectives for the current week the best approach to manage your assessments any questions, issues or concerns you may have.

Work with your Training Bakery Franchisee to organise a suitable time to conduct these meetings. Your Training Consultant will need to collect copies of your assessment, so it can be uploaded to the learning management system.

Managing your learning To get the most out of your training, it is important to take ownership of your own learning. Make sure you have access to the resources you need, and seek assistance from your Training Bakery Franchisee or Training Consultant to discuss your projects or the overall program. It is also important to stick to your rostered on job hours (minimum 5 full-time shifts per week spread according to learning needs) throughout your training program. The training is competency-based, which means that progress is not based on time. The program is 16 weeks, however it may mean that you complete the program under this time or need extra time to complete all of the assessment tasks.
