Brunch Egg Casserole

About 15 servings

12 eggs

1/2 cup flour or corn starch

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon pepper

16 oz. cottage cheese

1 lb. sharp cheddar cheese, grated

1/2 cup butter, melted

1/2 onion or 3 green onions, chopped

8 oz. mushrooms, sliced

1 Tablespoon Dijon mustard

Dash of cayenne pepper

2 tomatoes, sliced thinly

Parsley (optional)

Combine first 5 ingredients, then combine the rest of the ingredients (except tomatoes and parsley) and add to the first mixture. Put in a greased 9x13 inch dish and top with sliced tomatoes and parsley. Bake at 325 for 40 45 minutes.

Baked Cheese Grits Casserole

Serves about 12 15

1 cup white hominy quick grits

1 teaspoon salt

4 cups boiling water

1 1/2 cups shredded sharp cheddar cheese

1/2 cup butter

1/2 cup whole milk or half & half

2 eggs, well beaten

1 small garlic clove, minced or 1 teaspoon minced garlic

Heat oven to 350 degrees. Stir grits into salted boiling water in heavy sauce pan. Return to boil. Boil 3-1/2 - 5 minutes or until done. Add cheese, butter, milk, eggs & garlic. Stir until cheese melted. Pour into 2 quart casserole (greased) and bake for 1 hour. You can prepare this the day before and keep in refrigerator until ready to bake

Pineapple Tidbits

Wash grapes, strawberries and blueberries; cut up all fresh fruit, except bananas. Drain canned fruit. Combine all the fruits, except bananas, and mix together. Chill for several hours. Pour into serving bowl and slice bananas on top. Serve.

Cream Cheese Sausage Balls

Makes about 60 80

1 lb. hot sausage

2 cups Bisquick

1/2 lb.(2 cups) New York sharp cheese, grated

1 package(8 oz.) Cream Cheese

Mix all ingredients thoroughly. Make into balls about the size of a small walnut. Place on baking sheet, lined with parchment paper, if desired. Bake at 400 degrees for about 15 20 minutes.

May be mixed up ahead and frozen until ready to be baked.

Rich Cinnamon Bites

Each loaf of bread yields about 6 dozen

1 package(8 oz) cream cheese, softened

1 egg yolk

1/2 cup sugar

1 king sized loaf white sandwich bread (cheap kind), with crusts removed-stack up about 6 slices and cut crusts off at once

1 cup butter, melted

1 1/2 2 cups sugar

1 1/2-2 teaspoons cinnamon or to taste

Mix cream cheese, egg yolk and sugar (1/2 cup) in mixer. Flatten each piece of bread with a rolling pin.

Spread this mixture on one side of bread slice and roll up (it may tear but that is ok).

Dip in butter and then in mixture of cinnamon and sugar (mix this ahead of time to have it ready when butter is melted).

Place on cookie sheet and freeze, uncovered, for several hours.

Cut each roll in about 4 bites; package back into a freezer baggie or foil until ready to use.

To bake, place frozen pieces on nonstick cookie sheet, and bake in a preheated oven 400 degrees for 12 minutes. You may take out only what you need at the time and bake.

Pecan Pie Muffins

Makes 24 30 Mini muffins

1 cup brown sugar

1/2 cup all purpose flour

1 cup chopped pecans

1/2 cup melted butter

2 eggs, beaten

Combine brown sugar, flour, and pecans with a fork. Mix eggs and butter together in a separate bowl. Add egg mixture to dry ingredients. Stir until well mixed. Spray with cooking spray or grease mini muffin tins really well. Fill mini muffin tins about 2/3 full. Bake at 350 degrees for about 15 minutes or until done. Do not overcook. If using muffin tin papers, you will get more muffins, as papers are smaller than the tins. Be careful not to overcook, as papers will be hard to get off.

Strawberry Pretzel Salad

2 cups pretzels, crushed

1/4 cup sugar

1 stick butter, melted

1 package(8 oz) cream cheese

1 cup sugar

1 small(8 oz) carton cool whip

Large(6 oz) box of Strawberry Jello

2 cups boiling water

10 oz to 20 oz frozen strawberries, with sugar

Mix pretzels, sugar and butter together and spread into 9”x13” dish. Bake at 350 degrees for 10 minutes. Let cool.

Whip cream cheese, sugar and cool whip together. Spread over cooled pretzel crust.

Combine strawberry Jello with boiling water. Stir to dissolve. Add the frozen strawberries. When thickened, spoon jello over the cream cheese layer. Refrigerate. Serves about 20.

Chocolate Chip Pie

1 cup sugar

2 Eggs

1/2 cup Flour

1 t. Vanilla

1/2 cup Coconut

1 stick melted margarine

1 cup chocolate chips

3/4 cup pecans, chopped

1- 9 in. unbaked deep dish pie shell

Blend sugar, flour, eggs, margarine, and vanilla

Stir in chocolate chips, pecans, coconut

Pour into pie shell

Bake at 350° for 30 35 min or until firm – will still jiggle in the middle –take out and firms up when cool be careful not to overcook.
