EDITOR’S NOTE

Over the last month, I’ve had more inquiries than ever from writers asking me how they can contribute articles to the Flyer. I also felt as if I was writing the same response over and over again as I addressed very similar questions from folks. So, I think it makes sense to answer those questions for the group here, in case any of you are considering writing for the Flyer.

First and foremost, writers don’t need experience writing for similar (or any) publications. As you may know, the goal of the Flyer is to reflect Central Valley culture on our pages. However, it would be difficult to do that accurately if I was gatekeeping to such an extent as to only accept work from those traditionally trained and privileged enough to have worked in such a niche industry. Let’s face it, writing professionally for a print publication has become somewhat of a novel profession these days. All you need is the drive and passion for your community and the dedication to put it into words. I’ll help you with the technical stuff - the citations, formatting, grammar, syntax, organization, flow… I am the Editor, after all.

Secondly, and this one is important, be willing to take critique. And I know that this is easier said than done, but when the notes come back to you, and you see what seems to be a slaughter on the page full of red lines - take a

deep breath. The notes are aimed to make the article more approachable for the reader so that they don’t struggle to understand your meaning. I want them to see your story, but it’ll be difficult for them to do that if they’re lost or confused about the message you want to share. I’ve had my work shredded more times than I can count, but it always made my articles exponentially better to implement the criticism. Think of it like the phoenix’s rebirthrise from the (so-to-speak) ashes better than you were before.

Lastly, choose topics that relate to your audience - the Central Valley resident. I invariably ask the same questions every time a writer comes to me with an idea: “what will the local reader gain from this information, and why is it important to them?” The community is our compass; it guides us in choosing where to put our focus. So, If you can anchor your topic to that theme, then your only other roadblock is whether another writer is already covering it.

While we’re talking about topics, I should note that the Publisher and I haven’t made up our minds about short stories. However, we’ve decided to start accepting poetry submissions for the first time in Flyer history.

Our submission deadlines are on our website. And you’re always welcome to email me your questions. So, what do you think? Want to work together? Because I think we should.

“Skating saved my life,” Rodney Rodriguez states matter-of-factly. “Growing up in Calwa, I saw the other kids in my neighborhood getting caught up in drugs, gangs, and criminal behavior, and I just fully immersed myself in the whole skate culture. It put me on the path to being a grateful, hard-working skater. I really want to show other kids from similar backgrounds that skating can be a way to avoid those temptations and be a part of a really great and positive community.”

The inspiration to make a difference can come from anywhere. For Rodriguez, it came from skateboarding. Rodriguez, a life-long skater, has been a regular at his Fresno neighborhood skatepark for years. As one of the “old-timers” at the park, he appreciated seeing the younger generations embracing skating with the same enthusiasm he had, pushing tricks on top-of-the-line boards. He also noticed some of the young skaters were struggling with damaged or low-quality boards yet still came back every day and tried their best with what they had.

“Honestly, it didn’t feel fair to me,” Rodriguez explains. “Here I am, an old dude with a $200 board and $400 worth of safety gear, and here’s a kid struggling with a cheap board and bad equipment. To me, it’s just not what skating is supposed to be about.”

So, Rodriguez reached out to a bunch of his fellow Gen-X skate crew and took up a collection of any old decks, wheels, and other parts they weren’t using. Word got out, and soon he had a pile of, well… mostly useless decks and worn-out parts that wouldn’t build a skateboard any better than what those kids were already riding.

“I felt bad,” Rodriguez lamented. “Everyone was excited to donate parts, but it was all stuff that had already been well-used. I didn’t really know what to do with it.”

That all changed when Rodriguez visited a downtown Fresno art auction that featured original artwork painted on and

made from old skateboard decks and parts. Inspired by the creations he had seen, Rodriguez put out a call on social media for local artists to help transform his pile of skate trash into skate treasure.

“I thought, if I could get 4-5 artists involved, that would be enough to get something going,” Rodriguez explained.

Close to 50 local artists ended up answering his call. Overwhelmed, Rodriguez reached out to his good friend and Gazebo Gardens owner, Scott Miller. After hearing his dilemma, Miller offered him a space at his venue to host what would become the

original plan was just to do this once a year.”

One hundred percent of the money raised by the art auctions goes directly towards purchasing skateboards and helmets for kids in need. Fresno Skateboard Salvage is a not-for-profit organization that Rodriguez and a couple of his good friends run as a labor of love in their spare time.

Rodriguez’s day job as a truck driver took him all over the valley. One day, after finishing a delivery in Avenal, Rodriguez was driving past the prison on his way out of town and found himself thinking about the many talented artists incarcerated there. So, he reached out to Dee

quickly went viral on social media. Before long, The Fresno Bee, ABC 30, and CBS 47 all picked up the story and interviewed Rodriguez about the project. Shortly after that, Chowchilla Men’s Colony and Corcoran State Prison reached out to Rodriguez to bring his program there.

“The response was honestly really overwhelming,” Rodriguez confessed. “There are a lot of other prisons that have contacted me since then, but I just don’t have the resources to work with all of them.”

After that initial media exposure, interest in Fresno Skateboard Salvage took off. Public donations and inquiries from other artists began pouring in. Over the next three years, artists from across the Central Valley donated skateboard art for Rodriguez’s auctions.

Then the COVID pandemic abruptly halted Fresno Skateboard Salvage’s in-person art auctions. So, for the next two years, Rodriguez could only hold the inmate auctions online.

“It was definitely a blow to the program,” Rodriguez noted. “I’m thankful we were already doing the inmate art auctions online, so we were able to keep doing those. That kept us afloat while we scrambled to adjust to the shutdown.”

auction was a hit, bringing in over $1,800 for the fledgling project. Rodriguez used the proceeds from the auction to buy brand-new, high-end skateboards, helmets, and pads. He returned to the skatepark with a trunk full of new boards, helmets, and pads. Fresno Skateboard Salvage gave away its first batch of boards and gear to kids in need.

“I didn’t want to burn out the artist community who were volunteering their time and talent,” Rodriguez said. “So my

She thought it was a great idea, and a week later, Rodriguez brought 50 decks and all the paint and supplies for the inmates to use.

“I met with the guys and explained what the program was about, and they absolutely loved it,” Rodriguez remarked, “and from there, things just blew up.”

After two long years, Fresno Skateboard Salvage is finally hosting live in-person auctions again. And the auctions feature artists from all over the state, the country, and even as far away as Germany.

The next event will be held on June 18th at Gazebo Gardens. The silent auction will be held from 6 pm to 8 pm. Fresno Skateboard Salvage will also have a merch table, along with the regular food and entertainment Gazebo Gardens is known for.

Skye’ s the Limit

DeJa Skye began her drag career in 2011 at the age of 20. Inspired by the first seasons of “RuPaul’s Drag Race,” DeJa took an interest in Fresno’s local drag scene. Watching the local performers gave DeJa the confidence to try her hand at drag performance. With her bold and vibrant look, and fiery determination, DeJa Skye was soon performing all over the state. Eleven years later, DeJa Skye’s dream became a reality as she became a contestant on season 14 of “RuPaul’s Drag Race.”

DeJa finished the competition in 6th place, sent home by Daya Betty the queen she had sent home earlier in the competition – a first for the show. Now back in the Fres no drag scene with a vengeance, DeJa Skye took some time to talk with Fresno Flyer about her career, her time on “RuPaul’s Drag Race,” and to offer some advice to up and coming queens looking to follow in her fabulous footsteps.

FF: How would you describe a DeJa Skye performance to someone who is about to experience it for the first time?

DeJa Skye: When you come to a DeJa performance, you can find laughter, thrills, and a whole lot of body moving. Not only can I make you laugh but I have

the goods to back it up in the performance category. I can dance, I can serve you a ballad, I can get campy, I can do it all!

FF: Where did you get your start performing drag?

DeJa Skye: I was a sweaty little baby queen that would go out to Aldo’s nightclub on their LGBTQ+ night. The promoter saw me and offered me a spot to perform. I brought my two friends

at the time as back-up dancers and I performed “S&M” by Rihanna and the rest is herstory!

FF: What does ‘drag’ mean to you?

DeJa Skye: It means breathing, it means life, it means happiness, it means everything to me. It encompasses every creative outlet I have inside me. From acting to performing to makeup to sewing it’s such a creative job. The best job to be exact.

FF: Where do you draw inspiration for your drag outfits, looks, song choices, and performances?

DeJa Skye: I draw inspiration from everywhere really, I’m super into social media or YouTube or different public figures, but a lot of it stems from comic book and anime fantasy, for sure. I like to be over the top, but I can definitely be subdued as well. Color is my biggest inspiration. It makes me feel so many things, but pastels and neon, anything bright just gives me life.

FF: What was the most surprising thing about meeting and working with RuPaul?

DeJa Skye: The most surprising thing about meeting RuPaul was him knowing my name instantly and telling me that he wanted me on the show. That, to me, was so validating and it literally had me in tears because an idol completely understood who I was and was excited to see what I can do.

FF: You have such a warm, cheery, and approachable personality - how do you stay true to yourself in a competitive environment?

DeJa Skye: That’s just it, stay true to yourself. Don’t let the competition or anyone rock you. It’s easy to get lost in distress, but what I told myself every single day when I woke up was - new day, whatever is for me is for me, and I’m going to go into this competition completely staying true to myself. Don’t sweat the small stuff, it really isn’t that serious you know?

FF: Do you feel like you’ve transformed or changed at all from your time on Drag Race?

DeJa Skye: I don’t think I fully transformed throughout the competition, but I learned more things about myself in that little amount of time than I have learned in my

Setthe table for romance with a delicious date night at home

(Family Features) Planning a delicious, romantic date night doesn’t have to take you any further than your own kitchen. You don’t have to be an accomplished chef to set the table for romance, but you can take inspiration from simple, quality Italian dishes to celebrate the link between food and love.

As these recipes show, a romantic meal can be ready in minutes or, like a great love story, simmered to perfection. To plan the ultimate date night at home, start by choosing one of these dreamy main dishes made with mouthwatering sauces.

Flavorful sauces make a great Italian meal, but the sauce doesn’t need to be made from scratch (at least, not completely). For example, Bertolli d’Italia sauces are made in Italy for authentically delicious flavor. They are crafted with tomatoes vine-ripened under the Italian sun, finely aged Italian cheeses, fresh cream and Mediterranean olive oil. The result is a sauce that’s perfect for your datenight meal.

Once you select your main course, prepare a simple salad of greens with a drizzle of Italian vinaigrette or Caesar dressing. Pop a loaf of bakery-fresh Italian or focaccia bread into the oven to warm through and serve with butter or olive oil for dipping. If you’re so inclined, cap off the meal with a classic Italian dessert from your local bakery, like tiramisu, cannoli or a creamy panna cotta topped with fresh fruit.

Italian Sausage Spinach and Tomato Rigatoni

Prep time: 10 minutes

Cook time: 20 minutes

Water

1/2 box rigatoni pasta

1 tablespoon olive oil

1/2 cup onions, chopped

4 cloves garlic, minced

1/2 cup mushrooms, sliced

16 ounces sweet Italian sausage

1 jar Bertolli d’Italia Marinara

Sauce

2 cups fresh baby spinach salt, to taste

pepper, to taste Parmesan cheese, for garnish

Bring large stockpot of water to boil. Boil rigatoni pasta until al dente. Drain and set aside.

In saute pan over medium heat, add olive oil. Add onions, garlic and mushrooms. Saute until vegetables start to brown. Add Italian sausage and cook until done, breaking into small pieces. Add sauce and bring to low boil.

Add baby spinach. Cook until spinach is mostly wilted. Season with salt and pepper, to taste.

4 sprigs fresh rosemary

2 sprigs fresh sage leaves, chopped

8 sprigs fresh thyme

2 bay leaves

1 jar Bertolli d’Italia Marinara

Sauce

2 cups beef bone broth

water

24 ounces pappardelle pasta or preferred pasta freshly grated Parmesan cheese, for garnish

Heat oven to 350 F.

Andso it goes, times are tough everywhere. Long lines of cars extend at gas stations, and the expressions on customers’ faces are pure frustration. How is it possible consumers are paying over $6 per gallon for gasoline? The news reports that inflation is teetering at an unbelievable 9.5% compared to 1.23% only two years ago. People share that they are stressed out and experiencing symptoms of anxiety. Many have altered and changed travel plans for the summer of 2022 as the economy continues to predict only more increases in interest rates and taxes throughout the following year.

Setbacks in life are temporary. With each phase of transition, nothing stays the same. Be positive, focus, and do not quit your goals. Be steadfast in completing what you start - be it an education, college degree, a certificate program, a house project, or a new position at the office.

Add drained pasta to pan with sausage and sauce. Toss and divide between plates. Garnish with Parmesan cheese.

Red Wine Braised Beef Short Rib Ragu

Prep time: 25 minutes

Cook time: 3 hours

2 tablespoons olive oil

4 pounds bone-in beef short ribs salt, to taste ground black pepper, to taste

1 talk celer y, chopped

1 large carrot, peeled and finely diced

1 small onion, chopped

8 cloves garlic, finely chopped

4 tablespoons tomato paste

1 cup red wine

In 5-quart Dutch oven, heat olive oil over medium heat. Season short ribs with salt and ground black pepper, to taste. Place one layer of short ribs in pot. Set remaining ribs aside. Cook ribs 3-4 minutes per side until browned. Transfer to plate and set aside. Repeat with remaining short ribs. Add celery, carrots and onion to pot used to brown ribs. Stir and cook until vegetables are browned, about 15 minutes. Add garlic and stir 1-2 minutes. Add tomato paste. Cook 2-3 minutes. Carefully pour red wine into pot. Stir and scrape any browned bits from bottom of pot. Cook 3-4 minutes until wine is almost completely absorbed into vegetables.

Learn to accept the times as-is, an opportunity to step back and re-evaluate life. First, create a checklist for yourself. Then, remember the basics and move on from there.

• Shelter for Rest (security from elements)

• Sleep (how our brain encodes and processes information)

If you are not enough without it, you’ll never be enough with it

When a sudden lifestyle change occurs, 65% or more of the population will experience loss, grief, or illness (physical or emotional). These include changing a residence, employment, relationship, schools, or a loss of finances. This is a prime opportunity to make a checklist of where you are and see what you can live with and what you can live without. Ultimately, you consent to the direction of your future. This can be an insightful and visionary time of checks and balances. You may notice adjustments that you can make to benefit the future, mindful that this is temporary and that nothing lasts forever. Maintain a positive outlook knowing you will eventually get to where you are going, just on the road less taken.

As in the words of Robert Frost, “I took the road less traveled by, and it has made all the difference.”

So, let us welcome June and kick the anxiety to the curb. In the end, what will be will be. But, today is a gift, and you have the coping skills to maintain your standard of living. So, BBQ your burgers, squeeze the lemons for lemonade and taste the cool fresh strawberry ice cream. Summer is but once a year; let’s partake, whether in the backyard or abroad, enjoy and stay safe!

all the local artist submissions, we’re doing quarterly auctions for the first time.”

The auctions may become even more frequent in the near future. Fresno Skateboard Salvage recently brought their inmate artist program to J.C. Montgomery School, Hanford’s juvenile detention high school. Between 10 and 15 incarcerated teens have already begun working on their own original skateboard art submissions.

Rodriguez has been skating for over 30 years. As a young man, he turned to skating as a way to escape an unstable and often abusive home life. He credits skating not only with giving him an escape from problems at home but on the streets as well. It is what inspired him to provide a similar outlet to kids who also face such chal lenging environments.

One of the underserved ar eas in particular that Rodriguez is fo cused on is Parkway Drive in Fresno. The motel-laden strip between Olive and Belmont Ave is plagued with drugs, prostitution, and violence. It’s also home to hundreds of impover ished families - including dozens of children.

“I can’t imagine a worse en vironment for kids to grow up than over there,” Rodney shares. “Where can those kids go to play, to just be kids? All they have are parking lots full of dirty needles and broken glass, with drug dealers and prostitutes on every corner. What chance do these kids have when that’s all they see all day, every day?”

Fresno Skateboard Salvage recently partnered with Richard Burell and Live Again Fresno to host a pop-up skatepark for the kids living on Parkway Drive. Working together, they provided lunch, free skateboards and helmets, and even new shoes for many of the kids. They also offered counseling and a safe space for the kids to hang out. Unfortunately, licensing and insurance issues have created an obstacle to expanding the pop-up into a regular, sanctioned event.

Rodriguez isn’t discouraged, however. “I would really love to work with the City of Fresno and host events like this, not just for the Parkway Drive area, but all the underserved areas of Fresno. We’ve had a tremendous response from other cities, such as Firebaugh, San Joaquin, Mendota, and Hanford. I’m sure we could do great things here in Fresno too.”

When Fresno Skateboard Salvage hosted a giveaway event in Firebaugh, the entire police department showed up to grill

hotdogs and provide live music entertainment. Rodriguez says this is precisely the kind of community interaction he believes can make a real difference for kids and teens in Fresno’s underserved communities.

As Rodriguez explains, “More than just showing kids that there are other alternatives to gangs, drugs, and the cycle of crime and poverty, events like this are also about building a positive relationship be-

There are more projects on the horizon for Fresno Skateboard Salvage. Among them is another skateboard art collaboration with 25 Native American youth in Oakhurst. In addition, they continue to stay busy hosting skateboard giveaways at schools and skateparks all over Fresno and Kings County. Most recently was a giveaway at West Fresno Middle School on May 20th. Rodriguez also plans to continue Fresno Skateboard Salvage’s partnership with Live Again Fresno, providing boards, safe spaces, and assistance for Fresno’s underserved youth. They are also partnered with MAGIC Fresno to provide boards and equipment for some of the exceptional needs youth they work with.

Looking to the future, Rodriguez would like to work with more highend skateboard distributors to obtain an even wider variety of boards.

“I’d really like to work with more of the pro-backed brands and get some of those really cool boards that the kids would just go crazy over,” Rodriguez relates.

And Rodriguez continues to spend his weekends down at the skatepark, giving back to the skating community that gave so much to him.

In the six years since Fresno Skateboard Salvage began with a pile of worn-out decks and parts in Rodriguez’s garage, they have given 1968 brand new, high-quality boards to Valley kids. And all in their spare time.

“Every penny we raise goes towards buying boards and equipment,” Rodriguez says. “We don’t keep any of the money we raise for ourselves, so we can’t afford to quit our day jobs. So this takes up all of our free time. But, the reward is completely worth it.”

As interest in Fresno Skateboard Salvage continues to grow and the list of communities they serve gets longer, their need for donations has also become greater. When asked what their greatest need is, Rodriguez’s answer is simple.

“Honestly, the best thing people can donate is money,” He continues. “We buy wholesale, and we can build boards for a lot less than someone could purchase from a skate shop. So, we tell anyone who wants to donate a board, just give us the money

“Skating is a culture,” Rodriguez says, “It’s not just about skating; it’s about the community and the commonality that comes with being part of a culture. There are so many ways kids can be a part of skate culture besides just skating. That’s what makes skateboard art so special and important to what we’re doing. We want to show kids that there’s a place for everyone here. Whether you’re into skating, art, music, fashion, photography, whatever your interest is, there’s a place for it in skate culture.”

“I’m just a poor kid from Calwa who couldn’t afford a decent board growing up. Now, I’m 50 years old and still skating every day. All I want to do is show these kids that there’s a place for everyone in skate culture. Here’s a board; let’s go skate.”

entire adulthood. I was capable of so much more, I just needed the competition to really bring it out. Like, I had no idea I could act or sing or even impersonate someone, and those challenges actually ended up being the challenges I was great at.

FF: While you were on Drag Race, was there anything you particularly missed about Fresno’s drag scene?

DeJa Skye: I think that the Fresno Drag scene is very small and I’m very influential in it, so what I was thinking the whole time was I am going to make Fresno proud, and I think I did that.

FF: What advice do you have for anyone thinking about getting started in drag?

DeJa Skye: If you are going into drag for attention or as a get rich quick scheme, find a different job. Drag is a creative outlet that anyone and everyone can do. You just have to apply yourself and make sure that you are be-

ing authentic through your drag. Oftentimes, seasoned performers will give you advice, but take everything with a grain of salt because in their eyes they’re trying to make you what they want you to be as opposed to you being your own character, as an individual.

FF: And for those who have been doing drag for a while, what advice do you have for those looking to elevate themselves and take their performances to the next level?

DeJa Skye: Never stop working so you don’t get complacent, and don’t get lazy because that’s just an open door for someone up-and-coming to replace you. This is not a guaranteed job but if you truly apply yourself, this can definitely be a guaranteed job. If you want longevity, make sure that you are constantly reinventing yourself, and also make sure that you are helping the younger generation.

FF: What’s next for DeJa Skye?

DeJa Skye: I’m hoping to get on tour

soon. Touring is something that I see myself doing and it’s a dream of mine so hopefully I can get on a tour. I also continue to travel the world and continue to inspire people. Be on the lookout for my YouTube channel. It will be drag-centric, things such as makeup tutorials, sewing hacks, reviews, and a whole bunch of other things. I also hope to continue working with World of Wonder for future projects - who knows, you may see me on TV sometime in the near future again.

Juneteenth: A Celebration

Juneteenth became a Federal holiday on June 17, 2021 when President Joe Biden signed into law the Juneteenth National Independence Day Act. Juneteenth is also known as Jubilee Day, Emancipation Day, Freedom Day, and Black Independence Day. It is usually celebrated on the third Saturday in June. All states now recognize Juneteenth as a holiday. It has also become an international celebration that takes place in France, Honduras, Ghana, Japan, Taiwan, and Trinidad and Tobago. There is also a Juneteenth flag that contains the colors of red, white, and blue that features a five-pointer star in the center reflective of Texas, the lone-star state.

How it started. On January 1, 1863, the Emancipation Proclamation was signed and issued by President Abraham Lincoln that freed the enslaved population. The official announcement did not come to Texas until the arrival of the Union Army led by General Gordon Granger on January 19, 1865. However, it was not until the ratification of the Thirteenth Amendment on December 6, 1865 that chattel slavery was officially abolished.

On June 19, 1866, a huge celebration took place in Galveston, Texas marking the anniversary of the arrival of General

Granger with the official announcement, thus establishing the date for future celebrations. The term “Juneteenth” is derived from the combining of the words June and Nineteenth.

Juneteenth is particularly important to African Americans as a time to celebrate kinship bonds and showcase the accomplishments of our ancestors. As a retired Professor Emeritus at Fresno State, I am extremely proud of the diversity of students (ethnicities and majors) who have studied African American history and culture in our Program, and who now celebrate Juneteenth, inspired by they learned in our classrooms.

Each year on the “Golden Westside” of Fresno, a grand celebration of Juneteenth takes place at the Hinton Community Center or one of the local parks. A a statewide Juneteenth celebration also takes place at Allensworth State Historic Park, 75 miles south of Fresno. Allensworth was the first African American town established in California and is named in honor of one of its co-founders, Colonel Allen Allensworth

who was born in slavery but was able to escape to freedom. (I have written a 40 page booklet titled, “A Pictorial History of Allensworth: A Unique Black Town,” as well as developed and taught a course on Allensworth that included a fieldtrip to the Park.)

Over the years, the Juneteenth celebrations have grown in size and venues. Various organizations as well as individual families participate in this annual observation marking the end of institutional enslavement. Celebrations usually include public and private events such as: pot lucks; barbecue cook-offs; picnics; rodeos; and block parties. Programs normally open with the singing of the Black National Anthem, “Lift Every Voice and Sing.” Prominent at this time are exhibits at schools, libraries, post offices, and city halls. Educational competitions for youth are sponsored, as well as community service awards are given. Other events might include the readings of African American writers such as Maya Angelou, Langston Hughes and many others.

Add rosemary, sage, thyme and bay leaves to pot. Add sauce, bone broth and browned ribs. Cover pot and place in oven 2 1/2-3 hours, or until ribs are fall-apart tender.

Remove pot from oven. Transfer ribs to plate or cutting board. Remove and discard herb stems and bay leaves. Remove bones from ribs then shred meat into bite-sized pieces using two forks or tongs. Return shredded ribs to pot with ragu. Stir to combine. Set aside. Bring large stockpot of water to boil. Boil pappardelle pasta until al dente. Add drained pasta to pot with beef ragu and toss until combined.

Garnish with freshly grated Parmesan cheese.

Creamy Italian Garlic Chicken Pasta

Prep time: 10 minutes

Cook time: 20 minutes

2 tablespoons olive oil

2 large chicken breasts

1 teaspoon Italian seasoning salt, to taste pepper, to taste

4 cloves garlic, minced

1/4 cup onions, chopped

1/4 cup sun-dried tomatoes, cut into strips

2 tablespoons capers, drained

6 fresh basil leaves, sliced

1 jar Bertolli d’Italia Creamy Rosa Sauce

1/2 cup heavy cream

water

1/2 box Casarecce or preferred pasta

parsley, for garnish

Parmesan cheese, for garnish

In saute pan over medium heat, add olive oil. Season chicken with Italian seasoning and salt and pepper to taste. Sear chicken breasts on both sides until browned. Remove from pan and set aside.

Add garlic and onions to hot pan. Cook until starting to brown. Add sun-dried tomatoes, capers and basil; stir. Add sauce and heavy cream; cook until mixture starts boiling.

Bring large stockpot of water to boil. Boil Casarecce pasta until al dente. Divide pasta between two plates. Place one chicken breast over pasta on each plate and top with additional sauce, parsley and Parmesan cheese.
