Use: Hot and Cold Preparation It makes gelato finer and softer. Suggested for all kind of milk based gelato, above all for flavours that tend to get hard. Use: Hot and Cold Preparation Delays dripping and gives greater body without increasing sweetness. Recommended for all gelatos, but above all on fruit flavours. Use: Cold Preparation It increases the volume and the creaminess in the fruit gelatos and avoid the crystallisation. Softin can be added directly in the batch freezer at the end of Use: Hot and Cold Preparation Improves the structure of fruit gelatos, without increasing sweetness.

Use: Hot Preparation. Mix improver well with the other ingredients before putting the mixture in the pasteuriser. Made only from animal fats, making the gelato creamier and giving it a stable structure. (Partially or totally substituting the cream.)
