ith the country expanding and many people moving out West, growth was booming. Railroads were being constructed across the US at an outstanding rate. In 1874, the Houston and Texas Central Railway Company was expanding North towards Denison, Texas and was in need of ways to keep their steam powered locomotives moving. In order to do this, the railway company had to create water stops about 7 to 10 miles apart to make sure there was water available. Water stops were a fuel depot of sorts for steam-powered engines.

At the upper reach of Cottonwood Creek in Allen, Texas, Irish immigrants constructed what still stands today, a stone dam to support their lagoon to hold water. Later, German immigrants maintained the water station afterwards. The purpose of the water reservoir was to fill the water tower located along the railroad tracks just to the west. Some of this historic site still remains along with the dam. The foundations of the water tower and pump house are still visible, but the beauty and calm from the Dam is by far the star of the show. As the boom to move out West grew, the need for a larger lagoon was important. In 1912, the lagoon was increased just south of the stone dam causing the original dam to be submerged. In 1960, the dam was breached and from this the Old Stone Dam was revealed again. The dam is considered by many to be the only one left in the United States and the proud people of Allen embrace their role in the development of North Texas with it. It is now designated by the Texas Historical Commission, as a State Archaeological Landmark.

orget the plastic doo-dads on the store shelves, the store bought package lunches. All your child needs for a happy, productive, fun filled learning day is probably already contained within within your home. Let them help you look. Children love to be creative. My five year old proves this to me every day. Sometimes she needs a little nudge in the right direction but then she can take off with an idea and play, while learning, to her hearts content. That’s what little children are doing while they’re playing, learning. They learn by mimicking mommy or daddy. They learn while going through their daily routine and watching the world around them.

fun ideas To Get Your Kids To Eat Their Veggies

o you have trouble getting your kids to eat their veggies? I sure do.

My daughter used to be great about trying and eating just about anything…and then she turned 2 ½. Now it is pretty much impossible to get her to eat anything other than corn when it comes to vegetables. So I had to come up with some fun and sometimes sneaky ways to get some veggies in her. Here are a few of my favorites. 1) Make big pot of vegetable soup, and then add some fun noodle shapes. You can use alphabet noodles or look for some fun novelty shapes. You may be able to find some cartoon characters, toy and sports shapes etc. I have even seen pumpkin and Christmas tree shapes. With a little luck your kids will be too busy spelling words, or identifying the shape to notice all the veggies they are eating in the soup.

2) If you can’t make them eat it, make them drink it. Pour some vegetable juice over ice and add a straw, a

For play some children’s days will be spent pretending to be a teacher with a class full of stuffed animals, driving a car down their the busy neighborhood of the family living room, or diaper their baby doll alongside mommy and their new sibling. But that’s not all they can play with.

garage. Add some spare ribbon, and a magnet ripped from the back of a spent notepad. Cut out paper fish to catch with words, letters, or numbers your child is learning to read written on them. Paperclips or staples attached to each mouth to “aid in the catching of the fish”.

Help you child learn numbers and writing by playing “office”, “grocery store”, and “bank”. Make desks from discarded cardboard boxes. Add recycled paper cut into little squares and some (washable) pens and pencils. Give them jobs such as writing up the grocery list, counting how many cans of such and such you have in the pantry. Or counting the change found around the house as they make a deposit into their “bank”.

Children love water play too. Find something in the home that needs a bit of detailed cleaning. Something such as soap dishes or some of their plastic toys. Set them up with a little bowl of soapy water in a small bowl, a sponge and a cloth to dry. Lee them work along side you in the kitchen or at the dining table. Children are resourceful. Most anything can become a favorite toy. Be on the lookout for learning adventures. 635

Many kids who don’t care much for cooked vegetables will eat them up if they can dip them. cocktail umbrella or a stick of celery and watch them drink it up. Your kids may not get as much fiber as eating the entire vegetable, but getting them to drink their vegetables is better than not getting any vegetables in their system.

3) Have you tried offering them some raw vegetables with some ranch dressing to dip them in? Many kids who don’t care much for cooked vegetables will eat them up if they can dip them. Just grab a bag of baby carrots and cut up some red and yellow peppers and some cucumber. Arrange them on a plate with a little bit of ranch dressing or your favorite vegetable dip on the side. 4) Take it even a step further and let them create artwork out of their vegetables. Offer raw vegetables in different colors and shapes and encourage them to make a vegetable collage on their plate. You can easily make a face using slices of cucumber as eyes, a baby carrot as nose and a slice of red pepper as a mouth. You can use watercress or shredded carrots or even some cheese as hair. Before you know it, you’ll find them sampling their “art supplies”.

6) Get the kids together and make a cold vegetable pizza. Start out with a can of crescent rolls. Unroll the dough, but don’t pull the triangle shapes apart. Instead push the seams together and bake on a baking sheet according to the package directions. Let the sheet of dough cool completely, then spread with some crème cheese (we like a vegetable or herb flavored one) and top with some thinly sliced raw veggies. Cut into squares and serve.

8) If everything else fails, hide the vegetables in other food. My mom used to make us some special orange mashed potatoes. We thought it was very fancy, but all she did was to cook some carrots with the potatoes and mashed them right in there. You can also cover broccoli with tomato sauce or cheese. Think of a dish your child really enjoys and sneak a little bit of vegetable in there. Give a few of these ideas a try and see which ones work best for your children. Keep at it and sooner or later they will start to develop a taste for vegetables. 635

Preheat your oven to 350F.

Whisk all dry ingredients together in a medium bowl, and set aside. Using a handheld or stand mixer, beat the room temperature butter for about 2 minutes. Add in both brown sugar, and granulated sugar until combined. This mixture should be light, and fluffy. Mix in the vanilla and egg. Once the wet ingredients are combined evenly, add the dry ingredients to the wet mixture. Mix on low until a thick dough has been formed, about 2 or 3 minutes.

Chewy Butterfinger Cookies • 2 c. All Purpose Flour (measuring correctly is key) • 2 and 1/8th tsp. Corn Starch • ¾ c. Butter/Margarine at room temperature • ¾ c. packed dark brown sugar • ¼ c. granulated sugar • 1 large egg • 2 tsp. Vanilla Extract • 1 tsp. Baking Soda • ¾ tsp. kosher salt • 1 and 1/3 c. Chopped Butterfinger candies

Once your dough has been rolled into balls, put parchment paper or a silicone baking mat on a large baking sheet. Place 9-12 cookie dough balls on the large baking sheet and bake for 9 minutes. Allow your cookies to cool for at least 10 minutes before transferring to a cooling rack. Cooling is important to let the cookies finish the cooking process, and they become chewier the longer you let them cool.

In a large Crock Pot on medium/high heat add in canned soup, potatoes, onion, celery, reserved bacon grease, chicken broth, garlic, and spices. Stir until combined. Let cook in Crock Pot for 4 hours, then add the cream cheese and distribute through out. If you like softened bacon in your Baked Potato Soup, go ahead and add some now. Remember to stir your soup throughout its journey in the Crock Pot. Continue to cook soup on the low setting for an additional 4 hours. Serve, and top with sour cream, cheese, green onions, and bacon.

Crock Pot Baked Potato Soup • 2 ‘Family-Sized’ cans of cream of chicken soup • 10/11 Small Potatoes - chopped • ½ c. Onion - chopped • 6 Stalks of Celery - chopped • 4 oz. of Cream Cheese • ½ c. chopped bacon and reserved bacon grease (1 TBSP) • 1 Cup of Chicken Broth • Green Onions for topping • 1 TBSP. Garlic – Mashed w/ love • Sour Cream for topping • Grated Sharp Cheddar Cheese • 1 TBSP Salt • 2 tsp. Black Pepper • 1 dash of Cayenne Pepper if desired

ith all the fast food we eat, only the fortunate few avoid a flabby gut without doing some sort of exercise for stomach fat. Two of the simplest types are planks and crunches. Before you start on either, bear in mind that pregnant women shouldn’t do these exercises. Also, if you have back problems, doing crunches on a hard surface can aggravate those problems, so don’t do that. As always, warm up before and stretch afterward. Never stretch cold muscles.

Once your cookie has formed, gently fold in the Butterfinger candy pieces. Cover your cookie dough with a plastic wrap, and place in the freezer for 20 minutes. This process will help the fat in the butter flavor your flour, and make for thicker, gooey cookies. If you aren’t using the cookie dough right away, you can place it covered in the fridge for up to 48 hours. Let sit at room temperature for atleast 15 minutes before rolling into 1.5 Tablespoon balls, and placing on baking sheet.

PLANKS For the ab plank, lie on the floor face down with your weight on your forearms and toes. Straighten your body, as rigid and straight as possible, from neck to ankles for a 30-second holds (use the old “one-Mississippi, two-Mississippi” method for counting the seconds). Do three sets of 20 (or however many you can do to begin with and work up to three sets). Thirty-second holds are a starting point. Gradually increase your hold time as you grow more accustomed to the exercise. If

this becomes too easy, do the exercise with a stability ball under your feet. The more you do the more stomach fat you will burn.

Another intense exercise for stomach fat is the side plank, start in the basic plank position (weight on toes and elbows), and roll to one side, placing all your weight on one forearm and placing your upper foot on your lower foot (the weight is now on the side of your foot), and extend your free arm straight upward. Hold that for 30 seconds, and then

It not only makes you look better, but it also remedies back pain caused by extra weight imposing on weak muscles in your stomach and back. reverse, holding that for 30 seconds. This exercise can also be done with straight arms, weight resting on the palm of the hand. That’s a little more challenging balance-wise, but like anything else, it gets easier with practice. Again, the goal is three sets of twenty.

CRUNCHES

For a more old-school exercise for stomach fat, do some crunches. Lie on your back with your knees bent and your feet flat on the floor. Position your feet as wide as your hips, hands behind your head, and tuck

hands behind your ears. Use your stomach (not your hands) to lift your head, neck and shoulder blades off the floor. Don’t pull your head forward with your hands. Keep your chin off your chest. Hold that position until it starts to burn, and then count to five before lowering. Do three sets of however many you can do, and keep going until failure (i.e., until you can’t do anymore). An oblique crunch adds rotating slightly with your shoulders, moving one of your elbows toward the opposite knee, while

doing the crunches. To increase the intensity of your stomach fat exercise, add a stability ball to the mix. Stomach fat exercise should be part of your daily routine. It not only makes you look better, but it also remedies back pain caused by extra weight imposing on weak muscles in your stomach and back. You don’t get as tired because you aren’t hauling around extra stomach fat. Working your abs helps your posture and eliminates stress. All in all, you couldn’t do yourself a bigger favor. 635

s the number of obese and overweight children in the United States continues to climb, fitness is a consideration that weighs heavily on the minds of parents, caretakers and teachers. The risk of health issues accompanying obesity among children provokes many fears that unless parents and children make significant changes in the lifestyles inhabited by our kids, diabetes, heart disease, and other weight related conditions have the potential to run rampant among American youth.

IMPORTANCE OF FITNESS FOR CHILDREN

Although encouraging a healthy lifestyle, among children, that includes physical activity and fitness is vital to addressing issues associated with health problems and obesity, the addition of kid’s fitness can also promote a lifelong love. Fitness not only encourages physical activity, keeping weight and accompanying conditions at bay, it also helps protect children from injuries that can occur when they are not accustomed to physical activity, movement and sports. Most injuries that plague children completing physical activities occur as a result of a lifestyle that lacks movement and activity that can provide balance, coordination and muscle memory necessary for a fit lifestyle.

Despite statistics praising physical activity among children as a weight management tool and method of decreasing injuries during activities and sports, fitness among children boasts a plethora of positive results and side effects. T

his months spotlight focuses on Trace Parker, a 15 year old freshman at the Lowery Freshman Center in Allen. Trace has been playing hockey for 3 years now and before that, he was an exceptional catcher in AAU baseball. Trace looks to continue his growth in hockey, and hopes to one day play at the collegiate level. He was a first year Varsity goalie as a freshman this year, and helped the 16U A Allen Americans make it to the Championship series against McKinney this past season.

Hockey is a growing sport in our area and if you have not had a chance to see a game, we highly recommend watching our local youth play in Allen, Richardson, Frisco, McKinney and Plano. It is truly a fun sport to see live, and cheer our local talent.

McKinney High School went to Nationals this past year, and the DJHA Penguins (Plano) and the Allen Americans 16U AA went as well. Allen actually finished third and medaled again in consecutive years. Be sure to check back next month as we focus on another one of our homegrown talents. 635

eet Sadie, a friendly, forty-six pound, mostly-black Labrador mix. She loves treats and gets very excited around humans. In fact, Sadie is very energetic and likes to jump playfully. She also loves walks and is generally easy to walk. Sadie may do best in a home without cats or horses because she likes to chase these animals if around. The SPCA of Texas also suggests that she “meet and greet with other dogs” before being adopted. If you ask her to sit, she will do so on command. Sadie does expect treats after obeying such an order! She was surrendered to the SPCA of Texas on March 10, 2015 because the owner did not think she liked other pets. Sadie has been spayed, microchipped, and received her age-appropriate vaccinations. Snazzy Ideas For Keeping Your Kindergartner Entertained At Home

orget the plastic doo-dads on the store shelves, the store bought package lunches. All your child needs for a happy, productive, fun filled learning day is probably already contained within within your home. Let them help you look.

garage. Add some spare ribbon, and a magnet ripped from the back of a spent notepad. Cut out paper fish to catch with words, letters, or numbers your child is learning to read written on them. Paperclips or staples attached to each mouth to “aid in the catching of the fish”.

For play some children’s days will be spent pretending to be a teacher with a class full of stuffed animals, driving a car down their the busy neighborhood of the family living room, or diaper their baby doll alongside mommy and their new sibling.

Children love water play too. Find something in the home that needs a bit of detailed cleaning. Something such as soap dishes or some of their plastic toys. Set them up with a little bowl of soapy water in a small bowl, a sponge and a cloth to dry. Lee them work along side you in the kitchen or at the dining table.

Children love to be creative. My five year old proves this to me every day. Sometimes she needs a little nudge in the right direction but then she can take off with an idea and play, while learning, to her hearts content. That’s what little children are doing while they’re playing, learning. They learn by mimicking mommy or daddy. They learn while going through their daily routine and watching the world around them.

But that’s not all they can play with.

Help you child learn numbers and writing by playing “office”, “grocery store”, and “bank”. Make desks from discarded cardboard boxes. Add recycled paper cut into little squares and some (washable) pens and pencils. Give them jobs such as writing up the grocery list, counting how many cans of such and such you have in the pantry. Or counting the change found around the house as they make a deposit into their “bank”.

Children are resourceful. Most anything can become a favorite toy. Be on the lookout for learning adventures. 635

fun ideas To Get Your Kids To Eat Their Veggies

o you have trouble getting your kids to eat their veggies? I sure do.

My daughter used to be great about trying and eating just about anything…and then she turned 2 ½. Now it is pretty much impossible to get her to eat anything other than corn when it comes to vegetables. So I had to come up with some fun and sometimes sneaky ways to get some veggies in her. Here are a few of my favorites. 1) Make big pot of vegetable soup, and then add some fun noodle shapes. You can use alphabet noodles or look for some fun novelty shapes. You may be able to find some cartoon characters, toy and sports shapes etc. I have even seen pumpkin and Christmas tree shapes. With a little luck your kids will be too busy spelling words, or identifying the shape to notice all the veggies they are eating in the soup.

2) If you can’t make them eat it, make them drink it. Pour some vegetable juice over ice and add a straw, a

Many kids who don’t care much for cooked vegetables will eat them up if they can dip them. cocktail umbrella or a stick of celery and watch them drink it up. Your kids may not get as much fiber as eating the entire vegetable, but getting them to drink their vegetables is better than not getting any vegetables in their system.

3) Have you tried offering them some raw vegetables with some ranch dressing to dip them in? Many kids who don’t care much for cooked vegetables will eat them up if they can dip them. Just grab a bag of baby carrots and cut up some red and yellow peppers and some cucumber. Arrange them on a plate with a little bit of ranch dressing or your favorite vegetable dip on the side. 4) Take it even a step further and let them create artwork out of their vegetables. Offer raw vegetables in different colors and shapes and encourage them to make a vegetable collage on their plate. You can easily make a face using slices of cucumber as eyes, a baby carrot as nose and a slice of red pepper as a mouth. You can use watercress or shredded carrots or even some cheese as hair. Before you know it, you’ll find them sampling their “art supplies”. 5) To get them to eat more vegetables at dinnertime try a little salad bar. Put out some lettuce, some sliced or chopped tomato, slices of cucumber, shredded carrot, slices of red and yellow peppers, small broccoli flowerets and anything else you can think of. You may also want to offer them some choices when it comes to salad dressing. Favorites in our house are Ranch, Italian, Catalina, and

French. To top it all of set out some croutons and shredded cheese.

6) Get the kids together and make a cold vegetable pizza. Start out with a can of crescent rolls. Unroll the dough, but don’t pull the triangle shapes apart. Instead push the seams together and bake on a baking sheet according to the package directions. Let the sheet of dough cool completely, then spread with some crème cheese (we like a vegetable or herb flavored one) and top with some thinly sliced raw veggies. Cut into squares and serve. 7) Get them involved in the kitchen especially when it comes to cooking. Ask them to wash the vegetables, if they are old enough let them cut veggies (under your supervision of course), let them help you stir, or anything else you can think of that would be age appropriate. You’ll be amazed at how proud they will be of their finished product. Believe me, they’ll try just about anything if they made it.

8) If everything else fails, hide the vegetables in other food. My mom used to make us some special orange mashed potatoes. We thought it was very fancy, but all she did was to cook some carrots with the potatoes and mashed them right in there. You can also cover broccoli with tomato sauce or cheese. Think of a dish your child really enjoys and sneak a little bit of vegetable in there. Give a few of these ideas a try and see which ones work best for your children. Keep at it and sooner or later they will start to develop a taste for vegetables. 635

Preheat your oven to 350F.

Whisk all dry ingredients together in a medium bowl, and set aside. Using a handheld or stand mixer, beat the room temperature butter for about 2 minutes. Add in both brown sugar, and granulated sugar until combined. This mixture should be light, and fluffy. Mix in the vanilla and egg. Once the wet ingredients are combined evenly, add the dry ingredients to the wet mixture. Mix on low until a thick dough has been formed, about 2 or 3 minutes.

Chewy Butterfinger Cookies • 2 c. All Purpose Flour (measuring correctly is key) • 2 and 1/8th tsp. Corn Starch • ¾ c. Butter/Margarine at room temperature • ¾ c. packed dark brown sugar • ¼ c. granulated sugar • 1 large egg • 2 tsp. Vanilla Extract • 1 tsp. Baking Soda • ¾ tsp. kosher salt • 1 and 1/3 c. Chopped Butterfinger candies

Once your cookie has formed, gently fold in the Butterfinger candy pieces. Cover your cookie dough with a plastic wrap, and place in the freezer for 20 minutes. This process will help the fat in the butter flavor your flour, and make for thicker, gooey cookies. If you aren’t using the cookie dough right away, you can place it covered in the fridge for up to 48 hours. Let sit at room temperature for atleast 15 minutes before rolling into 1.5 Tablespoon balls, and placing on baking sheet. Once your dough has been rolled into balls, put parchment paper or a silicone baking mat on a large baking sheet. Place 9-12 cookie dough balls on the large baking sheet and bake for 9 minutes. Allow your cookies to cool for at least 10 minutes before transferring to a cooling rack. Cooling is important to let the cookies finish the cooking process, and they become chewier the longer you let them cool. ENJOY!

In a large Crock Pot on medium/high heat add in canned soup, potatoes, onion, celery, reserved bacon grease, chicken broth, garlic, and spices. Stir until combined. Let cook in Crock Pot for 4 hours, then add the cream cheese and distribute through out. If you like softened bacon in your Baked Potato Soup, go ahead and add some now. Remember to stir your soup throughout its journey in the Crock Pot. Continue to cook soup on the low setting for an additional 4 hours. Serve, and top with sour cream, cheese, green onions, and bacon.

Crock Pot Baked Potato Soup • 2 ‘Family-Sized’ cans of cream of chicken soup • 10/11 Small Potatoes - chopped • ½ c. Onion - chopped • 6 Stalks of Celery - chopped • 4 oz. of Cream Cheese • ½ c. chopped bacon and reserved bacon grease (1 TBSP) • 1 Cup of Chicken Broth • Green Onions for topping • 1 TBSP. Garlic – Mashed w/ love • Sour Cream for topping • Grated Sharp Cheddar Cheese • 1 TBSP Salt • 2 tsp. Black Pepper • 1 dash of Cayenne Pepper if desired

This recipe is all too simple, and tastes delicious. You can substitute any cake mix, and any additive like chocolate chips for any flavor you’d like! This cookie mix is universal, but does not disappoint in flavor. Preheat your oven to 350F.

Spiced Cake Mix Cookies

• 1 15.25 oz. box of Spiced Cake Mix • 2 Large eggs at room temperature • 1/3 c. Vegetable Oil • 1 tsp. Baking Powder • 1 ¼ c. Semi-sweet Chocolate Chips

In a large mixing bowl using a wooden spoon or spatula, mix the Cake mix, eggs, oil, and baking powder until combined. Once you have a thick dough, fold in the chocolate chips. You can reserve a few to press into the tops of the cookies once they come out of the oven, as pictured. This is a huge secret of mine that I use every time to make my cookies even more appealing! Place parchment paper or silicone baking mat on a large baking sheet. Roll dough into 1.5-3 TBS balls, and place 9 balls on the baking sheet. Bake cookies for 11 minutes. If you like crispy edges on your cookies, bake them for 12 minutes, but not any longer. Let cool for at least 15 minutes before serving. ENJOY 635

Excercise for STOMACH FAT

W

ith all the fast food we eat, only the fortunate few avoid a flabby gut without doing some sort of exercise for stomach fat. Two of the simplest types are planks and crunches. Before you start on either, bear in mind that pregnant women shouldn’t do these exercises. Also, if you have back problems, doing crunches on a hard surface can aggravate those problems, so don’t do that. As always, warm up before and stretch afterward. Never stretch cold muscles.

PLANKS For the ab plank, lie on the floor face down with your weight on your forearms and toes. Straighten your body, as rigid and straight as possible, from neck to ankles for a 30-second holds (use the old “one-Mississippi, two-Mississippi” method for counting the seconds). Do three sets of 20 (or however many you can do to begin with and work up to three sets). Thirty-second holds are a starting point. Gradually increase your hold time as you grow more accustomed to the exercise. If

this becomes too easy, do the exercise with a stability ball under your feet. The more you do the more stomach fat you will burn.

Another intense exercise for stomach fat is the side plank, start in the basic plank position (weight on toes and elbows), and roll to one side, placing all your weight on one forearm and placing your upper foot on your lower foot (the weight is now on the side of your foot), and extend your free arm straight upward. Hold that for 30 seconds, and then

It not only makes you look better, but it also remedies back pain caused by extra weight imposing on weak muscles in your stomach and back. reverse, holding that for 30 seconds. This exercise can also be done with straight arms, weight resting on the palm of the hand. That’s a little more challenging balance-wise, but like anything else, it gets easier with practice. Again, the goal is three sets of twenty.

CRUNCHES

For a more old-school exercise for stomach fat, do some crunches. Lie on your back with your knees bent and your feet flat on the floor. Position your feet as wide as your hips, hands behind your head, and tuck

hands behind your ears. Use your stomach (not your hands) to lift your head, neck and shoulder blades off the floor. Don’t pull your head forward with your hands. Keep your chin off your chest. Hold that position until it starts to burn, and then count to five before lowering. Do three sets of however many you can do, and keep going until failure (i.e., until you can’t do anymore). An oblique crunch adds rotating slightly with your shoulders, moving one of your elbows toward the opposite knee, while

doing the crunches. To increase the intensity of your stomach fat exercise, add a stability ball to the mix. Stomach fat exercise should be part of your daily routine. It not only makes you look better, but it also remedies back pain caused by extra weight imposing on weak muscles in your stomach and back. You don’t get as tired because you aren’t hauling around extra stomach fat. Working your abs helps your posture and eliminates stress. All in all, you couldn’t do yourself a bigger favor. 635

The risk of health issues accompanying obesity among children provokes many fears that unless parents and children make significant changes in the lifestyles inhabited by our kids, diabetes, heart disease, and other weight related conditions have the potential to run rampant among American youth.

IMPORTANCE OF FITNESS FOR CHILDREN

Although encouraging a healthy lifestyle, among children, that includes physical activity and fitness is vital to addressing issues associated with health problems and obesity, the addition of kid’s fitness can also promote a lifelong love. Fitness not only encourages physical activity, keeping weight and accompanying conditions at bay, it also helps protect children from injuries that can occur when they are not accustomed to physical activity, movement and sports. Most injuries that plague children completing physical activities occur as a result of a lifestyle that lacks movement and activity that can provide balance, coordination and muscle memory necessary for a fit lifestyle.

TRACE PARKER

T

his months spotlight focuses on Trace Parker, a 15 year old freshman at the Lowery Freshman Center in Allen. Trace has been playing hockey for 3 years now and before that, he was an exceptional catcher in AAU baseball. Trace looks to continue his growth in hockey, and hopes to one day play at the collegiate level. He was a first year Varsity goalie as a freshman this year, and helped the 16U A Allen Americans make it to the Championship series against McKinney this past season.

Hockey is a growing sport in our area and if you have not had a chance to see a game, we highly recommend watching our local youth play in Allen, Richardson, Frisco, McKinney and Plano. It is truly a fun sport to see live, and cheer our local talent.

McKinney High School went to Nationals this past year, and the DJHA Penguins (Plano) and the Allen Americans 16U AA went as well. Allen actually finished third and medaled again in consecutive years. Be sure to check back next month as we focus on another one of our homegrown talents. 635

eet Sadie, a friendly, forty-six pound, mostly-black Labrador mix. She loves treats and gets very excited around humans. In fact, Sadie is very energetic and likes to jump playfully. She also loves walks and is generally easy to walk. Sadie may do best in a home without cats or horses because she likes to chase these animals if around. The SPCA of Texas also suggests that she “meet and greet with other dogs” before being adopted. If you ask her to sit, she will do so on command. Sadie does expect treats after obeying such an order! She was surrendered to the SPCA of Texas on March 10, 2015 because the owner did not think she liked other pets. Sadie has been spayed, microchipped, and received her age-appropriate vaccinations. • 1 cup of coconut flour • 1/2 cup of smooth peanut butter • 1/2 cup of mashed blueberries • 1/2 cup of mashed bananas • 2 TBS flax seeds • 2 TBS honey • 4 eggs • 1/3 cup of warm water=

1. Preheat your oven to 350 degrees. 2. In a large bowl, combine the coconut flour, peanut butter, crushed blueberries, mashed banana, flax seeds, honey, eggs and water. Mix thoroughly, add more water if it is too dry. 3. Roll out your cookie dough and use a cookie cutter to cut out shapes, or place on a cookie sheet covered in parchment paper in your size and shape of preference. 4. Bake in the oven for 22 minutes.
