For AED99, the bilao deal is fit for four people and comes with an array of homefavorite comfort food – grilled milkfish, grilled isaw (chicken intestine), grilled squid, fried chicken, chicken spring roll, calamares, boiled gumbo, fried aubergine, mixed fried noodles and cucumber salad with anchovies. It also comes with unli steamed rice. “Bilao” is Filipino for a flat, circular, woven basket originally used for winnowing rice to remove the chaff.
Mark Anthony Dela Cruz, Kusina restaurant manager, said their “Mixed Kusina Bilao” is among sought-after items on the menu.

Food Trip Magazine had a chat with Chef Cris, as he is more fondly called, during which he shared how his culinary journey all Chefbegan.Cris hails from Angeles City in Pampanga, a province in Central Luzon, Philippines known for its fun-loving, food-loving people, who could almost spontaneously dish out five-star delicacies with not too much effort at all.

“I started my journey as a dishwasher back in 2005. At 17, I was already working in a restaurant. I began as a dishwasher.
Then, after a month, I became a kitchen helper,” said Chef Cris. Chef Cris, whom one can describe handsdown as a natural, said he learned the ropes of cooking from his mom. “She

would always tag me along to her catering services. Eventually, I absorbed the art of cooking. I have grown to love it and I can say that my mom has influenced me a lot,” he said. His favorite dish to prepare? “Seafood kare-kare,” says the chef. Chef Cris supervises three kitchen staff in the Shokudo kitchen, and considering how busy the restaurant is these days, “I take a hands-on approach to ensure that everything goes well,” he says. Chef Cris said he had never expected a career in gastronomy. But it seems fate has it already tailor-made for him.
“From dishwasher to kitchen helper, then a regular cook and finally head chef in the Philippines by 2010. I decided to work abroad in 2015, and so I went back to being a kitchen helper. Now, I am here at Shokudo Restaurant working as a head chef,” he said. “In the beginning, it was hard. But if you love your work, you’ll notice it’s not that hard after all. Nothing is difficult for people who want to learn. I always tell my co-workers: You don’t need to memorize how it’s done, you only need to understand what is being done and why,” Chef Cris said.
“Asgoing.Itell them, it’s always a pleasure for us,” he says. Having spent half his life in the kitchen, Chef Cris says he’d stick to being a chef even if given a chance to change his career. “It’s our honor as chefs to satisfy our guests,” he says.

Alessio found his way out of Italy starting with Germany, Spain, and then the UK, jumping from free-standing restaurants to hotel chains such as the Dorchester Hotel in Park Lane London with Alain Ducasse to free-standing restaurant, It-Ibiza, with Gennaro Esposito, showcasing how he reached his knowledge in culinary before moving out of Europe to China.
Alessio quickly reached a pinnacle in his career when he had the opportunity to gain excellent firsthand experience at Italian restaurant - Mio at the Four Seasons in Beijing. As a Sous Chef, Alessio helped the restaurant obtain its first Michelin star in 2019 and maintained it for the following two years while being in charge of the kitchen and delivering great results.
Chef Alessio Pirozzi joins the culinary team in Dubai with a wealth of experience, having worked at some of Italy’s greatest fine-dining establishments. Born and raised in Italy, Alessio always dreamt of becoming a chef, thanks to his early childhood memories of watching his grandmother cook, whilst he sat next to the stove tasting various Italian dishes she created. This fond early introduction to food ultimately led Alessio to pursue his education in hospitality and he attended a leading culinary boarding school in Villa Santa Maria, a town well- known for being the Patron Saint of Cooks.
After successfully graduating, Alessio’s exceptional career began at the Hotel Mirage in Cortina d’Ampezzo, located in the Italian Dolomites. After a three-year stint, he then went on to perfect his fine-dining expertise, working alongside the legendary Norbert Niederlkofler. At Hotel Rosa Alpina his experience opened his eyes to high-level restaurants and the world-renowned Michelin star standards, and it was here when he realized that he wanted to continue to work at that level.

Chef is a specialist in Mediterranean and Italian cuisine, and an expert on the grill, which makes him ideal to take over at RARE, the signature oak wood fire grill restaurant at the resort. As a second-generation chef, Chef Franco learned his craft from his father, starting at age 14, before moving to more formal training. He credits watching his father for hours as the starting point for his career and believes that improvisation often makes for the best meal.
Chef Franco Canzano has taken charge of the culinary profile at Melia Desert Palm, a member of Melia collection. The new Executive Chef hails from Argentina and has worked for five-star hotels and eateries around the world, in destinations that include Buenos Aires, Milan, Paris, Doha, Goa, Amman, and now Dubai.
Taking over at the resort means Chef Franco will oversee all culinary operations, including the private catering for the huge weddings hosted at the resort. “Dubai’s cuisine boasts delicious flavours, and Arabian food in particular blends such wonderful herbs and spices, they make for fantastic dishes.’ He said of the city’s food.
Citing Argentinean celebrity chef, Francis Mallmann and Italian restaurateur and chef patron, Massimo Bottura as his inspirations, Chef Franco is looking forward to creating dishes for guests at Melia Desert Palm, saying: “The resort is stunning, and the views should go with visually delightful food. I’ve got a great team with me here, and I’m excited to bring wholesome flavours and fresh dishes to our regular guests, and new visitors.”

Andrea’s journey with Italian cuisine started in the beautiful province of Cagliari, where he spent his early childhood years helping his aunt make ravioli, wine, bread, and other famous Sardinian delicacies from scratch. It’s fair to say food has been part of Andrea’s life from the beginning. His education started from childhood with his family as his teachers. Moving onto formal culinary education, Andrea graduated from the prestigious hospitality school of Cagliari at 18 and started working at various 5-star hotels of the famous Sardinian Costa Smeralda. His most notable experience was at La Guardiola Restaurant in Castelsardo when he worked as Head Chef, also participating in a cooking competition finishing second after Chef Roberto Petza, who led a Michelin-starred restaurant. He then set his sights on Australia as he knew that the food scene was thriving there and was lucky to learn from great chefs from all around the world. He then moved to London where he met his great friend and current Executive Chef of 7Management Group, Enrico Paiola. Thanks to him he travelled to Dubai and started working at Lucia’s where he now assumes the role as head chef.

Armenia is also the land of great food! I can say no two days were different during my recent stay. Armenian food is lavishly full of flavours – lamb, eggplant and lavash (bread) are the staples. What’s so unique about Armenian cuisine is that it was influenced by traders and conquerors from the Middle East, the Mediterranean and Eastern Europe, owing to the mountainous country being located at the crossroads of Asia and Europe. And so, you have the ubiquitous lavash – a thin flatbread usually leavened traditionally baked in a tandoor just like what we have here in the alleyways of Old Dubai. Or something resembling a kebab. Among the best I discovered was the popular stuffed mushrooms with Sulguni cheese – super!
Armenia…Backpacking enjoying the great food!
The grilled sturgeon fish paired with grilled potato also had me longing to go back to Armenia. What is also equally great is that considering the currency exchange rate, Armenian food is not pricey at all. We spent AED150 in a restaurant and all five of us were stuffed! All told, I will definitely be back to enjoy the good food in the company of good people at a place that takes me back in time. Armenia, a former Soviet republic, is a land of monasteries, being among places of the earliest Christian civilizations. As such, there is no shortage of ruins, centuries-old fortresses and cathedrals, too. Among must-sees is the Khor Virap Monastery, a pilgrimage site near Mount Ararat, a dormant volcano just across the border with Turkey.
Of course, the yogurt soup with garlic and mini bread with meat inside is very delightful as well, and so is the Kiveyan cutlet, which has nuts and ground beef in it. Note that Armenians prefer cracked meat. Lahmajo (or lahmacun) is also everywhere and reminded me so much of Dubai where you find them at supermarkets like Carrefour outlets. This is not surprising at all because lahmacun is a Middle Eastern flatbread topped with minced meat and vegetables, herbs including onions, garlic, tomatoes, red peppers, and parsley – all flavored with spices like chili pepper and paprika, then baked. It also certainly looks like pizza! Yummy!!
The first thing I did upon arriving in Armenia, was to look for a local bus that would take me to the hotel where I was booked at. It’s not quite easy to find the right bus due to language barrier, but the people were helpful and assisted me.

There were three choices for starters – “Caul Me Cheesy,” which is cauliflowerbased pizza with mozzarella cheese, parmesan cheese and garlic oil; “Bounty Soup,” which is roasted pumpkin, carrot, maple, coconut milk and pumpkin seeds’ and “Wanna Poke?” – honey soymarinated yellow fin tuna, sticky rice, edamame, seaweed with spicy aioli.
The selections were divine.

Dessert was a choice between “Cake it Easy,” walnut cake in orange custard topped with an orange sorbet; or the “Snack Bar,” cashew cream, candied peanuts, vegan salted caramel and chocolate ganache. The meal came with a bottled water.
Vegatarian options were available on request.
Desserts would also be a choice between “Cake It Easy” and “Snack Bar.”

Summer Restaurant Week, part of the 25th anniversary edition of Dubai Summer Surprises started on 12 August and runs until 28 August.
Bounty Beets
On the spread was a three-course dinner menu for AED150 per person, the regular price of which could run to over AED200.
There was also a two-course lunch menu for AED95 with choices like “Hot Mess,” savoury slow cooked pulled chicken, corn, carrot, tomato, and jalapeño; “Don’t Kale My Vibe,” a mix of kale, beets, onion, avocado, pumpkin seeds, and herb dressing; or “Noods Bowl,” rice noodle salad with edamame, baby radish, red cabbage, peanut sauce with chicken – for starters. Mains would be either “Smashville,” Nashville-style grilled chicken, with coleslaw, pickle served with air-fried sweet potato; or “Jack Sparrow,” which is pulled BBQ, with jackfruit and coleslaw served with corn on the cob;” or “Curry On,” which is a bit Thai-ish with prawn, peppers, bamboo shoot and green curry served with coconut rice.
Bounty Beets, a themed, casualdining restaurant that sets one in the middle of a cherry blossom right in Le Meridien Dubai Hotel & Conference Centre, has whipped up a great deal for Summer Restaurant Week, a city-wide event in August.
Restaurants’ offers range from breakfast for AED69, a two-course lunch for AED95, a three-course dinner for AED150, and kids’ menus from AED25, plus a bottle of water included with lunch and dinner. This is the second time that Summer Restaurant Week takes place
