One night
“Ancient hamlets and superb dishes” An EXCLUSIVE tour alongside craftsmen to discover the wine and food excellences of Fruili Venezia Giulia!
Day 1 Two days in the hills of the northern Fruili plains, discovering some medieval gems along the way. We begin with the Mont’Albano winery in Savorgnano del Torre which for over 30 years has been practising organic viticulture, the first of its kind in Friuli. We will have the chance to meet Mauro Braidot (“Mr Organic”): he was a pioneer of organic production at a time when the certifications and European regulations which protect it today did not exist. This meeting will be followed by a guided tasting of a selection of organic wines from different vintages, in order to understand that every aspect of nature can influence the final product. Then we’ll move a few kilometres further north to have lunch at the Osteria di Villafredda, nestled in the rolling hills of Tarcento, in Loneriacco. Luca, the chef, is a man of few words but he pays great attention to detail, both when it comes to the produce he uses in the dishes he makes and restaurant’s decor. As can be inferred from the name “osteria”, which means “tavern”, this place has a real family feel to it. L Luca and Barbara’s tavern owes its name to the nearby medieval village of Villafredda. Villafredda is a turreted hamlet dating back to the early 50s
and was the residence of a noble family which hailed from Mantua. A short walk after lunch takes us to the adjacent “Borgo Vecchio” (Old hamlet) of Villafredda. The first day ends in San Daniele del Friuli, the land of prosciutto. An exclusive guided tour will take place there at the Prosciuttificio Prolongo in San Daniele del Fruili. It will stimulate the senses and maybe make you discover a new one! At the beginning of your visit, you’ll be told the story of the Prolongo family, whose members have passed on this ancient trade for three generations. Little by little, you’ll discover all the secrets of the lengthy processing behind this famous product, which is the symbol of the town of San Daniele del Fruili. Experience the excitement of the historic natural ageing rooms and admire the majestic prosciuttos resting on the pinewood shelves. You’ll be able to hear the sound of the ancient sea and mountain breezes as they gently blow through these walls. You’ll touch refined produce, such as marine salt and sugna (the special lard which protects the ham during their lengthy perfecting period). You’ll take in all the smells released in every room. And, last but not least, you’ll get to enjoy a unique food tasting of delicious, thin ham slices which melt in the mouth.
Try them on their own or combined with home-made hazelnut breadsticks. A range of flavours will tickle the tastebuds and enable you to experience the three different parts of the Ham: the fiocco (the lean side of the joint) with its peculiar intensity, the tip, which features a distinctive marbling and the shin, with its soft and sweet flavour. This is an experience for true connoisseurs. The tour will continue with a trip to the town of San Daniele, its historic centre and its churches. Dine at the restaurant of your choice and enjoy overnight accommodation at Mont’Albano Bed & Living - Savorgnano del Torre (UD).
Day 2 The second day begins in Venzone, recently awarded the title of most beautiful hamlet in Italy, with the peaks of the Julian Alps as a backdrop. Founded before the year 1000 and surrounded by a well-preserved walls, this town invites you to discover one of its most fascinating stories in the Duomo di Sant Andrea (St Andrew). Built in the early three hundreds, the Duomo was completely destroyed by the earthquakes which in 1976 destroyed northern Fruili. The 1976 earthquake is, in many ways, a starting point (or better, a relaunch) for Fruili today. If you happen to meet some old man who remembers the event, you may get scared and emotional alongside him. You’ll visit the “Tiere Motus”, an exciting and wellcurated museum dedicated to the earthquake and the subsequent reconstruction, which to this day is an excellent example of emergency and

reconstruction management on a technical and social level. Lunch and a visit to the Colomba Farm’s micro-cheese factory ends the tour. At the cheese factory, milk comes directly from the stable. It is turned into cheese, butter, ricotta and yoghurt. You’ll definitely notice the difference in colour, scent and flavour between the freshly-squeezed milk and the commercial milk you drink at home. You can witness the “magic” of its transformation from liquid to solid as you watch the cream become butter in the butter churn. You’ll get to taste fresh ricotta and warm yoghurt. We’ll take you to the ageing premises, where each and every cheese block is obstinately flipped over, day after day to enhance its flavour and you’ll discover the magic of cheese which changes colour as the days go by. Those who wish to can purchase the cheeses and the other products that were made during the visit.
