Pork's lighter flavor gets along well with the fabulous flavor of winter squash. There are dozens of varieties available, from acorn to pumpkin and turban, all with different flavors. Here, we've mixed cubed steamed butternut squash with black rice, and sauteed thin slices of sweet dumpling squash in a bit of olive oil.
Which squash? Take your pick! Winter squash have a variety of flavors, colors and textures. They're named because they are stored through the winter, and eaten during the coldest months of the year. They store well, for up to five months if stored properly, and are full of nutrition.
