Daisy Durham, a world traveler, catering chef, and retired history professor, presents the finer points of specific cuisines while leading you through recipes from around the world. Dining and discussion follow the lessons. Class meets once a month; four classes are included.

Fundamentals of Baking 4 Weeks $430*

What makes a cake rise? How do I stop the cookie from spreading too much? How do I achieve a flaky pie crust for my holiday pies? Answers to these and other questions about baking and pastry will be answered in our Fundamentals of Baking course. Students will leave with a better understanding of ingredients and their interaction to produce beautiful, delicious baked goods to please any palate. Students will bake quick breads, cookies, pies, breads, rolls and cakes. Sampling them is fun too!

The Healthy Cuisine course will teach the nutrient density of foods and ways to combine them for the highest impact and most delicious result. Bridging the gap between nutrition and culinary knowledge can help translate into healthy and sustainable practices for home and community. Students will learn excellent recipemodification tools, and how to apply them across the spectrum from beverages to desserts.
