SPOOKY STUFFED BELL PEPPER JACK-O-LANTERNS
Turn Halloween into a fun, healthy celebration with these adorable stuffed bell peppers shaped like jack-o-lanterns! Packed with lean protein, veggies, and whole grains, these festive peppers are both nutritious and delicious.

INGREDIENTS
• 4 orange bell peppers
• 1 cup cooked quinoa or brown rice
• 1 lb ground turkey or black beans (for a veggie option)
• 1 small onion, diced
• 1 zucchini, diced
• 1 cup spinach, chopped
• 1 tsp cumin
• 1 tsp smoked paprika
• Salt & pepper to taste
• Shredded cheese (optional)
DIRECTIONS
1. Preheat oven to 375°F.
2. Cut the tops off the bell peppers and scoop out the seeds. Carve little jack-o-lantern faces into each one for a fun Halloween touch.
3. In a skillet, cook ground turkey (or beans) with onions and zucchini. Add spinach, quinoa/rice, and seasonings.
4. Stuff the peppers with the mixture, sprinkle cheese on top if desired, and bake for 20-25 minutes, until peppers are tender.
