With a 1st in Ribs and a 2nd in Chicken, Blitzkreig BBQ came out of the Swampfest in Haines City, FL as the Grand Champion. Southern Bred BBQ, who took 1st Place in Brisket, was Reserve out of 31 teams in the

December 6, 2014 - ALBANY, GA The Quail Classic Event in Albany, GA and the Georgia Barbecue Association joined forces for the first time. The event was held at the Stonebridge Country Club. The teams and judges enjoyed the hospitality of this unique venue especially the different twist on a people’s choice contest with their Hospitality Challenge. David Hair, cooking for the first time in GBA as Dobey Que, got the final call of the day and the Grand Championship. Kerry Sparks of LawDawg BBQ continued her strong run of contests by making finals in both Loin and Pulled Pork along with a 6th place finish in Ribs. This gave LawDawg BBQ the top cumulative score across the three categories in the preliminary rounds and the Reserve Championship. Shirley & Harvey Wills of Fiddlers BBQ won the People”s Choice Hospitality Challenge. H & J Cooking Team took second place with Marky Mark’s Smoking Butts capturing third place. Dobey Que’s Grand Championship Loin entry topped the category with LawDawg BBQ as runner-up and H & J Cooking
Team in third.place. Fourth place went to Old Henry’s BBQ, fifth place went to Real South BBQ and sixth place went to Fiddler’s BBQ. Just Blowing Smoke took seventh place with Hungry Hog BBQ in eighth place. The ninth place call went to Southern Hogs with 92 BBQ/Assassin Smokers rounding out the top 10. LawDawg BBQ had to top Pulled Pork Box of the contest. Hungry Hog BBQ was a close second. Real South BBQ took third place. Fourth place went to Fiddler’s BBQ and fifth place went to Just Blowing Smoke. Southern Hogs grabbed sixth place; H & J Cooking team grabbed seventh and Durt Road Smokers grabbed eighth place. 92 BBQ/Assassin Smokers and Old Henry’s BBQ finished ninth and tenth respectively. In Ribs, it was Tim Coleman and Real South BBQ for the win. Second place went to 92 BBQ/Assassin Smokers. Dobey Que took third place with Southern Hogs in fourth. Just Blowing Smoke and LawDawg BBQ tied for fifth place with Just Blowing Smoke getting the nod on the 4th tiebreaker. H & Cooking Team came in seventh place. There was also a tie for eighth place and it went to the 5th tiebreaker before Fiddler’s BBQ edged out Old Henry’s BBQ. Hungry Hog got the tenth place call

We have done a lot of traveling, met a lot of great folks and have truly enjoyed this path we took when we started our first contest at Sebring. We met some great folks that have meant a lot to us over the years and the bbq family keeps getting bigger. Some of the old school folks are still hanging around. One of the first teams we met was the Smokin Cracker Bbq team and these folks were really good back then and still are a favorite to win any time they show up. Swamp Boys had been cooking for quite a while and has won all over the united states and made a name for themselveswith a good showing on the t.v. show pitmasters. Big Daddy Q was one of the coolest characters I have ever met and after dropping off the bbq scene for a bit he is making a comeback. He recently had some good calls and ended up third overall and will be on top again soon. Two of my favorite people in the whole world and my very good friends today were at my first contest and showed me way back then what great people these bbq folks are. Tony and Rick Wolfe (Wolfe Brothers Bbq) knew I was a rookie and took me in their trailer and were such a big help to me and they showed me what decent folks really are. Tony has been the president of the FBA the last 2 years and when I was president he was vice president and he has put his heart and soul into making our organizationas great as it is.
Everyone needs to shake his hand and say thanks for all he has done. His lovely wife Wendy has been awesome supporting him and being an awesome rep. I met some guys with the coolest name in bbq - Kick the Tire Light the Fire - Mad Dawg, Mike Byrd, Darryl, June Bug and I loved this whole bunch. I would show up at a contest, Mike would guide me into my spot hand me a cold budweiser and always had a smile on his face. Mad Dawg was the chicken king and was a true character. Both these guys were my good friends and both battled cancer and lost hard fights and I miss them. Keith Hall worked with my daughter at Blue Cross and was truly a funny guy and we had a lot of laughs at contests. Keith was getting ready to go to the mideast but passed away suddenly and was a shock to us all to losesuch a character. We have lost quite a few members of our bbq family. Big Jim Whitten from big jims LazyQ passed away a short time ago and all that knew him will miss him badly. Another true bbq character that Janet was close to. Others we have lost that are missed- Betty Hightower, she was in on some of my pranks and never gave me up. I made a great friend during my time in Daytona Mr. Martin Bergeron who became addicted to competition bbq in a hurry. He brought some friends to Perry and his energy and fun loving personality was special. It rained a lot and he brought umbrellas for everyone, they drove everyone to turn ins in a brand new car that got trashed with mud and he kept us all in Captain Morgan cocktails to keep us warm. Martin was only 38 years old and had a massive heartattack running on a treadmill. Very few got to know him but us that did knew he was special. This time of year makes me think of some of these folks that were at Perry that are no longer with us. Sam and Diane Grogan with Just Fer Fun bbq were truly two of the nicest people I ever met. Both were school teachers and loved cooking on green eggs and Sam made awesome boiled peanuts. I delivered peanuts all over
to people he would send them to. Miss Diane lost a hard fought battle to cancer and Sam could not live without her. Sam went to his first contest not long after she passed away and like a true hollywood love story my good friend Sam passed away sitting in his chair at the contest. We have been truly blessed with the friendships we have made in this bbq life. I could go on and on about the great people we meet but everyone knows what I am talking about. Damon and Pops Wooley have been great friends since the day we met. We stay in Wooleyville often and watching Dawson and Jake grow up has been fun. Gordon from GBs bbq has been a good friend and has raised his grandson Robert from a young boy to a young man and that kid has grown a lot! Kenny and Melissa have raised a little girl we have all watched grow from a little girl to a beautiful young lady - We are all amazed at how we have watched Ashley grow up. When my son Cadin was 10 he met Josh from Budmeisters and neither one of them have stopped growing. Both these young boys have become tall young men and we are all proud of them. Nick and Jeremy Brod have grown so fast - Nick has graduated and joined the armed forces and I am proud of these 2 guys. I saw Carly McCoin last week and she has become a star athlete and it has been fun watching her grow up. We see the Hardin boys everyweek so they are like seeing your own kids -you dont realize how fast they have grown. Garrett Elser is one of my favorite people in the world and we love to go to buffets! Ben Purvis and his wife Shannon have 2 of my favorite kids ever, little Ben and Cyndl, and it was fun watching them go up on stage at Lake Wales last week. They won a well deserved reserve grand and watching those two kids will warm your heart. Well Perry is next and then the Christmas break. Safe travels to everyone and happy holidays to all. It’s that time of year again. The time when all of our pits, trailers and RV’s get winterized and take a nap until spring when it all breaks loose again in the Pro BBQ community. This is a time of reflection, and focus on Jesus. A time to pause and remember the year we just had. For me, it was a life-time of memories. This year included 32 competitions reaching from Delaware and D.C., to San Diego, Green Bay, Billings MT, Dallas, Tampa and of course, Kansas City and many other cites along the way. Through it all, I racked up over 43,000 miles on my new Ford F250 and went through 2 sets of trailer tires and a new axel. All in All, I wouldn’t have
changed a thing and I look forward to another year where I can do this again. If you have been to a contest where we hold cook’s church, or you keep up with me on a daily basis on Facebook and Twitter, you’ll know that my emphasis is for all of us to get into God’s word everyday. Reading the bible allows God to reveal His character, His Love, and His desire for our lives with Him. Jesus never goes out of style and the Bible is the greatest book ever written. In it, you learn about Jesus Christ, God in the flesh. Jesus is still a head-liner in our society during this season as much as satan wants our focus off of Him and onto sin and “stuff”. As for me, this new year brings more opportunities to serve Jesus...how, when, what and where are up to Him. I’ll keep close to God everyday and stay encouraged and energized by His love for all of us. These words, and many more, directly from God, give me hope, keep me calm, and keep me focused on what really matters.... All Year LONG! 9 that if you confess with your mouth the Lord Jesus and believe in your heart that God has raised Him from the dead, you will be saved. 10 For with the heart one believes unto righteousness, and with the mouth confession is made unto salvation. 11 For the Scripture says, “Whoever believes on Him will not be put to shame.” 12 For there is no distinction between Jew and
Georgia Barbecue Association Mid - Season Recap
We have 7 contests in the books for the 2014-2015 Georgia Barbecue Association (GBA) season. Three of the contests are long time GBA sanctioned events – ComSouth Hambone Jam in Fort Valley; Grande Creek Pig Jam in Swainsboro and Hawkinsvile Harvest Fest Pigs & Produce. The other four are first time GBA sanctioned contests – Doc Holiday BBQ Championship in Griffin; South Cobb BBQ & Blues Festival in Austell, Deep Roots Festival in Milledgeville, and The Albany Quail Classic. After covering middle and north Georgia in September and October, the GBA will wind up the 2014 calendar year down in South Georgia. The GBA returned to Albany for a new event, the Albany Quail Classic on November 21-22. On December 5-6, we make our second trip to Moultrie for the Moose Lodge #1158 BBQ Cook Off. The GBA, like NASCAR, starts its competition schedule off each year with the GBA State Championships at the ComSouth Hambone Jam in the Association’s birthplace of Fort Valley. Brad Sweet of 92 BBQ/Assassin Smokers who made a hard
charge up the 2013-2014 Team of the Year standing in the second half of the season; got off to a strong start by winning the State Championships. Sweet won the state title in both Loin and Pulled Pork while Bubba Grills had the state championship winning Ribs. LawDawg BBQ, Kerry & Kevin Sparks, captured the Reserve Championship at the event. At Swainsboro, it was 92 BBQ/Assassin Smokers once again taking the Grand Championship. Gary and Dionn Lanton of Holy Smokes returned to BBQ competitions after a year layoff and showed the magic was still there. They scored a perfect 600 in the Ribs preliminary round and went on to win the Reserve Championship. The GBA wound up a busy month of September with the Doc Holiday Festival in downtown Griffin. Robin Bowles of Just Blowing Smoke took the Grand Championship with Rick Godfrey of Dixie Que winning the Reserve Championship. The EpiCenter in Austell sits right next door to Six Flags Over Georgia and is a

A Smokin’ Good Breakfast

Pitmaster Backyard BBQ Studs The best meal of the day is hands down, no doubt about it, breakfast. There is something about breakfast that is just comforting. Whether it is pancakes, waffles, or eggs, I can find satisfaction with a breakfast meal morning, noon or night. I am not sure when this love affair began but I have my suspicions. I grew up never being in very close proximity to my relatives. Every year, usually around the holidays, we would make the five to eight hour trek to see our grand-
parent, aunts and uncles in North Carolina. Over the course of the visit my dad and I would venture out to one of our favorite local (at the time) food stops Bojangle’s where we would get a nice country ham biscuit and my personal favorite, sausage gravy biscuits. Now that might not seem like a big deal but in the small towns I grew up in there was usually a McDonald’s and maybe one other national chain restaurant, which served the obligatory rubber pancakes and the normal biscuit fare. It could have been the food that I remember was so great, but the older I get and the more I am able to reflect on my memories, I have come to understand that it was sharing time one on one with my dad that probably enhanced the flavor of the breakfast foods I ate. Years down the road of life I was given a great gift from my wife, a ticket to attend a BBQ class near our home. This class put me on the road to where I am today in my BBQ life, but that is another story. One of the things we cooked during that class was sausage gravy and biscuits. A fantastic look into how to make one of my favorite dishes. I was excited to put my new skills to the test but time after time I have failed at making this one dish. Sure I could do eggs any way you want. Homemade biscuits are a piece
of cake. Pancakes from scratch, would you like fruit inside or on the side with custom syrup? But that dad-gum gravy has always been a butt kicker. Lumpy, watery, thick enough to mud drywall with it, any way you could screw it up I have managed to do plus some ways that NASA is still trying to figure out. I sort of resigned myself to knowing if ever I wanted that breakfast from my youth I would have to visit a local restaurant. Then, a while back, I was having a casual dinner with some friends and talking about all the different things we had tried smoking when the conversation migrated to breakfast and how yummy smoked bacon and breakfast sausage c o u l d be with breakfast. That is when I had this
DECEMBER 2014 idea of how incredible it would be if my favorite sausage gravy biscuits was made with smoked sausage. Oh my gosh, oh my gosh...oh...my...gosh! Well now this was one of those ideas that I could not let go and no matter how many times I had failed before there was no way I was going to stop until I conquered the lumpy, watery, overcooked gravy that had become my morning nemesis. So with new found resolve I went to the internet to read up on exactly how other recipes called for making the gravy when I came across one that seemed to make the most sense. Normally I would try to make a rue and then break that down over time with low heat and milk. I know I will never

be a chef because the process of making a rue and I just do not agree. This new recipe I found required patients and a little faith but no rue was involved. The following Saturday morning out came the cast iron pan, rolling pin, and all the instruments required to begin my final assault on conquering this task that had plagued me for so long. I fired up the smoker, sliced the sausage and began a light thirty to forty minute smoke until the sausage was just under cooked. With the homemade biscuits in the oven I finished the sausage off in the skillet, added the flour a little at a time until completely absorbed by the sausage. Then I simply began adding milk, over medium low heat, one cup at a time until a nice thick gravy had formed. I added some seasoned salt and pepper and what do you know, victory at last. After buttering the biscuits I scooped a heaping spoonful of this amazingly smoky gravy over the top and marveled at my new found accomplishment. Truth
THE BBQ TIMES be told, I danced around the kitchen like a spaz Slice sausage into 1⁄2” slices and smoke that had just won a lot- for 30-40 minutes. Remove from smoker tery ticket and high fived and place in cast iron skillet. Chop into people that weren’t even small chunks and finish cooking over there because I was so medium heat until fully cooked. Reduce excited. Preheat oven to 450 degrees. In mixing bowl sift together flour, baking powder and salt. Stir in black pepper. Cut in shortening a little at a time using a fork until the mix has pea sized pieces of the mix. Add milk and fold together until dough pulls away from the sides of the bowl. Roll out onto lightly floured surface. Roll the dough out until 1/8” to 1/4” thick. Fold the dough over twice and repeat process. After folding twice, roll the dough to 1/2” thick and cut with biscuit cutter. Place on ungreased baking sheet and cook for 10 minutes or until lightly brown.

fantastic venue for a BBQ contest. Robby Royal of Rescue Smokers took the Grand Championship in the first time event with Just Blowing Smoke taking the Reserve Championship. The GBA sanctioned the long time BBQ competition at the Deep Roost Festival for the first time and the GBA had to go to the tiebreaker for the Grand Championship. Bubba Grills, with Lonnie Smith as pitmaster, prevailed over LawDawg BBQ. Just Blowing Smoke continued their strong run with a second straight Reserve Championship. It came down to the tiebreaker again at Hawkinsville and this time LawDawg BBQ got the nod over 92 BBQ/Assassin Smokers who took home the Reserve Championship. In the Team of the Year Standings, 92 BBQ/Assassin Smokers has built a 71 point lead over LawDawg BBQ. Bubba Grills in in third place and Just Blowing Smoke is in fourth. Tim Coleman and Real South BBQ round out the top five. The GBA will hold a judge training class on January 17, 2015 at the fairground in Jackson GA. OKBS will present the Smoklahoma Judges Recognition Awards and recognize all of the State’s contests that have made the organization’s inaugural year possible. On Nov 7 & 8, 2014 the famed “Lady in Black” Darlington Raceway hosted the second annual Speed and Feed BBQ Cook-off. Thirty nine teams competed in wings, ribs, and pork butts.
