Tender Salsa Beef Give this healthy dinner a Mexican twist! All kinds of resolutions are made at the start of a new year, and most of them involve some sort of healthy habit. Losing weight and eating better often top the list of health initiatives. Individuals who want to revamp their diets may be on the lookout for healthy recipes. “Health food” may evoke images of lots of leafy greens and bland grains, but diners can rest assured there are plenty of tasty options…even beef. Historically beef may not be seen as healthy fare, but when enjoyed in moderation, beef can be part of a healthy eating/weight loss plan. This recipe for “Tender Salsa Beef” can replace Taco Tuesday on your weekly menu. For a kidfriendly option, be sure to use mild salsa. You’ll Need: 1 1⁄2 2 1 1 1 4
lbs beef stew meat, 3⁄4-inch cubes c salsa tbps brown sugar tbps reduced-sodium soy sauce garlic clove, minced cups hot cooked brown rice
In a 3-quart slow cooker, combine the beef, salsa, brown sugar, soy sauce, and garlic. Cover and cook on low for 8 to 10 hours or until meat is tender. Using a slotted spoon, serve beef with rice. Page 4

A Doctor’s Confession to Geauga County ...and Why I Still Do What I Do By Dr. Tad Roediger
Let me start with our family photo ... You know, when I meet people in town they usually say, “I know you. You’re Dr. Roediger. I’ve seen your ad with that picture of you and your family.” Well, perhaps I should tell you a little more about the photo. Let’s start with me, the guy on the left in the photo. I know what it’s like to live with constant pain. As a sophomore on the University of New Hampshire football team, I developed sciatica; an excruciating condition that caused sharp pain in my leg and lower back. I was unable to play football anymore and the pain was so bad that at times it was difficult for me to even walk or concentrate. I was told surgery was the only option to alleviate the condition, but even after undergoing surgery, the pain persisted. On the advice of a friend, I decided to see a chiropractor. After the initial examination, the chiropractor was able to determine that I had several bones out of alignment in my spine, and that they were putting pressure on the nerves in my back. The situation was serious, but after a few treatments I noticed the pain had decreased and I felt better overall. Over time the chiropractic treatments allowed my body to heal itself naturally! MY OTHER CONFESSION IS … I help people live their lives as they are intended to live.
