Bagel Bread& Butter Pudding
Ingredients
3 Bagels 4 whole eggs 2 tsp ground cinnamon ½ Cup full fat milk ¼ Cup Lakanto GoldenSweetener ½ tsp ground nutmeg ¼ cup blueberries ¼ cup whipping cream ¼ cup Lakanto Icing Powder
Method
Preheat a oven to 180c In a small bowl combine the chopped bagels and whisked eggs with cinnamon and Lakanto golden monk fruit sweetener Use a heavy bottomed pan or tray Fill with the bagel mixture Allow the bread to soak up the egg mixture Cook in the oven for 15 minutes or until golden Serve immediately with cream, fresh berries and a dusting of Lakanto Icing Powder. A simple and quick dessert for the whole family with a bagel-y twist!
Gingerbread Granola
Ingredients:
4 cups rolled oats● 1 cup pecans● 1 cup walnuts● 1 cup flaked almonds● ¾ cup sesame seeds● ¾ sunflower seeds● ¾ pumpkin seeds● 1 tsp fine-grain sea salt● 2 tsp ground cinnamon● 2 tsp ground ginger● 1 tsp ground nutmeg● 1 tsp ground cloves● ½ cup melted coconut oil (or olive oil)● ½ cup Lakanto Maple Syrup● 1 tsp vanilla extract● ½ cup large, unsweetened coconut flakes● ⅓ cup goji berries or cranberries● ⅓ cup chopped crystallised ginger or other dried fruit
Method:
Preheat the oven to 180 C . Line a baking tray with baking paper. In a large mixing bowl, combine the oats, nuts, seeds, salt and spices. Stir to combine. Stir in the oil, Lakanto Maple Syrup and vanilla. Turn the granola out onto your prepared pan and use a large spoon to spread it in an even layer. Bake for 10 minutes, then remove from the oven and top with coconut flakes (if using). Stir up the mixture to make sure the granola cooks evenly Return the pan to the oven for 8 to 11 more minutes, or until the granola is lightly golden on top. It will continue to crisp up as it cools. Top the granola with the goji berries and crystallised ginger. Let the granola cool. Store the granola in an airtight container or jar. It should stay fresh for 1 to 2 weeks. Store in the refrigerator for longer shelf life.
Pancake Cake Lemon Curd
Serves 4-6
Ingredients
Pancakes 1 x Shaker bottle of Lakanto Low Carb Protein Pancake Mix No Sugar Lemon Curd 3 eggs 2 egg yolks 1 cup (220g) Lakanto BakingBlend 1 tablespoon finely grated lemon rind ½ cup (125ml) lemon juice 150g cold unsalted butter, chopped ¾ cup Cream, whipped Thin Lemon Slices, garnish 1 Passionfruit, garnish
Method
For the pancakes, make up the whole shaker following the directions - you should have approx. 5 pancakes. Let them cool and prepare the lemon curd. Place the eggs, egg yolks, Lakanto Baking Blend, lemon rind and lemon juice in a bowl and whisk to combine. Pour the mixture into a large saucepan over medium heat and cook, stirring for 2 minutes making sure sweetener has dissolved. Reduce the heat to low and gradually add the butter, 3 pieces at a time, stirring continuously until melted. Continue to cook, stirring continuously, for4–6 minutes or until the mixture is thickened and coats the back of a spoon. Strain immediately into a medium bowl, cover with plastic wrap and refrigerate for 1 hour or until cold. Whip the cream until airy, keep chilled until ready to assemble. Assembly: Place one pancake on the bottom of your favourite platter, place dobs of the lemon curd and cream on the pancake, pushing it over the edge of the pancake slightly. Continue until you’ve reached the top pancake. Drizzle some fresh passionfruit on top and down the side, place the lemon slices on top. Cut into slices like a cake and enjoy!
Retro monte carlos
Ingredients
185 g unsalted butter softened ½ cup Lakanto Baking Blend 1 egg 1 tsp vanilla extract 1 ¼ cup self-raising flour ¾ cup plain flour sifted ½ cup desiccated coconut Vanilla filling 60 g unsalted butter ¾ cup Lakanto Icing Powder ½ tsp vanilla extract 2 tsp milk 1 cup sugar free raspberry jam (homemade or store bought)
Method
Cream butter and Lakanto Baking Blend or until light and fluffy. Add vanilla and egg, mix well. Add sifted flour and coconut. Mix well. Roll teaspoonfuls of mixture into balls and place on greased oven trays. Press gently down with a fork. Bake at 180C for 10-15 minutes until light golden brown. Cool on wire rack. Vanilla filling: Cream butter and Lakanto Icing Powder until light and fluffy. Add vanilla extract and milk. Beat well. Place a teaspoon of vanilla filling on half the biscuits. Top with a teaspoon of raspberry jam. Top with remaining halves and press gently. Dust with Lakanto Icing Powder
Meet Kathrine Peereboom:
Having founded Spectrum Support in 2017, Kathrine Peereboom sits down with Get It Magazine’s Holly Bartter to share her story of family, forward thinking, and the work her charity is doing to educate law enforcement in understanding and managing ASD (Autism Spectrum Disorder) in the field.
For Kathrine Peereboom, the driver for everything she does comes down to family, and as the mother of three boys, her personal experiences with children affected with ASD are interwoven with her day-to-day work.
“My children are profoundly autistic,” Kathrine tells me.
“They are non-verbal, still in nappies and have comorbid conditions that make daily life tasks challenging for them. Learning, discovering, and navigating the world of autism has been at times confusing. There is so much information, misinformation, and vocal social media opinions that I found focusing on what’s right for my boys always allowed me peace of mind.” Now a fixture in disability education for law enforcement across the Eastern seaboard, Kathrine founded Spectrum Support in order to make positive change and influence the first responder field for both her own children and the ASD community at large. “Their safety and the parental fear of what would happen to them if we were unable to be by their side was the guiding force to bridge the educational gap between first responders and the autistic community,” Katherine shares.
“Our success is underpinned by our team and the community who contribute to this vital training along with police officers who actively participate in making the communities they serve safer for autistic and disabled Australians.”
Since 2019, the charity has partnered with the NSW Police Force and Queensland Police Service, which encompasses over 31,000 officers, and Spectrum Support are currently in talks with Victoria Police. For law enforcement officers around Australia, this training is delivered inperson and is highly interactive, which is critical for giving them the hands-on experience needed to apply techniques and methodology when they are out in the field, and Spectrum Support are pioneers in this space. Kathrine explains, “This kind of training is vital for officers and the feedback has been highly supportive and positive. NSW Police also adopted micro virtual learnings, which is our two hour training, compartmentalised into three and four minute intensive video training sessions making it accessible when they are unable to be reassigned from their core duties and responsibilities for days of training. The goal is to ensure every first responder across Australia has access to this training.” There is always more work to be done, and Kathrine is realistic about the path ahead of them, with so much misunderstanding surrounding ASD. “The saying goes, if you met one autistic person you’ve met one autistic person. The spectrum is so great and when you consider co-morbid conditions such as Global Developmental Delays, Intellectual Impairments, Down Syndrome for example, the complexities of autism are increasingly prevalent,” Katherine says. “I truly believe that neurodiversity should be a part of everyday societal education. This begins in day care and continues all the way through to school, work, parliament, and aged care. The greater understanding of autism, opens a dialog which perpetuates change and action, ultimately leading towards an inclusive Australia.”
With her days starting at 5am and jumping into meetings with her team in the US from 7am, Kathrine balances traveling, training and long days in the office with time for her family, and she adds, “It’s a juggle, but we make it work! The boys will always come first - they are so much fun and they will always make me laugh, pull me away from work and demand my attention.” As our interview comes to a close, Kathrine reflects on her proudest career moments to date, and she tells me: “One of the best feelings is after a 2-hour training session, when officers can ask questions about specific situations they currently face. I have often stayed beyond a further hour in the Q&A, which shows how genuine and caring these officers are. They all want positive interactions and outcomes in the field. I am so proud to be making my contribution as Australia’s first Law Enforcement and Autism Trainers.”
