BURGER CRAZY Finally, Kampala Burger Week is here! There are few things as satisfying as taking that first bite of a juicy burger. I mean, let’s be real, the burger must be one of the most universallyloved dishes in the world. Something as simple as a patty in a bun has made us drool for decades. To pay tribute to this exquisite invention, we have persuaded nearly 30 restaurants in Kampala to offer diners two burgers for the price of one during our week-long festival. There’s something seductive about the burger. I can’t quite put my finger on what it is that makes such a simple dish so intriguing and engaging. Devouring a well cooked hamburger is a quasi religious experience, a ritual of sorts. Observe peoples’ faces as they chomp down on a perfectly fluffy bun that holds within it a juicy patty slathered in molten cheese and their expressions are ones of pure

BURGER WOES Aspiring Foodie, Lindsey Kukunda explores her love/hate relationship with burgers as she looks forward to Kampala Burger Week. I sense some of you getting offended already. I think I can even read your minds: “This woman has an opportunity to write about a food whose popularity is only rivalled by the existence of the late Michael Jackson, and she’s using it to hate? Baby, what is you doing?” What I’m doing is illustrating to you that there really is a thin line between love and hate and I want to show you how this marginalised, surly, resentful lover of hamburgers navigates that line. I eat meat, I’m not an alien. I love it when cows (or chickens, or crocodiles) are sliced and diced and ground to be squeezed into a bun with healthy vegetables and unhealthy sauces for my gluttonous consumption. However, over the years I’ve found that eating them has become a real pain in my (parental control activated). My dilemma is so petty I’m afraid to share it. But if there is anyone out there who suffers what I suffer over burgers, I want that poor soul to know they are not alone and I understand

their problem. Herein lies mine: after I passed the age of 30, I find it increasingly difficult to actually polish off a plate containing a burger and her escorts; specifically, chips. It sounds mundane I know, and I understand anyone who sneers at my pain. But it bothers me that I can no longer finish a plate of a burger and chips. I can either finish the burger and leave the chips. Or finish the chips and leave the burger. Or have a bit of both and leave a bit of both. But the days of being able to polish off a whole plate are long gone. You must be wondering what the problem is. Would it kill me to eat what I can and leave what I can’t? Yes. It’s called OCD, people. I like to finish what I’ve ordered in the location where I’ve ordered it (so you can skip the advice I knew you were about to offer about ordering a doggy bag). There is also an element of greed. When I order a hamburger I want it to be as close to the genuine article as

Experience has taught me that when I scrimp on money, I end up with a burger whose bun is so hard I have to dismantle the whole arrangement and consume the patty alone with a knife and fork.
When I eat a hamburger, I’ve usually paid more for it than a writer should so there is an anxious voice in my head reminding me that I’m eating money which, thanks to my post-30 stomach mutation, I can’t even finish. Which is why I'm really looking forward to the Kampala Burger Week in May. The thing about specialised events is that they're flexible. I'm hoping that in a desire to advertise every element of their menus revolving around burgers, at least one or two restaurants will serve only a burger with nothing on the side to distract me from the main course. And when I say nothing, I mean nothing. Not even a leaf of lettuce, damn it. Except for perhaps, another burger. I understand there's an offer of two yummy burgers for the price of one. I know what you're thinking. "If she can't finish a side order of chips, how's she going to finish a side order of a whole burger?" I'm showing up with a doggy bag. My OCD knows when it's time to look the other way.

A TASTE OF BELGIUM Yummy writer Charlotte Beauvoisin is taken on a whirlwind tour of Belgian fusion cuisine at the strikingly restyled Le Chateau Brasserie Belge on Quality Hill, Ggaba Road. It is a bright tuesday afternoon and I’m thrilled to find myself seated in the airy dining area of Le Chateau Brasserie Belge. With innovative fusion menus and new specialities and events, masterminded by the new Executive Chef Paul Francis Leysen, it is refreshing to see how after twenty two years in business, this stalwart of the Kampala dining scene is back in the spotlight where it deserves to be. Under the thatched roof of the main dining area, I glance up to see daylight filtering through the skylight window and take a minute to appreciate the extensive refurbishment and clever remodelling of the restaurant’s interior, gardens and patisserie. Chef Paul’s passion for everything food is obvious as he comes bounding out of the kitchen for our interview. We immediately get chatting and he excitedly tells me

about developments at Le Chateau Brasserie Belge. A good ten minutes pass before we remember we have yet to introduce ourselves. “At Le Chateau Brasserie Belge, we use Ugandan products in a Belgian way,” he tells me. “Smoked Nile Perch with mango and passionfruit is a popular fusion dish. A fusion menu for a Japanese Belgian function, for example, will feature Japanese dumplings with Belgian endives and pheasant and cognac sauce.” Eager to take me through the menu, Chef Paul points out Le Chateau’s Belgian delicacies like Uganda’s first organic dry-aged beef, which is so much more tender and flavoursome than the beef that local butchers sell. Chef Paul also highlights two of the restaurant’s house specialities: the potted pork ‘rillettes’ and "the best Bearnaise sauce in town”. Another
item he insists cannot be overlooked, as it is the “best in East Africa”, is the restaurant’s steak tartare. Chef Paul traces his passion for food back to his earliest days. “When I was a child, every Sunday my grandma cooked for over 30 family members. The occasion started at noon with an aperitif and carried on until 8 o’clock in the evening. My dad loved taking us to restaurants and I knew by the age of eight that I wanted to be a chef.” By the age of 12, Chef Paul started hotel and catering school in Leuven in Belgium. By the age of 17, he was catering for three dinner parties every weekend. “I used to be an amateur opera singer too, but I’m too slim to be Pavarotti!” Grins Chef Paul. I’m keen to hear Chef Paul’s advice to young people considering a career as a chef. “Go to school and get the basics right and work while you are studying,” he says earnestly. “You can teach yourself how to cook but having the right techniques will save you time. I’ve learned my best tricks from experienced restaurant staff, not teachers.” On the last weekend of every month, Le Chateau hosts a ‘Bottomless Brunch’ (based on the idea of the Belgian ‘Bottomless Barrel’). From noon until four, guests can enjoy a fabulous Belgian lunch buffet and unlimited sparkling wine. For this special occasion, Chef Paul has introduced a new concept for Uganda, the ‘Pig in a box.’ Here,
a suckling pig is cooked in an aluminium-lined wooden box by a barbecue fire that sits on the steel lid of the box. This slow cooking process originates from China and produces a crispy skin. “It’s similar to the Hawaiian way of cooking, in which the meat is wrapped in banana leaves, buried in the sand and cooked from above by a fire” Chef Paul explains. During May and June this year, the restaurant will host special events such as a fish and seafood evening. The popular ‘Moules et frites’ (mussels and fries) night resumes in September and will be held on the second Thursday of every month until April. “On the last occasion, one guest travelled all the way from South Sudan to arrive just in time to get the last portion. She didn’t kiss me, but it was close!” Chef Paul laughed. It’s been an intense few months for Chef Paul who arrived in Kampala just four months ago to manage Le Chateau Brasserie Belge, the patisserie and bakery and La Patisserie in Acacia Mall which serves thirty two different types of gelato. With all this going on, does Chef Paul doesn’t have much time to relax. “I’ve had one day off since I arrived in Uganda but my idea of relaxation is dancing the samba at carnivals in New Orleans and Rio de Janeiro!” He says. However, with such passion for food, it’s hard to imagine this Executive Chef away from the kitchen for very long.

HEALTHY EATING New restaurant reviewer David Cecil visits Brisk to try a few of their dishes and discovers hearty portions of fresh, delicious food. The place is packed, with cars parked outside halfway to Gulu. Luckily, Brisk has plenty of hidden pockets, so the maîtresse d’hotel can pull out tables and chairs from unexpected places. Besides a discretely-lit upper gallery, there is a lively pub, plus a shadowy backroom bar with a couple of quiet corners for eaters who like to chow in private. The main dining rooms look like they can cope with around 80 mouths and there is only one other table free – not bad business for midweek. The well-to-do crowds are queuing patiently around the block for a Thursday meat buffet that spares little of the farmyard, offals and all. The chef de maison himself presides over the trays like a proud zookeeper in the crocodile pit. It is busy but not noisy. A soul-jazz band croons gently in the foliage. Live music in restaurants can cause nervous digestion, but here it feels just right - loud enough to drown out any awkward pauses in conversation yet quiet enough to save you from screaming. Being responsible reviewers, we order from the menu (though I am putting my name down for the meat buffet article next time). Brisk’s à la
carte is largely carnivorous with a wide complement of big salads and a dozen different cakes for the sweettoothed. ‘Healthy-eating’ has two meanings in restaurant lingo: ‘good for you’ or ‘large portions’. Brisk does both at once. The menu has an impressively wide range of liqueurs and a focused, confident cocktail selection. A Whiskey Sour is very easy to get wrong, so I test them. Orthodoxy prescribes a mild rye whiskey to avoid excessive flavouring; Brisk use a sweet bourbon but with less syrup in the mix – this works. I am very grateful for the finish of fresh beaten egg white (often-neglected) and the surgical twist of orange peel without pith, oozing fragrant citrus oil into the sour nectar. Thumbs- and bottoms up. The relaxed, friendly staff spin down our starters in good time: fish soup and chicken kebabs. The soup is more of a substantial stew, with generous chunks of tilapia and fresh celery sucking up the addictive, lemony stock. It is somewhere between Provence and Thailand; fresh, bold ingredients with subtle spicing. The petite chicken kebabs have lived in their marinade long enough
to emerge very tender, but not overwhelmed. The chicken is a small, defenseless animal and is all too often overpowered in such situations. I guess at the notes in their marinade mix: ginger, garlic, lemon, cinnamon, cumin, cloves? There may be a lot in there, but this is a subtle little taster, with a thickly-dressed salad on the side. We barely have time to refresh our palates with house wine (inexpensive and inoffensive), when the mains arrive: pork chops and salmon steaks. The chops are lightly seasoned and pan-fried moist, flaky and firm within. The unobtrusive approach speaks of a chef who trusts his butcher and doesn’t need to go wild on the spices. I sometimes like my swine cooked a little rarer, which is safe with fresh pork, but this is not overdone. The fries on the side are crispy and yielding, while the onion sauce complements the mild meat with sharp soy. Like the pork, the salmon is not over-seasoned. A couple of substantial cuts are lightly floured and fried, retaining their natural oil, staying solid and juicy on the palate. We’re a long way from the coast, but this does not taste of freezer. Draped
casually on the fish are some oyster mushrooms. With no additives and cooked in minimum oil, these woody, musty fungi have a powerful presence all of their own. The mash potato has a strong tang of ghee or parmesan, while the optional mushroom side sauce is actually a wicked, velvety cream. The bed of fresh, steamed vegetables that accompanies both mains is a welcome respite from these rich flavours. At Brisk, the main ingredients speak for themselves. The chef sources well and doesn’t mess with nature’s creation. This is not pretentious, complex food, but solid fare that understands its respectable Ugandan clientele. At the same time, the quality of produce will please a palate from anywhere in the world – and challenge their appetite. This is a joint that caters for all kinds of patrons: boozers, gourmands, nibblers and cake-lovers. It’s oddly relaxing to be seated right next to a lively bar, without having to endure the noise, thanks to clever architectural design. A lively dining experience for healthy eaters – in both senses of the word ‘healthy’.

A FRESH CUT Malcolm Bigyemano sets out to discover how Fresh Cuts changed not only the meat industry, but the culture of eating meat in Uganda If you get the names Fresh Cuts and Quality Cuts confused from time to time, it is because the similarity is not a coincidence. In 2010, Fresh Cuts was incorporated as industrial scale spin-off of Quality Cuts, a popular Belgian butchery on Ggaba Road. Yummy Magazine sat down with Fresh Cuts Managing Director Eric Tin, as well as Wholesale & Export manager Mike Mugire to talk about prime cuts, burgers and meat in Ugandan consumer culture. “We observed that there was an increasing demand for professional butchery which was not present here in Uganda,” Mugire explains when asked about the success of the Fresh/ Quality Cuts enterprise. By and large the Ugandan meat market was and to a certain extent still is dominated by “machete butchers”: road side butcheries with large slabs of meat hanging from hooks being hacked at willy nilly with machetes, as flies hover expectantly over the scene. Mike says the alternative for high end restaurants and hotels was expensive imports for professional cuts which were not cost effective for the city’s restaurateurs.
Mugire explains that the key to professional butchery lies in consistency and adherence to international standards. “Take for example a T-Bone steak, it’s a T-Bone steak whether you’re in Paris, London or Buenos Aires,” Mugire tells us, underlining the importance in how the meat is cut and not only where the meat is sourced. “[At Quality Cuts] we are 22000 certified which is very important”, emphasises Tin, referring to the ISO 22000 certification which ensures that strict measures are taken to ensure a high standard of quality as well as hygiene is observed at every stage of food production. It is this certification that qualifies food produce for export. One aspect of these strict measures is in what is called the “cold chain”; a rigorous system of storage, refrigeration and quality control of meat after slaughter, during transportation and in distribution to outlets. According to Mugire, Fresh Cuts’ below-the-line clients (restaurants and hotels) value high quality, while the average above-the-line consumer (individuals buying for home
consumption) is more price sensitive and willing to sacrifice quality for a bargain. “It’s about changing perceptions,” he says of increased appreciation for high quality meat in the Ugandan community, “what’s important is that we are caught in the bubble when that perception changes”. Currently when it comes to quality meat in Uganda, the perception is tied to class and inaccessibility, something that has hindered the popularity of hamburger patties, one of Fresh Cuts’ meat products. “Maybe people are making their own burgers,” Mugire says, noting that the low turnover of burger patties at supermarkets stands opposed to the high sales volumes of their minced meat product. Minced meat is a popular ingredient in samosas, a snack perceived as more Ugandan and less associated with foreignness and therefore, wealth. Tin, however, is optimistic that Fresh Cuts can make burgers cross over into the Ugandan mainstream, as they did another prime product of theirs: sausages. “We had a breakthrough at the Uganda Manufacturers Association
fair,” Tin explains. “We were exhibiting our Fresh Cut sausages to small business owners and they were immediately sold on the idea”. Whereas sausages in the past were a symbol of privilege, associated with wealthy elites: they are now a popular part of Ugandan street food fare. “We are now encouraging rollex vendors to add two sausages in the middle,” Mike says of using the popular egg-andchapatti wrap to popularise sausages. He sees the rollex as a sign that the burger could become a mainstay of Ugandan culture. “If you study Ugandan culture, it has really changed… the consumption of snacks has really increased,” Mike says, attributing to changing lifestyles, more time spent in transit and more time spent on one’s feet. Whereas eating while standing was once taboo in many Ugandan cultures, in recent times, the rollex has become popular as a quick, filling, mobile meal. Few meals are quicker, more filling or more mobile than the hamburger, and for that reason, its future in the Ugandan market is as bright as Fresh Cuts’.

Burgers. Big, meaty and juicy. And with loads of caramelized onions. My mouth is watering just thinking about it. That's how I like my burgers. Please do not give me a skinny patty. I will NOT be happy. The patty is the star of the dish! Using quality meat or mince is a must. And we simply cannot compromise on fresh bread... There is nothing worse than a burger with stale bread. There are lots of places in Kampala with pretty tasty burgers, but sometimes you know exactly what you want and how you want it. So I make a pretty mean burger at home. I tend to cook with my daughters so we marinate the meat at least two hours beforehand so the spices infuse more. And then they can make little patties in fun shapes to be eaten on the side. The first bite of a good burger should make you smile and sigh at the same time. You can always add mustard, mayonnaise or your preferred sauce. Happy cooking and bon apetit! The Classic Cheese Burger Mix your beef mince with egg, fresh breadcrumbs, salt, black pepper, garlic powder, Worcestershire sauce and parmesan cheese. Shape into patties and grill on a griddle pan for about 6-8 minutes each side. Melt a slice of cheddar on each patty and lightly toast the inside of each bun. Assemble adding caramelized onions, sliced tomato, lettuce leaf and gherkins. Spicy Chicken Burger Slice open boneless breast/thigh and stuff with mozzarella cheese. Drizzle with olive oil and season with salt, pepper, paprika and chili. Then grill either side for about 5 minutes. Next, grill your bacon and toast your buns. Assemble topped with bacon, sliced onion, tomato and avocado. Yum! Cheesy Mushroom Burger I can eat mushrooms everyday. Absolutely love them! Combine two cups of fresh chopped mushrooms with two eggs, dry breadcrumbs, minced onions, all purpose flour, salt, black pepper, thyme and grated cheddar cheese. Shape into patties, grill with sunflower or olive oil 4 to 5 minutes each side until crisp and nicely browned. Serve on toasted buns with lettuce and tomato slices.

THE DRUNCHIES The meal after the club is not a treat, it’s a necessity; but where do you get it at 3AM? Drinking is work. Dancing is work. Staying on your feet for 6 - 8 hours doing both is work. Ask your body the morning after and say it isn’t so. Despite what you may have been told about lining the stomach before a heavy drinking session, work truly does burn fuel and hence it is just as important to top up that lining at the bookend of your night out (at least in my entirely un-medical opinion). To help you on your quest to fuel your body after hours of exercising both your legs and drinking arm on the dancefloor, I have taken it upon myself to provide you with my personal guide to unbeatable nighttime Kampala eateries. The 24 hour restaurant thing in Kampala only holds true for a few local chicken chains that know you need something deep fried at 3AM. You squint in the bright fluorescent lights at I Feel Like Chicken Tonight or Crazy Chicken, your eyes unaccustomed to the glare after hours spent busting moves in dodgy lighting meant to limit inhibitions. You order a chicken burger and open your mouth
impossibly wide in order to get both layers of bread and patty in a single bite. The dry buns and fried chicken breast taste amazing and remind you that you have not eaten for what feels like a whole week. But then again, maybe you don’t feel like dry buns and fried chicken. Parked outside Club Play in Industrial Area is a food truck named after the most infamous crab patties, but best known for their generously thick beef patties. You may not see the Krusty Krab Food Truck when you first roll up to the club; maybe you are distracted by that person you’ve only ever seen on Facebook standing in the line outside. Only when you stumble out a few hours later does it appear before you like a oasis mirage in a scorching desert: a food truck with a tiny crowd huddled around the window, everyone clamouring for something greasy. The El Chapo Burger is a serving of two beef patties stacked with a slice of cheese and optional sauces for the kind of endless meatiness you need to soak up the sins of the night. Alongside it
is The Silverback Wrap, a fail-proof ensemble of shredded meat, chips, diced lettuce and optional sauces wrapped in a chapatti. Apart from the chapatti, it sounds like a shawarma right? No. It’s a Silverback wrap. Repeat after me: Sil-ver-back wrap. To get yourself a shawarma that identifies as a shawarma in the small hours, you probably have to go to Panamera. Panamera has been an institution of Kampala nightlife for the last five years and has come to be known for many things, but surprisingly not for its shawarma. Remember when they used to charge 10,000UGX at the entrance which was redeemable in form of a drink at the bar? Instead of the drink, I would often get the chicken shawarma; wrapped in warm pita bread packed full of chicken, a garden salad, french fries, a tangy sauce that must be tahini and topped off with the optional dosage of akabanga, the hottest chilli oil on the streets. But maybe all this food from strange lands does not cut it for you as you would prefer something closer
to home. Fear not! Your favourite Rollex stand does not have a sign that says “Open From 9AM - 7PM (Monday - Saturday)” because your favourite rollex stand is open when it’s open, okay? For this reason, a cruise through Ntinda, Wandegeya, Bugolobi’s Middle East and other usually reliable Rollex spots in the wee hours of the morning may not always be fruitful, but it is worth the trip when they are. Wrapped in a pre-fried chapatti (which is then sort of re-fried) is a salty omelette that stands in for the breakfast you will be missing in the brighter hours of the morning. The post-club meal is often the last adventure of the night and a determiner for your next morning. It soaks up the alcohol in your system, gives you a dose of energy and generally makes the hangover the morning after more bearable. It is not a treat, it’s a necessity, and if you know where to look, you may not have to call in sick at work.
