PIZZA PRONTO The Nairobi Pizza Festival is back! Once again, from 26th September till 2nd October, food lovers can step out and enjoy 2 for 1 deals on pizza for one whole week.
P
izza is one of those things that everyone seems to love. I personally believe cheese is a daily necessity and accounts for over 50% of my happiness. I therefore view pizza as a gift from above. Whoever first ladled rich tomato sauce onto a crusty base and topped it with herbs and cheese holds a special place in my heart! There are toppings and styles to suit all taste buds and occasions, be it a rustic thin crust margarita or a sinful double pepperoni with stuffed crust. This month, we show the pizza some love and have it served hot, in twos and washed down with a cold one! Given pizza’s Italian origins, we were truly honoured when the Italian
Cultural Institute came on board to endorse our festival along with the Kenyan Tourism Board. Both expressed their desire to promote dining culture in Nairobi and we are proud that this festival is seen to do just that. With over 30 restaurants to choose from and seven solid days to embark on this culinary adventure, it couldn’t be a more perfect opportunity to explore new dining spots or simply revisit old favourites. As always, this edition of Yummy is your own personal run down on all you need to know about the festival from page 33 and a lot more. Chef Ray’s love for all things Italian is evident as he gives us his two cents on the perfect pizza on page 41. Our
Editor, Soni, prides herself on culinary discoveries and this month discovered a Nyama Choma and Sukuma Wiki pizza which apparently is a thing of beauty on page 42. Finally, Payal and Shivani give us a glimpse into trendy twists on Italian classics on page 55. ALL THAT JAZZ The Safaricom International Jazz Festival has been working with The Art of Music Foundation and Ghetto Classics to transform lives through Jazz and has led to over Ksh 19 million being raised for the Ghetto Classics.
I
n the compound of a Catholic Church in Korogocho, a group of young teens play musical instruments, alternately picking out melancholy soul tunes and upbeat jazz riffs. It’s not the kind of music you’d expect to hear in these environs as Korogocho is a large slum north east of Nairobi. But this no normal set up. In the depths of the slum, not far away from the infamous Dandora dump site, lies a facility that is the home of Ghetto Classics. The programme aims to provide young people with music education as an alternative to the pitfalls of life in the slum, employing classical teaching methods to introduce at-risk youngsters to the world of live music performance. Launched in 2008, Ghetto Classics has benefitted about 1,000 teenagers to date from Korogocho, Dandora and Mukuru kwa Reuben. Each week 650 members of the programme receive music training from volunteers courtesy of The Art of Music Foundation, which set up the initiative to keep the pre-teens and teens of Korogocho out of trouble and help them create a better future for themselves and their families. The Art of Music Foundation have succeeded with a little help from you and me. All proceeds from the wildly

popular Safaricom International Jazz Festival have led to over Ksh 19 million being raised for the Ghetto Classics. It’s a first of its kind sponsorship, made possible by Safaricom and other partners since February 2014 when the festival was launched. “We’ve been able to buy instruments, pay school fees and rent for some of our members and even remove some of the girls from environments that exposed them to sexual abuse. It has become much more than music; we’re transforming the community,” Ghetto Classics Co-Founder Elizabeth Njoroge says. The Ghetto Classics are slowly earning recognition and respect both locally and abroad. They not only performed for President Uhuru Kenyatta upon invitation to State House, they also had the opportunity to play for the Pope when he visited Kenya in November last year. “When we held our first practice session at St. John’s Catholic Parish in Korogocho in 2008, I didn’t think we would get this far,” says Ms. Njoroge, who is widely regarded as a surrogate mom by the children in the Ghetto Classics program. Watching her with them, it’s easy to see why. She’s their champion, someone they look up to and someone who by sheer determination has opened up opportunities for them to
meet and play alongside some of the world’s biggest jazz musicians. For many of them, never in their wildest dreams had they imagined that they would one day be seated in a room with Hugh Masekela. “I told him about some of the kids’ backgrounds and he was amazed by how far they’ve come in the last seven years,” Elizabeth adds. It’s also easy to see why the Safaricom Jazz Lounge is so important to them. Who wouldn’t want to watch Hugh Masekela live? He’s shared the stage with some of the biggest names in music, earned a reputation for peppering his performances with hilarious anecdotes collected over a career spanning more than six decades, and on 12th August 2016 threw Nairobi’s jazz lovers into a frenzy when he took the stage at the Safaricom Jazz Lounge. With an energy and zeal that belied his 77 years, Masekela commanded the stage for almost two hours and played some of his greatest hits – including the highly anticipated Grazing in the Grass and Stimela – to an enthusiastic audience. In between songs, the outspoken trumpeter entertained the audience with stories that gave a glimpse into his colourful past, delivering a rib-cracking monologue on modern Africa’s preoccupation with Western
Culture (women with weaves beware), his 30 years in exile and inspiration behind some of his music. Preceding his performance were amazing sets by Nairobi Horns Project and Mwai and The Truth, two of Kenya’s hottest jazz bands right now. This was no ordinary jazz performance: this was undoubtedly one of the best shows put together by Safaricom. To the average music lover, the concert is a great chance to meet up with friends, enjoy some world-class entertainment by local and international jazz maestros, and indulge in a wide selection of food and drinks (Kenyan, Ethiopian and Asian cuisines were great attractions this time). The festival comprises of a series of events that bring together artists from all over the world for a celebration of live jazz music, including the Safaricom Jazz Lounge, the newly introduced monthly jazz nights and the climax – the annual Safaricom International Jazz Festival itself. For Ghetto Classics, this celebration of music goes beyond the singing, dancing and laughter, to a lifeline that is transforming their lives. This is not just another concert, this is music that moves… If you don’t believe it, you need to go and see it for yourself.

CHIANTI DAYS Charity Keita continues her Italian summer tour amidst the green hills and vineyards of Chianti, one of Italy’s most famous wine producing areas.
T
o Italians a one week holiday by the beach in July or August is considered a quasi human right. During the hot summer months city dwellers move en masse to the beach, liberating the cities for the camera-wielding hordes of tourists. Up and down the coasts, sandy beaches mutate into colourful mosaics of beach towels, sun-beds and umbrellas. At lunchtime, seaside restaurants overflow with hungry people clamouring for their daily plate of pasta - waiting times can be hours long and those lucky enough to live near by, pop home for a quick three course meal. Lunch is wrapped up with an espresso and when the obligatory two hour digestion period has been observed, everyone files back to the beach to paddle about and see out the last scorching rays of the sun. For those who find the bronzed throng of beach humanity a bit much to stomach there are alternatives: escape to the lakes, escape to the mountains or, in the case of one

lucky Miss Charity Keita, escape to the gentle green hills of Chianti and wile away the days in the company of friends and many a glass of delicious local wine. Tables laden with colourful salads have been the hallmark of my summer so far. Caprese salads made with tomatoes freshly-picked from the garden and mozzarella delivered fresh from Naples are sprinkled with roughly torn leaves of basil and drizzled in bright green local olive oil; sweet melons are draped in thin salty slices of cured ham; cold barley tabboulehs add bulk to the meal and multi-tonal green salads keep everything fresh and light. Luncheons are a long-drawn out affair that start around two and end after four. In order to maintain the fine balance between hydrated and tipsy, everyone knocks back chilled glasses of “bevanda”: local white table wine watered down with sparkling water and ice. There’s not much point in trying to get anything done before five: every shop in every town in Chianti (and much of Italy for
that matter) is closed between one and four. Those who have pools can swap their siesta for an afternoon lounging session and children frolic in the shallow end, under the bleary yet watchful eyes of half drunk adults. At around 7:30, when the sun is still in the sky but the shadows are growing long, people emerge from their slumber and head to town for an hour-long “aperitivo”: glasses of Campari or Aperol spritz accompanied by wooden boards laden in hams, salamis and cheese. When everyone is done with catching up, they head home and wishfully hope that for once dinner will be ready before 10:30 and that maybe they’ll be in bed by midnight. The next morning the cycle begins afresh, the days blur into one another, before you know it a month has passed. Time moves quickly, autumn is behind the corner with the promise of harvests, wine picking and a year studying in Florence. Best get back to enjoying it while I can!

CHEESE PLEASE! Sirimon Cheese is working to entice the Kenyan palate with great tasting cheese to all of Kenya from their studio in Nanyuki. We learn about their cheese making process and how they got started.
A
team of Nanyuki-based cheese makers have taken it upon themselves to create what they believe will become the reference point of quality, affordable Kenyan cheese. The Sirimon Cheese Studio is a state-of-the-art cheese processing plant located at the foot of Mt. Kenya. From the company’s inception three years ago the operations team has been led by Khilan Shah, a selfproclaimed foodie and the Sales and Marketing Director, Nirav Nathwani, the Finance Director who combines his engineering and accounting skills, and finally Shamas Velani, the CEO who’s passion for precision and detail is evident in their crafted products. "Kenya is full of great dairy cows and there is so much potential to leverage the industry to make cheese worth talking about,” says Shah, the Sales and Marketing Director. Sirimon Cheese, Shah tells us over a cup of coffee on the rooftop of Tune Hotel, is named after the river that flows down the slopes of Mt. Kenya and provides water to all the surrounding communities. Being an innovative small company, Shah explains they are eager to stand out
from the crowd and are currently experimenting with some very interesting cheese lines in addition to the Cheddar, Mozzarella, Feta, Paneer, Gouda & Halloumi currently being sold in outlets such as Carrefour and Zucchini. “The market loves our product.” Shah smiles, “We have seen our sales double year on year and we expect similar growth for the foreseeable future”. Every morning dozens of smallscale dairy farmers bring their milk to the plant’s doorstep. “We work directly with the farmers, we want a mutually benefiting arrangement,” Shah says. Milk collection, weighing and the rigorous quality control for every suppliers’ milk happens from 6:30AM till 10:00AM every day. Then the twenty-two strong work force, trained by various specialists from around the globe, turn the white liquid into golden heaven. Shah, after three years in the business, knows the process like the back of his hand and enthusiastically takes us through it. The quality of milk is the starting point. “Most of our products are made using full fat milk. We try and keep the minimum butterfat content at 3.8%, which
gives the cheese a creamier texture and better flavour.” The company uses traditional methods to make cheese has also invested in modern cheese making technology from Holland. The milk is pasteurized to kill disease causing bacteria before it is poured into massive oblong tanks known as Vats which are steam jacketed at a constant temperature. Microbiological ingredient Rennet is added to form the milk into a jelly looking substance which later forms the curds when reacting with culture, another ingredient. The machines control the temperatures and the PH levels of the milk as well as the timing during the curd cutting processes. The curds are then filled into moulds which are lined with cheese clothes and pressed overnight under hydraulic presses to help form the cheese blocks and to remove excess ‘drain whey’ , a liquid mixture rich in protein. Cheeses are then turned in the moulds to ensure uniformity in texture before they are brined or wax coated then transferred to the ripening rooms to mature under controlled humidity and temperature. Once matured, the cheeses are then
precision cut, vacuum sealed and placed in the cold room where they are stored at a constant 4 degrees Centigrade. "We want to change the perception that cheese is only for a certain palate. Cheese should be enjoyed by everyone, in a variety of ways.” Shah tells us. “We are happy when we are able to provide good quality cheese to the market at an affordable price and can still maintain a good relationship with our milk suppliers.” The Sirimon team freely gives their milk suppliers the ‘drain whey’ as feeds to pigs and cattle. “Our suppliers have also seen elevated levels of happiness from the cows with our high protein, high energy forages,” Shah adds. The future for the Sirimon team of seems bright as they mark their name in Kenyan history. “I’m all for efficiency, but when the wheel needs to be reinvented, I’m happy to do it. Sometimes you have to shake things up to get a better result,” Shah concludes. inding the perfect pizza is sometimes as rare as meeting an honest mechanic in Nairobi or sharing a conversation with me where food is not mentioned – very, very rare. ‘Perfect’ may be a simple word, but it carries the tremendous weight of expectations, success and failures. In order to make a perfect pizza, does one need to follow a purist’s take: Italian double zero flour, a lot of patience, and prepared by the hands of a master pizzaiolo? Inspired by childhood memories of making pizza with my father, I recently wrote about the three life lessons I learned from pizza-making in Capital Lifestyle: 1) Simplicity is best when it comes to ingredients and choosing to be more deliberate with what’s important in life 2) I didn’t want to ask for help when I made my first pizza, but it’s okay to ask because
learning to receive it is a humbling experience that truly empowers you; and 3) when you toss the pizza dough in the air you may not know how things will turn out but it’s important to remember not to dwell on uncertainties and forget about how great something can actually turn out. Thanks to my recent visit to Spring Valley Oven, I’m adding another life lesson to the list: find perfection in the imperfect. Located in the Spring Valley Shopping Centre on Lower Kabete Road, the bright and airy casual eatery has grown into quite the neighbourhood destination, especially for the incredibly delicious and invigorating smoothies. Made with real fruit, nut milks, leafy vegetables and even Chia seeds – the extensive selection of velvety smoothies are so packed with healthy ingredients that they could pass as

dense frozen yoghurt. After several minutes of preparation time (our smoothies arrived halfway through our meal), removing the occasional fibrous goodness from your teeth was quite common. My favourite was the house specialty - Almond Berry with almond milk, yoghurt, mixed berries, watermelon, banana, and almond butter. Here, you’ll find much of the design inspiration originated from the restaurant’s immediate surroundings. From building around an old tree and incorporating it into the space, to the raw and rusted metal artwork of bamboo and trees that hang on the walls; Spring Valley Oven’s space is not only anchored by the large woodburning oven but also its surrounding lush nature. My companions and I began with a couple of starters. The Thai Sesame Chicken Salad arrived with grilled
marinated breast that tasted of a combination of hot aromatic spices and looked like Tikka. Not sure if the toasted sesame seeds in the simple vinaigrette and the deep fried wonton skins were the reason behind naming this as a Thai-inspired flavour profile; but the salad definitely tasted a lot better than how it read. The Falafel Salad arrived under-seasoned and it’s dense and dry texture resulted in deep-fried balls that easily crumbled. Then there was a soggy and forgettable Spaghetti and Meatballs that arrived with the specialty pizzas: the house special SVO Supreme and Seafood. Both pizzas arrived hot, deliciously yeasty, thin and visibly crisp about the edges. Loaded with pepperoni, beef, ham, onions, mushrooms and peppers; the SVO Supreme was a marvelous sight and had the flavours to match. However, I missed the crispiness from the
majority of the pizza. Aside from the edges, the dough failed to crisp under the delicious layers of toppings. The Seafood pizza topped with prawns, tuna and calamari was surprisingly pleasing in both taste and smell. The prawns and calamari were not overcooked and carried a subtle flavour of the strength of the woodfired oven. The reason I am talking-up the well-executed toppings, well – the pizza crusts themselves didn’t quite deliver. In short, I longed for a crispy thin crust in both cases (the Seafood pizza was even softer than the SVO Supreme). That’s how I found the perfection in the imperfect. The toppings were undeniably delicious and the pizzas looked and smelled incredibly great; but when it came down to the crust, it was merely fine. As for service, despite our waiter confirming our order twice, there was still a small
mix-up with one of the starters. However, things were rectified quickly and the staff were attentive, confident and friendly. This recent experience gave me a lot of hope, as would a promising second date probably would. Is ‘perfect’ simply an illusion or does it refer to a journey in which we continue to rework and redefine depending on the context of the experience or situation? Whether you’re baking, cooking, eating, grocery shopping or speaking with your local fishmonger – food is always a great conduit for selflearning. To me food has always been a source of wisdom, especially when eating pizzas. Looking forward to an inspiring Nairobi Pizza Festival!

ALMOST ITALIAN Chef Ray’s passion for Italian cuisine has been evident since his culinary journey began. He gives us an inside look at how to make a great pizza. Italian, at least informally!
I
taly has been on my radar for as long as I can remember. I mentioned in a previous column that my culinary career started off pretty much on the path of Italian food. One of my first jobs in a kitchen was tossing 600 pizzas a day, in a hole in the wall pizza joint. The mafialike owner would make the dough far away from prying eyes, in a room on his own, just so that we couldn’t steal his family’s secret recipe. The first restaurant I opened was Italian; my knives are Italian, my girlfriend… Italian. There is definitely a pattern evolving. So it should come as no surprise that Pizza is pretty high on the list of my favourite foods. I will admit that I am a bit of a purist when it comes to this subject. A good pizza is all about the crust, if the crust is no good, the rest of the pizza is immaterial. Which is why in the restaurant industry, having the right oven and that secret
dough recipe can make or break you. While the debate will rage on endlessly as to which oven type produces the best pizza, there is no denying that a wood fired brick oven has a distinct advantage by delivering perfectly crackly, smoky, chewy crusts. Something magical seems to happen in a brick oven that just isn’t replicable in a gas or electric oven. The right dough requires temperatures of over 365⁰c to yield a perfectly baked crust without overcooking the toppings. Brick ovens hold the heat in, intensifying it and speeding the baking process. Your pizza only cooks for 3 to 4 minutes. Ovens and temperatures aside I am just as fanatical about what ingredients are used and where they come from. We are far from Italy but thankfully everything you need for a traditional pizza is readily available these days. But you shouldn’t stop there. Pizza is the perfect host for any
organic and local produce. Toppings everywhere are becoming more creative and pizzas are going vegan, ethnic and regional. By using fresh, locally grown ingredients you make it relevant to your roots. During my days at Peponi Hotel in Lamu we used to make a pizza bianca with tuna carpaccio caught by my uncle, fresh herb salad, rocket that was grown in-house, home made citrus oil, crispy fried capers. It doesn’t get more local than that. Look, no one is saying you have to invest in a wood fired pizza oven and become a master pizzaiolo. Only the best should let that dough fly high above their heads. But I will insist on a few things before you sit down to that perfect slice of pizza. Leave your dough to rise on top of a tray dusted with semolina and dust the top also. This will help pull any excess moisture out as well as preventing it from sticking. Do not
roll out your dough. The air pockets created by the yeast take a beating under a rolling pin, leaving the finished product dense and tough. Instead, think light and gentle, and work with your hands to pull and stretch the dough out to the desired size, don’t stress about the shape. It doesn’t matter if it isn’t perfectly round. If the dough keeps snapping back when stretched it has been either overworked or is too cold. Let it sit somewhere warm for 20 minutes to let the gluten relax and the temperature rise. Crank up that heat. Too many people bump down the temperature and go for a slow bake but 180⁰c will get you nowhere on your quest for pizza nirvana. Go hot and fast. Turn the oven temperature as high as it will go without broiling and keep your eye on the pie!

Ole Sereni hotel has recently opened a new pizzeria, Ole Pizza. We sit down with Head Chef Larz Klein and learn about working in the hotel industry and the new restaurant.
C
hef Larz Klein is the head chef at Ole Sereni and has been working and living in Kenya for two years. Chef Klein has been a part of the industry since he can remember. At 16 he undertook an apprenticeship in a hotel kitchen in Germany as part of his university culinary program. Chef Klein would spent 10 months of the year in the kitchen and the remaining 2 months in a classroom. The program lasted 6 years and, after passing the exam, Chef Klein went to Switzerland and has since been traveling the world with his job. For Chef Kelin, traveling the world is simply a part of the job. “You have to travel. I think if you stay in your home country it gets boring... If you’re working abroad you have a completely different responsibility compared to being in your home country” he comments when asked about what it takes to make it in the hotel restaurant industry. Sure enough, traveling opened Chef Klein to different cuisines around the world. He spent several years in Asia particularly the Philippines and China and fine tuned his talent for Asian cuisine. Chef Klein and I sit on the veranda of the new Ole Pizza restaurant at Ole Sereni overlooking the Nairobi National Park. It’s the only hotel in the world with a direct view of a national park, he tells me. There used to be lions that roamed through the park which, if you were lucky, you could see in the early mornings. Now, with construction and noise on the outskirts (and inside) the park, lions are harder to come by. On the horizon, however, was a slow moving giraffe grazing on acacia trees. As we chatted over the new Nyama Choma pizza: nyma choma with blanched sukumawiki and a side of kachumbari, Chef Klein noted that the pizzeria had only been open since mid-May. “I think 95% of people who come here say they like to eat pizza,” says Chef Klein on why they upgraded their oven to a wood-fired oven noting that the there’s a difference in taste and texture of crust. The pizza making process in a wood
burning oven is quick and easy. The oven gets fired up in the mornings at around 9AM in time for service at 11AM and is heated to between 350⁰C and 400⁰C, in this heat, pizza takes about 7 minutes to cook through perfectly. Everything that goes onto the pizza is homemade and fresh: the sauce, dough, ingredients. Soon, Ole Pizza looks to launch a delivery service of their pizzas which will be available from 11AM to midnight, some of the latest dining options available in Nairobi. Originally, pizzas were made-toorder at the Big Five restaurant. On this menu, there were only three pizzas available. After deciding to open Ole Pizza, Chef Klein experimented with 20 to 25 pizzas and after testing them for four weeks amongst their customers, he reduced the menu to their top selling pizzas. To keep things different, Ole Pizza has a “Pizza of the Day” and Chef Klein is always looking to keep things fresh and new so you shouldn’t be surprised if there’s suddenly a new pizza on the menu. Now, Chef Klein is working on the model for the new hotel. The second Ole Sereni property will be next door to the current hotel. Although the name hasn’t been decided on, the 2018 opening date is fast approaching. This new hotel will be focused on accommodating corporates and as such, the kitchen will have to expand and new menus will need to be conceptualized. Chef Klein has always worked in hotel kitchens and believes it’s a different ball game from a stand alone restaurant, “I would say a hotel chef and a restaurant chef are two different people. In a hotel, you have a completely different responsibility compared to a restaurant chef. You’re covering a larger variety of outlets and a wider range of people. You have to try to keep your hotel guests in the hotel to dine”. Chef Kelin clearly enjoys working in the hotel industry as it’s been his life’s work. When asked where he’d be if he wasn’t a chef he says he’d be putting together and riding motorcycles but the traveling would never stop.

BEAUTY IN A BOTTLE As Annabel Onyango shops for wine, she’s learned how to judge a book by its cover or as the case may be, a wine by its label. Here are some of her tips and tricks.

ight now my absolute favourite bottle of wine is the Herederos Del Marqués De Riscal. What a name. It’s a Sauvignon 2014 from Spain. The bottle’s label is as beautiful as its name – white with an embossed gold seal, dark mixed-font lettering, with Producido en España at the bottom like a dramatic signature. And then, ironically, the rarest of things you’ll find in a bottle of wine these days after you peel the foil back – a cork! The foil on this particular bottle is a gorgeous deep green, elegant and unaffected. It’s taken me this long to learn that when selecting a bottle of wine, you in fact can judge a book by its cover.
With all the brands of the world competing for attention within a small cellar (i.e. the supermarket liquor section) the label is EVERYTHING honey. Amongst hundreds of bottles that you’ve never tasted, next to price, that label is really the only thing that communicates anything about the liquid inside. Sidebar: I’ve always thought that wine shopping should be like lipstick shopping – with testers that you can sample for as long as is necessary for you to find that perfect shade. Allow me to impart some of my wine label wisdom: • Bright colours are a no-no. Pink, yellow, and orange are for children, not wine connois-
seurs. Same with miniature zoo animals. • Any bottle that has an oldworld look with calligraphy text like it popped out from an 18th Century French country dining scene is probably going to be good. • Cartoons, gaudy graphics, trytoo-hard names – all are red flag warnings about a bottle masking a mediocre liquid. • Textured bottles covered in any kind of animal fur or tree bark is a massive NO! The simplest most unassuming bottles of wine are the safest bet if you have a sophisticated palette. The labels are visually concise and
provide information about the wine itself – the name of the vineyard and its location, grape variety, year of production, name of the producer, and alcohol content. They may cost a little more, but that extra spend will translate into a wine you can actually savour. Much like people, what you see on the surface is important! When you meet a person for the first time, underneath the funky clothes and perfect makeup is hopefully a person of integrity. My Marqués De Riscal not only looks stunning, but also has the most amazing personality.

We started off this year with a ‘Know Your Whites’ blind wine tasting at the Westlands-based outdoor bar and food court, The Alchemist. Here our great selections saw wine enthusiasts explore the vast world of white wines and food pairings. From the sweet dessert wines to the dry varieties, the show was packed with secret grape varieties for guests to guess. For the lucky few who guessed correctly, we recognized them with gift hampers. SLEEPING TOM Jackson Biko muses on late nights out and the social acceptability of snoozing at the bar
I
saw a grown person sleep in a bar. He had on boots and khakis pants and he held onto his phone, head slumped on his chest, out like a light. His mates drunk on, totally disregarding this heinous act of indiscipline, which said a lot about his friends. He didn’t look young: maybe 48 years or maybe 50. You can’t tell someone’s age when their head is slumped on their chest. And especially not over loud music. I think it’s a sin to be that age and sleep in a pub. If it’s past your bedtime, you go home. But I never judge people who nod off in pubs anymore because I have walked in those shoes. There was one time I was in Diani and we went to this happening club. I had worked my
bum off the whole day, interviewing NGO people and by evening I was knackered. But the NGO guys insisted on buying me a drink and when NGO guys want to throw drinks your way you can’t say your feet hurt. So I went. The club was ‘lit’ (look at me using cool lingo) and there were tons of annoying Nairobi folk acting like they are better than everybody else. You can alway pick them out in the crowd: they walk around the club with their beers in hand, as if they are safety inspectors from the City Hall. Anyway, I made the mistake of sitting in this booth next to this massive lady with big chunky arms and it just felt so warm leaning on her and after three sips I started feeling so sleepy and before I knew it my chin was
on my chest. I kept waking up when someone tripped on my foot and crashed into the floor because people in the club just don’t see where they are going. Especially in coast. I’m serious. I felt bad sleeping in the club. The NGO guys weren’t offended though. NGO guys see so much in this world, it takes a lot to offend them. At some point I told one of them that I was going to get some fresh air outside and when I went, I stood next to this guy who was seducing this girl in perfect Swahili. I just stood there listening to his mastery in Kiswahili and I was floored. I really was. If I was a girl I would have seriously considered going home with him, just because of his mastery in that
language, complete with all these sounds he was making. Anyway, I stood there for half an hour and when no NGO chap came out to see if I had been abducted by ghosts and dragged into the sea, I got into a cab and went back to my hotel. So when I see a man sleeping in a club or a pub, I don’t judge him harshly. Maybe he had been hanging out with NGO folk for too long. Maybe he had sleeping sickness. Maybe he was recharging his Kiswahili because you just never know when he might need it. I don’t judge him as long as he doesn’t trip people with his legs as they pass. Unless it’s Mombasa. That’s fine.

CUCUMBER COLLINS Ingredients: 45ml Tanqueray gin 30ml lemon juice 15ml sugar syrup 4 sliced cucumbers Tonic water Procedure: In a shaker muddle the cucumbers with the skin on. Add your gin, lemon and sugar syrup. Add ice and shake. Double strain to a low ball glass filled with fresh ice. Top up with tonic water. Garnish: Cucumber slices on the rim of the glass.

TWO OCEANS MOJITO Ingredients: 4 lemon wedges 8 mint leaves 15ml blue curacao 45ml Captain Morgan spice rum 30ml two oceans syrup 30ml soda water Procedure: Place the lemons in a shaker with mint and two oceans syrup, muddle and pour into a bell glass. In the bell glass, fill with crushed ice, then add Captain Morgan and blue curacao then churn (mix with a bar spoon) and top up with soda water. Garnish: Red bullet chilli
CHIN CHIN (sharing) Ingredients: 60ml honey 120ml Johnnie Walker red 1 spoon cinnamon powder 60ml lemon juice 180ml apple juice Procedure: In a kettle stir the honey, cinnamon and lemon juice until completely mixed. Add the whisky and apple juice. Fill the kettle up with ice cubes. Swirl hard until all the ingredients are mixed well. Add green apple slices and cinnamon sticks inside the kettle. Garnish: the glass with a cinnamon stick and green apple slices.

ITALIAN RENAISSANCE Payal and Shivani explore new twists on classic Italian dishes and ingredients looking for ways to elevate everyday cooking. Whether it's panna cotta, pesto, gelato, parmigiano, burrata or tiramisu, the Italians definitely have a way with food. They are experts at converting the simplest of ingredients into delicious plates of wholesome goodness. The culinary industry would not be the same without pasta whether a simple spaghetti con sugo, the elusive penne alla carbonara or a crusty lasagna dripping with cheese and decadent bechamel sauce. Despite both of us being tantalised by Italian flavours, I have to confess that until quite recently we both thought pizza dominated the Italian menu. After a recent trip to Milan, however, I quickly realised how wrong we had been. Italian food is nuanced, focusses on only the freshest of ingredients, is complex yet simple and changes from region to region, sometimes even from neighbourhood to neighbourhood. In Milan we feasted on salt crusted
sea bass beet-coloured linguine and other exquisite dishes that contained endless combinations of flavours and innovative techniques. Payal has always been a great cook and is particularly skilled at experimenting with Italian ingredients and flavours. Although Italian food is firmly rooted in tradition, that doesn’t mean there is no room for innovation.

There has been a recent explosion of lemon French macarons, limoncello tiramisu, and lemon & pine nut biscotti. Sourdough Pizza - With the influx of healthier living, we

are not surprised by this new trend in Italian cuisine. Inspired by Naples, this dough is much lighter, easier to digest and still tastes delicious. Colatura di Alici - The tiniest drop of this fish sauce will send your taste buds into a tailspin. Loosely based on an ancient Roman recipe for fish sauce named Garum, this condensed anchovy liquid will sublimely transform any savoury dish.
Over time both Payal and myself have come to the inevitable conclusion that Italian food is indeed the best in the world. We are now inspired to experiment with these new additions to our Italian culinary repertoire. Expect a limoncello tiramisu from me in the near future and by the sounds of it, Payal is dying to nail one of those berry balsamic mules.

or many city-dwellers, it’s not unusual to feel an overwhelming urge to escape to the coastline every few months. My wandering mind needed a holiday but logic told me a mid-year break was unnecessary. My mother, and perpetual voice of reason, was having none of it. She repeatedly reminding me the importance of switching off and checking out. So when the opportunity to visit the recently five star rated Medina Palms was presented, I gave in and in the same breath insisted she join me. Both my mother and I love traveling. We romanticise airports, relish in the idea of being clichÊ tourists and strategically make friends with the bartenders! We unfortunately also have a tendency to be rather ditzy and realised, the day before we left, that neither of us had a swimsuit. We headed to Woolworths to see what we could find and were in hysterics as we attempted to squeeze ourselves into various elasticated ensembles. After the swift swipe of a credit card and humbled acceptance that both of us required slightly larger sizes, we swallowed our pride (and sucked in our tummies) packing the final missing piece into our suitcases. Upon arrival at Malindi airport, mum spotted our driver holding a personalised sign board and was visibly delighted at the prelude to our weekend of luxury. A brief thirty minutes later, a zen like calm washed over us as we drove through the Medina Palms gates. I paused in awe, taking in the palatial Arabic-inspired architecture. Our speech gradually slowed as we acclimatised to the laidback Swahili surroundings and sipped on our watermelon infused welcome drink. Situated north of Mombasa, the sleepy village of Watamu is tucked away between the lush Arabuko Sokoke Rainforest and pearly sands. Minutes into our stay, it was evident why this establishment had won numerous awards and a prestigious five star rating. An intricately hand carved door with gold detail led us into our two bedroom suite. The elegant whitewashed interiors lent to the chic and tranquil atmosphere which was mirrored throughout the hotel. I gave in to a second wave of calm as I peered into the en-suite bedrooms, each fitted with a delicately draped four poster bed and minimalist decor. Magenta bougainvillea scattered around the apartment added a pop of colour and were hand picked straight out of the plush tropical garden outside my room beyond which the pool glittered, extending along the length of the resort right down to the beach. The golden hour glow signalled that night was about to fall and we just about managed to peel ourselves off the sofas to explore. The grounds were quiet with a few picture perfect families and
couples dotted around the pool soaking in every last ray. A few steps away, the ocean waves crashed dramatically on the shore as the sun set, changing the sky from soft hues of pink to purple. We were only a few hours into our stay and already in a trance like state, contently exploring the rest of the grounds hand in hand. Each night the alluring smell of freshly grilled seafood and char kissed steaks carried on the warm evening breeze. I firmly believe food should play a starring role on any holiday so we committed ourselves to three nights of pure culinary indulgence. Like the architecture, Moroccan, Mediterranean and Swahili influences weave through the menu, featuring wholesome pastas, fresh seafood and a few continental classics. Chilled wine and decadent desserts took centre stage and as the nights drifted on, the creamy mango semifreddo quickly became a personal favourite. My mornings were spent sipping masala tea accompanied by fresh mahamaris, croissants and fluffy eggs in the Amadina Restaurant and once, upon request, beneath the shade of the trees in the Coffee Garden. My poor mother on the other hand had managed to catch a flu and upon doctor's orders had cocooned herself within the crisp ivory sheets where I cosied up beside her. I soon realised that there is no better way to test five star hospitality than being sick. Each of her meals from that point were delivered to the room along with a warm smile and hot toddies made with love by the bartender, who sweetly asked after her everyday. Even at the height of her flu, mum had somehow succeeded in befriending the man behind the bar! Each day blissfully rolled into the next with every experience bringing further relaxation. On the last day, mum had fully recovered so we treated ourselves to a morning at the Sakina spa. Using soothing Africology oils we were massaged into submission to the sound of ancient Tibetan chimes. Our trip was drawing to an end and after sharing stories of our love of food, Hotel Director Max Cheli insisted we head out for an authentic taste of Watamu at the Crab Shack down by the the mangroves overlooking the Mida Creek. Minutes later, a van was waiting outside and whisked us through the village. As we walked through the thicket along the wooden pathways deeper inside the mystical natural phenomenon, it was clear that we had simply scraped the surface of Watamu. Mum and I ceremoniously cracked open an ice cold beer and gazed out over the creek as we devoured a plate of lime drenched crab samosas. We were content and thanks to Medina now had every reason to return the next time our mid-year itch set in.
