Chicken Enchiladas Yields: 8 servings Ingredients: 1 lb. Diced or Cubed Chicken 4 oz. Shredded Monterey Jack Cheese 3 oz. Diced Onions 1 tbsp. Fresh Cilantro (chopped) 15 oz. Enchilada Sauce 12 ct Tortillas Shredded Cheddar Cheese, as needed Directions: Combine Chicken, Monterey Jack, onions, and cilantro in a large mixing bowl. Mix thoroughly. Heat tortillas according to package directions. (Tortillas may be microwave for approx. 3-45 seconds). Place flat tortilla on clean surface; fill with 2-3 tablespoons of filling. Roll up and place seam side down in bake pan. Cover with sauce and bake 25-35 minutes. Remove from oven and sprinkle with several tablespoons of shredded cheddar cheese. Enjoy!
