Heat until internal temperature reaches: o 132˚F/55˚C for rare o 138˚F/59˚C for medium rare o 144˚F/62˚C for medium o 150˚F/65˚C for medium well o 155˚F/69˚C for well Heat approx. 2½ to 3 hours until roast reaches an internal temperature of 120˚F (rare).
