Potato Cakes Ingredients: Bacon, cubed Mashed Potatoes Ham or Turkey, cubed Shredded cheese Onion, diced (or chopped green onion) Sour Cream Eggs Directions: Chop several strips of bacon into small cubes, sautĂŠ until brown and crispy. Remove bacon cubes from pan and put on plate with paper towel to soak up the extra fat. Combine left over mashed potatoes, ham or turkey (cubed), bacon cubes, shredded cheese, onion, sour cream, and eggs. Put in the amount of cheese, sour cream, onions, ham or turkey that you prefer. Combine all ingredients in a bowl. Take an ice cream scoop of the mixture and pat it out like a hamburger. Lightly beat 1 egg in a separate dish and put bread crumbs in another dish. Place 1 patty in the egg and coat evenly. Then cover it with bread crumbs. Put battered patty in the skillet that the bacon was sautĂŠed in. Brown on one side and then flip to do the same on the other side. Serve and sour cream on the side.
