Potato Pancakes with Smoked Salmon Servings: 24 2” pancakes Ingredients: 2 cups GFS Fresh Mashed Potatoes 2 cups shredded Hash Brown Potatoes 1 lightly beaten Egg ½ cup Flour 1 medium Onion, chopped fine ½ tsp. Salt ½ tsp. Pepper 1 tbsp. chopped Chives 8 oz. Smoked Salmon, cut into slivers 1 cup Crème Fraiche or sour Cream 1 tbsp. Butter 1 tbsp. Olive Oil Directions: Combine first seven ingredients and mix well with a fork. Form into one inch balls rolling in hand. Flatten the balls with a fork to make two inch patties (continued).
In a small bowl, combine the olive oil and butter. Brush a large frying pan over medium heat with this mixture and cook the patties in batches until golden brown and crisp, 4-5 minutes per side. Transfer to a plate lined with paper towel. Top each potato cake with a dollop of the crème, a piece of salmon and a bit of the chopped chives.
