Galley rations Super chef Marco Pierre White, who oversees a fine dining restaurant on P&O Cruises’ ship Ventura, talks exclusively to Headliner about his love of cruising and his new TV show. Phil Davies reports Q) How did you get involved working with P&O Cruises? A) I’ve always liked a challenge, and to be honest I never thought about having a restaurant on board a Cruise Ship. I’ve always had a fascination, like most young boys do, about Cruise Liners. One day, in one of my restaurants I was approached by someone from P&O Cruises and was asked if I would consider a restaurant on a new cruise ship. I was invited down to Southampton and went on a two-day Cruise just to get a feel and understanding, and I found it quite fascinating. But the one thing I found extraordinary was my perception of who went cruising was blown away. What I realised was that it was very democratic; it was a cross-section of society and a cross-section of ages. I was told about the Ventura that was to be launched in 2008 and was asked if I would like to be involved. I then got into the planning of Ventura about 18 months before it was launched. I went to Trieste to see it in the shipyard and saw the Ship in its infancy. I then went back for the blessing of the Ship by a Priest and watched the dock flooded in the float-out ceremony. It’s quite special and a great privilege to be able to see something from its infancy to where it is today. I’ve just come back off Ventura in the Caribbean and I have got to say how the ship has matured in such a short period of time - it was a real pleasure to be on board. Q) What makes the dining experience on board Ventura unique? A) What I think is quite special about Ventura is that it has so
many dining options. There are the Main Dining Rooms, East, Beach House and The White Room (the restaurant run by myself), so you have many, many options. I’ve got to say that the food is getting better and better, and I’m not just saying that because I am linked to Ventura. Feeding more than 3,000 passengers a day breakfast, lunch, afternoon tea, dinner, and midnight snacks is quite remarkable. Across all of the restaurants, they have taken [standards] to another level. Q) How do you keep your restaurant the White Room fresh and exciting? A) The more you work with the team at P&O Cruises and the more time you spend on the ship, the more you understand what

is possible. It’s about channeling your energies to where it makes a difference. An individual like myself has to fit into that whole structure, but P&O Cruises allow me to be an individual. It’s about looking at the produce and creating menus that can last for a two-week cycle. There are ingredients we can’t use and lots that we can use because we can get those without a problem. It’s about looking at the positives and overcoming the challenges by working as a team. Q) How did you come up with the idea of cookery classes on board? A) What’s important when you’re cruising, especially on sea days, is to give the passengers options. For example, yesterday there was an opportunity for us to give a cookery demonstration to children on the ship and then we did two sessions with adults. A class may last for two hours or more, but it’s about interacting with the passengers. What’s amazing is the positive feedback. It is extraordinary how people are converts to cruising and they would never imagine any other type of holiday. They just see all the qualities that cruising provides. Q) When can we look forward to another series of ‘Hell’s Kitchen’? A) I’ve just finished my latest TV series, which is a replacement at the moment for Hell’s Kitchen. It’s called Marco’s Kitchen Burnout, featuring 12 celebrities in seven one-hour programmes. It’s not a strip show like Hell’s Kitchen where it runs every single night; it’s once a week. It starts off with the 12 celebrities and they are eliminated one by one by the diners.

2010 is set to be a busy year for travel. Headliner spoke to two industry experts, Alistair Gill and Carol Marlow, to get the lowdown on what this means for cruising and the allimportant client experience. Q How do you see the cruise industry evolving during 2010? AG This is a hugely exciting time for the cruise industry – we are seeing some key ship launches, not least P&O Cruises’ Azura, and the bar in terms of quality and the ‘experience’ is constantly being raised. At the same time, this is a challenging market and as such there are some
great opportunities for clients to snap up some great bargains and to enjoy world-class cruising at an exceptional price. CM I agree and I think we will continue to see growth in the market. With the exciting fleet of ships planned for 2010 and beyond, the value and quality just gets higher and higher and I feel that cruising will certainly be a growing part of the wider Travel Industry. Q What about the long-term future of cruising? CM Personally, I see P&O Cruises remaining at the heart of the British cruise market. We are dedicated to providing British cruisers with everything they love about going to sea. Our ships are a rather special ‘home from home’ – with faces they recognise, food they enjoy and entertainment that makes them happy! Our kind and friendly style of service is quoted time and time again by our passengers as the main reason why they return. AG Absolutely, and on a more general level, I think that great value is at the heart of cruising and is the key to its future: the combination of top quality accommodation, food and entertainment alongside a variety of ports of call is hard to replicate on dry land and the more ships we see in the marketplace, the more competitive the pricing! indications suggest it will continue to grow as we are able to offer more variety to travellers. Q P&O Cruises and Gill’s Cruise Centre have worked together for many years – what’s the secret to such a longstanding relationship? CM Our relationship with Gill’s Cruise Centre is a joy. We know them well, and have done for many years, and with that comes trust and an excellent knowledge of our product. Customer service is so important to us – we are delighted to have a partner in Gill’s that also puts their customers at the centre of all they do. Q 2010 will be a busy year for your respective businesses – what is your vision for the future? AG We have worked hard to reach the position we are in today. We are entirely dedicated to offering an unbeatable service to our clients and we’ve got a great team in place to instantly respond to changes within the industry. We are looking to grow our position in the marketplace, but in a controlled way – we realise these are challenging times, but there are still plenty of opportunities ahead. It’s a niche market at the moment, there are currently about 1.6 million cruisers in the UK, but we would like to see this rise dramatically as we increase the diversity of our product. CM Our vision is simple – for P&O Cruises to be a British market leader for another 170 years! Our history and heritage puts us in good stead to move forward and evolve our product as our market needs demand. Offering that P&O Cruises uniqueness, that ‘P&Oness’ on each of our seven different sized vessels to suit all tastes will help us continue to appeal to the growing British market.
Finally, what is your favourite cruise? AG I love the variety of experience you get with a cruise. It’s hard to pick a favourite out of the many trips I’ve made, but I must say I’ve always loved the QE2 – it was such a great ship, certainly the most famous ocean-going liner in the world – and the on-board experience was second to none. I’m excited to see so many launches coming up putting cruising front of
mind amongst British travellers and with Azura, I think that P&O Cruises have something really special! CM I have enjoyed every cruise I’ve ever taken! That’s why I feel I can empathise with our passengers and help deliver just what they are looking for. Taking a cruise always excites me and that anticipation of my next experience keeps me coming back for more!

Azura takes to the seas Amazing Azura – new superliner sails from Southampton this Spring
W
ith P&O Cruises latest luxury superliner, Azura, launching at the end of April, join Headliner for a preview of this exciting new ship to find out more about the innovations that have been introduced to meet the needs of its most important customer: you, the British holidaymaker. Whether it’s fine dining at the world’s first Indian restaurant at sea, courtesy of Michelin starred chef Atul Kochar, tasting sessions with celebrity wine expert Olly Smith, or seeing stars beneath the stars in the alfresco cinema, P&O Cruises’ Azura represents the next generation of cruising whilst at the same time retaining the traditional, well-loved elements of a classic British cruise.
Azura will be sailing from Southampton for her maiden Summer season, perfectly placed to offer cruises of between 2 and 16 nights across the Mediterranean, Baltic and Canary Islands. During the winter, holidaymakers will be able to seek out sunshine further afield and cruise the Caribbean on a 15-night fly-cruise trip running between October 2010 and April 2011. The design of the ship, the itineraries and onboard facilities have all been tailored to suit the different needs of travellers united in a shared desire for the best possible cruising experience, be they couples, solo travellers or families. It is the first ship in the P&O Cruise fleet to offer Staterooms – 18 in total – designed for solo travellers, alongside over 1500 other cabins of which 910 feature a balcony.
