Brooklyn Lager As our own myriad craft brewers will attest, setting up a brewing operation from scratch and finding a spot in a market dominated by the big players, is no easy task. Garrett Oliver, a legendary brewer and Steve Hindly, an unlikely fit as a war correspondent, combined forces and launched the Brooklyn Brewery in 1988.

ow a USD$50m a year business, they send their fine brews from Williamsburg, Brooklyn to 25 US States, and 20 countries across the globe, making them the biggest exporter of craft beer in the US. We are lucky to be one of those countries and, here at Gilmours, we’ve added Brooklyn lager to our already extensive range of great beers. It’s hip and happening, with a big following including the happy hipster crowd and those who know a thing or two about a good brew. And it’s certainly a good brew. It’s Hip To Be Square! Words like “legendary” and “iconic” are bandied about a bit too freely these days, we reckon. But when it comes to Denheath’s custard square, it is definitely both legendary and iconic. An iconic legend even! And now you can get it from us!

his delightful dessert – and now some equally delicious extensions to the range – originate from the perfectly named Pleasant Point in South Canterbury. For over a quarter of a century these little squares of joy have been satisfying the masses. Once you had to visit Pleasant Point – and tour buses soon had to add the destination to their itinerary – to get a magic morsel, but they are now more widely available. Current owners Lisa & Donald Templeton have taken the business to staggering new heights, while still retaining the square the country, and now the world, has grown to know and love. Capitalising on Change We’ve been through a period of exciting change over the past year at Gilmours. We thought we’d take the opportunity to give you a brief overview of what we’ve achieved and what it means for your business.

he last Toops store transitioned to the Gilmours brand in May, bringing all our stores under the one roof, with them all working under the owneroperator model. That was Toops Ngauranga, which is now Gilmours Wellington, helmed by the enthusiastic and service-driven Matt Humphrey.

There are a number of advantages in converting the store to the Gilmours brand: • • •

Matt’s energy and service-driven approach have delivered real personality and efficiency into our outlet in the capital; his enthusiasm is truly infectious! That service ethic in Wellington is the latest to show the customer commitment levels we aim to maintain throughout the stores. A recent change of ownership at our Hamilton store will see a similar reinvigoration. Dayne Riddell will bring a renewed passion to providing the best possible service to our existing – and potential – customers in the region. In a tangible reflection of that, we will see growth in the fresh food departments and investment in the delivery fleet, similar to that which has been undertaken in the transitioned stores. As Gilmours banner manager James Cunnold expresses it: “We now have one brand of Gilmours in the North Island. This all about offering our customer consistency.” Streamlining and improving process and service are key planks of our objectives going forward. To facilitate this commitment to improvement we are investing in new trucks, updating infrastructure, buildings and technology solutions. This all reflects our continued and full commitment to serving the food service industry.

Lamb Hindshanks There are certain “must-have” seasonal items, either universally adored or so loved by your own customers that you’d face a full scale riot if you were to drop them from your menu. TRENDING (CON) FUSION? Fusion, which defined the 1990s as much as Nirvana, was no culinary heaven, however, and is still a dirty word in the mouth of most chefs and plenty of the dining public. What’s emerging now is something very similar, it just doesn’t have the handle. “Modern” cooking, “hybrid menus”, call it what you will, it involves “a global mash up”, where flavour is more important than geography. i.e. if it works, it can’t be wrong. From a good squirt of soy in a Bolognese (try it, it’s a treat) to Sriracha on your burger & fries instead of ketchup, it’s a mixed up shook up world out there. You might not be ready for foie gras lollipops, but you could try kimchi on your coleslaw. And remember, crazy won’t compel customers to branch out, but if you use existing ingredients and produce and execute them in a different way – Asian/European, Traditional/Modern, US/Korean (the Korean taco is still all over menus across the States) – you might just make a bunch of new friends who become loyal followers.

Stretch them, but don’t break them, as the saying goes...

Playing Chicken Highly regarded food consultants Baum & Whiteman made the fried chicken sandwich the Sandwich of the Year for 2016. No longer just southern fried, although that’s still popular with the lunchtime crowd, this, too, is being “ethnicised”. Serve with chilligarlic-lime sauce instead of mayo, or spicy/ smoky BBQ sauce or the ubiquitous Sriracha. Try adding some chilli fire then cool it off with blue cheese. And use meaty, flavoursome – and affordable – thighs. Tasty and good for the bottom line. Serve with a craft beer.

VEGETABLES  Not just “heritage” or proving provenance, more about their position in the scheme of things. Have a dish or two where the anchor protein takes a back seat and the fresh produce is allowed to shine

PASTA  Consumption is down across the globe, especially, crazily, in Italy. Down but not out. Keep your pasta dishes simple, the ingredients top notch and the execution stunning to look at, there’s still a place at the table. Also, experiment by mixing in vegetable ribbons with your traditional pasta shapes…

BUZZING FOR 2016  If you believe the net… paella, restaurants with the name “shack” in them, a total war on food waste, adding seaweed to popcorn, Nashville Hot Chicken (it’s mind-and-palate blowing), and, “root to stalk” cooking. Don’t say we didn’t warn you…
