World of wedding cakes By Sonia Clark What’s a wedding without an impressive cake? GC&M News went behind the scenes and spoke to local cake maker, Jo Jones to find out more about what goes into preparing a wedding cake. An important part of making a wedding cake is sitting down with the clients to discuss their requirements. These days the bride and groom are both usually part of the consultation process, and they often bring pictures of ideas that they like. The consultation will discuss design options, the number of guests expected, whether the cake will be eaten at the wedding or taken home, as well as themes and colour schemes. Often, the cake will reflect the personalities of the bride and groom as well as tying in with the overall colours and theme of the wedding. A variety of themes have been popular; with classic wedding cakes featuring simple ribbon/edible lacework and flowers among the most favoured. Textured cakes are proving popular as butter cream is coming back into fashion, as well as a mix of classic and textured layers. Jo has also found that a recent trend has been for ‘rustic themed’ cakes; where the cake is layered with icing and the cake underneath is still visible. Chocolate mudcake is currently the most popular flavour choice followed by ‘red velvet’, (a slight raspberry/ chocolate tasting blend) white chocolate mud cake is also a firm favourite. Often clients with tiered cakes will mix the flavours for each tier. Jo suggests a three month lead time for delivery of wedding cakes. This allows time to source handmade or personalised toppers and to create, set and dry sugar craft items, as well as allowing time to book in the actual making of the cake. Some cakes can take days to create and remember during wedding season cake bookings fill up fast.

By Lea Parkes Recently I attended a really smart, thoroughly modern Wedding Shower, that had all the special traditional elements and the bridesmaid organising the event showed just how smart she is, by having Club Glass House host the event. The bride at the centre of the celebration was our lovely receptionist Sarah, and while she lives locally, her bridesmaids are based in Toowoomba and the Gold Coast so it wasn’t really practical for them to host an Margaret Moffat with Sarah Taylor-F ox event at their homes. (soon to be Moffat) So Sharon Bochow and her team at Club Glasshouse came to the rescue, setting up their function room to comfortably accommodate quite a lot of ladies who had come together for the special occasion. The bridesmaids had done a great job of decorating the room. It looked gorgeous and featured all the things that the bride loves, a backdrop that doubled as a photo booth, photos featuring the bride and groom to be’s romance, and lots and lots of pink. With Club Glass House’s new separate food servery area, it worked really well as the food is all out on display, including hot box items which meant that guests could wander back and forth picking and choosing what they would like to eat. It was a lovely afternoon, and with the personalised assistance that the club provides, it also meant that the event could come in on budget, and none of the guests had to clean up at the end of the afternoon!
