ITALIAN PROSECCO Prosecco is an Italian sparkling white wine, generally a dry or extra dry wine. It is normally made from Glera (the grape formerly known, itself, as “Prosecco�) though other varieties, such as Bianchetta Trevigiana, are permitted to be included in the blend. Although the name is derived from that of the Italian village of Prosecco near Trieste, where the grape may have originated, DOC Prosecco is produced in the regions of Veneto and Friuli Venezia Giulia, traditionally mainly around Conegliano and Valdobbiadene, in the hills north of Treviso.

Sparkling wine produced with the “Glera” grape variety, native to the Treviso area. In this countryside there are the best soils and climate conditions that grant a wine unique in characteristics.

The setting of one of the most famous love stories of the world is a castle near Verona, which overlooks the Cielo vinyards, right in the heart of the Romeo and Juliet area.

The sparkling process is made with Charmat method in steel autoclave in compliance with the regulation of the materia, obtaining an extra dry young wine, exciting and perfect in all occasions.

The base wine for fermentation is obtained from clusters grown in the Valdobbiadene hill country.

Limited edition, the Charmat method here is defined by a slow second fermentation and a prolonged, 3 months rather than the regular 20 days, aging period in pressurized tank. This results in an extremely intense bouquet supported by a fine perlage, a balanced cuvée, as Elegant as a Venetian Dress.

BOUQUET Lingering streams of tiny bubbles usher in subtle aromatics of flowers.

PALATE Stimulating freshness, the full-bodied, elegant palate brings out long-lingering subtle nuanced aromatics with fruity hints of pear and peach-like white-fleshed fruits.

VINTAGE SPARKLING A vintage is derived from the grapes of a single year, an instance of exceptional harvest which only occurs a handful of times per decade, which means vintages are generally rarer and more expensive. as opposed to a non-vintage blend of multiple years’ harvests, which results in a more consistent drop than a vintage. Vintages tend to have a distinctive taste profile due to the singular harvest used.

Remarkably cloudy, fizzy and alive.

This gorgeous sparkling has been made using the traditional method and a blend of Pinot Noir and Chardonnay grapes from the Adelaide Hills and Langhorne Creek wine regions. By fermenting this wine in bottle and leaving it on lees for a short period of time, we have been able to achieve a wine that is fresh, lively and exciting, as well as soft, balanced and approachable.

VINIFICATION The Pedra Branca series celebrates the forces of nature creates things unique and remarkable. This is a project wine where each year, the wines made are different in variety or style to bring out the best in the grapes and the conditions in which they were grown. This makes them remarkable and highly sought after.

PALATE “It attacks with flavour and finishes with it too, though it seems to dip through the middle. Freshness and vigour are the real keys here though whispers of grassy/smoky varietal character don’t hurt.”

PALATE Think citrus, strawberry and baked bread flavours with a soft creamy bead, and a crisp, dry finish.

VINIFICATION Clones of Chardonnay have been imported from Champagne and planted in the gently sloping limestonerich soils of our close planted Waipara Valley vineyard. Traditional methods followed in the production of this sparkling wine include hand harvesting, whole bunch pressing, fractionation of juice according to CIVC recommendations, use of cuvée fraction only, bottle fermentation etc.

NV SPARKLING The majority of Sparkling produced is non-vintage – a blend of wines from several years. This means that no declared year will be displayed on the bottle label. Typically, however, the majority of the wine is from the current year but a percentage is made of reserve wine from previous years. This serves to smooth out some of the vintage variations caused by the marginal growing climate, Most brands strive for a consistent house style from year to year (largely for reasons related to price-setting and successful marketing), and this is arguably one of the hardest tasks of the house winemaker.

Chardonnay Pinot Noir Pinot Meuniere by Compagnie Grands Vins of Seine et Marne. Pale gold colour with fine persistent bead. Fruity aromas and light floral with delicate hints of nuttiness and lemon. Full flavours of stone fruit, citrus and melon, exhibiting rich yeasty complexity, light biscuit characters with just a hint of honey on the palate.

Carefully blended aromatic varieties combined to produce a wine with rich fruit, soft full flavours and complex characters.

WINEMAKING

Sparkling wine obtained from second fermentation with Charmat method in stainless White peaches and some steel tanks. Fermentation tropical fruit flavours. takes place at controlled Creaminess on the palate temperature. The Spumante with a fresh fruit finish, integrated with tropical notes is left on the lees for approximately 90 days and of mango, pineapple, and zingy acid. Carefully blended then clarified and bottled. aromatic varieties combined TASTING NOTE to produce a wine with rich Pale salmon in color, fresh on fruit, soft full flavours and the nose with notes of pear complex characters. and red fruits. MOSCATO Italy/Australia

Moscato wine is an ideal drink for a bright sunny day. It tastes sweet and has a pale yellow or gold appearance. It is an ideal drink for wine beginners and is often served as a dessert wine at various events. Moscato wine is derived from Moscato grapes which is a type of Muscat grape, grown especially for this wine. Muscat grapes have a sweet aroma and are grown all over the world; and according to experts these are one of the oldest varieties of grapes used to make wines. As the grapes are grown globally, their name changes from region to region; some call them Yellow Muscat, Muscat Blanc, Moscato Bianco, and Muscat Canelli. Even though it is not a favourite among experts, none can deny the importance that Moscato shares in history. It has been reported that Moscato grape was a major ingredient in many alcoholic beverages found in the tomb of King Midas. So it can said that someone who likes drinking this wine shares the same taste that royalty had.

H by Haselgrove Moscato has been made in the frizzante style (lightly spritzed). It is low alcohol with fruity and floral notes and obvious but balanced sweetness.

WINEMAKING The sweetest and most fragrant Muscat grapes give a unique aroma to this naturally sparkling wine, with acacia and wisteria hints.

BOUQUET wonderfully aromatic and low in alcohol.

PALATE The palate is delicately sweet, aromatic and characteristic.

GRAPE 100% white Muscat.

BOUQUET The first impression of summer, fresh stone fruit blossom leaps out of the glass, followed by bright lemon and lime citrus notes and finishing with juicy white peach.

PALATE Refreshing and crisp. The grape juice sweetness is balanced by a fine minerality and tight natural acidity. The flavours are complex, with hints of refreshing rose petal and lemon meringue mixing with more textural flavours like candied citrus, ripe peach, apricot and honeysuckle.

LAMBRUSCO Italy

Lambrusco is the name of both a red wine grape and the wine made principally from the grape. The grapes and the wine originate from four zones in Emilia-Romagna and one in Lombardy, mainly around the central provinces of Modena, Parma, Reggio nell’Emilia, and Mantua. The grape has a long winemaking history with archaeological evidence indicating that the Etruscans cultivated the vine. In Roman times, the Lambrusco was highly valued for its productivity and high yield. Taken as a whole, Lambrusco is a wine whose primary characteristics are sparkle, lightness and low alcohol content.

CAPEL VALE

Western Australia

Capel Vale was established in 1974 by Dr Peter and Elizabeth Pratten, on a site on the Capel River between Busselton and Bunbury, known as ‘Stirling Estate’. It was one of the first vineyards to be planted in southwestern Australia. Dr Pratten soon observed that the soils of the Capel area were best suited to Chardonnay and Merlot and it became his passion to determine the best region in South Western Australia for each of the main premium grape varieties. The first to explore the advantages of multi-region planting in W.A., he developed prime vineyard sites in Pemberton, Mt Barker and Margaret River. Sauvignon Blanc as a grape variety is known throughout the world for its distinctive aromas, fresh flavours and crisp acidity, and we believe that the Berrigan Sauvignon Blanc is one of the best examples in Australia.

Chardonnay grows well in a variety of climates, but only in the cooler wine regions of Australia does it find its grace.

This wine defies preconceptions of what Australian Merlot is, and has been. It’s a great example of Merlot when it’s made to be bright and fresh, and I chose to produce this wine style to show people how beautiful this grape variety can be when it’s grown in a cool climate and carefully made to be released early with minimal oak.

PALATE While the wine is still considered dry (3.1 g/L of residual sugar), a very small amount of residual sugar prevents a dry finish and makes this wine so much more enjoyable to drink. A balance between grassy herbaceous and tropical fruit and passionfruit flavours present extra level of interest and complexity to the wine, while improving the wine’s ability to match with a wider variety of foods and situations.

PALATE The slow ripening of grapes experienced in the cool, seaside region of Mt Benson allows the elegant floral and stone fruit flavours to gently accumulate in harmony alongside the increasing sugar and phenolics in the grapes. The cool, maritime climate of Mt Benson is the major reason why our wines remain elegant & medium bodied as opposed to the big wines from warmer, more sundrenched regions. Instead our red wines pick up a lot more spicey characters, vibrant fruit and subtle tannin profiles.

The Hahn’s are as Barossa blue blood as you can get; almost national treasures. Maria and Johann Christian Hahn arrived in the Barossa Valley in 1845. Like all the early Barossa settlers they were of Silesian-German descent. Early settlers also staked out the best of the valleys farm land. Remarkably this land holding is still in Hahn family hands, six generations on. The history does not stop there as the current custodians, Jacqui and James Hahn still live in the original homestead constructed from 1846 to 1848. The partnership of Rolf Binder/Veritas wines and the Hahn family is to recognize the heritage status of this family, the ancient vines and their unique part of the Barossa Valley’s history.

A full-bodied, full flavoured classic is the promise behind the very deep brick red colour. Notes of tea leaf, cedar, sweet berries, spice, chocolate and cigar box aromas which are all repeated on the palate. Ripe black forest fruits and spice are balanced by rounded tannins and seamless structure.

The Merlot is a rich deep purple colour, indicative of the variety. The nose displays welcoming hints of stewed plums, perfumed violets, cinnamon and cassis. Further investigation is rewarded with a smooth mouth filling juice of blackcurrants, sweet spice, nutmeg and cassis.

The palate reflects the nose with flavours of cedar, stewed fruit and cigar box. Fine drying tannins. A pleasant lingering finish of cedar, cigar box and stewed fruit with hints of aromatic restrained oak coming through. A fresh vibrant palate of good depth but fresh intensity and layers of fruit.

The palate is ripe with sweet concentrated fruit and soft velvety tannins. The varietal stewed plums and blackcurrant fill the mouth evenly, with hints of spice such as clove and cinnamon, adding interest and complexity. The Frewer family established Jones Road vineyard in 1997 at Somerville on the Mornington Peninsula overlooking Westernport Bay. The maritime climate of this region produces some of Australia’s best cool climate wines because of the late ripening, the fertile soil and careful vineyard management. Since those early days we have secured lease on 2 other vineyards here on the Peninsula. One on the Port Phillip side, close to the water and the other at Balnarring near the Westernport Bay. This has increased our vineyards to 60 acres. With these extra parcels of fruit it gives the winemakers an opportunity to blend from the different sites, mixing different terroirs.

In the glass the 2014 Sauvignon Blanc is a very pale straw colour with a slight green hue. The nose has soft kiwi fruit, citrus and subtle melon notes with a fresh mineral and grassy edge.

In the glass the 2013 McLaren Vale Cabernet has a dark core with a lovely red rim. The nose immediately gives blackcurrants, sour cherries, subtle chocolate, ash, leafy tobacco and even a hint of violets.

In the glass the 2013 McLaren Vale Houdini Shiraz is black to the core. The nose evolves with lots of dark fruit, chocolate and mocha, developing fresh charcuterie and some hints of attractive French oak and spice.

The palate is dense and juicy supported by subtle French oak, mocha and fine focused tannins.

As soon as this wine is poured the colour is black to the core with a magenta rim. The aromas are deep, with dark cherries and chocolate, rich blackcurrants, subtle ash, licorice and a hint of spice and tobacco.

Upon pouring, the 2012 Adamo is black to the core with a magenta rim. Aromas of blackberry and dark cherry jump from the glass with subtle violets, chocolate and spice.

Llght yellow in colour, the aromas encompass straw, lemon and almond meal.

PALATE

First up on the palate there is plenty of dark fruit and spice with a vein of delicious chocolate. The wine is soft and tight with a wonderful balance of acidity and fine tannins giving the palate great length and complexity.

The palate continues the dark cherries and chocolate with a dense juiciness and ripe tannins delivering a long and structured finish.

2012 on the whole was relatively dry and mild in McLaren Vale with some well-timed rain events resulting in what will be considered a very solid vintage. In the glass the 2012 Ging has a black core with a deep red / magenta rim. The aromas are complex and evolving, with lifted fresh notes of mocha, vanilla and dark chocolate supported by attractive plums, spice, chary cedar, anise and grilled meats

Such a gorgeous wine. Fragrant, full of succulent red/black berried fruit, tightened by fine-grained tannin and yet the flavours continue to roam freely through the finish. It’s medium-weight at most and it has a gentle tanginess, but it feels confident and complete every step of the way. The White Label all carry their own names to show true varietal character and which reflect the region of origin. They reveal complexity, flavour and structure – big and bold but with a level of restraint that is the mark of excellent winemaking.

PALATE On the palate this wine is full of juicy soft plums, which run through the palate, mocha, graphite, cedar and spice and finishes long and balanced with fine tannins and subtle meaty tones.

It would seem that the combination of elements that go into each of our wines is a winning formula. We have lost count of all our gold medals – the certificates cover the walls in our cellar door while the shelves are buckling with the weight of all our trophies – both local and overseas. But actually we’re not ones to boast so that’s enough of that. Lovely passionfruit, lime and fragrant lemongrass leap from the glass, whilst the palate is crisp and focused with a juicy texture. The barrel fermented component helps to highlight the wines chalky minerality. In terms of flavours this wine has lovely complexity with strong citrus and passionfruit characters balanced by some herbal notes and tropical fruit.

This is a beautifully lifted aromatic wine with lemon blossom, fresh cut pear, honeycomb featuring strongly. The palate is full and rich, slightly off dry and balanced with lovely acidity. Pip fruit and nectarine flavours abound with background notes of nougat and spice giving the wine depth and interest. This wine will develop wonderfully over the next 3-5 years.

The bright cherry and raspberry aromas scream “Pinot Noir�. The palate is gentle and supple with surprising power and depth, the wine has a lovely length, soft chalky tannins and gentle acidity. The aromas of fragrant vanilla and mocha are derived from maturation in a mixture of some new, but mainly older French oak barriques.

Since 1340, 19 generations one after another, have managed the Monfalletto property in the town of La Morra, the center of the production of Barolo wine. Even today, the property is entirely family-run. Giovanni Cordero di Montezemolo and his children Elena and Alberto are the protagonists of this millennium. The historical single-body vineyard area of 28 hectares (69 acres), rare for the area, extends over all sides of the hill. Bright white, minimalist and unexpected, Mesa stands at the top of the hills that slope gently down towards the Valley of Porto Pino. It emerges suddenly from the greenery of the Mediterranean shrubland and of the vineyards, The grapes are picked and carefully selected by hand. They are then destemmed on the top floor of the winery before being left to precipitate directly into the vats on the floor below, where the must begins to ferment. The wine is then transferred to the deepest part of the cellar where it matures in wood and in concrete tanks, several meters below ground level. The same invisible energy that enriched the vines now jealously guards their product.

Obtained with the appassimento technique: the grapes are harvested in advance, left to dry in trays for a short time to lose weight, concentrating sugar and aromas. They then macerate for 12 hours to enhance complexity and structure. At the end of the fermentation a part of the wine is matured in wooden barrels for some months before blending and bottling.

Founding wine and starting point of the Romeo&Juliet project; red like love and passion. A blend of Corvina and Croatina grapes with a percentage of Merlot, which the drying period renders velvetier still. The grapes are picked by hand and left to dry in wooden crates in the drying loft. There, by means of humidity control and air circulation, the grapes lose around 30% of their water content and achieve a high sugar concentration. Aged in oak tonneau barrels for 3 months.

The Peroni brewery was established in 1846 in Vigevano, Lombardia. The Birra Menabrea 1846 lager is brewed using light barley malts and maize, for a light, crisp lager style. GRAPPA Italy

There is a legend that tells of a Roman soldier who first distilled grappa in the northern Italian town of Bassano del Grappa using distilling equipment stolen in Egypt, however, the story cannot be considered reliable as such equipment could not produce grappa. Distillation useful for producing beverages was not discovered until the eighth century, and it likely took about two more centuries for the technology to travel from its home in the Levant and Persia to Italy (likely by route of the Crusades). Around 1600 AD, the Jesuits in Spain, Italy and Germany studied and codified the techniques used to produce brandy or grappa, and their methods were used until recent times. The Museum of Wine and Grappa shows historical equipment used in the early years of grappa distillation.

Amber in colour and delightfully ethereal in aroma this fortified, semidry Marsala Fine from the province of Trapani is a great dessert wine at room temperature. It can be served chilled as an aperitif. It is widely used in cooking and in food industry (pastry, ice cream and confectionery).
