ONE-SKILLET APPLE AND SAGE PORK MEDALLIONS

SERVES: 4 • PREP TIME: 15 MIN • COOKING TIME: 25 MIN

Ingredients
  • 1 lb (500 g) pork tenderloin, approx. 1 tenderloin

  • 1/2 tsp (2 mL) salt

  • 1/2 tsp (2 mL) pepper

  • 2 tbsp (30 mL) flour

  • 1 tsp (5 mL) ground sage

  • 1 clove garlic, minced

  • ½ tsp (2 mL) ground thyme

  • 1 tsp (5 mL) vegetable oil

  • 1 medium onion, thinly sliced

  • 4 cups (1 L) thinly sliced Ontario apples*

  • 1/2 cup (125 mL) sodium-reduced chicken broth

Directions
  1. Preheat oven to 400°F (200°C). Slice pork tenderloin into 4 equal-sized pieces. Season pork medallions with 1/4 tsp (1 mL) salt and pepper.

  2. In a large bowl, mix together flour, remaining salt and pepper, sage, garlic and thyme together in a small bowl. Rub the flour mixture over the pork tenderloin pieces.

  3. Heat oil in a large skillet over medium-high heat. Brown tenderloin medallions on all sides, around 4 minutes. Set tenderloin medallions aside on a plate.

  4. In the same skillet, heat oil over medium heat. Stir in onions and apples and cook for 5 minutes or until the apples are tender. In a small bowl, whisk together chicken broth and the remaining flour mixture.

  5. Add the broth/flour slurry to the pan and cook for 30 seconds or until sauce is thickened. Add tenderloin medallions back into the pan and cook in the oven for 15 minutes.

  6. Serve with your favourite sides.
