Lanny Chin
Chef brings his talents to the Palms Chef Lanny Chin hails from Cleveland and spent much of his cooking career there before relocating to Las Vegas a few years ago, although he did spend a year at the legendary Alinea in Chicago. He hasn’t been in Vegas long, but he’s found his way to some of the most popular local restaurants in the valley, including downtown favorite Eat. Chin established a scratchcooking program at PKWY Tavern, helping to transform a beer-centric gaming saloon into a true dining destination. Now he’s taking his biggest shot yet with the new Greene St. Kitchen at the Palms, a hip venue with a dynamic street art theme and a menu stacked with crowd pleasers at one of the buzziest resorts in the city. You’re working just off the Strip now with Clique Hospitality’s various venues at the Palms. What did you learn about Las Vegas and what locals want from your previous gigs? It was a whole different world coming from Cleveland. There, the dining experience was based completely on food and then service. Coming into Vegas, you find a mix of food and service and throw gaming into the mix, and there’s definitely more showmanship involved. I would do beer-pairing dinners and I’m cooking and cooking but at the same time you’re coming out to talk to guests and building that rapport. You just won big on Chopped, the popular but grueling cooking competition show. What was that experience like? We were filming for about 16 hours and it was this emotional roller coaster. You spend the whole day cooking and being judged and there’s a bit of probing your personal life, too. It’s exhausting. The reward is amazing, way past the $10,000 prize, because the reach of that show is huge. People I know in Cleveland, Chicago, Alaska, all over were sending lots of texts and love.

You’ve been working with Clique Hospitality recently but Greene St. Kitchen is the company’s first food-centric venue at the Palms. Absolutely. Camden Cocktail Lounge and Apex Social Club are great venues and a lot of fun but they’re not food-centric. And Greene St. Kitchen is a totally different concept. All the artwork and the décor is beyond interesting, so different than anything I’ve ever seen. And the food is different as well. Greene St. Kitchen feels like a great fit among the other new Palms restaurants, too. It is a melting pot. Scotch 80 Prime is a great steakhouse but then we have this 24-ounce wagyu ribeye and it’s amazing. We have Shark opening up soon with Bobby Flay but we have a sushi program we’re doing at Greene St. with a lot of hand rolls and specialty rolls. Everybody has their specialized thing at this hotel, but we’re the only place that’s pulling from everywhere to bring together this menu. Any dishes you’re particularly excited about? We do this really amazing lobster pasta that, when you look at it,
it has a certain simplicity to it. It just looks like spaghetti and bacon and lobster meat, but a lot of time and effort goes into making the lobster cream sauce that’s the core of the dish. It’s rich and has such a strong lobster flavor. That’s a lot of what we’re doing on this menu, simplicity with a lot of
effort behind the scenes. Another dish I love is just a side of patatas bravas, a potato with harissa aioli. We bake the potatoes in salt, rip them up by hand, double-fry them for a nice crispy texture and we make our own mayo and our own harissa paste to make this amazing aioli.

Walk This Way Even Rock and Roll Hall of Famers go all out when it’s time to play the Strip. Boston bad boys Aerosmith are pulling out all the stops for Deuces are Wild, their Park Theater residency opening on April 6. They’ve teamed with director Amy Tinkham (Paul McCartney, James Taylor), producer Steve Dixon (Guns N’ Roses, Justin Timberlake) and The Beatles LOVE producer Giles Martin
for this new production, as well as design studio Fireplay and special effects outfit Pixomondo, known for its work on Game of Thrones. The band has also partnered with THX and L-Acoustics to deliver the world’s first THX-certified live performance presented in L-ISA Immersive Hyperreal Sound. You know the music, but you’ve never seen or heard Aerosmith like this before.
MUST-SEE Magic Mike Live For nearly two years now, Magic Mike Live has been reinventing the male revue and the entire idea of what it means to be a sexy show in Las Vegas from its home at the Hard Rock Hotel. It’s irreverent but progressive, designed for women but acrossthe-board fun, edgy and uproarious. The dancers are talented, charming and seductive, but the real stars of this show are the audience members, who are rightfully worshipped and entertained. It’s been so successful that another version of the Channing Tatum-backed show has been launched in London. But Vegas is where it all started and the subterranean space now known as Club Domina—formerly the legendary nightclubs Body English and Baby’s—is a truly unique and ideal venue for this one-of-a-kind show.

Zappos Theater resident headliner Gwen Stefani helped reveal the first-ever themed exam room for patients of Nevada’s only childhood cancer outpatient treatment center. She worked with the Cure 4 The Kids Foundation to inspire the design of the brightly colored exam room, and Las Vegas artist Juan Muniz created illustrations that cover the walls, including a rendition of Stefani. With her partners Live Nation and Caesars Entertainment, Stefani is donating $1 from every ticket purchased to her show to Cure 4 The Kids. In attendance at Terry Fator’s 10th anniversary show at The Mirage: Jane Seymour, Mat Franco, Property Brothers Drew and Jonathan Scott, Criss Angel, Rich Little, Franc D’Ambrosio, Brian Boitano, Matt Goss and Pia Zadora. Illusionist Criss Angel gave comedian Billy Crystal a special backstage tour after enjoying Angel’s immersive, illusion-packed production Criss Angel MINDFREAK at Planet Hollywood. While the U.K.’s top-selling pop star Robbie Williams was launching his residency at Wynn’s Encore Theater, his American actress wife Ayda Field Williams was spotted attending Magic Mike Live at the Hard Rock Hotel. After the show, The X Factor U.K. judge met with the cast. He’s getting ready to open his own comedy club nearby so it makes sense that late-night talk host Jimmy Kimmel was spotted dining (with former Saturday Night Live comedian Chris Parnell) at The Linq Promenade’s tasty Virgil’s Real Barbecue restaurant recently.

No Shirt, No Pants, No Problem Sleight-of-hand artists uncover humor and magic Before they were the Naked Magicians, Australian performers Mike Tyler and Christopher Wayne were “full-time clothed magicians,” explains Tyler, the darker-haired half of the dashing duo. “Chris was actually the first Australian magician to have his own TV series. We got together and designed our show and as it has developed and changed over five years, it’s gotten a lot naughtier and funnier.” The Naked Magicians made their Las Vegas debut last month at MGM Grand, which Wayne described as the most exciting time of his life. But how nervous were they to get onstage for

the first time on the Strip and bare it all? Nothing could compare to the first time. “Our first show together was the most terrifying thing I’ve ever done in my life,” Wayne says. “It was like jumping out of a plane. I still remember the first time I took off my pants in the show and the audience cheered and screamed and I was terrified until that moment. Then it was like a parachute opening when you’re skydiving, and everything is going to be OK. We have 2,000 people at shows when we’re on tour and taking off your clothes with that many people cheering can make you feel invincible.”
The show at Brad Garrett’s Comedy Club is much more intimate, just the way Tyler and Wayne like it. The audience is close enough to see and hear everything, but you still won’t believe how these two talented magicians can dazzle with sleight-of-hand, mind-reading and more … and they’ve got nothing up their sleeves, because there are no sleeves. “It’s the perfect place for a couple Aussies to get naked in and make people laugh,” Tyler says. A Thrill to Behold As an artist, Michael Jackson wore many fedoras—singer, songwriter, storyteller, dancer, choreographer, entertainer, trendsetter, originator, influencer. Playing With Purpose Irish singer-songwriter Hozier may create smooth poprock hits like “Take Me to Church,” “Someone New” and “Cherry Wine” but he’s not just churning out ballads perfect for movie trailers. Hozier was a member of the long-running Irish choir Anúna, contributing his vocals to Irish folk songs, and after that he was the bassist for the punk rock band Raven and the Radicals. As a solo artist, Hozier remains politically active, taking on serious subjects in his music even as his songs reach wide audiences with their accessible hooks. The video for “Take Me to Church” targets violence against the gay community in Russia, and the video for “Cherry Wine” aims to raise domestic violence awareness. On his 2018 collaboration with Mavis Staples, “Nina Cried Power,” Hozier pays tribute to activist musicians of the past. Hozier’s latest album, Wasteland, Baby!, which debuted at the top of the Billboard charts, continues to combine pop songwriting with important themes. It’s an approach that has kept Hozier relevant both musically and socially. –Josh Bell

Within You, Without You Most vacationers in Vegas don’t expect to see dead bodies, but that’s exactly what visitors get when they happen upon REAL BODIES at Bally’s, a series of walk-through exhibits displaying preserved human forms and remains that have undergone modern-day mummification. Skeletal, respiratory and circulatory, digestive, nervous and muscular systems get their due in depth, with specimens in various states of dissection and activity. Organs, bones and skulls lay under glass or hang on walls, and various states of development and disease are uncovered in a way that Gray’s Anatomy can’t convey.
Several rooms have a spooky atmosphere, including a skull-and-bones wall display where visitors with a penchant for the macabre can arrange to be married. But for the most part, REAL BODIES is an educational journey that leaves visitors with a better understanding of how the body works. History Lesson
A Life of Music Although South Carolina rock band Needtobreathe has racked up numerous honors from the Christian-focused Dove Awards and has its albums frequently place at the top of the Billboard Christian chart, the band members have never wanted to limit themselves to the “Christian rock” label. They went out of their way to sign with a mainstream record label, Atlantic, when they started building a fan base with their early independent releases. And while the band’s most recent album, 2016’s Hard Love, may have topped the Christian charts, it also debuted at No. 2 on the overall Billboard album chart. Over the years, Needtobreathe have toured with other faith-leaning artists,
like Switchfoot and Third Day, but have also spent time opening for superstars like Taylor Swift and Tim McGraw and Faith Hill, demonstrating their broad appeal, not only across religions, but also across genres, from rock to alternative and country. Spirituality runs through the band’s songs, but they’ve never been interested in preaching to their audience or excluding any potential listeners. “Religion can be polarizing, but music is what brings us all together,” bassist Seth Bolt told Rolling Stone in 2016, and Needtobreathe’s music is all about bringing people together. –Josh Bell The Pearl at Palms, 8 p.m. April 6, starting at $34.95 plus tax and fee. 702.944.3200

Five fun facts about the The Buckinghams: 1. The Chicago-based group was originally dubbed the Pulsations and first gained notoriety as the house band for a local TV show called AllTime Hits, which aired on WGN. 2. With the British Invasion in full swing, the show’s producers urged the band to ditch its name in favor of something more British-sounding. They settled on The Buckinghams, which was one of several names suggested by … a WGN security guard. 3. The quintet’s first single, “Kind of a Drag,” was a million-seller that rocketed to No. 1 in February 1967. 4. They performed at consecutive presidential inaugural balls in 2005 and 2009, the former in Washington, D.C.; the latter in Chicago. 5. Led by founding members Carl Giammarese and Nick Fortuna, The Buckinghams are still delighting audiences across the nation decades later— including this week in downtown Las Vegas. –Matt Jacob Golden Nugget, 8 p.m. April 5, starting at $29 plus tax and fee. 800.745.3000 Ticketmaster

Do You Know the Way to Las Vegas? Can she tell us which of her hit songs she likes the best? “No,” legendary songstress Dionne Warwick firmly said during a recent interview. “I can’t pick a favorite— that would be like picking a favorite child. They are all like my music babies.” She describes her show as a fun evening, and emphasizes that audiences are going to hear all their favorites, including “Heartbreaker,” “Walk On By,” “I’ll Never Love This Way Again,” and the song for which she won a Grammy, “Do You Know the Way to San Jose.”
“I am also going to introduce some new songs to show I am still current,” Warwick added. However, she emphasized it won’t be like some of today’s music, with lyrics that she said absolutely offend her. “I have grandchildren listening to it and I don’t like it,” said the recording artist. Warwick, who was the first AfricanAmerican female pop singer to perform before Queen Elizabeth II and the late Queen Mother, is no stranger to Las Vegas entertainment. “People are people wherever I am performing.” –Penny Levin

Ribeye appesa
Live fire, pure ingredients and genius twists make Manzo must-try Italian Entering Eataly, the perfume of freshly baked bread, cured meat and aged cheese hits hard. It draws you into the busy warmth of the Italian marketplace, where you could spend a few blissful months grazing. But inhale deeper and a heady blend of smoke and sizzling fat will lead you to Eataly’s jewel of a butcher’s restaurant: Manzo. That’s Italian for “beef,” the star on a menu that’s refreshingly unfussy. “Being simple is just what Italian cooking is. … Simple, but paying a lot of attention,” executive chef Arnold Corpuz says. Paying attention starts with ingredients, and Manzo’s menu calls

on partner farms that share an ethical, artisan approach. When the raw materials are this good, honoring them is a lot about proper cooking, and Corpuz’s team does most of it with a rustic, wood-burning grill. Manzo’s Agnolotti del Plin was born at the original location inside Eataly in New York City’s Flatiron District, but Corpuz added beef and duck drippings to bone-marrow butter coating pork-and-veal purses topped with black winter truffle and Parmigiano-Reggiano. As Eataly executive chef Nicole Brisson affectionately says: “It sticks to your bones.”

Millefoglie al limone
Polpo alla piastra
Brisson and Corpuz have cooked together for years, coming up in Las Vegas’ fine-dining scene. She taught him to dry-age beef, and the process they developed for Manzo imparts steaks with a sweet, nutty, funky magic. The ultimate way to experience it is the ribeye appesa, 42 ounces of outstanding beef raised by Kansas’ Creekstone Farms. Suspended over the grill, it’s slow-roasted and reverse-seared for an insane crust (another Corpuz flourish), then finished with a grassy Tuscan olive oil called Franci before being carved tableside.
Anatra, featuring Maple Leaf Farms White Pekin duck out of Indiana, shows Corpuz’s creativity and colorful flavor influences, from the Philippines and Hawaii to Italy and France. Fire-roasted breasts and confit legs in a reduction of citrus and Nebbiolo wine share a platter with brûléed Cara Cara orange and pickled Caulilini. Three days of work go into this dish, and you taste it. Main proteins are deservedly hyped, but there is so much more to the menu. Among a handful of stellar sides, patate is an Italian take on kitchen-sink mashed potatoes, with crispy guanciale, pickled peppers, brown butter and a soft-poached egg begging to be split. Polpo alla piastra is a standout starter of grilled and raw octopus in a sauce of Roi olive oil, sherry vinegar, lemon and sharp herbs. And the ideal end to a hearty meal is millefoglie al limone, its tart fruit foundation layered with velvety mascarpone and delicate tuiles. On the beverage side, Manzo offers the city’s largest selection of Italian wines, and the book is loaded with trivia about their regions, grapes and qualities. Cocktails are Italian interpretations of classics, whether made with Malfy gin or pepperoni dust. Add beer, spirits and aperitifs, and you’ll have a tough time deciding what to pair with Manzo’s fresh, modern take on Italian food. The beauty is, there’s no wrong choice.

KÀ Imperial Experience
Joe Porrello
Turning the spotlight on this theater supervisor “When I was young I remember coming here and seeing the show EFX in this theater, and that’s always been my dream, to work in entertainment in Vegas,” said Joe Porrello, theater supervisor for Cirque du Soleil’s KÀ at MGM Grand. “... Since then it’s all I ever wanted to do.” Porrello has literally come full circle—now overseeing the very theater where he fell in love with entertainment when he was just a boy. The Las Vegas native’s career includes a long stint with Blue Man Group when the show was at Monte Carlo (now at Luxor), where he worked the front of house as well as performed in the pre-show procession that parades through the casino each night. Porrello also spent time as the special events supervisor for Park Theater at Park MGM. Six months after helping launch the theater, he and his team received the chairman’s award for guest services. “That was a
30 3.31.19 LasVegasMagazine.com
really big accomplishment for us,” he said. In 2017 he joined Cirque’s KÀ, where he oversees a team of nearly 30 “gatekeepers”—a team of individuals that play characters that interact with guests, giving them a unique experience when they come see the show. His favorite part of being the theater supervisor? “Honestly, this probably sounds cliché, but it’s the guest interaction,” Porrello said. “We have guests coming from all over the world and it’s so cool getting to know their story. I love asking what brings them to the city. I come across guests that have been saving for years to bring their family here, and when they say they had to pick one thing for their family to do out here and they pick coming here—it’s just really special. That’s my favorite thing. To make a memorable entertainment experience for all our guests.” –Kiko Miyasato
This VIP experience comes with luxury box seats situated 30 feet above the audience and overlooks the entire theater. Along with the box seats, guests can kick back in the lounge space to enjoy a complimentary cocktail and popcorn (there’s a full menu of cocktails and small bites for an additional charge). There’s also a meet and greet and photo opportunity with some of the KÀ cast. Part of Porrello’s job is to greet the guests that book the Imperial Experience, and he personally escorts guests up to the private suite through a private entrance and checks in throughout the show to make sure the experience was a memorable one. –KM

Stretch It Out
New eatery ups the game in Asian cuisine The new culinary offerings at Park MGM—Best Friend, Eataly and the NoMad Restaurant—are still capturing much of the foodie buzz on the Strip, but you may have missed the newest restaurant in this remade resort’s collection, where fresh-made, hand-pulled noodles prepared in various styles are the centerpiece of an exciting pan-Asian menu. La La Noodle (Park MGM, 702.730.7025) offers a selection of classic and creative dishes. Start with crisptender salt-and-pepper calamari tossed with
red jalapeños, garlic and scallions and decadent lobster dumplings with spicy, creamy sriracha mayo. There are also terrific soups like wonton or hot and sour varieties. Favorites like walnut shrimp, General Tso’s chicken and panang curry duck (with red curry) are tempting, but plan to share those specialties so you can focus on hand-ripped Xi An noodles with spicy pork, cucumbers and scallions, or chewy noodles with brisket, bok choy and cilantro in an aromatic five-spice beef broth. –Brock Radke
At brightly painted and welcoming Cevicheria El Diamante (2457 E. Tropicana Ave., 702.202.1157), settle in for a feast befitting a seaside Mexican palapa. Fresh seafood, flash-cured in citrus, is the house specialty, and you can choose from a kaleidoscopic range of savory ingredients including salmon, tuna, octopus and avocado. When mesmerizing mounds of ceviche arrive, pile the vibrant mixes on crispy, housemade corn tostadas. There’s a mountain of hot dishes, too, including bubbling molcajetes, steaming cauldrons filled with treats like crab legs, langoustines and abalone in a zesty sauce. –Greg Thilmont
#trending The lobby bar at Mandalay Bay has been converted into Hazel Coffee & Cocktails (702.632.7700), open from 5 a.m. until after midnight, offering early birds a delicious pick-me-up and nighttime guests live entertainment. Lamill Coffee from L.A. is the star of the morning show, with espresso, cortado, cappuccino or latte served alongside breakfast sandwiches, pastries and more. The evening menu spans the classics, offering traditional and modern takes on cocktails from the Manhattan to the martini. –BR

Penn & Teller’s shows honor the spirit of revered illusionist Something happened in Penn & Teller’s universe last month that went relatively unnoticed by the world, but changed the duo forever. Their mentor, magic legend Johnny Thompson, died weeks after collapsing onstage during rehearsals for the sixth season of CW series Penn & Teller: Fool Us. “The Great Tomsoni” was a master magician and a father figure to nearly every prominent illusionist who has appeared on the stages of the Strip in the past two decades. His most arguably successful disciples immortalize Thompson’s influence regularly inside the theater at the Rio named for them. A clearly shaken Penn Jillette paid homage to Thompson in the introduction to the March 10 podcast of Penn’s Sunday School, which he recorded shortly after Thompson passed away. “My hero, my mentor, my friend, my co-worker,” he said of Thompson. Jillette had made a documentary called Gambler’s Ballad: The Legend of Johnny Thompson that aired on Showtime last year, and in his mid-80s Thompson was actively involved with Fool Us, interviewing magicians about the tricks they performed for Penn & Teller during the show, and letting the duo know if they guessed the secret behind the trick correctly. Despite the loss of a man Jillette thought of as a grandfather to his children, Penn & Teller went onstage that night as they knew Thompson would expect them to. At a mid-week show, there was no momentary lapse in professionalism for the duo that has now been together for 44 years.

An audience participation trick, for which guests were invited to pick up four cards and a paper cup before entering the theater, created an especially anticipatory mood before the show. Pianist Mike Jones warmed up the crowd, who by tradition were invited to check out prop boxes onstage, with virtuoso stride piano playing. It seemed as if grief had been channeled into a show that is perhaps among the duo’s funniest. With no shortage of tricks to draw on, Penn & Teller can evolve their act during the course of a year until it’s different than the one performed 12 months prior. A trick with a street magician theme allows Penn to parody YouTube influencers to hilarious effect. A game show allows audience members to assume names such as Assange, Snowden and Manning. A state-of-the-art video system enables traditional magic tricks to be taken to new levels. But that’s what Penn & Teller have done throughout their career. Had they not met as members of the Othmar Schoeck Memorial Society for the Preservation of Unusual and Disgusting Music, Jillette, whose skill on upright bass can be heard alongside Jones on a recording released last year titled The Show Before the Show, might never have even gone into magic. “I wanted to work with Teller,” he said last year on an episode of podcast You Made It Weird with Pete Holmes. “Because Teller was the most talented, interesting person I’d ever met.” Now they are heroes, mentors and friends to the next generations of magicians, the next Penn & Teller. The Great Tomsoni would be proud.

The Unknown (Explored, Explained, Exploded) Palms © 2009 Damien Hirst
By Matt Kelemen
The fine arts scene continues to grow in Las Vegas The presence of visual art in Las Vegas has progressed slowly and steadily in the years since the Bellagio opened with a blue chip collection in its gallery, Dale Chihuly’s ceiling of blown glass flowers greeting arrivals and Picasso pieces in a restaurant named for the artist. Both the Cosmopolitan and multiresort complex CityCenter upped the game by prominently featuring works by major artists, or commissioning them to add their signature touches to design. The Palms is now a veritable museum since undergoing nearly $700 million in renovations, and recently became home to Las Vegas’ first permanent work by one of the most famous street artists in the world. The enigmatic Banksy’s 2002 spraypainted depiction of two armed police officers with yellow smiley faces, Smiley Coppers Panel I, shares space with creations by Kenny Scharf, Cleon Peterson, Vhils, Martha Cooper, DabsMyla and Slick inside newly opened, Rockwell Group-designed restaurant Greene St. Kitchen. The latest works join a collection that includes multiple pieces by Damien Hirst, such as his instantly infamous The Unknown (Explored, Explained, Exploded). Hirst’s much-discussed piece is an actual tiger shark separated into three formaldehyde-filled tanks and installed above the casino’s center bar, and is the current highlight of a fortune in fine art now avail-

able for public viewing. A tour for guests is in the works, according to Palms’ creative director Tal Cooperman, and is a no-brainer considering the inevitable queries visitors will make once they find out that works by Jean-Michel Basquiat, Takashi Murakami, Richard Prince, Andy Warhol and Dustin Yellin are on property. One of Cooperman’s personal favorites is Todd James’ All the Time in the World, a 2018 acrylic-on-canvas hanging in the VIP check-in area, next to a circular, spraypaint-on-aluminum spirograph-inspired work by Jason Revok. Guests may have already been familiar with James as a hiphop logo creator (Beastie Boys, The Source) and as the puppet designer for Crank Yankers, but a stay at the Palms can expose the uninitiated to his brightly colored, cartoonesque painting style. over bartenders that swizzle drinks with sticks of Hirst’s design and set them down on napkins that feature his signature spots motif. Colorfully spotted panels encircle the bar and make the atmosphere lively and hip, as well as create a contextual setting for The Unknown, which was installed with extreme secrecy and security under Hirst’s supervision. A bronze casting of his Demon With Bowl (Exhibition Enlargement) will be the showpiece of the Palms’ new pool area that opens this spring. Observant eyes will find sculpture by Hirst and Kaws on the casino floor, as well as neon phrases by Olivia Steele on wall spaces and awe-inspiring, optically illusory “backlit chromogenic 3D lenticular” works by Robert Munday within the entrance of Scotch 80 Prime restaurant.
Admirers of Shepard Fairey should look for an empty space on The Cosmopolitan’s second self-parking level, close to the elevators where Fairey’s iconic Obey visuals adorn walls. With late wrestler Andre the Giant’s eyes looking on, Fairey mixes a free speech message into the mural, and peace symbolism among visages that resemble Marlene Dietrich and Anjelica Huston. Make an about face, and Los Angeles graffiti artist Retna’s mash-up of Semitic scripts, Asian calligraphy and ancient hieroglyphics calls out from walls on the other side of the garage, drawing attention like a magnet despite the undecipherable syntax. An argument can be made that the three-story chandelier designed by David Rockwell to dominate the Cosmopolitan’s interior

Valet at Aria and take a look at Maya Lin’s Silver River, a wall-length rendition of the Colorado River above the lobby desk that evokes Nevada’s natural topography inside one of its most modern resorts.
The Strip itself can be considered a work of art in progress, but now visitors who promenade across The Park to Golden Knights games at T-Mobile encounter the graceful simplicity of Marco Cochrane’s Bliss Dance, a 40-foot sculpture of a woman illuminated by nearly 3,000 LED lights. Casual Excellence The late Joël Robuchon is a culinary legend, and Las Vegas is fortunate enough to be home to not one but two of his restaurants, situated side-by-side at MGM Grand. The bastion of fine dining is his eponymous venue, but next door with shared back-of-house space is L’Atelier de Joël Robuchon (702.891.7358), his more “casual” dining experience. Literally translated to “workshop” in French, what

the restaurant offers is culinary theater, as a 26-seat counter lets you peek directly into the showcase kitchen. Those seats afford some of the finest sights in Vegas as they pull back the curtain on what executive chef Jimmy Lisnard and his crew accomplish on a nightly basis. La Saint-Jacques is a buttery steamed scallop served atop a tart seaweed butter tinged with Espelette pepper, melding
traditional French ingredients with Japanese influences in an epiphany showcasing the mild bivalve without overwhelming it. Along more traditional lines, L’Asperge serves blanched asparagus in a butter sauce finished with paper-thin slices of prosciutto di Parma, while La Caille explores the fields with an unctuous foie gras-stuffed quail served with his famous pommes puree. –Las Vegas Magazine Staff
