Steven Funkhouser
General manager is on top of his game
Steven Funkhouser just opened Emporium at Area15 a few months ago, but he’s played a supporting role in the company for more than four years. Before he moved to Las Vegas, the general manager helped launch the brand’s S.F. and Berkeley, Calif., locations.
Funkhouser has a long history in the food and beverage industry, starting off as a bartender for various dive bars around the City by the Bay, eventually graduating to managing huge nightclubs. But in 2017 he switched it up and decided to join Emporium, a company that creates kid-like fun for adults in the form of an arcade bar.
As the general manager, Funkhouser helped build Emporium’s new location, its sixth, from the ground up. There was nothing but empty walls and construction, and now the two-story space is packed with impressive local art, video games, classic pinball machines and a craft cocktail bar.
“I’m a very active person, I would never do well behind a desk,” he says. “I’ve always liked walking around, being social, talking with people. As a manager, I’m always getting to know my guests, being out in the scene. And I’ve always been a manager willing to do anything—I don’t mind getting my hands dirty and helping out. When you have a busy night, you’re the director, and a great manager is directing everything and paying attention to every little detail, and that makes a difference.” –Kiko Miyasato
• Libation • Sonic Boom Old-Fashioned “I wear a lot of hats at Emporium and one of them is doing the bar program,” Funkhouser says. He helped put together the menu, which includes local draft beers and a large liquor selection, and even created the bar’s craft draft cocktails. There are four choices, like the Sonic Boom Old-Fashioned, mixed with Templeton rye whiskey, Luxardo Maraschino liqueur, Solerno blood orange liqueur and cherry bark vanilla bitters. All the craft draft cocktails are made daily. –KM
David Chiti
Lounging around Caesars Palace
All the fun experiences you’re having at the lounges at Caesars Palace is thanks in part to David Chiti, general manager of lounges for the property. He oversees the ordering of spirits, scheduling of the staffs, the creation of the cocktail programs, nurturing the vibe of each space and making sure each spots’ guests are accommodated. “That’s my favorite part of the job, meeting my guests and seeing my returning guests,” says the Canadian native.
The food and beverage industry is one Chiti has been a part of for more than two decades in Las Vegas. He’s been behind the bar at big nightclubs, he’s spent 11 years as a certified sommelier at one of the Strip’s top French restaurants, and in 2018, he joined Caesars Palace, where he helped manage Montecristo Cigar Bar. Recently, Chiti was promoted to his new title, and he’s added Vista Cocktail Lounge (where we met with Chiti for this story), Vanderpump Cocktail Garden, Alto Bar and Stadium Bar, a new upscale sports lounge set to open this spring.
When Chiti is off the clock, he loves spending time with his wife and three boys. He actually met his wife while they were both bartending at a nightclub on the Strip; they will celebrate their 17th wedding anniversary in June. He loves movie nights at home and cooking, a passion for him—he makes a mean chicken schnitzel, and is a master of the barbecue. –Kiko Miyasato
• Libation •
Horse Soldier Old-Fashioned This cocktail has a great story behind it. The Horse Soldier Old-Fashioned is mixed with Horse Soldier bourbon, house-made syrup consisting of sugar, cinnamon sticks, peeled orange rinds, cherry juice and water, and aromatic bitters. Horse Soldier is a bourbon created by soldiers who traveled to Afghanistan and defeated a Taliban leader. The bottle’s seal is made from a mold that uses metal from the Twin Towers. When ordering this cocktail at Vista, ask the bartender more about this fascinating story. –KM
