NOTES
From the Editor Staying Connected
Whether you’re married, dating or engaged, there are so many ways you can celebrate Valentine’s Day in Las Vegas: You can go out to see a show; enjoy a casual or elegant meal; enjoy your favorite cocktail at a lively bar; or just enjoy the sights of the Strip. Heck, even if you’re single, grab some friends and hit the town! Because Valentine’s Day isn’t only about romance; it’s about connection. And this week’s issue of Las Vegas Magazine is packed full of both fun and romantic options for all of the above. It doesn’t get much more romantic than listening to legendary singer Andrea Bocelli, who spoke to editor at large Brock Radke about his upcoming performance this week at MGM Grand Garden Arena (“The Tremendous Tenor,” p. 30). Speaking of great voices, Donny Osmond, who performs in a residency at Harrah’s (“Real Love,” p. 34), this week celebrates the 50th anniversary of arguably his most famous song, “Puppy Love.” If you’re more in the mood for some magic, start with either Penn & Teller at the Rio (“Step Right Up,” p. 38), or Jen Kramer at Westgate Las Vegas (“Impossibly Fun,” p. 12). Any Michael Jackson fans out there? One of the Strip’s best tribute shows, MJ Live, has moved to Tropicana Las Vegas (“Off-the-Wall Fun,” p. 9). For
the America’s Got Talent viewers, good news: America’s Got Talent Las Vegas Live at Luxor just added quick-change artist Lea Kyle to the lineup (“Clothes Call,” p. 11). For comedy fans, it doesn’t get much better than longtime Vegas funnyman Carrot Top at Luxor (“High-Energy Laughs,” p. 13). And for those looking for something a bit more adult, “X” Burlesque at Flamingo has the perfect blend of sexy, funny and just plain fun (“Dance Sensations,” p. 14). No doubt many of you will be making dinner plans as part of your week. We’ve got plenty of options for you to consider, from Taiwanese excellence at Din Tai Fung at Aria (“A World of Flavor,” p. 10) and Gordon Ramsay Pub’s traditional fare at Caesars Palace (“Brit Hit,” p. 13) to Resorts World Las Vegas’ newest hot spot Carversteak (“Cutting Edge,” p. 24) and Circa Resort & Casino’s go-to restaurant Barry’s Downtown Prime (“Relax and Recharge,” p. 17). Looking for a great cocktail experience? Associate editor Kiko Miyasato has collected some of the best spots for great memories (“Make It a Date,” p. 22). Whether you’re in town this week to get married, get whisked away on some romantic adventure or just hang out with friends, here’s to everyone making a connection this Valentine’s Day.

and a slew of some of the best pop songs ever written. You’ll really think you’re seeing the real thing while rocking to classics like “Bad,” “Billie Jean,” “Thriller” and “Beat It” (getting up and dancing is highly encouraged!), and for some real nostalgia, there’s a Jackson 5
segment that takes you back to the icon’s younger days. You’ll likely be singing right along when the band launches into “ABC” and “I’ll Be There”; you might find yourself getting a bit emotional, too. –Ken Miller Tropicana Las Vegas, 800.745.3000 Ticketmaster

Aria restaurant redefines Taiwanese cuisine When you waltz up to Din Tai Fung, the first thing you may see is the chef with a dumpling for a head—he’s kind of hard to miss. The cheerful greeting from the Taiwanese dumpling house mascot puts you in an upbeat frame of mind, and when you pause at the glassed-in display kitchen where dumplings of all sorts are being created by hand, that happy feeling is sure to continue until you are seated at your table. Choose appetizers like the wood ear mushrooms or baby back ribs, then follow up with the main event. Ordering here is on a checklist-style system, where you choose the dumplings and buns you want to share (or hoard for yourself;

it’s all good). Good choices are the shrimp and kurobuta pork shao mai; Jidori chicken; and vegan dumplings, the latter stuffed with shitake and wood ear mushrooms, glass noodles and bean curd—but it’s the color that’s truly amazing. Spinach juice lends the wrappers a verdant hue. The plump buns come in several options, like kurobuta pork, Jidori chicken and oyster mushroom buns, and a vegan version stuffed with the same mix you’ll find in the dumplings. Get wontons and xiao long bao varieties, too. It seems like the choices are endless. You’ll mix dipping sauces to your personal preference. And once the baskets of dumplings start issuing from
the kitchen, you may be hard-pressed to keep up with the flow. Be prepared! If you’d prefer, choose soups, noodles or entrées instead of dumplings only. The vegan wonton soup is light in kombu broth. A little sesame drizzle is perfect here. The hot sour pork soup is packed with tons of ingredients. There are also noodles with different types of toppings, from pickled mustard greens and shredded kurobata pork to diced beef and Szechuan peppers. Wok specialties include shrimp fried rice, fried rice with a pork chop; veggie and mushroom fried rice; noodle dishes; and rice cakes. –Nina King Aria, 702.590.8650

Clothes Call When Lea Kyle first took the stage at America’s Got Talent in season 16, it was obvious she had a connection with judge Heidi Klum—both women are obviously huge fans of fashion. But when Kyle launched into her act—changing outfits instantly as if by magic—Klum couldn’t contain herself, giving Kyle the Golden Buzzer and making her an instant star. Kyle brings that quick-change brilliance to Luxor as part of America’s Got Talent Las Vegas Live, a variety show unlike any other on the Strip. The cast consists of past AGT contestants (some of whom won the million-dollar prize), all hosted by comedian Preacher Lawson and bearing the production elements that make Simon Cowell’s show so entertaining. Joining Kyle are season 14 winner musician Kodi Lee, an incredible musical talent; season 16 winner Dustin Tavella, a magician; acrobatic husband-and-wife team Duo Transcend; singer Jimmy Herrod; mentalist duo The Clairvoyants; and dance group Light Balance, who combine great moves with state-of-the-art technology. This show truly has it all—excitement, emotion, humor and even a few scares. It’s also one of the most family-friendly shows you’ll find in town. –Ken Miller Luxor, 702.262.4400
Classic Experience Opulent and luxurious, yet inviting, Gatsby’s Cocktail Lounge is more than a center-bar lounge—its décor and space make it a nightlife hot spot where eye-catching cocktails pair with live DJs. The sheer curtains close and wrap the lounge in semi-privacy on the weekends, turning Gatsby’s into an over-the-top party spot. With tequila all the rage, start the evening with the Hibiscus Paloma, Gatsby’s take on the classic Paloma made with Casamigos blanco tequila, Fever Tree grapefruit soda, house-made hibiscus rose syrup, touch of lime and a hibiscus sugar and salt rim. –Kiko Miyasato Resorts World Las Vegas, 702.676.7000 Top of the World photo by Anthony Mair Gatsby’s Cocktail Lounge photo by Mike Kirschbaum America’s Got Talent Las Vegas Live courtesy photo
Food With a View At Top of the World, a whole slew of dishes have brightened up the traditional steakhouse fare at this lush, plush environment with the most unique views in Vegas (since they change throughout your meal). Order a cocktail like the Honey Bumblebee with Deep Eddy Ruby Red Grapefruit vodka. Delicious! And then dive into appetizers like oysters on the half shell, or the seafood tower (featuring Maine lobster, poached shrimp, king crab and oysters).
Other excellent options for the seafood lover include the stuffed roasted lobster tail (with king crab) and the seared seabass, simply served with garlic, lemon and brown butter. For a hearty entrée, take advantage of the half a chicken with crispy skin if your appetite is large; and vegans will appreciate the stuffed poblano with quinoa asparagus and chipotle tomato sauce. –Nina King The STRAT, 702.380.7711

Impossibly Fun
Westgate magician excels at audience connection If enthusiasm could be transformed into pure energy, Jen Kramer could generate enough from one performance to power a small village. The illusionist, a Yale graduate who’s appeared on Penn & Teller: Fool Us as well as Masters of Illusion and NBC’s Today, wins audiences over with three things: A smile that just won’t quit; corny jokes that will have you rolling your eyes but laughing all the same; and making the impossible possible. We almost guarantee you’ll be shaking your head numerous times during The Magic of Jen Kramer, trying to process what you’ve seen. But don’t linger too long; another mind-bending achievement is on the way.

Some of our particularly favorite moments: • A seemingly ordinary video Kramer shows the audience of her card-handling skills, one which later turns out to be strangely prophetic at the conclusion of a subsequent card trick; • Two wine glasses, two sets of cards and a “magic scarf” (cue the “oohs” and “aahs” Kramer has the audience say as she displays it) that helps create an instantaneous transformation; • Four different drinks, a blindfold, a lemon slice and an audience volunteer’s tastebuds; • Kramer’s version of a game show, complete with three mystery doors, a volunteer, a hundred-dollar bill and lots of audience participation;
• Three beach balls, a fake Facebook profile and a box that hangs from the ceiling. (For those who think magicians use plants, heads up: Yours truly got picked for this, and speaking as a nonplant, I was completely floored by the result.) Kramer’s connection with audiences is undeniable. In a very pleasing segment, Kramer shows a video that demonstrates her commitment to spreading the joy of magic to other countries. The looks on children’s faces is a joy to watch, and is a reminder that magic really is a universal language. –Ken Miller Westgate Las Vegas, 800.745.3000 Ticketmaster

Gordon Ramsay’s Pub & Grill is a mix of comfortable and lively, as the restaurant is located right in the heart of the casino-floor action. A blend of eatery and lounge, guests can opt to hang in the bar area, with a more laid-back vibe, or in the main dining room, with a patio-type area perfect for people watching and engaging conversation. Food here is the main attraction, though, and, of course, guests can consume Ramsay’s signature dish—the roasted beef Wellington. But try the master chef’s pub-inspired creations like the popular fish and chips, onion and ale soup, crispy chicken paillard and the grilled pub burger made with English sharp cheddar and applewood smoked bacon. It’s a starter, but deserves the entrée spotlight— the short rib kettle chip nachos are served with English cheddar sauce, pickled peppers and sour cream. This is one British dish that gives the Mexican-food favorite a run for its money. End the meal, if your tummy can take it, with Ramsay’s classic sticky toffee pudding. –Nina King

And for a little extra, check out the Gondolier March, where parades of gondoliers sing as they wind their way to their boats (at 9:50 a.m. and 4:20 p.m.) –Nina King The Venetian, 702.414.4300

High-Energy Laughs Carrot Top, aka Scott Thompson, has a lot to be happy about right now: 1.) He just celebrated his 16th year as a Luxor headliner; 2.) He has ardent supporters in the comedy community, including Brad Garrett, who was recently seen howling at a performance; 3.) The prop comic’s show continues to evolve, including the introduction of several new props at a recent performance. (Like a new device that could
prevent motorists from driving at high rates of speed—so twisted, but so right!) And it’s not just prop comedy that will have you entertained. Top also has plenty of observational comedy, including dissections of how popular music can be absurd. But it’s all done lovingly—he’s a huge music fan, which he demonstrates at the end with a high-energy dance routine. –Ken Miller Luxor, 16+, 702.262.4400

Cirque production brings classic music to life It was a little more than 20 years ago that George Harrison had a conversation with Cirque du Soleil co-founder Guy Laliberté about a synthesis of Beatles music and Cirque spectacle. Harrison, who by then had worked extensively as a film producer, could envision a workable stage show—although he would pass away before development and design. The result was The Beatles LOVE, which premiered at The Mirage on June 30, 2006. It was the Martins’ musical mentorship that made it possible for The Beatles LOVE to become a reality, with Paul McCartney, Ringo Starr, Harrison’s wife Olivia and Yoko Ono on hand for the debut. The Martins created song segues

for the soundtrack, used an alternate version of “While My Guitar Gently Weeps” that’s even more melancholy than the original, backward-masked “Sun King” and drew on snippets of studio banter to create ambience. From there, it was up to the producers and performers who transformed live entertainment to create the ultimate tribute to the band that transformed pop music. Cirque brought characters from lyrics to life, with some such as Sgt. Pepper and Father McKenzie easily discernible. Doctor Robert, Lady Madonna and The Fool feature prominently, as do Groupies, Kids of Liverpool and Sailors symbolizing the trans-Atlantic seamen who brought rock ’n’ roll records to the
port city where the Beatles formed, and the band members were born. John Lennon sang there was nothing you could do that can’t be done. Cirque du Soleil took that advice to heart as it created choreography and costumes, incorporated aerial artists and skate ramps, and evoked the spirit of yesterday with the talents and technology of today to create one of the most uplifting, elevating experiences on the Las Vegas Strip. Beatles fans in search of a day in the life that will get them back to where they once belonged may find all they need is to witness The Beatles LOVE by Cirque du Soleil. Bartender thrives at hidden gem See for yourself that Rylen Komeiji works at one of the Las Vegas Strip’s coolest bars … that is, if you can find it. He bartends at Here Kitty Kitty Vice Den at Resorts World Las Vegas—an intimate hidden gem with speakeasy vibes. Komeiji, a native of Hawaii, has bartended for all types of establishments in his home state, from fine-dining restaurants and resorts to nightclubs and one of the most-revered bars in Hawaii, Bar Leather Apron. His career spans 14 years, but what is now a passion started out as just a job to help him financially get through college, where he was pre-med. “People are usually happy to see a bartender, not so much a doctor,” Komeiji says. “The more I bartended, the more I fell in love with the industry.” After spending many years bartending in Hawaii, he decided to bring his talents to Las Vegas and got hired at The Dorsey at The Venetian, where he worked alongside venerable bartender Juyoung Kang. After a couple of
years working under Kang’s tutelage, Komeiji ended up following her over to Resorts World, where she was brought aboard to design Here Kitty Kitty’s cocktail program. “Our cocktails are very unique,” says Komeiji. “And since it’s an exclusive speakeasy, we wanted the cocktails to be exclusive, too.” Here Kitty Kitty bartenders are well versed in craft cocktails, the type of cocktails Komeiji loves making. “I realized once I started doing craft cocktails, I fell more in love with cocktails,” he says. Komeiji has even earned serious bragging rights as the winner of several different craft cocktail competitions. Not only does Komeiji bring a vast breadth of cocktail knowledge to the job, but he brings a distinctive personality trait, too. “Being born and raised in Hawaii, that ‘aloha spirit’ is instilled in you from a young age,” he says. “It’s that give-a-stranger-the-shirt-off-your-back mentality. Start with a signature cocktail like the Carversteak Old-Fashioned—my personal favorite, made with Frey Ranch straight rye, Bacardi 8-year, falernum syrup and bitters— and the Singapore Sling, a take on the classic made with Sipsmith Lemon Drizzle gin, Cointreau, Luxardo cherries, Benedictine, pineapple, lime, grenadine and bitters. A true highlight is the lobster en croûte, a 2-pound crustacean wrapped in a puff pastry and served with lobster-cognac cream. No matter how many times you’ve had lobster, this is a must. The presentation alone is worth the price of admission. Elsewhere, you’ll find some of your favorite steaks, including a ribeye and a wagyu tomahawk rib chop (we recommend pairing both of these with either the Point Reyes blue cheese sauce or the red wine Bordelaise, both excellent). You might feel a bit reluctant to bring your vegan friends here. Please don’t. The vegan options here are seriously delicious. Start with
Baked Nevada
crudite served with roasted red beet hummus, Calabrian chili and pistachio, then move onto the real treat: the vegan chop, made with organic legumes, baby turnips and chimichurri. (Meat lovers might want to give this a try—it really tastes like the real thing.) Carversteak also has one of the most distinctive desserts you’re likely to find on the Strip: baked Nevada, a take on baked Alaska made with mixed berry sorbet, strawberry sorbet in the center, coconut lime cake and toasted meringue. Your server brings the dessert to your table with serious flair, flambéing it with premium black rum. Just be warned: This is a serious dessert, intended for between 6-8 people. Of course, you could just look at it as a challenge … one well worth taking!

What could spark romance more naturally than time spent in Paris? The Eiffel Tower Restaurant (702.948.6937) at Paris is as close as it gets to the real thing, a regal meal of updated classic French cuisine with elevated views of the Bellagio Fountains and the Strip. It’s an ideal destination to go all out with signature
offerings such as beef Wellington, whole Dover sole, escargots a la Bourguignonne and a Valrhona chocolate or classic Grand Marnier souffle, but this menu is truly versatile. You could also sip champagne with a chilled seafood tower, or go vegetarian with a beautifully composed creation of Swiss chard, squash and marinated tofu.

For a wildly different take on French cuisine and a decidedly modern energy, visit the vibrant L’Atelier de Joël Robuchon (702.891.7358) at MGM Grand, where the innovative approach of the “Chef of the Century” is showcased through playful interaction and experimentation. Take a couple of seats at the counter and watch culinary creativity at play while sampling colorful dishes such as caramelized kampachi with endive salad, foie gras-stuffed quail, poached kusshi oysters with French salted butter, and crisp langoustine fritters with basil pesto. If exploration is your love language, this unique destination is the place for you. One of the best restaurants to find a classic Vegas experience is actually in Henderson. Hank’s Fine Steaks & Martinis (702.617.7515) at Green Valley Ranch has long been one of the most beloved steakhouses in the valley, and its sleek-yet-charming décor and regular live entertainment creates special occasion vibes every night. Make a reservation, explore the vast wine selection, pick your favorite steak from Hank’s domestic and Japanese cuts, and don’t skip the tableside bananas Foster for two. On the opposite end of the valley, Echo & Rig (702.489.3525) at Tivoli Village is a favorite steakhouse with a more casual atmosphere and a vast selection of shareable small plates on the menu perfect for an intimate date night. Have a martini at the downstairs bar before ascending a grand staircase and sharing white risotto with blistered tomatoes, lamb cigars with tzatziki sauce, and Maryland lump crab cakes to get you started. An expertly grilled steak from the in-house butcher shop is always a good idea, but if you’re looking for something lighter, check out the shrimp and artichokes in a white wine and lemon-caper sauce or organic king salmon with purple sweet potatoes. Sometimes the most romantic experience is one of familiarity, a return to a place or experience where everything just feels right. To fit that bill, look no further than Piero’s Italian Cuisine (702.369.2305), the old-school Italian institution near the Las Vegas Convention Center. Generations of locals and Vegas visitors have made this restaurant their favorite spot through the years, and its inimitable environment and consistent cuisine make it easy to see why. Take a trip back to when everything was warmer, easier and absolutely delicious when you take your partner to Piero’s. –Brock Radke

command excitement and anticipation with a new project or concert date on the scale of renowned Italian tenor Andrea Bocelli. The vocal sensation recently completed his largest tour yet, a 21-city trek following the 2020 release of his 17th studio album, Believe, and has now returned to the U.S. for his annual In Concert For Valentine’s tour. His Las Vegas show on Feb. 18 at MGM Grand Garden Arena will be a special endeavor—his son Matteo, a burgeoning recording artist himself, joins Bocelli onstage. But as you’re about to find out, Las Vegas is always a special outing for this treasured performer. You must be excited to return to Las Vegas once again. What was it like for you to be away from the stage for such a long time? It is truly a great joy. I was able to establish regularly with a live audience. I missed the physicality of live performances, whose power can never be replaced by a computer screen. I lost count of how many concerts I held throughout the years in your city, a place where I perceive powerful empathy. Las Vegas is a city I got to know and appreciate, a place of entertainment, of light-heartedness, but also of great solidarity. A land that is extremely fascinating for its modernity and, conversely, for its surrounding, even proudly wild, natural environment. I always have Las Vegas concerts at heart, because it’s a place where I have many friends and where the audience’s affection gives me enormous energy every time. You released Believe in November 2020. How meaningful is it to be able to properly tour behind this material and perform these songs live in front of your fans? During the first lockdown, I felt the impulse to realize a project dedicated to the driving force of the spirit, offering my con-
tribution to what I believe is an ever-compelling need, that is, the need to find one’s own inner dimension. The album expresses a heterogeneous journey, alternating the work of great classic composers with popular romance and actual songs. I wanted to include in Believe a few unedited pieces of important composers such as Giacomo Puccini and Ennio Morricone, and others not strictly religious but full of religiosity, such as “Hallelujah” by Leonard Cohen and “You’ll Never Walk Alone.” These are songs that I love deeply, and that I am excited to be able to perform live. The album contains themes of faith and hope, obviously helpful and potentially healing for people to connect to right now. Do you feel a responsibility as an artist to uplift people with your music? It’s essential to me, as an artist and as a man of faith, to share the power of the message of a project that hinges on three concepts— faith, hope, and charity—the fundaments of Christian action.
I see Believe as an incentive to find new optimism, to change our approach toward life, putting in play the values that I personally find in the gospel. Your son and tourmate Matteo just released his new single, “Close.” What does it feel like to listen to him perform? Before being an artist, I am a father. In my attempt to make the most objective assessment possible, I honestly believe that his new song is truly powerful, and that Matteo has found his way and his own style. I am extremely happy about that. When we are then able to have our commitments coincide and share the same stage, it’s always a great joy, great excitement for me. I never pressured my son into this profession. I can, in fact, say that I did the direct opposite: I warned him about a world whose pitfalls I know all too well. He was stubborn, and I believe that time proved him right, because these first steps in the industry have already shed light on his potential and, I believe, talent.

Bellagio Conservatory & Botanical Gardens celebrates Lunar New Year By Matt Kelemen
There’s a tiger hiding in plain sight at the Bellagio Conservatory & Botanical Gardens. No, Mike Tyson did not leave a door open to a suite where he was keeping a pet big cat. This tiger is 8,000 pounds of bronze stripes with a massive head, lapping at water from a pond. The see-through spaces between stripes give it camouflage at some angles while causing it to leap into view at others. It’s the centerpiece of Eye of the Tiger, Bellagio’s decorative observation of Lunar New Year 2022, symbolized by the water tiger. The Tiger follows the Rat and Ox as the third animal in the zodiac. The good fortune and prosperity promised by the tiger, sure-footed and confident, guided the development by Bellagio’s horticulture and engineering teams. There are colors associated with the tiger, the element of water associated with this particular year, and the tiger’s own personality to consider when creating a New Year concept. The process begins with questions, says the exhibit’s designer, Ed Libby: “What are the tiger’s traits? What did we make our animal out of last Lunar New Year? What do we think is going to be new and exciting and innovative for our guests to see? Can we get another artist involved and create a beautiful art piece in the Conservatory, as well as beautiful floral work?” Strength, passion, bravery and ambition had to be imbued in the graceful poise of the tiger, which stands in the west bed accompanied by two gold fu dog fountains. Sturdy bamboo, bonsai trees,
Bellagio 702.693.7111
copper cattails, giant cherry blossoms and oversized tangerines made of roses create the tiger’s habitat, while I Ching coins hang from a money tree that symbolizes affluence and nobility. “Each year, I research more and more with Far East marketing and take a deeper and deeper dive into Asian culture,” says Libby. “The tiger’s keeping a watchful eye on our guests and helping them with good fortune. The money tree is on top of a waterfall, so the good fortune flows toward out guests. That whole scene is guarded by the fu dogs, who basically are temple guards and guardians.” More than 5,700 plants fill the 14,000-square-foot Conservatory. Lotus flowers, lily pads, giant gold coins and silklantern chandeliers are laid out following
the harmonic, positive-energy principles of feng shui. An eight-level pagoda, inspired by the Temple of the Six Banyan Trees (built in A.D. 537) of Guangzhou, China, dominates the south bed, while the north bed’s exquisite tea house overlooks regal red peonies and a pond in which live koi fish swim. “Each bed has several great stories,” says Libby. “The tea ceremony is all about hospitality and discipline, just really about entertainment in a gracious and special way. The peonies are considered the king of all flowers and represent good fortune. In that same bed is a very hard bench and the book of knowledge. The intent is that when people read the book of knowledge, they’re not supposed to get too comfortable.”

Donny Osmond’s connection with fans continues

LAS VEGAS MAGAZINE
There’s a particularly touching moment during Donny Osmond’s production show at Harrah’s. The focus of the show is the long and winding path Osmond’s career took (he’s been performing nearly his entire life), and that includes the hits that made him a teen idol, both with his brothers and as a solo artist. Topping the list is “Puppy Love,” a song Osmond has probably sung more times than he’d care to remember. But perform it he does with all he has, and without a hint of irony; he Harrah’s, knows this song is important, both 855.234.7469 to his personal history and to his legions of fans. And this month, “Puppy Love” celebrates its 50th anniversary, and Osmond wants to commemorate the occasion in style while at the same time thanking his fans. So, on Feb. 19, Osmond will host a VIP pre-show party. In addition to some personal storytelling, a Q&A, special musical moments and (socially distanced) photo opportunities, attendees will all receive: A special VIP commemorative laminated pass; A signed “Puppy Love” collector poster; a custom-branded Donny Osmond VIP mask; Early access to purchase show merchandise, including 50th anniversary “Puppy Love” merchandise. In a way, this one-night-only event is quintessential Donny. Over his more than six decades of entertaining, he’s always embraced opportunities to reach out to fans, to embrace

his past with gusto, to create special memories. It’s a testament to his drive and ambition that he’s known to many generations of fans. On any given night, there may be as many in the audience who remember him from Donny & Marie as those who remember him from Dancing With the Stars and The Masked Singer. Osmond may be 64, but unlike many of us who would be considering retirement at that age, when he takes that Harrah’s stage,
Osmond feels like he’s barely getting started. Not only does he deliver full-throated renditions of hits like “Soldier of Love” and “Sacred Emotion,” he’s showing off the moves that won him Dancing With the Stars, busting out some stunt work during a performance of songs from Mulan, and paying tribute to his host city with a lively performance of “Viva Las Vegas.” And while much of Osmond’s show is tightly scripted—especially the amazing “auto rap-ography,” in which he blazes through his career in just under 10 minutes—there’s a notable segment where he’s clearly flying without a net: He shows his 60-plus albums on a large screen and asks the audience to pick any song from any album … and he’ll sing it. Does it always work? Eh, no, it doesn’t, but that’s a huge part of the entertainment value. During a performance I attended, he improvised some of the words, and the audience ate it up! Here’s the thing about puppy love: It’s fleeting (in fact, the song’s title came from Walt Disney, who used the term for songwriter Paul Anka’s infatuation for Annette Funicello). But when it comes to Donny Osmond and his fans, that love is real. Nothing fleeting about it at all.

This restaurant has been part of the property since opening in 1974. The famed Benihana brand serves as the anchor eatery for the 38,000-square-foot complex that lies just off the casino floor. Once through the

Venture into Penn & Teller’s tent for the sideshow of all sideshows The more things change, the more they stay the same for eccentric tricksters Penn & Teller. A Sunday evening show in late January at Penn & Teller Theater inside the Rio All-Suite Hotel & Casino finds Penn Jillette jamming on upright bass with virtuoso pianist Mike Jones, who is about to observe his 20th year with the act. They play a snatch of Violent Femmes’ “Blister in the Sun” before Penn departs, leaving “the jazz demon” to dazzle with solo renditions of Fats Domino’s “I’m Walkin’” and Duke Ellington’s “Caravan” and “Take the A Train.” A camera captures his astonishing technique in close-up for the big screens above the stage. It’s the traditional Show before the Show, preceding the 9 p.m.-sharp start time, when the magicians take the stage together. Penn cuts through the applause with his booming voice. “We are so, so happy to be here tonight,”

he says as Teller nods along. “We’ve said some version of that onstage over 12,000 times, but tonight we really mean it!” As Penn explains, the duo and their support team went 421 days without doing their headline show. As tonight’s new inventions indicate, they put their time to good use. The new tricks are inspired, bringing traditional elements such as decks of cards, disappearances and fire into new realms. Rather than eliminate audience participation, Penn & Teller adjusted and adapted, and the show flows as smoothly as ever. Penn’s elucidations on magic-related subjects such as the misappropriation of the term “misdirection” and sideshows seem more engrossing than previously. Gratitude toward the crew is profusely expressed. Teller is poetry in motion, indicating back surgeries have been successful enough to allow him to continue to work at the craft he loves. He still has a way with goldfish that causes the audience to collectively respond with an involuntary “Ahhhhh!” If there is one show to start with to break the pandemic blues, this is it. Nine of the tricks in the current set are brand new. It’s easier to witness the threading of a ribbon through doughnuts than to explain what’s magical about it, and any animals suddenly appearing onstage are too terrified of the audience to leave the stage. “Lies, cheats, swindles, rip-offs,” says Penn. “That is what we do.” They’ve just signed on for a 10th season of Penn & Teller: Fool Us, for which the theater does double-duty as a television show set. A magician named Jandro is an integral part of one trick, fulfilling a Fool Us promise to feature winners from the show. It’s fast-paced, and at times intimate-feeling due to Penn’s heartfelt reminisces of his exposure to magic acts and other illusory endeavors. Penn & Teller are the ultimate sideshow act, passing on the senses of wonder they were inoculated with at young ages and performing with apparently endless wells of ingenuity. “Why do we do it?” asks Penn rhetorically at some point during tonight’s show. “Because this is our tent.”

Beefsteak tomato tartare at Bazaar Meat by José Andrés
By Ken Miller
Steak tartare is a dish whose time has arrived .40. 2.13.22 LAS VEGAS MAGAZINE
Steak tartare used to be the Rodney Dangerfield of the food world—it got no respect. In fact, it spent quite a lot of time being the brunt of jokes, including a particularly cruel bit courtesy of Mr. Bean, in which the titular character spends his entire meal trying to hide the dish in question wherever he can find space on the table, rather than just telling his server he really doesn’t want to eat it. Those days are fully in the rear-view mirror. Savvy diners know that not only is
Bazaar Meat by José Andrés photo by Jill Paidar
steak tartare a must-try dish at higher-end restaurants, it can often define the dining experience. On its face, the dish can seem deceptively simple: It’s traditionally made with raw ground beef and served with any number of ingredients, from onions and Worcestershire sauce to capers and pepper. But take one bite of steak tartare at any of Las Vegas’ top steakhouses, and you’ll realize that description falls short. The only limits to steak tartare here are the chefs’ imaginations. There’s the sublime Prime steak tartare at Aria’s Bardot Brasserie, a visual feast with its orange egg yolk seeping into every crevice of the dish. A small bit of sauce verte (green sauce) adds just a bit more color and flavor, and the deep flavors of the meat pair perfectly with house-made waffle fries. Bazaar Meat by José Andrés at Sahara Las Vegas has a fantastic selection of tartares, each more inventive than the next. As good as Vittore 1950 is (small medallions of flawless tenderloin with black pepper, Parmesan, capers, brown-butter croutons and sherry dressing), fans—and especially vegetarians—will want to dive into Andrés’ beefsteak tomato tartare, which looks like the real thing but is a taste sensation all its own. Flavored with balsamic vinegar, cucumber and black olive, it will have you asking, “How did he do this?” Hank’s Fine Steaks & Martinis at Green Valley Ranch provides an excellent wagyu beef tartare for its happy hour, and you won’t be happier than when you’re experiencing the flavor sensations of quail egg yolk and smoked paprika aioli on some toasted brioche. You might not expect to find great steak tartare at an Italian restaurant; you would be dead wrong! Brera Osteria at The Venetian, which pays tribute to the famous Milan neighborhood, serves up a delicious version, using American wagyu beef, anchovies, capers, shallots and mayonnaise. Certainly not the least on this list is the hand-cut Prime beef tartare at Bugsy & Meyer’s Steakhouse at Flamingo. It’s easily one of the best things on the menu, served with a truffle crème fraîche and pan-toasted country bread. Odds are you’ll be fighting your dining companions for that last scoop.

possible), cutting crosswise into bitesized pieces. Freeze a stainless steel bowl a day in advance, as you will
definitely want your tartare to be cold. Add ingredients you love. Once again, the only limits to this dish are your imagination.
