Cultural Celebration

You picked a fantastic week to visit Las Vegas! Yes, all the shows, restaurants, nightclubs and pools you’ve been reading about and planning for are all open and anxiously awaiting your business. But this week is also exciting because the city is hosting a huge cultural celebration, one that’s likely to sweep you up in its energy and joy: Mexican Independence Day. While the day falls upon Sept. 16 (commemorating the day Miguel Hidalgo declared independence from Spain in 1810), it actually spreads across almost the entire week. This week’s issue of Las Vegas Magazine focuses on the best ways to get in on the fun, including: Sports. This week, the Ultimate Fighting Championship launches its inaugural Noche UFC, featuring a large slate that includes “world champions and Mexican talent” (to quote UFC president Dana White). The top card features flyweights Alexa Grasso and Valentina Shevchenko, and promises a night fight fans won’t soon forget (“Making MMA History,” p. 38).

Music. Where to begin? More than 20 bands, singers, comedians and podcasters hit various venues around town to stretch the Mexican Independence Day fun from Sept. 14-17 (“Freedom Rocks,” p. 34). In addition, Carlos Santana, one of the Strip’s longest-running headliners, returns to the House of Blues at Mandalay Bay this week for a series of shows (“The Santana Journey,” p. 32).

Food. If great Mexican food is what you’re craving this week, head straight to Resorts World Las Vegas and ¡VIVA! by Ray Garcia, which, in addition to lunch and dinner, also serves up a killer brunch (“Add Some Spice,” p. 14).

Of course, that’s just the beginning of what you can do in town this week. And as you peruse the pages to follow and begin planning your week, feel free to celebrate anything you like. It’s Vegas!

All your Mexican favorites in one great spot

For a taste of Southern California in Vegas, check out ¡VIVA! by Ray Garcia . This vibrant, beautiful restaurant combines delicious cocktails with a flavorful Mexican menu designed by the award-winning chef Garcia, who also has restaurants B.S. Taqueria and Asterid in the L.A. area.

¡VIVA! offers brunch, lunch and dinner, plus happy hour, so you will be able to indulge at pretty much any hour. Brunch highlights include satisfying chilaquiles (sunny side-up eggs, ranchero salsa and queso fresco over chips); savory chorizo con huevos (scrambled eggs, pork chorizo, fingerling potatoes and flour tortillas); and the decadent ¡VIVA! Benedict (oxtail barbacoa with a sous vide egg and chipotle Hollandaise).

There are also plenty of salads, like the heirloom tomato (with hearts of palm and avocado with Meyer lemon vinaigrette) and the piña asada (wood-grilled pineapple, goat cheese arugula and spiced pecan). Add shrimp or chicken if you wish.

On all menus, tacos will tempt you, from roasted cauliflower to steak, which is made from prime filet mignon, plus entrées like the calabacitas vegan tamal; the costillas—ancho-rubbed lamb ribs; duck mole; skirt steak (which you can add shrimp or lobster to); and wood-fired quesadilla with chicken tinga. The camarones a la diabla come by the heat via the addition of puya chili peppers. And that’s only a taste (pun intended) of what you can order.

And you can’t forget about drinks and dessert! The house margarita, the ¡VIVA!-rita, combines blanco tequila, agave, lime and salt-air foam, but there’s much more to think about, like an extensive list of tequilas and mezcals, plus beer and sangria. A cocktail flight lets you try five specialty drinks, including the ¡VIVA!-rita. And for that sweetness, of course there’s flan, but tres leches cake and churros make the dessert decision hard. –Nina

Air adventures include everything from Strip scenes to Grand Canyon tours

If you want thrills and views at the same time, then Maverick Helicopters has got you covered. This popular Las Vegas tour provider is perfect whether you want to take in the Strip from overhead or get a bird’s-eye view of one of the world’s largest natural wonders. For Strip sights, the Vegas Views package is not only a bargain (prices start at $139), but also a perfect way to cap off a day of sightseeing. Take off in an Airbus helicopter from the

company’s south Strip terminal for a 12- to 15-minute trip. You’ll fly up and around the boulevard, with your pilot providing witty commentary. Shuttles are available as an add-on. If you want dinner, the Savory Bites & Neon Lights combines a food tour followed by the Strip flight ($325), and is phenomenal. And no matter if you want a quicker trip or to spend all day, Maverick Helicopters has plenty of options for an excursion to the Grand Canyon.

Most tours head to the West Rim and include such things as champagne and snacks (starts at $599) or a stop at Grand Canyon West’s Skywalk (starts at $629). Some trips even include two landings. If you want to travel by bus for more Southwest views, there’s an option for that, too, and it does include a helicopter flight ($379). –Nina King

Bites With Sights

Have a memorable meal from high above the Vegas Strip

Top of the World has long been a must-visit Las Vegas destination, and it’s not just for the amazing views—although with its ever-rotating dining room, the vistas are indeed incredible. No, Top of the World is also a great place to pop the question, get married (yes, wedding packages are available, including reservations for up to 10 guests and a mini wedding cake) and, of course, have a fine-dining experience that you’ll be raving about for years to come.

The room itself is impressive— it’s easily one of the largest dining rooms to be found on the Strip, and all tables are perfectly placed within the space; no matter where you sit, you’ll enjoy that renowned view, all while enjoying some of the nicest servers you’re ever likely to meet. Start your evening off with signature cocktails ranging from vodka-based (the Creamsicle features Ketel One, Caravella Orangecello D’Italia, Licor 43 Original, kumquat, aquafaba and candied orange), to rum-based (the Pink Panther contains Bacardi Limon, lemon, coconut ube molasses and electric dust) and gin-based (the Clover Club blends Tanqueray No. Ten, Cocchi Rosa Americano, lemon, raspberry, rose and raspberry foam).

There are so many surprises in the appetizers section. Crab fans will love the Creole-style lump crab toast served with Cajun butter,; and the wild mushroom ravioli (flavored here with toasted hazelnuts, Calabrian chili, guanciale and pickled beech mushrooms), while vegetarians will flip for the lemon and oregano whipped feta cheese (served with crudite, lavash and chili pepper jam).

The fun continues with a widely varied entrée section. From carnivore to vegan, everything you love is represented here, from the Kurabuto pork chop and smoked half chicken to Parmesan-crusted salmon and vegan stuffed squash. The steak selection is second to none, from a 16-ounce bone-in filet and 12-ounce New York strip to a prime tomahawk chop and 12-ounce wagyu rib cap. Make sure to pair these great cuts with sauces ranging from Bearnaise to peppercorn, and don’t forget sides like charred corn succotash with tarragon cream and fava beans, roasted haricot verts, whipped ricotta and a Dijon and tarragon emulsion, and fried Brussels sprouts smothered in spicy brown sugar bacon, sherry vinegar and Parmesan cheese. –Ken Miller

Animated & Astonishing

Great times are in the cards for this high-spirited illusionist

I’ve seen Jen Kramer perform a handful of times— once, she even came to our offices at Greenspun Media Group!—and each time I come away marveling at her infectiously positive attitude. She just has a way of making you feel good about yourself. The fact that she’s an incredible sleight-of-hand magician almost feels like the icing on the cake.

In the five years she has performed The Magic of Jen Kramer at Westgate Las Vegas, she’s engendered nothing but goodwill among her fans and the property itself. And that goodwill has come back to Kramer 10 times over, both in the form of fans returning again and again to see her show and the announcement that she would be extending her residency into the foreseeable future.

“We are so proud of Jen and what she has accomplished over the last five years here,” said Westgate Las Vegas Resort & Casino president and general manager Cami Christensen. “Our guests and team members love Jen, and we could not be more excited about extending her residency.”

That means many more shows with Kramer doing what she does best—interacting with audiences as she manipulates cards, makes drinks appear as if from nowhere, bringing smiles to the faces of numerous volunteers and generally making everyone feel just a bit better than they did coming in. –Ken

Unending Appeal

Classic rock band continues to pack houses

Perhaps no other rock band in history has changed its lineup quite so much as The Grass Roots; over the last five-plus decades the group has enjoyed participation by nearly 60 members, all in service of keeping its sterling reputation alive at festivals, on tours and one-off performances—like this week’s visit to Golden Nugget.

The group’s continued appeal stems from a highly prolific 10-year period from the ’60s to ’70s, during which time it produced hits that continue to pop up every time you select “Golden Oldies Radio” on

Pandora: “Where Were You When I Needed You,” “Let’s Live for Today,” “Midnight Confessions,” “Sooner or Later,” “The River is Wide,” “Temptation Eyes” and many more. They also enjoyed a boost in exposure when one of the former members, Creed Bratton, appeared on the megahit NBC comedy The Office.

The band’s current lineup of Mark Dawson, Dusty Hanvey, Larry Nelson and Joe Dougherty have been together for more than 10 years, and in 2015 they were all smiles as The Grass Roots was inducted into the American Pop

Music Hall of Fame (a class that also included Barry Manilow, Neil Sedaka and Barbra Streisand).

As long as audiences want to revisit music from classic bands like The Guess Who, The Cowsills, The Association, Tommy James and The Shondells and so many more (all of which also regularly perform at Golden Nugget), The Grass Roots will live on—regardless of who’s in the band. –Ken

Where to go? What to do? We’ve rounded up the newest ways to drink and be merry during your vacation in Las Vegas. You’ll want to check all these out:

• Newly opened Juliet Cocktail Room at The Venetian is a posh spot for drinking and socializing. Victorian-inspired décor mixed with modern touches in the lounge creates a beautiful spot to enjoy live music as well as a mashup of genres from hip-hop to rock. And this cocktail menu is one that shouldn’t be missed—one-of-a-kind, Instagrammable, innovative cocktails that deserve your sipping attention.

• Cabo Wabo Cantina at Miracle Mile Shops at Planet Hollywood Resort recently introduced fall cocktails to its menu, like the pumpkin spice margarita, Kentucky cold brew, autumn gin and tonic and a signature Bloody Mary. Each cocktail is priced at a reasonable $10.

• With Mexican Independence Day musical celebrations happening all over the city this week, drink specials get in the mix, too, starting with the Tequila Tasting Extravaganza happening at Jalisco at Resorts World on Sept. 16. For just $65 per person, guests are treated to an open bar and tequila tasting

stations, crafted bites like street tacos and ceviche, mariachi bands and tequila experts, who will educate and guide guests through the experience. • Trustworthy Brewing Co. at The Grand Canal Shoppes recently released a special anniversary brew in honor of the bar and restaurant’s fourth anniversary. The double dryhopped hazy IPA, named Another Trip to the Strip, features 100% Citra hops and gives off notes of citrus, sweet peach and grapefruit.

• Treasure Island recently opened the Big Chill Margarita Bar Various-sized cups even include a giant 48-ounce yard, and you can fill it with frozen margarita recipes like Mango Madness, Joe’s Perfect Lemonade and Blue Hawaiian.

• Check out the new ice sculpture, a Nordic Viking ship, inside Minus5 Icebar at The Shoppes at Mandalay Place. Bundle up and step inside the bar to also enjoy other sculptures that include life-size ocean waves. Guests can capture each other on camera “riding” the waves and sitting inside the boat.

• Head to the AREA15 complex and make a stop by the Lumin Café and Patio Bar at Illuminarium for adult, boozy milkshakes. Yummy flavors include PB&J, Cookie Dough, Berry, Berry Good and more.

• Über-trendy STK Steakhouse at The Cosmopolitan amps up the weekends (Saturday and Sunday from 9 a.m. to 3 p.m.) with brunch cocktails like red sangria, espresso martinis and tequila sunrises. Guests can order spritzes three different ways or imbibe on Bottles & Boards packages for $249 each— charcuterie is paired with a bottle of bubbly or vodka or tequila.

• With all that drinking, check out one of the Radiance Wellness

Program classes offered at AREA15 inside The Portal, an immersive, projection-mapping space. Bartender has one of the coolest jobs (literally!)

In a city like Las Vegas, it might seem strange that when Heather Rojas goes to work, she suits up in a puffer jacket, Ugg boots, gloves and earmuffs. As she puts it, “I suit up as if I’m going skiing.” That’s because Rojas is a bartender at Minus5 Icebar at The Venetian, a lounge that’s kept at a cool 23 degrees Fahrenheit and made completely of ice.

“It’s funny, ’cause I never liked the cold,” she says, laughing. “But I ended up loving it.” Rojas joined Minus5 in 2021, where she first got hired at front reception. A short time later, the com-

pany offered to train her as a bartender, and she’s been loving her new role ever since.

“Bartending is where I found my passion,” Rojas says. “I want to serve others, help others find their favorite drinks. I love bartending. One of the best compliments to me is when guests tell me I’m the nicest bartender they’ve ever met in Vegas.”

A Vegas native, Rojas watched her mom spend 25 years in the industry, and it’s what prompted her to follow in her footsteps. “I would always see my

And now she is. Being inside the freezing temps for six to eight hours a shift is truly a dedication to bartending. “It’s always busy so it distracts you from the cold,” she says. “You never get completely used to it, though. The No. 1 question I get from my guests is, ‘Aren’t you cold?’ But I love my job, so it’s mind over matter.” –Kiko

When Chris Santos decided to open a Las Vegas outpost of his popular Manhattan restaurant, The Stanton Social, he knew he had a high bar to hit. After all, Las Vegas is considered a dining mecca, and Santos’ original had achieved a high profile in a short amount of time. But if our recent visits are any indication, Santos didn’t just hit the bar with Stanton Social Prime—he reinvented it. One visit and you’ll be planning your return trip. What sets Stanton Social Prime above others in its weight class is the level of creativity throughout the menu. Just take a look at the cocktail menu and you’ll see twists everywhere, from the Old-Fashioned (Where There’s Oak, made with Buffalo Trace bourbon, BLiS maple syrup and cherry bark bitters, all smoked with applewood in an attractive, see-through case) to the margarita (Rancho Gloria, a blend of Casamigos blanco

As the name would suggest, social dining is highly encouraged here, and Santos has packed his menu with delights that will keep the table buzzing.

Start with his world-famous pierogies, small pieces of heaven packed with potato, goat cheese and truffles, or dig into a deep dish of Dirty Tots, served atop lobster crème fraîche and topped with caviar. But the king of this part of the menu is definitely the Famous French onion soup dumplings (described on the menu as “the OG and still the best.”)

The name of this restaurant is also well reflected in its superior steak program, so you basically can’t go wrong with any selection. But if you have a large group, a must-order is the 64-ounce super tomahawk, wheeled to your table and prepared in a spectacular manner—your server flambées it with cognac and pan drippings. It’s accompanied by a pound of sake-braised short ribs and bone marrow for a truly unforgettable main course.

It’s easy to tell Santos is having a lot of fun with his menu, with headers like “Not Steaks,” “Hot Potatoes” and “Not Potatoes” drawing your eye—while making your stomach growl.

From “Not Steaks,” take your pick of whole grilled branzino, suffused with saffron, caramelized fennel and leeks, chicken Parmigiana, a huge cut of fowl featuring San Marzano tomato sauce, burrata and charred Mama Lil’s peppers, and lobster mac and cheese, a real beast using a pound and a half of the crustacean and a taleggio cheese blend.

“Hot Potatoes” feature your favorites, Santos-style. Patatas bravas get a kick from smoked paprika aioli, while herb-crusted shoestring fries are addictive when combined with garlic aioli. Under “Not Potatoes,” we recommend miso-glazed crispy eggplant, delicious

enough to make fans of even the most hardened anti-veggie protesters. For desserts, it’s as much about presentation as it is about flavors. The strawberry blond “milkshake” would be right at home on Is It Cake? This would likely fool any judge—you’ll swear you can drink from the straw right up until someone cuts it in half, revealing strawberry mousse, vanilla sponge cake and Chantilly cream. The key lime pie has perhaps the tallest meringue you’re likely to find on the entire Strip, while the peanut butter and chocolate cake, drizzled with warm chocolate sauce, may be the most decadent.

House of Blues’ resident guitar god looks back with biodoc premiere and album anniversaries

This summer marked the 50th anniversary of Love Devotion Surrender, a collaboration between Carlos Santana and Mahavishnu Orchestra guitarist John McLaughlin that was inspired by spiritual teacher Sri Chinmoy and a tribute to jazz saxophonist John Coltrane. Santana and McLaughlin were disciples of both cultural figures and, backed by their respective bands, recorded a transcendent collection of sonic meditations and celebrations that can now be seen as a pivotal point for the subject of upcoming documentary Carlos.

The feature-length fi lm, directed by Emmy-winner Rudy Valdez, is scheduled to open after Santana’s September set of House of Blues residency dates, with a Carlos: The Santana Journey Global Premiere taking place Sept. 23-24 and 27 in selected cinemas. Executive produced by Brian Glazer and Ron Howard and released through art-fi lm powerhouse Sony Pictures Classics, the bio-doc depicts Santana’s life from his beginnings as a teen musician playing in his father’s band to his current era as an active elder stateman of rock.

Prior to his spiritual awakening, Santana was known as the leader of an eponymous band immortalized by cinematographers at Woodstock during their incendiary performance

of “Soul Sacrifice.” The band had already been introduced to the nation with a televised appearance on The Ed Sullivan Show and would release its most beloved album, Abraxas, a year after the three-day festival. Woodstock the movie, also released in

1970, would forever create a connection between Santana and fellow performers The Who, Joe Cocker and Jimi Hendrix as rock superstars of 1969.

Hendrix awed Santana as much as Coltrane. He speaks of both men with

reverence, and both inspired his transition from FM-friendly radio hits to jazz fusion on Santana’s 1973 album Welcome. That recording marked the departure of singer/organist Gregg Rolie, which made room for Alice Coltrane to sit in on keyboards for several tracks and Leon Thomas to provide stirring vocals on a re-recording of the title track from Love Devotion Surrender.

Welcome, released five months after the McLaughlin collaboration, was a taking-o point for Carlos Santana as intrepid musical explorer. He had already melded rock and Latin influences into a recognizable, signature sound, but he made a fearless turn into noncommercial territory.

Santana would remain a draw on the live circuit through the ’70s but would not return to the pop charts until having a radio hit with “Winning” from 1981 album Zebop!

The following year, he’d become the fi rst Woodstock-era musician with a video in heavy rotation on MTV. “Hold On” boosted sales of 1982 LP Shangó, but breaking into the Top 40 would evade Santana until 1999 when “Smooth,” featuring Rob Thomas on vocals, became a video and radio smash, once again changing the course of Carlos Santana’s career.

He’s maintained a high profi le ever since. Latest single “Energia” is attributed to the band, with son Salvador producing and nephew Joe Santana dropping Spanglish rap verses as familiar-sounding guitar lines weave in and out. Scenes from those recording sessions may be represented in Carlos, but Carlos Santana is hardly ready for the fade-out in the story of his career.

Acts pour into Las Vegas for Mexican Independence Day

Few cities celebrate Mexican Independence Day better than Las Vegas, which has an incredible array of acts surrounding the Sept. 16 holiday.

MGM Grand Garden Arena will be busy with two of the most prominent, influential and successful acts in the genre. RBD (Sept. 14), which in August played its first concerts in almost

15 years, has sold more than 15 million records worldwide with its catchy pop melodies. Despite recording only a handful of albums in five years, RBD remains one of the best-selling Latin music acts in history, and fans can look forward to hits like “Sálvame,” “Solo Quédate En Silencio,” “Nuestro Amor,” “Aún Hay Algo” and “Este

Corazón.” Alejandro Fernández (Sept. 15-16) has sold more than 20 million records with his forays into all aspects of his culture—folk, mariachi, ranchera, charro and more. His bona fides include two Latin Grammy Awards and a star on the Hollywood Walk of Fame.

Fans can expect plenty of favorites,

including “Se Veia Venir,” “Una Mujer Como Tu,” “Que Pena Me Das” and “Recuerdos, Tristeza, y Soledad”;

• Maná (Sept. 17), a Mexican poprock band now in its fifth decade of performing. With more than 25 million records sold worldwide, the group has earned four Grammy Awards, eight Latin Grammy Awards and 19 Billboard Latin Music Awards. They are also one of the best-selling Latin music groups of all time, with singles including “Rayando el Sol,” “Vivir Sin Aire” and “Oye Mi Amor.”

Mandalay Bay’s Michelob Ultra Arena has packed its slate this week with plenty of options. Banda MS and Eden Muñoz (Sept. 15), who teamed up to release “Hay Que Hacer Dinero” in 2022, are sure to create a fun evening of both great music and message, The vibes continue at The Cosmopolitan with the arrival of Hispanic comedian Gabriel Iglesias (Sept. 15-16), who has had success at many levels, from his Netflix stand-up specials to his work in movies like the Magic Mike franchise.

Dolby Live at Park MGM hosts Luis Miguel (Sept. 15-17), dubbed “The Sun of Mexico” by his huge fan base. The singer, who won his first Grammy at age 14 (the youngest artist in history to do so), went on to become the best-selling Latin artist of the 1990s, and is the highest-grossing Latino touring artist in history.

The Venetian Theatre is sure to be packed for the arrival of Emmanuel (Sept. 15-16). The iconic Spanish pop singer has been performing for nearly five decades, and is sure to bring hits like “El Dia Que Puedas,” “Con Olor a Hierba” and “Este Terco Corazon.”

The Bakkt Theater at Planet Hollywood Resort hosts two powerhouses of their respective genres: Gloria Trevi (Sept. 15), often referred to as the

Madonna of the Mexican pop scene, is sure to keep her fans dancing all night with hits like “Satisfecha,” “Ultimo Beso” and “Dr. Psiquiatra”; and Los Angeles Azules (Sept. 16), which specializes in the cumbia genre. They are so popular internationally that they have performed at Coachella.

Virgin Hotels Las Vegas sees the arrival of the Dijimos Tranquilito Tour by Mexican artists Gerardo Ortiz and Luis Alfonso Partida “El Yaki” (Sept. 15), as well as an appearance by comedian La India Yuridia (Sept. 15).

Alexa Grasso vs. Valentina Shevchenko tops inaugural Noche UFC card on Mexican Independence Day

It was the tap out heard around the MMA world. As soon as Alexa Grasso saw Valentina Shevchenko begin to move into a backspin kick during their March 4 match at UFC 285, the then-challenger for the women’s flyweight title instinctively moved behind the champion and executed a chokehold. Shevchenko submitted, setting stage the stage for a rematch that tops the fight card for the inaugural Noche UFC taking place on the evening of Sept. 16, Mexican Independence Day.

Grasso, from Guadalajara, is not only the second undisputed women’s champion hailing from Mexico (and

second fighter to defeat Shevchenko) but is the third Mexican citizen to win a UFC title this year. Her victory follows Brandon Moreno’s unification of the flyweight title at UFC 283 and Yair Rodríguez’s interim featherweight title win at UFC 284 in Perth, Australia.

A rematch was the perfect foundation to build the first Fight Night event dedicated to Mexican Independence Day. UFC president Dana White admitted recently that it’s been an oversight to not showcase “world champions and Mexican talent” on a Mexican holiday and upon realization immediately set about rectifying that mistake. The result will likely catapult Grasso into MMA celebrity status if she defeats Shevchenko again. It won’t be easy. Shevchenko knows now that Grasso anticipates her spinning techniques and isn’t likely to turn her back on Grasso

whatsoever. Grasso will have to rely on her sharp striking ability more than her submission intuition, while Kyrgyzstan-born Peru resident Shevchenko will adjust her Muay Thai training to minimize openings that Grasso can exploit.

Mexico’s Raúl Rosas Jr. takes on U.S. fighter Terrence Mitchell in a bantamweight bout, while Daniel Zellhuber represents the red, white and green in lightweight battle with Christos Giagos. Featherweight Fernando Padilla (versus Kyle Nelson) and Tijuana flyweight Edgar Cháirez (against Daniel Lacerda) round out the men’s Mexican contingent.

Three more women’s fights are scheduled, including a strawweight clash between Mexico’s Lupita Godinez and Sam Hughes. The card promises to saturate the Strip with fight fans from both sides of the border in the time leading up to Noche UFC, which is likely to be one

of the most electric MMA events ever held in Las Vegas. At a time when UFC’s parent company has recently acquired Vince McMahon’s WWE and some sort of consolidation will be happening in combat sports both in the Octagon and wrestling’s squared circle, it makes sense to break down barriers between markets where both sports are insanely popular.

Expect MMA in Vegas to be part of every future Mexican Independence Day. It will also be the beginning of Grasso’s legacy if she manages to hold onto her title. An underdog in her previous match with Shevchenko, she’s on a five-fight win streak and has four knockouts and five first-round finishes on her record. Shevchenko has eight knockout wins, seven submission wins and six first-round finishes. Evenly matched in reach and weight, whoever prevails will make Noche UFC history.
