No matter what generation you’re from, one thing holds true: Music, to use the old cliche, really does make the world go ’round. It’s a part of all our lives: All of us have those songs, those lyrics, those musical passages, that gives us goose bumps; all of us have music that energizes us, that makes us cry, that makes us laugh, that makes us reflect. For decades, there’s been one performer who’s been making us all want to dance: Kylie Minogue, the best-selling female Australian artist of all time, whose “Can’t Get You Out of My Head” had us all swaying in our cars as it dominated the airwaves in the 2000s. It’s with great excitement that we at Las Vegas Magazine announce that not only is Minogue now featured in her own Strip residency—at the brand-new Voltaire at The Venetian— she also spoke to associate editor Kiko Miyasato about what this opportunity means to her (“On a Vegas High,” p. 32). A Beautiful Bohemian Escape With its immersive décor and list of killer cocktails, this bar transports you to a whole new world

It might be winter, but it’s totes tropical vacation mode inside Golden Monkey Tiki Lounge, which takes the classic tiki bar experience and elevates it. The lounge is tucked away off the casino floor and down a few hallways, so it seems as if you’ve stumbled upon a secret retreat filled with killer cocktails and island vibes. The lush, plush décor includes oversized bamboo-like club chairs, high-top tables, bar-top seating and cozy nooks for larger parties, and the music is a mix of island-style tunes, throwback songs and today’s biggest hits. The low lighting is accented by candlelight throughout the whole space, and the backlit bar is beautiful to look at. “It’s a tropical escape, if you will, from the rest of the casino,” said Will Cahow, director of beverage for Resorts World Las Vegas. “It’s similar to other tiki bars around the country but a more luxurious tiki environment. A tropical oasis dynamic. Vacation mode.” And what goes better with vacation than cocktails, right? At Golden Monkey you can spend all day sipping through the menu—the choices seem endless and all are tempting. If you’re with a bigger group, try The Hurricane punch bowl, pictured (often called scorpion bowls at tiki bars). The large delight is a mix of Bacardi Superior rum, Myers’s dark rum, pineapple, orange and lime juices and grenadine. The menu has seven classic tiki cocktails for fans of tradition, but Cahow and his team have created 10 unique, specialty tiki cocktails as well, all served in photo-worthy vessels like the One Way Ticket, a blend of Appleton Estate 8 Year Old Reserve, Hamilton 86 Demerara rum, Chinola passion fruit liqueur, Heirloom pineapple amaro liqueur, lime, pineapple and orgeat. The cocktail is then dusted with cinnamon over an open flame, making the flame flare. For something to nosh on while imbibing, Cahow highly suggests ordering Golden Monkey’s house-made snacks: Crunchy and delicious Maui onion potato chips; and Hurricane popcorn, a salty snack made with ingredients like togarashi and furikake. –Kiko Miyasato Resorts World Las Vegas. 702.676.7000

Red Bottoms and Rhinestones

A burlesque icon brings style, seduction and shine to an all-new production show on the Las Vegas Strip If there’s one person to associate with over-the-top glamor, it’s Dita Von Teese. Her signature jet-black hair and ruby lips pair so beautifully with the Swarovski crystal-covered garments and custom red-bottomed Christian Louboutins; it’s hard to believe she’s a mere mortal. And the opportunity to see the queen of modern burlesque perform is officially yours at Dita Las Vegas: A Jubilant Revue, the star’s inspired residency. The show plays in the Jubilee Theater that once held the namesake showgirl production Von Teese admired for many years before opening her own show in the venue. The connection runs deeper than inspiration and location, though. Dita Las Vegas features some of the original Jubilee! costumes designed by the iconic Bob Mackie and Pete Menefee, yet this time on a more diverse cast of bodies. From the moment dancers begin to flood the stage for the glitzy opening number of the 75-minute burlesque show, it’s obvious that the show’s cast includes people of all genders, shapes and sizes. The refreshing decision sets this engagement apart from the many

conventionally cast, seductive shows in the city, all while maintaining the highest standard of performance. You’ll see many of the vedette’s signature acts like the Champagne Glass and Rhinestone Cowgirl, performed by Von Teese herself. She’s also lent out a few of her favorite routines, like the Bird of Paradise, Carousel Horse and the Shell, to fellow dancers who execute each number to perfection. Designed fantastically, this residency makes use of the whole space the Jubilee Theater provides. Performers appear in balconies to the left and right of the stage and even float above the audience on various platforms that are lowered throughout the show. There’s so much to look at in each elaborate number that you may just have to see the show twice. And it would be a challenge to find a bad seat, as even the farthest seats from the stage give spectators a clear view of the extravaganza, while the closer seats offer the ability to see the acute attention to detail in each costume and set piece. –Em Jurbala

She’s Got Winning Ways

Singer follows up a busy year with top awards and more shows Lainey Wilson’s five-category sweep of the Coutry Music Association Awards last month signified both her ascent to stardom in the country music firmament and a before-and-after moment in the arc of her career. Nothing will be the same from here on out for the “Watermelon Moonshine” singer, with a four-night stand in Las Vegas being her first major move after spending her most recent tour opening for Hardy. That tour was followed by the pair winning two CMAs for their smash hit, “Wait in the Truck,” which won for both Music Video of the Year and Musical Event of the Year. Bell Bottom Country took Album of the Year honors while Wilson was named both female Vocalist of the Year and Entertainer of the Year. She’s won more CMAs in one year than Taylor Swift or Miranda Lambert, and tied Johnny Cash, Vince Gill and Alan Jackson for most wins in one year. Wilson is at the apex of a rise that began when she started playing parties as Hannah Montana. Now she’s like Hannah Montana in real life and all grown up, albeit with a voice that naturally inhabits Dolly Parton’s range and the no-compromises attitude of a cowgirl born and raised in Northern Louisiana. The country music industry has witnessed the establishment of next phenomenon to carry the torch of tradition forward. Texas Instruments Country superstar continues her strong Vegas run Fans attending this summer’s Velvet Rodeo The Las Vegas Residency shows at Planet Hollywood got to see the new Miranda Lambert Bluebird guitar. Released in August, Texas-born Lambert brought it out for “Famous in a Small Town” and played it during “If I Was a Cowboy.” While she doesn’t play it during the actual song “Bluebird” due to its arrangement not requiring her to play guitar, the spirit of the song drove the design. The Miranda Lambert Bluebird is based on one of Lambert’s favorite models, the Gibson Hummingbird. A square-shoulder body style, made from mahogany and a spruce top, is finished with a nitrocellulose lacquer dubbed “Bluebonnet,” after the official flower of Texas. A custom pickguard features a bird in flight and another perched on a blossom. The Bluebird is the newest addition to Gibson’s Artist Acoustic Collection, which includes signature guitars dedicated to The Everly Brothers, Tom Petty and Cat Stevens. Coming in the wake of Time naming her one of 2022’s 100 most influential people for the year, it was the icing on the cake of honors she’s received as her career rose layer by layer.

The only place to go from there is back to the Las Vegas stage, telling her story through her Gibson guitars and Velvet Rodeo setlist. A runway leading into the audience allows attendees a closer look at their idol as she and her band deliver autobiographical classics such as “The House That Built Me” and “Gunpowder & Lead” as well as newer material (“Tin Man” and “Carousel”). “We’ve all settled in, it’s like home now,” said Lambert in a November interview with Las Vegas Magazine. “There’s so much more we can put into the show when it’s not being built and torn down same day. The band loves the movement the stage allows with all the risers and platforms. It’s not choreographed, so every night is different.” Lambert, who recently signed the first artist to her Big Loud Texas recording label, has made a career out of doing things differently. “I’ve played in the (Pistol) Annies, released The Marfa Tapes with friends, I think it’s safe (to say) everything in my life is unconventional!” –Matt Kelemen

Just Jokes

Veteran comedian has a line for everything When you see Jeff Foxworthy onstage, you’re catching way more than a comedian. You’re catching his famous “You Must Be a Redneck” jokes, for sure, but this guy has been hustling since he started more than 40 years ago in stand-up. And he still hits the road for his own stand-up dates every year, including at The Mirage this week. Through the years, he’s been the impetus behind the Blue Collar Comedy Tour, a wildly popular collaboration between himself, Bill Engvall, Larry the Cable Guy and Ron White, starred in TV shows, written comedy books for adults and children and started an outdoors product line (he’s an avid outdoorsman). In 2022, Foxworthy had a Netflix comedy special, The Good Old Days. And he also has the distinction of selling more comedy albums than any other stand-up. He might be best known to Vegas audiences for those redneck jokes, and it’s always a treat to hear them, but he has plenty of other good jokes (and he’s a fan of jokes), and that’s a majority of what he regales the audience with. Putting Fun in Your Crosshairs Facility offers shooting packages for all skill levels The right to bear arms comes with responsibilities, regulations and restrictions. It is not permissible to carry a firearm on a commercial airplane, for example. In some states it’s not legal to own certain types of guns at all, which makes Las Vegas a destination for shooting at a range. A visit to The Range 702 can lead to fulfillment of any objective related to pistols, machine guns, rifles and a few other exotic options such as a Mossberg 500 shotgun and a quadruple-barrel monster that fires nearly 65 rounds per second.

Choose one firearm or a combination in a plethora of packages that suit any conceivable shooting sojourn inside The Range 702’s 17,000-square-foot facility (the largest shooting range in Nevada) just west of the south Strip. Choose from 20 weapons for the single-weapon One and Done option. The Black Ops Experience provides the dopamine rush of first-person shooter video games. Blast aliens away at Area 51 or go on a Zombie Hunt armed with a fully automatic M4, a 12-gauge shotgun, an AK-47 and a Glock.

Sign on for the Extreme Experience and get five weapons that includes a light machine gun, a fully automatic special ops rifle and a 9mm handgun. Nightlife on a High

New lounge offers some of the best views, cocktails and ambience Don’t pass up the chance to chill and clink delicious cocktails at one of the Las Vegas Strip’s newest and, may I say, dopest nightlife spots— Chéri Rooftop at Paris Las Vegas. The space is all outdoors, sits high up from the ground and is right under the hotel property’s Eiffel Tower. The view? A perfect shot of the Bellagio Fountains, as well as up and down the Strip, which looks beautiful with all the sparking neon. The furniture is ideal for either an intimate date night or a larger

group; oversized chairs and cushy sofas surround tables, and each spot allows for those perfect views. Chéri Rooftop hits the mark on the cocktail front, too. Creativity with flavors leads to unique twists on classic cocktails—the results are impressive. “Chéri offers elevated cocktails with a French-inspired twist on classic cocktails,” said Perry Rogers, managing partner of JRS Hospitality, the owners of Chéri Rooftop. “We also offer tableside cocktails, perfect for large groups

celebrating bachelorette trips to Las Vegas, birthdays, anniversaries, weddings and more. Our cocktail menu is also seasonal, so look for spring and summer-inspired libations coming next year.” Might we suggest a few to start with? Chéri Rooftop’s twist on the Old-Fashioned, the My Angel, has a Hennessey cognac base, and is infused with a perfect-for-fall flavoring of apple cinnamon syrup and Angostura bitters, finally garnished with a cinnamon stick and orange

wheel. Any negroni lovers? The Devil’s Smoke is a twist on the classic and is quite yummy, with Tres Paplote mezcal mixed with Campari and agave juice for sweetness and lime for a pinch of tartness. The cocktail is then served with dry ice for that wow effect. More wow is captured in the Good Luck, Chéri Rooftop’s version of the classic Manhattan. Six-year-aged Whistlepig rye is mixed with sweet vermouth, Angostura bitters and a made-inhouse rosemary apple syrup. Then the cocktail is brought to the table, where the server creates a rosemary smoke bubble on top of the cocktail; once it bursts, the drinker gets a nice waft of scents before taking a sip. Large-format cocktails are ideal for groups, as each one serves up to eight people. Choose from a white or red sangria, or go for the Mon Cheri Amore with peach and orange blossom Ketel One, peach schnapps and lime. We’re partial to the French Fizz with Stoli Blueberi, St-Germain elderflower liqueur, fresh lemon and rosé champagne. For those that don’t partake in alcohol, try the Incogito with strawberries, blackberries, and agave with lemon juice and soda.

The menu offers a ton more specialty cocktails, and reading the ingredients you’ll find it hard to not want to try them all, so repeat visits to Chéri Rooftop might be in order. You can also ask the bartenders to whip you up something off-menu depending on what flavors you like. Bottle service, wines by the glass, beer and bottles of champagne are also available.

The always-lively music is a mix of DJs, live bands and singers, and it rotates each night. Combine all the elements, from drinks to views to ambience, and it’s easy to see: Chéri Rooftop is one rooftop lounge that should now be on everyone’s Las Vegas nightlife must-visit list. –Kiko Miyasato

This bar manager mixes charity and cocktails For Brianna Gross, it’s all about her hometown, Las Vegas. Gross is a survivor of the 2017 Route 91 Harvest music festival tragedy, but it’s only made her love and pride for the city even stronger. So when it comes to her career—she’s the bar manager for The Space—it’s a perfect fit. The Space is a community-driven, charity-based arts theater, and along with its monthly Mondays Dark events that raise money for various Las Vegas charities, Gross has found her happy place. “I’m really big on giving back and

working with organizations and charities that give back to the community, so The Space drew my attention and I was all about it,” Gross says when she decided to join the company six years ago. “Anything having to do with my city, my town, I’m all in.” Guests that come to the various shows and special events held at The Space can spot Gross behind the bar in the theater’s lobby and lounge. She’s the one whipping up all the cocktails and sharing her outgoing, fun-loving personality. “I’m a social butterfly,” she

says. “When people come here, I love giving them the best time. Pop queen Kylie Minogue establishes her reign on the Strip with a new residency show at The Venetian Nearly every decade since the late ’80s, pop music sensation Kylie Minogue has made her mark on the music scene, bringing her inimitable style and sultry-sweet voice to stages around the world. Now for the first time, Minogue plays a residency show inside one of Las Vegas’ newest and most opulent nightclub-meets-concert spaces, Voltaire at The Venetian. Recently, Las Vegas Magazine checked in with Minogue as she kicked off her residency in November and has dates well into 2024. Catch her this week, Dec. 14-15. Why did you choose to do your first U.S. residency show in Las Vegas? I always thought I would have a residency in Vegas. I’ve toured most of the world with various shows over the years. In 2005, my Showgirl tour was a nod to Parisian cabaret and Vegas showgirls. In 2011, my Aphrodite tour had all the bells and whistles, including precision water fountains throughout the show. Everyone was saying back

then that this was a Vegas show. It was absolutely crazy to travel with the fountains and everything, but it was totally amazing. As time rolled on, one of the shows I was offered in Vegas was Voltaire. It appealed to me because of its glamour, decadence and intimacy. It brought to mind venues of the past where Elvis and Sinatra may have played. Designed by Tony Award-winner Derek McLane, it was all a very appealing offer to finally do a residency in Vegas. The irony is that it is quite the opposite of those big shows I mentioned, rather it is about the close connection with the audience. We really become one wild and wonderful group through this show. What are your thoughts about performing inside the brandnew Voltaire, more of a nightclub space, versus on a traditional concert stage? It has presented some different challenges! I am known for big shows, so I still somehow managed to put a decent-size show in this snug room! The venue is like wonderland in a much more analog way than some other venues I’ve played, and I think this adds to the palpable emotion in the audience.

Voltaire will definitely put you physically closer to your fans. Will you be interacting with the crowds? Oh, for sure. That has already started! I’ve seen so much joy from the crowd and also some sobbing! I think because this is such an unusual place for me to play, many fans are simply overcome! The show is fun and escapist but also has a lot of heart, and I really appreciate that fans are able to express their emotions and let themselves feel truly free. You have a large discograpy. Will you be performing any new songs? I will indeed, I have four songs from my new album, Tension. The first three singles, “Padam Padam,” “Tension” and “Hold On to Now.” Plus the song I wrote especially for this show, “Vegas High.” And believe me, we all feel the Vegas high! Tell us about your new album. What was the inspiration behind it? When did you start working on it? What are some of your favorite songs? I started working on the album around early 2021. I had finished my previous album in lockdown, so I was very grateful and energized to run into the new album with total gratitude, to

be with some of my favorite people I make music with. I started without a clear direction and as months passed, I realized that, as opposed to my previous two albums, this one wouldn’t really have a theme. The theme, if anything, was to make Kylie songs. Given my back catalog that could mean a number of things, but at that point in time it was about songs that are clubbased and emotionally shining. I found a real liberty with this type of approach. We could jump styles, just play, indulge and have fun. After all your time in the music industry, what are some of the most important lessons you’ve learned? One of them is that experience is earned, not given. When I was younger, I used to wonder how I could do some of the things other artists were doing. The answer was time. I had to wait and learn and gather that knowledge. As we all know, this industry is a notoriously heady and exciting world, which needs the balance of some kind of normality. Do you have a message to your fans that are coming to see you here? This really is a first for me and for my fans, so get ready to have an amazing night!

before Thanksgiving and kings of old Europe were sharpening swords and mounting their stirrups. The spirit of Christmas was rumored at risk, so said wizard Merlin with a wave and a whisk. There must be a tournament and banquet of guests, where courage and strengths are put to the test. The strongest of all will face evil itself, making holidays safe for every Santa elf. Thus, the holiday version of Tournament of Kings commences deep inside the realm of Excalibur, where a particularly rowdy crowd cheers on martial monarchs from sections reserved for the kingdoms of Spain, Ireland, Austria, Norway, Hungary, Romania, France and the Evil Dragon. As hearty suppers of roasted Cornish Hen, sweet potatoes and corn on the cob are served, spectators pound on tables in anticipation of the action soon to be underway. Merlin, dressed in his holiday finery of red cloak fringed with white ermine, arrives first along with a jester skilled in the art of juggling. After giving instructions on how and when to yell

“Huzzah!” and explaining that the spirit of Christmas is in jeopardy, Merlin moves into the background so the kings can make entrances on horseback and greet their subjects. One of them, including the great King Arthur, will be made champion after a series of grueling combative competitions. Sparks fly as swords clang, maces and battle axes strike shields, and warriors wrestle in hand-to-hand combat for the right to fight against the dark forces that would dampen your holiday cheer. Jousting provides the climactic clash, with fully armored opponents galloping toward each other at top speed. Will the prevailing combatant have the right stuff to defeat Mordred’s evil knight? Can Mordred’s command of the element of fire cause Christmas cheer to go down in flames? Does Merlin have the sufficient magical power to let it snow, let it snow, let it snow? Attendees of ’Twas the Knight know the answers to those questions after witnessing round-table revelry that included drummers, dancing maidens and a dam-

sel in a flowing scarlet gown riding astride a stallion. Desserts are served, beverages are topped off throughout the proceedings and Merlin is rumored to have a special recipe for margaritas. It can get loud and maybe a little frightening at times, so smaller patrons accompanying adults should be prepared to provide aid and comfort. Otherwise, it’s an action-packed adventure that causes children of all ages to lose their inhibitions and test the volume capacity of their voices. There is an arcade beyond the exit where excess aggression can be worked off with Skee-Ball sessions and air hockey face-offs. Tournament of Kings veterans may detect more physicality in the fighting, more realism in movement and more impacts that look like they must have hurt. Cast and crew continue to rehearse and refine the venerable production, keeping up with contemporary cinematic standards and expectations of each new generation. For kids, it’s a forever memory and an energy-expending holiday highlight that will conclude in a sleep of heavenly peace.

Carversteak (Corporate executive chef) Carver Road Hospitality corporate executive chef Daniel Ontiveros, like many Vegas culinary artists, has worked in a variety of restaurants, gaining experience and fans. When he opened the vaunted Carversteak at Resorts World Las Vegas as executive chef, he brought a wealth of knowledge gleaned through restaurants like Bouchon. The opening of Carversteak in Resorts World Las Vegas was exciting in myriad ways. “Obviously it’s an iconic location being that it was the Stardust. … It was exciting for me to take the oppor-

tunity to come into a new building and work with Sean Christie and Carver Road, and all the executives that brought me on board. It was great to be able to create something together,” he said. Although he travels extensively in the executive chef position, he’s still

involved in all aspects of the restaurants. “The role that I’ve taken on now is more of a mentor for the people who work (here), to make sure that they’re upholding the standards and the expectations of not only myself but Carver Road, and Carversteak.” He’s got a little advice for beginning foodies: “To develop a palate you have to … have respect for the ingredient itself and where it comes from, how it was grown, who delivered it to you. It’s kind of an entry level for me, in terms of getting people to try new things, and giving a story. Everybody loves the story (like how) our lobsters are shipped from Maine, every two days… I think it just becomes a deeper appreciation for food.”


“Some people say food should be hot. I was trained that food shouldn’t be as hot because you lose the flavor. Where the true flavor comes out (is) when items are cold.”

(Resorts World Las Vegas executive chef) You might be surprised to learn just how far Resorts World Las Vegas’ executive chef Devin Hashimoto’s reach extends. The Las Vegas restaurant veteran (Stratta, Renoir, Mizumi) opened the resort, interviewing chefs, tasting dishes and recommending menu and ingredient changes. Today, he directly oversees 29 venues, including the foodie paradise of Famous Foods Street Eats. The Hawaii native developed a fascination for cooking after growing up

in an accomplished mother’s kitchen and getting a part-time job in a local restaurant. “That was the first kind of experience I had (in) prep work … getting whatever the fish they had from that fishermen that they had contracted with. Whether it was a marlin or … mahi. It was just so intriguing to be able to see that operation and to experience like a small independent restaurant operation and then come to Vegas, and then work at The Mirage.” As the UNLV culinary grad worked his way up in Vegas, he developed a network of contacts that proved invaluable in his role at Resorts World Las Vegas, allowing him to source the best possible product at the best possible price, and share that with the resort’s chefs. So if you see something unusual on a restaurant menu, it might in part be due to Hashimoto. “We try to see what other competitors are doing, what are they offering and how can we get ahead of that and do something unique and different that can attract guests to the property.”

“(When) you eat my food, there’s a very strong thread that goes through it, and an understanding that purely relates to who I am.” Bar, designing a restaurant with a menu liberally accented with caviar. Earlier this year the name transitioned to Aqua, reflecting a seafood-forward menu (still with plenty of caviar). The restaurant was designed conceptually, said the chef, meticulously planned so that every aspect complements and leads to another. That planning is emblematic of the chef. “When you have your own mindset, you have your own foundation. And you can create conceptually amazing dishes for the season and the artistry … but also make it taste delicious.”

Aqua (Owner and executive chef) For Australian-born Shaun Hergatt, the secret to success isn’t a secret— it’s hard work, dedication and creativity. The executive chef and owner of Aqua grew up in Cairns, a tropical area that’s considered the gateway to the Great Barrier Reef, with extensive farming and ocean fishing. “I think that it was such a great environment to be able to be creative,” Hergatt said. His Finnish-born grandmother nurtured that, cooking tradi-

tional Finnish dishes but also using whatever fresh ingredients were available. “My grandmother is an amazing influence in my life , especially from a culinary standpoint, because she was the one who was really teaching me from a very young age about food.” It seemed natural to go into cooking, where he labored and learned fine dining, taking on an executive chef role at age 22. He ended up in New York and Miami, earning Michelin stars and building a reputation for exquisitely crafted dishes. He brought that experience and passion for excellence to what was originally called Caviar


Brezza and Bar Zazu (Owner and executive chef) From farm to table to Italy—Nicole Brisson has always been immersed in the food world, with a grandfather who owned his own restaurant and a childhood spent eating and preserving produce from farmer’s markets and the family’s own acreage in New York. “I didn’t have fast food until I was probably 26 years old,” Brisson said. “Everything I had was made from scratch. And I think that kind of ignited my passion for farm-to-table cooking.” That background made a decision to pursue opening a restaurant a focus during high school and culinary

college. Then came travel to Italy and studying in the restaurants there. After years of making and honing connections, she began helming restaurants both on and off the Strip, garnering a James Beard nomination and appearing on television in the process. When the opportunity to participate in opening upscale Italian restaurant Brezza at the brand-new Resorts World Las Vegas came along, it felt serendipitous. “It was really kind of like this reunited family atmosphere with all the executives in the hotel, and we kind of bonded over the fact that we’ve been on this trip for 20 years and all know each other, and our paths or our careers kind of correlated at some time.” At Brezza (and at Bar Zazu, the arty tapas restaurant next door that Brisson also helms), she pulls in the influences her experiences have given her, creating dishes with stories behind them. Take the caprese, a beautiful dish with a geléed tomato center, inspired by a dish she prepared daily in Italy. The pasta is a marvel, with a team of four hand-making every portion in the hours before the restaurant opens.

duck and salt it for a whole day. Then we rinse it and put a dry-wet rub on there and it sits for 24 hours. Then we braise it for two hours, then cool down, and in the next process it’ll be (finished) in the fire.” If you haven’t yet developed your appreciation for raw foods, take Kalaluhi’s advice for expanding into that arena: “If they don’t know anything about the raw side of things, like sushi, the goma crab is an introductory level; it’s not raw, it’s fully cooked. Then they can venture into something like the crispy tuna...” He has a tip for beginning home cooks as well: Don’t add cold food to your pan. It will stick. FUHU (Executive chef) When Justin Kalaluhi was growing up in Hawaii, he little suspected that one day he’d be leading the team at FUHU in Resorts World Las Vegas. As a child he often camped with family in an extensive beachside camp that included a full makeshift kitchen; that intrigued him, while meals with family excited his taste buds and got his creative, inventive juices flowing.

Today, you’ll find those influences blossoming in the Asian-inspired, seafood-forward menu at FUHU, where Kalaluhi took the reins earlier this spring. As executive chef, he focuses on presenting the best-quality dishes to guests, dishes like scallops, whose ingredients and presentation vary with each season. One of the most impressive items at FUHU, he said, is the aromatic crispy duck, a Malaysian-inspired dish. “People don’t understand that it’s a three-day process. We fabricate the

At the end of the day, we appreciate all of our guests, whether you’re famous or not.” Crossroads Kitchen (Owner and executive chef) If you know much about plant-based food, you have undoubtedly heard of Tal Ronnen. The executive chef and owner of Crossroads Kitchen has created buzz for years with his advocacy for vegan foods. He’s worked with celebrity clients like Oprah Winfrey, wrote cookbooks (The Conscious

Cook), founded vegan brands like Kite Hill, and established vegan restaurants like the trendy Crossroads Kitchen in L.A. When expanding to Las Vegas, Resorts World Las Vegas seemed perfect. “It was a very natural fit for me to choose Resorts World Las Vegas. The

resort has a great Los Angeles theme with Wally’s, Fred Segal, and Ray Garcia (¡VIVA!). It just made really good sense for me to come here,” he said. That expansion has proven a success, with guests coming from near and far for the fine dining that Crossroads Kitchen is famous for. The menu is vegan, with items like chestnut foie gras, which the chef is justifiably proud of. “People are blown away by the texture in the depth of flavor (of the foie gras). It’s made from porcini mushrooms and roasted chestnuts.” That’s not the only dish to look out for here. The skirt steak takes an incredible effort to produce. “Our eggplant skirt steak is made from a whole Italian eggplant, which is steamed, dehydrated, and then butterflied to look like a skirt steak. It’s then marinated in a beet ponzu, which gives it that bloody color and served like a steak set would be.”

Once in a great while a creative force emerges that changes the way we see everything. For live entertainment, that moment came on Dec. 25, 1993 at the newly opened Treasure Island Hotel & Casino, when Cirque du Soleil debuted its first resident show–Mystère. In the ‘70s and ‘80s, Las Vegas entertainment had a reputation for magicians, showgirls, singers, and stand-up comedians, but when Mystère premiered on Christmas night, it marked a new era for productions of unparalleled magnitude and marvel. Cirque founder Guy Laliberté dubbed the show a “flower in the desert,” and true to form, Mystère has bloomed into one of the most original and groundbreaking shows live audiences have ever known.

In So Many Ways It’s a First

Musing on the success of Mystère, Senior Artistic Director Tim Smith says, “The inspiration and theories behind the show were all new visions for entertainment, and of course for Las Vegas… Cirque arrived and brought this new image to the stage that the city had never seen before. It was worldly. It was international. The music wasn’t radio hits… it was brand new and very exploratory for the audience.” The set design, a fantastical world suspended between the heavens and earth, was unlike anything people had seen before. The cast and crew, boundless in their creativity, crafted a spectacle of acrobatics and artistry that continues leaving people breathless. Even the theater, meticulously designed to accommodate the technicalities of a Cirque du Soleil show, stands as an inaugural achievement and testament to the partnership with Treasure Island.

3 Decades of Shattering Expectations

After 30 years, 400+ performances a year, 18 million spectators, and more than 13,600 shows, Mystère remains one of the most sought after tickets on the Las Vegas Strip. It’s an accomplishment that Smith attributes to Cirque’s hunger for change. “To get to 30 years requires a lot of passion, commitment, patience, evolutions, and trust,” he says. “We’re the only company [in Vegas] doing this type of evolution on a regular basis to keep the productions fresh and innovative.” Indeed, much has evolved in the three decades since Mystère debuted. New acrobatics have been incorporated. New music, lighting and projections have been integrated. In 2016, new dancers were added. A year later, a dynamic new Power Track apparatus was installed, and a new Teeterboard act sent performers soaring higher than ever. Even as recently as 2022, a new Bungee act was introduced that extends 80 feet into the air. “It’s the only act of its kind on The Strip,” says Smith. Yet for all the updates, there’s a certain quality to Mystère that remains beautifully untouched. Perhaps it’s the astonishing acrobatic feats, or the universal themes of time and rebirth, or the sense of wonder that arises when world-class performers do something you’ve never seen before. Whatever it is, Mystère has found a way to transcend time.

“There’s one experience of Mystère in all the world,” says Smith. “Being the first production of this scale, the magic we found, the synergy between amazing performances, circus arts, opulent couture styles, dance, and original world music… It’s still a combination that is rarely put together.”
