It may be a bit chillier at this time of year in Las Vegas, but that doesn’t mean the fun stops. Far from it! The city specializes in capitalizing on any type of weather, and this week’s issue of Las Vegas Magazine is a perfect example of that. We’ve got several outdoor experiences lined up for you—and one of them actually involves bringing your swimsuit! Circa Resort & Casino’s Stadium Swim, which is the only pool complex in town open 365 days a year, has some serious fun in store for you in the form of Winter Swim, a program which re-creates the vibe of a ski lodge (“Hot Tub Time,” p. 12). This week, Winter Swim adds a cool twist to the party atmosphere: A bikini contest, where participants vie for a $10,000 prize! Over on the Strip, Paris Las Vegas recently unveiled the newest addition to what’s already a scalding-hot nightlife scene: Chéri Rooftop, an outdoor venue perched atop the property and just below the re-created Eiffel Tower (“Views for Days,” p. 24). Trust us: This is one venue you do not want to miss. Speaking of new venues you don’t want to miss, Play Playground recently opened at Luxor. It’s an attraction where larger-than-life versions of games you played as a kid beckon you to revisit your childhood—but with cocktails (“Put Down That Phone!” p. 17). If you’re looking for comedy, you picked the right week. Howie Mandel performs a one-nightonly show at Westgate Las Vegas (“The Laughter Never Stops,” p. 32), while Kyle Dunnigan visits Jimmy Kimmel’s Comedy Club at The Linq Promenade (“Impressive Innovations,” p. 20). Hot Tub Time
Heated pools and party people combine to create a cool time in downtown Las Vegas The temperature drops below 40 degrees shortly after the doors open at Circa Resort & Casino for the first Winter Swim of the season. It’s hard to tell whether early attendees have donned the latest club fashions or furry outerwear covering board shorts and bikinis, but the pools are warmer than the air, and dry ice fog creates a steamy atmosphere as service team members finish preparing the cabanas and the opening DJ demonstrates what the outdoor sound system is capable of. It’s a little colder on this Friday night than expected, but the elements are in place for an EDM party unparalleled by any other nightlife option in Downtown Las Vegas. The theme is après-ski, the six rectangular pools warmed to a range of 94 to 103 degrees. The cabanas are heated, too, providing the best opportunities for groups to share heaping plates of comfort food or indulge in drink menu offerings designed to ward off the chill and prepare for submergence. Before the daring dip, there is a silent disco to discover, where dancing to the beat of DJs from the @wethebeat collective becomes possible via headphones. Adam Daudier wisely starts things off with a deep house set followed by CPR’s more frenetic beats

that segue into party anthems as party people begin to fill up Stadium Swim. It’s closer to 10 p.m. as the populi begin to join the pioneers in the pool. Laser beams pierce the sky while DJs Alex Parra and Evan Durant prepare the crowd for headliner TroyBoi. Platters of sliders, chicken fritters with garlic fries and lobster corn dogs have been sufficiently digested. Guests undress beneath the cover of plush, white Stadium Swim robes and pitchers of courage-enhancing cocktails such as tequila-based Once Upon a Time in Jalisco are finished off. There are selfies to take before phones are hidden away and plunges are taken, but bodies fill the pool well before TroyBoi begins his set that must end by midnight when Downtown’s curfew is called and it’s time to get dry. There will be more tequila, more silent disco, and more winter swimming to indulge in next weekend (Feb. 3), as well as the Winter Swim Bikini Contest, where contestants are vying for a $10,000 first prize, a $3,000 second prize and a $2,000 third prize. High-end Strip restaurant encourages a group experience Rarely will you find a fine-dining restaurant quite so playful as Stanton Social Prime, an elegant, intimate space that’s perfect for gatherings, as sharing is heavily encouraged (hence the restaurant’s title). So many of the menu items are a clever spin on tried-and-true classics; you can tell chef and founder Chris Santos (who for years ran the very successful Stanton Social in Manhattan) had the maximum amount of fun in everything he created for your enjoyment. The cleverness begins with the signature cocktails: Ward Five is a take on the whiskey sour with Old Forester bourbon, lemon, demerara and passion fruit espuma; Doors Have Eyes evokes the spirit of a Tom Collins with Roku Japanese gin, lemon, yuzu soda, Thai basil and iced tea ice cubes; and Rancho Gloria will appeal to margarita fans with Casamigos blanco tequila, Del Maguey Vida mezcal, lime, coriander and cilantro-jalapeño air. Continue the journey with Famous French Onion Soup Dumplings (pictured), “al pastor” yellowtail crudo (with grilled pineapple, cilantro, lime and pineapple ponzu), dirty tots (so delicious with lobster crème fraîche and caviar), and black truffle ribeye cheesesteak sliders with fon-

duta and carmelized onions. Make your way through hilarious menu headers like “Not Steaks,” “Hot Potatoes” and “Not Potatoes” to find gems like miso-glazed crispy eggplant (highly addictive, we assure you), Thai BBQ wild mushrooms with toasted sesame, and a lobster mac and cheese that uses a full pound and a half of the succulent crustacean. All steaks are true highlights here, seasoned with a house dry rub and served with roasted black garlic (don’t let that go to waste!). The 64-ounce super tomahawk is prepared tableside with the full, fiery presentation, courtesy of cognac, while the “Pretty in Pink” 10-ounce filet earns its title with the accompaniment of pink peppercorn sauce and pink oyster mushrooms. Desserts are also full of surprises. Order the strawberry blond “milkshake” and discover a perfectly constructed piece of cake featuring strawberry mousse, vanilla sponge cake and Chantilly cream. And the peanut butter and chocolate cake, drizzled with warm chocolate sauce, is enormous; you could try eating it all yourself, but c’mon—be social! –Ken Miller

Mr. Las Vegas takes audiences on a journey through a fascinating, multifaceted career No history of Las Vegas would be complete without a chapter devoted to Mr. Las Vegas himself, Wayne Newton. The tireless entertainer has been an integral part of this town for decades, stretching all the way back to the days when he would perform multiple shows a day back in the 1950s to the days when he headlined at major Strip properties, becoming one of the most successful entertainers in the city’s history. For that alone, Newton has earned his legend status. But when you mix in the man’s other bona fides, including immortal songs like “Danke Schoen,” “Red Roses for a Blue Lady” and “Daddy, Don’t You Walk So Fast,” his work with the U.S. Armed Forces and his numerous charitable causes, Newton stakes a case for being the most influential Las Vegas resident of all time. In case you need more proof, definitely get a ticket for his one-man show, Wayne: Up Close and Personal, in which the man himself holds court (with some surprise guest stars always thrown in), taking audiences through his life with the help of multimedia presentations and various songs. What really sets Up Close and Personal apart from other Strip shows is that no two shows are ever the same, as Newton has so much material to draw from. One night, he’ll talk about his passion for Arabian horse breeding; another night, you’ll hear an anecdote about his appearance on a TV show; and another night, he’ll talk about learning the various instruments he so famously played during his heyday (name the instrument, and odds are Newton can probably pick it up and carry a tune!). That’s the magic of Wayne Newton; everyone who comes to see his show probably remembers him differently, so varied has his career been. And just as everyone who loves Newton feels a connection to him, that’s reciprocated 10 times over; Newton is well known for coming into the audience and greeting as many people as he can. Because that’s been the man’s life for as long as he can remember. It’s what keeps him going. Time to experience Vegas history in the flesh. –Ken Miller

Stand-up pops into Jimmy Kimmel’s Comedy Club this week Kyle Dunnigan arguably had the funniest channel on YouTube during the pandemic. The Emmy-winning writer-comedian woodshedded with video editing and face-swap technology and came up with a series of painstakingly created sketches featuring uproarious impressions of President Biden, Caitlyn Jenner, Ray Liotta, Nancy Pelosi and, most importantly, Sylvester Stallone. “I was in a really, like a lot of people, isolated place during the pandemic,” says Dunnigan. “The way I handle being alone is I make things. I’m glad I don’t do drugs. That was a really productive time for me.” At Home with Sylvester Stallone became Dunnigan’s go-to sketch. Stallone’s face superimposed over Dunnigan’s with a face-swap app enabled complete immersion in the character, who confounds co-hosts such as comedian Kurt Metzger with illogical thinking and endearing overconfidence. “The thing about that app that I like is the eyes are kind,” says Dunnigan. “That’s important. The image is kind of like a dopey dog. It makes him likeable.” Dunnigan says he received a lot of support from the comedy community for his impression innovations. Inspired, he created Star Trek satires with Biden as captain, Ben Shapiro as his science officer and Elon Musk, Pete Davidson and Jeff Goldblum as crew members. Shapiro, Musk and Stallone have embraced Dunnigan’s impressions of them. Bill Maher, not so much. Informed by the hard work the former Inside Amy Schumer writer put into developing characters, Dunnigan’s latest stand-up sets are likely to be transcendently funny. Long-standing restaurant is a big hit with locals and tourists There’s a sweet spot few restaurants reach in Las Vegas—ones that do massive business not only with tourists but with locals as well. Twin Creeks Steakhouse is one such restaurant, one that succeeds by keeping its recipe simple: Great ambience, great service, and great food, courtesy of chef Jaimee Pepe. The warm, welcoming décor here is best enjoyed by starting with a classic opener like smoked beef tartare (here made with beef tenderloin and married with Dijonnaise and fried capers) and jumbo lump crab cake

For a cool change of pace, check out Twin Creeks’ wagyu menu, featuring carpaccio with pickled shimeji mushrooms and truffle aioli; a 10-ounce burger with bone marrow-braised French onions and served with duck fat smashed potatoes; and a 12-ounce Spencer steak (pricey but oh-soworth-it).
Dessert options range from a Brooklyn Blackout Cake and warm cinnamon roll bread pudding to smoked banana s’mores and Junior’s Cheesecake. And in one of the coolest promotions in town, try the Stakes Are High tableside cart (available when you order the tomahawk), where you roll three dice; depending on the outcome, you’ll get anything from a free dessert to a free tomahawk. Nightlife’s newest hot spot elevates your experience in more ways than one Don’t pass up the chance to chill and clink delicious cocktails at one of the Las Vegas Strip’s newest and, may I say, dopest nightlife spots—Chéri Rooftop at Paris Las Vegas. The space is all outdoors, sits high up from the ground and is right under the hotel property’s Eiffel Tower. The view? A perfect shot of the Bellagio Fountains, as well as up and down the Strip, which looks beautiful with all the sparkling neon. The furniture is ideal for

either an intimate date night or a larger group; oversized chairs and cushy sofas surround tables, and each spot allows for those perfect views. Chéri Rooftop hits the mark on the cocktail front, too. Creativity with flavors leads to unique twists on classic favorites. “Chéri offers elevated cocktails with a French-inspired twist on classic cocktails,” said Perry Rogers, managing partner of JRS Hospitality, the owners of Chéri Rooftop. “We also offer

cinnamon syrup and Angostura bitters, finally garnished with a cinnamon stick and orange wheel. Any negroni lovers? The Devil’s Smoke is a twist on the classic and is quite yummy, with Tres Paplote mezcal mixed with Campari and agave juice for sweetness and lime for a pinch of tartness. More wow is captured in the Good Luck, Chéri Rooftop’s version of the classic Manhattan. Six-year-aged Whistlepig rye is mixed with sweet vermouth, Angostura bitters and a made-in-house rosemary apple syrup. Then the cocktail is brought to the table, where the server creates a rosemary smoke bubble on top of the cocktail; once it bursts, the drinker gets a nice waft of scents before taking a sip. Large-format cocktails are ideal for groups, as each one serves up to eight people. Choose from a white or red sangria, or go for the Mon Cheri Amore with peach and orange blossom Ketel One, peach schnapps and lime. We’re partial to the French Fizz with Stoli Blueberi, St-Germain elderflower liqueur, fresh lemon and rosé champagne. For those that don’t partake in alcohol, try the Incogito with strawberries, blackberries, and agave with lemon juice and soda.

Step into his world of pure chocolate imagination “I like to tell people I’m Willy Wonka,” says Mark Mackey, chief chocolatier for Ethel M Chocolate Factory. Coincidentally, Willy Wonka & the Chocolate Factory was his favorite movie growing up. And from a young age, he says, “I developed a passion for food and creating things to make people smile.” So he went to culinary school, graduated and took an internship at Mars—the world-renowned candy brand—while he figured out what career he wanted. “That’s where I really discovered my

passion for chocolate,” Mackey says. The 18-week internship turned into 17 years with the company. Mackey worked with the incubator team to develop new items for many years at the Mars headquarters in New Jersey, but by 2015, he had made his way to Las Vegas and Ethel M—the artisanal chocolate branch of the brand. “I wanted to find my way here,” he says. “This is where you get a chance to be creative—create things that you really can’t create at mass scale. Because we have the Mars backing, we can source our

Nosh If you are looking for some of the best beef in Las Vegas, Carversteak has one of the strongest programs in the city. The sleek restaurant features a cushy lobby and bar flanked by a dining room tucked back on one side, and private dining rooms on the other, as well as an expanded enclosed patio in the rear. And on one wall of one of the private rooms is a gorgeous display of high-end knives, perfect for this venue. Once seated, there’s a great list of cocktails, all designed by Francesco Lafranconi, Carver Road Hospitality’s vice president of beverage and hospitality culture, who reworks the beverage menu seasonally. Try Carversteak’s Old-Fashioned, with Frey Ranch straight rye and Bacardi Reserva Ocho, or the Smoked ’N Spiced, a tableside presentation of Michter’s US1 single barrel rye, St. George spiced pear liqueur, ver-

mouth and bitters. The associated Chartreuse-flavored cherrywood smoke is sure to make your neighbor jealous. Then dive into the menu, where you’ll find that list of amazing beef products, a list that was carefully curated by the founders of Carversteak. “I think what I’m most proud of, in terms of the menu, has to be the sourcing of the steaks and where they come from,” Carver Road Hospitality corporate executive chef Daniel Ontiveros said in an interview with Las Vegas Magazine. “We do offer three different types of wagyu, which is Japanese, American and Australian. So that’s pretty unique in itself. We have a strong program.” In addition to the wagyu, which includes a massive, 42-ounce Westholme wagyu tomahawk rib chop, you’ll find an 8-ounce Allen Brothers filet mignon and a dry-aged Flannery Beef 18-ounce Kansas City strip steak, among others. “You know, there’s always somebody on the back end,” Ontiveros said. “For me, it’s easy to stand here and cook. But the real heroes are the ones who are feeding the cattle,
raising the cattle, raising the lettuces and things like that, and all the ups and downs that they go through to provide something that’s great.” Accent your steak choices with add-ons like a Baby Tristan lobster tail, Hudson Valley foie gras and black truffle butter, among others. Plus, if you need a peppercorn or blue cheese sauce, you can get it. Before your steak arrives, your server will present a choice of steak knives to you. That detail makes the meal so very thrilling. As befits a steakhouse, there are decadent seafood offerings like the Grand Plateau, with Maine lobster, Gulf shrimp, oysters, clams and mussels (available hot or cold), and Atlantic salmon and lobster en croute. Or order the braised Colorado lamb chops, bone-in short rib or roasted chicken. There’s a vegan menu as well, with chickpea fries and a seared chop of legumes and grains with chimichurri sauce. For dessert, a take on baked Alaska, baked Nevada, is served with coconut lime cake and mixed berry sorbet. It’s yummy, and the flaming presentation competes with any tableside drinks you may have had!

Scott, who joined 50 Eggs in 2020, has her pastry designs showcased inside Las Vegas’ Chica, Yardbird Southern Table & Bar, Spritz and Capri, all at The Venetian, as well as in 50 Eggs restaurants across the country. And those desserts range from simple creations to the showstoppers you’ll find at restaurants like Chica.

he energetic chef has won multiple contests during her career, and recently won the 2022 Culinary Excellence Awards Pastry Chef of the Year title from the Nevada Restaurant Association. “This award holds so much meaning for me as not only a pastry chef, but also as a Las Vegas resident,” Scott says. “I am so proud to live in this city and have been so welcomed into the community. Receiving an honor such as this reinvigorates my determination to be the best pastry chef I can be.” The journey to Vegas has been filled with many experiences, with posts in Denver and San Diego (where she was raised), James Beard dinners and social media wins for her creations. Scott first lived in Miami when she began her journey with Miami-based 50 Eggs, but headed to Vegas shortly after that. “50 Eggs was intriguing because they not only had multiple locations and brands all over the country, but their determination to grow and continue to diversify their brands convinced me that it could be a company where I could accomplish things I only dreamt of,” Scott says. “Now, especially being in Las Vegas, there is no end to the possibilities of what we can achieve.” It’s easy to understand the success she’s had when the desserts come

out after dinner. The visually intense creations encapsulate Scott’s design philosophy as she finds inspiration in multiple ways. “People and experiences inspire me. I love learning about different cultures in the way that families celebrate together with food, and celebrations around the world,” she says. “When creating something new, I treat each dish as a problem that needs to be fixed and break down the wants and needs of the concept to find ways to incorporate the flavors or ideals that are missing from a menu.” But it’s not always a quick process, and the time required to create her wild desserts can vary widely, sometimes happening in a week, sometimes taking months to figure out. “I always want to
make sure each creation is something I’ve never done or seen before, and it takes time to ‘re-create the wheel.’ I want each dessert to be special, delicious, and memorable.” Among the items you’ll find on menus across the country are enormous “beach balls” from restaurants like Capri at The Venetian (open to Venetian guests). The striped desserts consist of a candy shell with a chocolate cake interior. Liquid fire is poured onto the chocolate balls, and it melts over the interior, creating a delicious sauce. A “sand castle” is also on the menu. A similar process is used at Chica at The Venetian. Lorena Garcia’s stellar Latin cuisine sets the tone for a fun dessert, and The Flaming Skull has be-

come one of guests’ favorite choices. It’s also one of Scott’s favorites. “I love The Flaming Skull at Chica!” says Scott. “Seeing guests’ excited expressions when the dessert comes out of the kitchen honestly melts my heart, and who could blame them? From the golden Dia de los Muertos chocolate skull being set aflame at the table, to the hidden (extra lava) lava cake that turns into a chocolate fondue once broken, and accompanied with house-made horchata ice cream and corn marshmallows—what more can you ask for? It’s the grand finale to a full dining experience!” Attention to detail is one of Scott’s hallmarks, and The Corn shows that—a doppelganger for eloté, a delicious ear that is actually strawberry flan cheesecake served with graham cracker chili crumble and raspberry “Tajín.” The list of Scott’s desserts goes on, but those creations come with tech-

nical challenges as well. “The biggest challenge isn’t creating something delicious and intriguing, it’s how you put it in effect in the kitchen. Every kitchen has limitations with food cost, labor budgets, skill levels, and even just storage. I can’t put a dish on a menu that is going to crash the entire system, but I like this sort of puzzle and finding new
