Crispy Smashed Cauliflower
1 head of cauliflower 1/2 cup water 2 Tbsp butter 1 garlic clove, smashed 1 tbsp olive oil 1 Tbsp za’atar S+P
Cut up your cauliflower and wash it good. Toss into a pot with half a cup of water on high heat, let cauliflower cook for 7-8 minutes and drain. Pat dry and place into a mixing bowl, toss with olive oil, salt and pepper. Preheat your oven to 450F and place your cauliflower onto a baking sheet, using the bottom of a cup smoosh your cauliflower. Place in the oven for about 10 minutes. Melt down butter and add one Tbsp za’atar and a smashed garlic clove, remove cauliflower from the oven and brush or spoon your butter onto the cauliflower. Place back in the oven for a couple of minutes. Squeeze lemon over and serve as a side dish! Enjoy!
