Cole Starke loved baseball. Whether he was taking the field for Goochland High School or playing rec ball, Starke, Starke according to those who knew him, played the game with a contagious joy. He didn’t just play, however — he excelled. And just about everyone who
knew Starke expected his on-field success to continue after he arrived at Greensboro College in North Carolina last fall. Tragically, Starke’s life was cut short by a heart ailment on May 25, while he was on a camping trip with friends. He was just 19 years old. It was a horrific blow, not just to his immediate family but also to all of those involved in the Goochland High School baseball program.

There’s no getting around it: sludge, for many Virginians, is a dirty word. Soon, however, if the Baltimore-based company Synagro is able to secure a state permit to spread industrial sludge on around 16,000 acres of Virginia farmland, they could see more of it coming to their communities. Goochland is one of seven localities across the state that could be affected by Synagro’s plan to use sludge as a source of fertilizer for agricultural operations. Sludge continued from >1 rod for controversy. Synagro has been at the center of the debate in many localities for several months, and the State Water Control Board has already postponed making a decision on the permit — an initial vote was to be taken on June 26 — due to public outcry. The board could take up the matter again on Sept. 29. At issue, in part, is the fact that where there is sludge there is often a smell, one that many residents are quick to point out has the potential to significantly impact their quality of life. Just as important to many are the health concerns often associated with industrial sludge, which can contain heavy metals including arsenic, mercury and lead. State rules do limit the levels of metals in the sludge — and set firm limits on how far it must be kept from homes and wells — but some still say it isn’t worth the risk. Posts on a Facebook page called Citizens Against Sludge, which includes a photo of what is described as a sludge-covered tree, had garnered 34 likes as of Monday.
The sludge Synagro plans to use would come from three industrial operations: the Tyson Foods poultry processing plant in western Hanover County just north of the Henrico County line, the RockTenn Co. paper mill at West Point and the Smithfield Foods pork processing plant in Isle of Wight County. Lorrie Loder, Synagro’s senior director of technical services, described the spreading of sludge as part of the “circle of life.” “These products help build soil quality and close the nutrient loop on farmland. … Plants take nutrients from soil, humans obtain nutrients from the plants, and then we return nutrients to soil.” Many local residents simply don’t see it that way. Goochland’s Trannis Pace, who commented on the Citizens Against Sludge site, said she fears what the use of sludge would mean for her community. “I really do believe it causes people to get sick,” Pace said. “I think it gets in the ground, and in the water and affects the vegetables we grow.” Like many others, Pace said she worries about the smell. And while she has not yet had to deal with industrial sludge near
her own residence, she’s seen its impact on other areas. “I just don’t like to see the county messed up by that stuff,” Pace said. To Betty McCracken, a conservation specialist with the Monacan Soil and Water Conservation District, much of the outcry against proposals like the one Synagro has put forth stems from misinformation about the use of biosolids. “One thing people don’t understand is that anyone who wants to spread biosolids has to have a nutrient management plan,” said McCracken. “And you have to be certified to write those plans.” McCracken said she doesn’t think many of those opposed to the use of sludge have considered the facts. “[Sludge] has to go somewhere,” she said. At the end of the day, McCracken noted, more information will likely help people understand that sludge can be a safe, effective tool for farmers. “Goochland has been going back and forth [on this] for years],” she added. “I think people don’t like them because they might not understand what’s going on.” The Richmond TimesDispatch’s Rex Springston contributed to this story.

Dr. Lind was the fourth child of the late Alexander Udny Lind and Anne Armistead Williams Lind of Oakville, Ontario. He was the grandson of the late Mr. and Mrs. Langbourne M. Williams Sr. of Richmond. He was predeceased by his older brother, Alexander W. “Sandy” Lind, who lived at Rock Castle in Goochland County for many years. In addition to his widow and children, he is survived by his sister, Maria Ward “Plum” Johnson of Toronto, Ontario, and brothers, Robin R. Lind of Manakin-Sabot and Victor N. Lind of Picton, Ontario. He also is survived by a host of nephews, nieces and cousins, and generations of his students who celebrate his life of teaching and servant leadership. A funeral service was held on July 26, 2014, at Christ Church Cathedral, Vancouver, B.C., with Eucharist celebrated by Archbishop John Privett. Interment of ashes will take place at Sorrento on August 31, 2014.

A prolific writer on issues of social justice, he was the coauthor of the three-volume series “Wrestling with God,” published by the Primate’s Theological Commission in Canada. His most recent book was “Rumours of a Moral Economy” in which he described the links between economics and ethics, arguing that the values and commitments of strong communities reveal themselves in times of crisis. Prior to leading the Sorrento Centre, he was director of the Toronto School of Theology, one of the largest and most diverse ecumenical theological cooperatives in North America. From 1985 until 2003, he was based in Saskatoon, first as professor of Church & Society and then as president of St. Andrew’s Theological College. From 2000 to 2003, he also served as president of the amalgamated St. Andrew’s College and St. Stephen’s College in Saskatoon and Edmonton, sponsored by the United Church of Canada. Educated at Appleby College, Oakville, Ontario, and at Tonbridge School in Kent, England, he returned to Canada to earn his B.A. in philosophy and political science from York University, an M.A. from Trinity College

Michael (affectionately known as Father Chet) was born and raised in the rural community of Berkeley Springs, West Virginia, on October 17, 1916, the son of the late Luther Irving Michael and Carrie Elizabeth Miller. He was preceded in death by his parents; his brothers, Belmont, Rodwell and Bradford Michael; and sister, Marie Zacharias. Fr. Chet began his seminary training for the Catholic priesthood at the age of 16 at St. Charles Seminary in Catonsville, Maryland, and completed his Master’s of Divinity degree at the Washington Theological Union. He was ordained to the priesthood on April 6, 1942, at the Cathedral of Sacred Heart in Richmond and celebrated his first Mass at his home parish of St. Vincent’s in Berkeley Springs. His first assignment as a new priest was St. Mary’s parish in downtown Richmond and included preaching with the Mission Band Motor Chapel. After 10 years of mission work with the Motor Chapel in rural Virginia, Fr. Chet was appointed administrator of St. Vincent’s parish in his hometown and then in 1953, pastor of St. Bede’s Church in Williamsburg. While at St. Bede’s he founded St. Joan of Arc parish in Yorktown. In 1956, Fr. Chet studied Jungian Psychology with Fr. Josef Goldbrunner at the University of Notre Dame, studies that deeply affected the rest of his priestly ministry. He was appointed founding rector of St. John Vianney Seminary in Goochland County, and then, in 1972, became pastor of Holy Comforter Church in Charlottesville. In 1963, Fr. Chet brought the Cursillo Movement to the Diocese of Richmond and he served as spiritual director of many Cursillo retreats for a period of nearly 50 years. Fr. Chet published his
first book, A New Day of Christianity, in 1965 and has since written numerous books on prayer and spirituality, including Prayer and Temperament. In 1975, at the age of 59, he was awarded a doctoral degree in theology at St Mary’s University in Baltimore. He was appointed director of Genesis House, a diocesan spiritual retreat center and gave retreats in Virginia as well as throughout the country. In his retirement, Fr. Chet founded the Spiritual Direction Institute and trained over 600 women and men as spiritual directors through a two year course. It is the hope and prayer of many that through the work of The Open Door Inc. Fr. Chet’s writings and the Spiritual Direction Institute will continue to enhance the spiritual growth of people for years to come. Fr. Chet is survived by many beloved nieces and nephews and their dear spouses, grand-nieces and nephews, and numerous friends who are cherished as family. Fr. Chet’s family expresses special thanks to the many who loved Chet deeply and gave the gift of their time to him as friend or devoted caregiver. There was visitation on Tuesday, August 5, 2014, at Hill and Wood Funeral Home at 201 North First Street in Charlottesville. Burial is at 1 p.m. today in Greenway Cemetery in Berkeley Springs, West Virginia. Donations in Fr. Educator lit the way for generations of students By Roslyn Ryan Editor
Just about all of us carry with us the memory of a teacher who changed our lives, either by what they taught us about life or what they encouraged us to discover in ourselves. Geraldine Richardson, who passed away on July 11, certainly filled that role for many, many Goochland County students. For nearly four decades, Richardson worked to help young men and women navigate the world around them, earning a reputation as a dedicated, “no-nonsense” classroom leader. Like so many committed educators before her, Richardson wore many hats during the course of her career, teaching business classes, coaching the girls’ basketball team, and working with the Goochland Education Association. In 2001, in recognition of her efforts, she was inducted into the Goochland County Educators Hall of Fame. Richardson’s family and friends gathered last night for a memorial service, sharing their memories of a woman who touched so many lives. We here at the Goochland Gazette would like to join them in honoring Geraldine Richardson for her dedicated service, her commitment to her craft and the role she played in preparing genera-

tions of students for the world that lay ahead. *** As I may have mentioned in these pages before, I was not blessed with a particularly green thumb. Fortunately for me, I am surrounded by plenty of people who were. Around this time of year, that means one thing: vegetables. Lots and lots of vegetables. As of this writing, I have more squash in my kitchen than a squash-loving army could eat, and enough gorgeous, plump tomatoes for a swimming pool full of sauce. I have piles of peppers, zucchini and cucumbers, all of which leaves me in something of a quandary: What do I do with all of it? Since I can only eat so much (and have never mastered the art of canning), it’s nice to know that the Goochland Free Clinic and Family Services food pantry will be happy to take it off my hands. The office (located at 3001 River Road West in the Courthouse area) accepts donations of fresh produce from home gardens throughout the growing season. Club’s concert gets major boost from MEDARVA Contributed Report
Temperatures may be sizzling but visions of sugarplums are already dancing in the heads of Goochland Rotarians. Plans are well underway for the club’s 8th annual holiday concert by the Richmond Symphony. The concert will be held at 4 p.m. on Dec. 14 at Goochland High School. Proceeds benefit a variety of charities serving Goochland County. The success of the concert depends largely on a combination of sponsorships and ticket sales. The club already has identified a lead sponsor, MEDARVA Heathcare.
MEDARVA agreed to serve as the concert’s Title Sponsor with a generous contribution of $20,000. MEDARVA will soon open a medical center in The Notch at West Creek, near U.S. 250 and Rt. 288. The center, which is expected to open by December, will be part of a larger medical office development called West Creek Medical Park, being developed by Lingerfelt Development Co. The company plans to eventually build three office buildings there, totaling about 180,000 square feet. MEDARVA will lease more than 44,000 square feet, or 67 percent, of the first building.
MEDARVA CEO Bruce Kupper said his goal is “to create a comprehensive location where patients can see physicians from primary care to specialists and where we can provide the diagnostic and surgical services to support the physician’s efforts.� MEDARVA is new to Goochland County but not to Richmond. The company dates back to 1951 with the creation of the Richmond Eye and Ear Hospital. In 2002, it opened its Stony Point Surgery Center, the largest outpatient center of its kind in Virginia. The MEDARVA name was adopted in 2012. Kupper said the Stony Point Surgery

This board of supervisors should announce now that they plan to take the necessary steps to put this question of change on the November ballot in 2015 for the citizens to decide. Once the citizens understand the advantages, they will approve of this change overwhelmingly. Sure, the entrenched will object to change, but that is not unexpected, is it? Henrico is expanding toward Goochland at warp speed. We need to get ready. Tell the board of supervisors to give the citizens a chance to vote for modernizing our government structure in 2015. All Night Graduation passed on to next group of organizers Dear Editor, We have formally passed the torch! The 2014 All Night Graduation committee planned, cajoled, sent letters, fussed, made phone calls, hired and paid suppliers and venues — but the best thing we did was party! The 2014 Goochland Senior Class partied the night away on May 29 after the graduation ceremony, celebrating their years together in one last fling. And with some final steps over the last two weeks, the 2014 committee has passed the tradition to the Class of 2015. And it’s a great Goochland tradition! The ANG event would never be a success without the generous contributions of Goochland’s far-reaching community. We thank all the churches that contributed to ensure the community’s youth celebrated graduation in a safe environment. We thank all the retailers who contributed goods and services allowing gradu-
ates to move into their new life adventures with some creature comforts and extra cash. We thank the restaurants and food service businesses for the wonderful buffet enjoyed that evening by students and volunteers. We thank the pool of volunteers who helped us all along the way — aw, come on, it really was fun, tiring but fun. The 2015 All Night Graduation Committee is

Traveling the world, one basketball court at a time Goochland High School graduate Chris Randolph is living his dream By Mike Schoeffel Sports Writer
W
hen it comes to the world of international professional basketball, Chris Randolph seems to be highly marketable and upwardly mobile. Randolph, a 2006 graduate of Goochland High School, has been a professional basketball player since 2012, but this week he departed for Mexico in what is shaping up to be a pivotal moment in his basketball career. Randolph is set to begin play in the Chihuahua League on Aug. 6, where he will be evaluated by professional scouts from a number of countries, including Mexico, Venezuela and Colombia. If all goes as planned, Randolph will be

signed to a professional roster by the beginning of September. Randolph’s chances of joining up with a team are good, according to Augustin Avila, the Mexican agent who invited Randolph to the country. Avila told Randolph that the likelihood of
receiving a professional contract by the end of August is high. The trip to Mexico will be Randolph’s first extensive stint in a foreign country for basketball purposes. but it won’t be his first foray into the world of professional basketball. The 26-year-old has done his fair share of exploring in the realm of paid athletics since graduating from Southern Virginia University. Randolph was a wide-eyed kid fresh out of college in 2012 when he signed with the Georgia Gwizzlies of the American Basketball Association. The Gwizzlies were a top 10 team at the time, and Randolph made solid contributions in his first professional season. He averaged over eight points per game in 15 games. After one season with the Gwizzlies, he was picked up by the East Point Jaguars, another team ranked in the top 10. He spent one season with the Jags before deciding to exit the ABA. Although he views his experience with one of the nation’s most popular professional basketball leagues as largely positive, he harbored loftier aspirations, a dream of competing professionally on an international stage. He considers his time in the ABA as a period of personal growth and education . . . a professional basketball player’s equivalent of an apprenticeship. “It was good for me,” said Randolph. “It was a great opportunity for me to learn the ins and outs of professional basketball. My experience in the ABA was invaluable in terms of helping me become accustomed to life as a pro player.” Randolph’s dream of competing internationally has come to fruition on multiple levels. He spent time in Canada on an eight-day tour that allowed him the chance to play in front of professional scouts. Though several teams expressed interest in signing him, he refrained from putting pen to paper. Instead, he returned to the United States with another experience to add his ever-thickening resume. Randolph also attended a two-day trial in Charlotte, North Carolina with the USA Select team, an organization that “assists American basketball players in finding professional opportunities internationally.” Though he didn’t get the chance to travel out of the country with the team, he said it was “a great experience to be able to play with talented former college players and smaller professionals.” Then, of course, there is the most recent
international opportunity: his journey into the Chihuahua League. When Randolph spoke with the Gazette less than a week before leaving for Mexico, he talked with a palpable energy about the chance to prove his mettle in his first significant trip out of the country. If he gets picked up by a professional team after his stint, he may not return to the States for a year, perhaps longer. But even if the global prospects from the Chihuahua League don’t pan out, Randolph has plenty of other options to mull over. On the day of his interview with the Gazette, his agent called to inform him that a team in Africa was extremely interested in signing him. A team in Algeria is hot on his trail, too, as well as a small team in Italy. With each successive offer, Randolph’s dream of becoming an international basketball player takes one step closer to being fully realized. Many of Randolph’s opportunities for advancement on the professional level have arisen because of his stellar play on the defensive side of the court. USbasket.com, one of the most renowned basketball recruiting websites in the country, said Randolph “definitely can be looked upon as a team’s lock down defender . . . to shut down the opposition’s best player.” That characterization isn’t something Randolph likely would have expected a decade ago. His progression into a respected defender comes as a bit of a surprise — even to Randolph — as he was known much more for his offensive prowess during his days at Goochland. “It’s funny because in high school everyone thought I was just a shooter,” Randolph said. “But both of my college coaches were very heavy on defense, so I had to learn to take pride in it. Now I love to play defense.” Of all of the things Randolph’s unique career has allowed him to experience thus far — the fully-funded trips, the opportunity to pursue a career in something he loves — Randolph said his most important moments have involved meeting and networking with current, former and future National Basketball Association (NBA) players. They have a lot to teach, Randolph said, and he said he’s absorbed as much wisdom and knowledge as his mind can absorb. “Getting a chance to pick their brain has been a surreal thing for me,” he said. “They’ve taught me a lot about the business of basketball,

dealing with agents and teams and what-not. Teams will often tell you things and go back on their word. NBA players have been through the fire, and I’m grateful they’re willing to pass on their knowledge.” Of course, having an opportunity to travel virtually free of charge has been a pretty nice gig too, Randolph admitted. Many teams will pay for player housing, he said, and most supply them with cars while they are a part of the organization. Add this to a livable salary and its easy to see why Randolph is so giddy about making the trip to Mexico. “[Professional teams] make sure you’re taken care of,” he said with a laugh.

Dixie League 19Us end inspirational season By Jim Ridolphi Special Correspondent
W
hen the Goochland Dixie League 19U season began earlier this spring, the players weren’t sure who would lead them in this year’s campaign. Jim Starke has coached the team the past several years, but unimaginable events forced him to think hard when it came to this year’s season. After completing his freshman season at Greensboro College, former Goochland High School shortstop Cole Starke was home doing what he loved best, hanging out with his dad Jim. “He helped me frame a house the last time we worked together that Friday before he died,” Starke said. “We were together all the timedoing everything we loved -- playing baseball, hunting and fishing.” That ended tragically when Cole passed suddenly and unexpectedly that weekend. Jim was still in shock over the death of his son when Goochland’s varsity team squared off the following day for a district playoff game. The contest featured an emotional tribute to Cole from the team and a packed Bulldog stadium. “We hadn’t planned on attending, but I told my wife we had to go to this game,” Starke said. Following the emotional tribute to his son, Starke knew he would be coaching the 19-yearold and under Goochland Dixie League team. “It’s what Cole would have wanted me to
do. I had mixed emotions, but I did it to honor Cole,” he said. It was too emotional for some of the players who had played Dixie League baseball with Cole for years, and some opted out of this year’s season. The deceased shortstop’s signature was on this team even with the absences. Cole had recruited many of his friends for this year’s Dixie League run to the World Series. Others, like Brandon Soden, Cole’s roommate at Greensboro College, and Shranan Sinha stayed the course and rode an inspirational wave that carried the team further than most expected. Starke took the reins with his usual philosophy. “We’re not too concerned about the wins and losses during the regular season,” he said. “Kids get a chance to play different positions and have fun.” Goochland team members won as many as they lost during the regular season, but when the State Tournament in South Boston rolled around, Starke changed the emphasis for his young team. “Once the tournament gets here, we want to win,” he said. And, that’s just what they did in South Boston, winning four out of five games and capturing the state title and a trip to the Dixie League World Series in Enterprise, Alabama. With wins over Amelia, Cumberland Mecklenburg, the team solidified a spot in the prestigious Dixie World Series.
“We had good at-bats in the state tournament,” Starke said. Andrew Harcum, Brandon Soden and Ford Slater had a good offensive tournament. Thomas Dunnavant and Rich Hinegardner handled the bulk of the pitching duties with Christopher Rooney and Will White also taking turns on the mound. And, through it all, the memory of their fallen teammate was noticeable everywhere and the team took on the theme. “Whenever they took the field, Cole was on their minds,” Starke said. When the team arrived in Alabama for the opening night dinner, other teams stood in silence as Cole was memorialized. Although Goochland’s Dixies came ready to play, they ran into competition that was a level above their normal foes. “Dixie League baseball is much bigger in the South, and some of these teams drew players from seven counties,” Starke said. “I knew this team could be competitive, but I knew we were a long shot in the tournament.” The team exited that tourney from a field
that was stenciled with the #3, Cole’s jersey number, following two tough losses, one to the eventual tournament winner. “We played good ball. We just didn’t hit,” Starke said. But the experience of the journey wasn’t lost on the coach, and he said he believes the Series will provide memories that will last a lifetime for the players. “It was a great experience for them, something they will never forget. I think Dixie League did a great thing for us.” Spring means baseball and Starke isn’t sure how he’ll react when the season rolls around next year. It will be his first not following his son as he pursued what father and son loved best: baseball. He said the support of the community, friends and the game he loves have helped tremendously over the past few weeks. “People have been very good to us.” When the Dixie League begins to form for a new season and prepares to make its mark on the field, will Jim Starke be heading the effort? “I’m 99 percent sure I’m coming back. I love the game.”

Leonard Taylor TAYLOR, Leonard McGuire “Mac,” 78, of Maidens, husband of Linda S. Taylor, died Monday, July 28, 2014, after a brief illness. He was a retired ceiling mechanic. In addition to his wife, he is survived by one son, Ben (Cindy); and grandchildren, Eric and Kimberlie, all of Greenville, North Carolina; stepson, Tim of Richmond; stepdaughter, Anna (Parker); and stepgranddaughters, Amanda and Cate of
Maidens. He also is survived by a sister, Julia Cooke (Dave) of Raleigh, North Carolina; and sister, Margaret Heath of Richmond; and numerous nieces and nephews. A joyful celebration of his life was held on Saturday, August 2, 2014 at Victory Christian Fellowship at 2850 Maidens Rd. in Goochland. Schools continue search for principal By Roslyn Ryan Editor
As the beginning of the 2014-2015 school year draws closer, Goochland County school leaders are hopeful that they will soon fill the principal’s position at Randolph Elementary School. The position has been vacant since June, when the school division announced that then-Randolph principal Sandra Crowder had accepted a position with Hanover
County Public Schools. A 23year veteran educator, she will be the coordinator of student services for Hanover County Public Schools. Amie Potter, the former interim assistant principal of Goochland Middle School, has served as interim principal at Randolph since Crowder left. In an email update sent out on July 24, Goochland County School superintendent James Lane said he and his administration are “active-
ly engaged” in the selection process. “We have completed a first-round panel interview that included both RES teacher and parent panelists, and we look forward to a second round of the process next week in which finalists make presentations to the RES faculty,” Lane wrote. “I anticipate being in a position to recommend a candidate to the school board no later than Aug. 12 in time to begin the school year.”

SOUP From the cool and creamy to the super sweet, these recipes will help you savor the summer By Michael Hastings Contributing Writer
I
’m a sucker for a good bowl of soup. And though I usually lay off it when summer arrives, by midsummer I’m craving it again. Fortunately, I enjoy several that taste just dandy cold. A few, such as tomato or squash, can be served hot or cold. But many summer soups really have to be served cold. Yes, you can cook cucumbers, but why would you do that on a hot day? My recipe for chilled cucumber soup mixes, garlic, onion and jalapeno to boost the flavor. And the soup gets a refreshing and tangy creaminess from buttermilk. It has a slight kick from the jalapeno, and I love the addition of a pinch or two of cumin. I like a few herbs in it, too, and I switch back and forth between dill and chives, depending on my mood. Mint also would work well. I love gazpacho, but I’ve also become fond of Italian tomato and bread soup, as in the recipe below from Mario Batali. The torn bread kind of dissolves into the tomato puree, adding body and toning down the acidity of the tomatoes. Avocado is one soup you’d never want to serve hot. This recipe is a lot like guacamole and salsa in a bowl, with its use of cilantro, jalapeno and lime. It’s thick, too, so it could almost be served as a dip. Even more fun can be had with chilled soups and summer fruit, which can double as a first course or as dessert. My favorite used to be pureed melon soup that I’d make with cantaloupe, sugar, lemon and sometimes a touch of Port. But I recently discovered peach soup. This recipe mimics a Bellini cocktail with pureed peaches and sparkling wine. I also found a neat recipe for blueberry

soup. It has a little orange juice to add complexity. Apple or white grape juice adds to the liquid, and yogurt gives it body and a bit of creaminess. When making fruit soups, always use the amounts of sugar as a general guideline. The sweetness of the fruit can vary a lot, and that will affect the amount of sugar needed.
Chilled Cucumber Soup 4 cukes, peeled, seeded and coarsely chopped 1 garlic clove 1/2 sweet onion, coarsely chopped 1 seeded jalapeno 1 tablespoon red wine vinegar 2 tablespoons olive oil 1 to 11/2 cups buttermilk Salt to taste Ground cumin (optional) Chives or dill for garnish 1. Place cukes, garlic, onion, jalapeno and vinegar in a blender or food processor and puree until smooth. With motor running, add olive oil. 2. Stir in 1 cup buttermilk. Add salt and cumin, if using, to taste. Serve garnished with chives or dill. Recipe from Michael Hastings
Avocado Soup
Tomato and Bread Soup
2 garlic cloves, peeled 1 small onion, minced 2 jalapeno chiles, seeded and finely chopped Juice of 4 limes 1 yellow or red bell pepper, preferably roasted and peeled, chopped 4 large or 6 medium tomatoes, peeled, seeded and finely chopped 1/4 cup chopped cilantro leaves 2 ripe avocados Ice water (as needed Salt and pepper Tortilla chips Sour cream 1. Crush the garlic to a paste in a mortar and pestle, or with the flat side of a chef’s knife on a cutting board. Stir the garlic paste, onion, jalapenos, lime juice and bell pepper into the chopped tomatoes in mixing bowl. 2. Stir the cilantro into the tomato mixture. Just before serving, peel the avocados, and dice them into 1/2-inch cubes. Combine with the rest of the ingredients. Add salt and pepper. If the soup is too strong and too thick, gradually add up to 1 cup ice water. Serve in chilled bowls with tortilla chips and sour cream on the side. 5 pounds ripe heirloom tomatoes, cored and coarsely chopped 1 sweet onion, coarsely chopped 3 cups torn-up day-old Italian or country bread 1/2 cup fresh basil leaves 2 tablespoons chopped fresh thyme Salt Freshly ground pepper 1/4 cup extra virgin olive oil Grated zest and juice of 2 lemons 2 teaspoons hot red pepper flakes 4 scallions (whites) and about 2 inches of greens, thinly sliced 8 1/2-inch-thick baguette slices (toasted) 1. In a food processor, working in batches as needed, blend the tomatoes and their juices with the onion until liquid. Add the day-old bread, basil and thyme; season aggressively with salt and pepper. Blend. Chill one hour. 2. In a medium mixing bowl, gently mix the olive oil, zest and lemon juice, red pepper flakes, and scallions together. Season lightly with salt. 3. Divide the chilled tomato soup among eight bowls. Float 1 slice of toast in the center of each bowl. Sprinkle the scallion mixture on top.
