THE SPIRIT OF BERMUDA In 1806, with a ship full of spirits bound for America, Englishman James Gosling ran out of wind and time. His charter expired and they put in at the nearest port—Bermuda. There, on the King’s Parade, St. George’s, James opened a shop and the Gosling Family has been in Bermuda ever since. Around 1850, after much experimental blending, a distinctive black rum was offered for sale. Smooth and flavourful, at first it was simply called, “Old Rum”. Until the First World War it was sold straight from the barrel. Eventually, Old Rum was offered in Champagne bottles reclaimed from the British Officer’s Mess, with corks sealed with black wax. Soon people began asking for the rum with the “black seal”. Thirty years later, a play on words gave birth to the little, barrel juggling “Black Seal” and a tradition got it’s name. We make all our rums slowly, stubbornly and in limited quantities. Today, Gosling Brothers is Bermuda’s oldest business house and Goslings Rums are Bermuda’s number one export.

(Bermuda’s National Cocktail) Into a tall glass filled with ice, put 6 oz of Goslings Stormy Ginger Beer, and float 2 oz of Goslings Black Seal Rum on top. Stir (until it looks like a storm cloud). Lime Optional… Enjoyment Mandatory! The Dark ’n Stormy ® is a trademarked cocktail, which mandates the use of Goslings Black Seal Rum. It was the first cocktail inducted into the Institute of Cocktail Excellence— Cocktail Hall Of Fame, Modern Classics Category. The Dark ’n Stormy originated in the ginger beer factory, run as a subsidiary to the Royal Naval Officer’s Club. The “Swizzle Machine” Queen – Sheila West Gosling (1916-2011)

Sheila was always looking for a way to ‘entertain’ friends and visiting guests. For one planned evening of entertainment she decided that as a new ‘wringer’ (washing machine) had just arrived, she might be able to really ‘stir’ things up with a large batch of her famous “Rum Swizzles”. The evening was such a memorable hit in local folklore, that the wringer was never used for laundry and stored under cover for the next party. Many a sailor and sportsman have told tall tales of an evening at Sheila Gosling's in Bermuda. Sheila and her “Swizzle Machine” became legendary. Cheers! 11


BERMUDA RUM SWIZZLE

Our other National Drink. Everyone has at least one, which leads to another. Traditionally, frothed with a Bermuda swizzle stick, cut from an allspice bush, that ends in three prongs. 1 oz Goslings Black Seal Rum 1 oz Goslings Gold Seal Rum 2 oz orange juice 2 oz pineapple juice dash Grenadine dash Angostura bitters Orange slice, fresh pineapple stick, maraschino cherry for garnish Churn together all of the ingredients with a “swizzle� stick until foamy; pour into a double old fashioned glass filled with ice. Garnish with a half slice of orange, stick of pineapple and a maraschino cherry.

Both dark and amber rums are used for this delicious cocktail recipe. The second national drink of Bermuda.

2 oz Goslings Gold Seal Rum 4 oz Lemonade 2 oz Goslings Stormy Ginger Beer Fresh Mint

Into a glass filled with ice, pour Gold Seal Rum, lemonade and ginger beer. Slap 2-4 mint leaves to release flavorful oils, add to other ingredients and stir to combine. Garnish with lemon wedge and additional mint sprig.

Golden Tee

1 ½ oz Goslings Gold Seal Rum 1 ½ oz Iced Tea 1 ½ oz Lemonade Squeeze of fresh Lemon Dash of Angostura Bitters

Pour all ingredients into a glass filled with ice and stir to combine. Garnish with a lemon wedge. 14


Bermuda Mule

1 ½ oz Goslings Gold Seal Rum Goslings Stormy Ginger Beer Orange Slice

Into a tall glass filled with ice, pour Goslings Gold Seal Rum. Top with Goslings Stormy Ginger Beer and garnish with an orange slice.

Somers Gold

1 ½ oz Goslings Gold Seal Rum 1 oz Coco Libre Coconut Water ½ oz Lime Juice ½ oz Falernum or Simple Syrup

Into a cocktail shaker filled with ice, pour all ingredients. Shake vigorously and strain over fresh ice. Serve in a tall glass garnished with a fresh pineapple slice.

Trade Winds

2 oz Goslings Gold Seal Rum ½ oz Monin Cinnamon Syrup ½ oz Fresh Lime Juice 2 oz Goslings Stormy Ginger Beer 1 dash Angostura Bitters

Into a cocktail shaker filled with ice, pour all ingredients and shake vigorously. Strain over fresh ice in a tall glass and garnish with a lime wheel.

Rum and Cola

2 oz Goslings Gold Seal Rum 4 oz cola Pour Gold Seal in a tall glass filled with ice, top with cola

Hamiltonian

1 ½ oz Goslings Gold Seal Rum ½ oz Martini Sweet Vermouth ½ oz Lime Juice ½ oz Grenadine 4 dashes Angostura Bitters

Into a cocktail shaker filled with ice, pour all ingredients. Shake vigorously and strain into a chilled martini or coupe glass.

Pink Coral Reef

1 ½ oz Goslings Gold Seal Rum Pink Lemonade Squeeze of fresh lemon Mint

Into a tall glass filled with ice, pour the first three ingredients and stir to combine. Garnish with a mint sprig and a wedge of lemon.

ISLAND COCKTAILS Bermuda Daiquiri

2 oz Goslings Gold Seal Rum ½ oz fresh lime juice ½ oz fresh grapefruit juice 1 oz Bermuda Gold Liqueur (Falernum or Simple Syrup can be substituted) Stir over ice and strain into a chilled cocktail glass. Garnish with a lime wheel.

Bermuda Iced Tea

1 oz Goslings Black Seal Rum 1 oz Goslings Gold Seal Rum ½ oz Cointreau ½ oz ginger liqueur ¾ oz fresh lime juice Goslings Stormy Ginger Beer Cola

Shake Rum, Liqueurs and lime juice. Strain over fresh ice into a rocks glass and top with ginger beer and cola. Garnish with a lime wheel and candied ginger. 18


Bermuda Mojito

2 oz Goslings Gold Seal Rum ½ oz fresh lime juice splash of club soda

6-8 spearmint leaves ½ oz of simple syrup or Falernum Goslings Black Seal Rum

In a large old fashioned glass, muddle the lime juice, sugar and spearmint leaves (save a couple for garnish), bruising the mint well. Add the Goslings Gold Seal Rum and ice. Top it off with a splash of club soda, a float of Goslings Black Seal Rum and garnish with remaining mint leaves.

Black Seal Pina Colada

2 oz Goslings Black Seal Rum 1 oz coconut cream

1 oz pineapple juice 2 grilled pineapple rings

Muddle the grilled pineapple with the Rum and pineapple juice, add ice, coconut cream and shake vigorously. Dip the rim of a cocktail glass with honey and roll in seasoned toasted coconut shavings (optional). Double strain the cocktail into the glass. (This recipe can also be blended with 1 ½ cups of ice for a frozen version.)

Bright ’n Sunny

1 ½ oz Goslings Gold Seal Rum ¾ oz Ginger Ale ¾ oz Tonic Dash of Angostura Bitters Slice of Cucumber

Into a tall glass filled with ice, pour Goslings Gold Seal Rum, almost fill with ginger ale, add a splash of tonic. Add a dash of bitters and garnish with a cucumber slice.

Bermuda Shandy

1 ½ oz Goslings Gold Seal Rum 1 oz fresh orange juice 2 oz fresh lemonade 6 oz Lager

Combine the rum and juice in a cocktail shaker. Give a quick shake and strain into a chilled beer glass. Top with cold lager. Garnish with a lemon slice. 20


~ BERMUDA SHORTS ~

Truth is, Bermuda Shorts did not originate in Bermuda. They were created by the Colonial Service in London at the turn of the 20th century as comfortable attire for personnel stationed in tropical and sub-tropical locales. Like, uh, Bermuda. Knowing a cool thing when they see it, Bermudians began copying the uniforms for civilian use in the 1950s. When paired with a Gosling’s Rum mixed with ginger beer over ice, the hot sun stands little chance.


CONTEMPORARY COCKTAILS Ginger Press

1 ½ oz Goslings Gold Seal Rum 6 chunks peeled cucumber 6 mint leaves ½ oz fresh lime juice ½ oz ginger syrup or Goslings Falernum 3 oz Goslings Stormy Ginger Beer

Muddle chunks of fresh cucumber with Rum. Add ice and other ingredients. Shake and double strain over fresh ice. Garnish with a cucumber slice and a fresh mint sprig.

Pink & Preppy

1 ½ oz Goslings Gold Seal Rum 2 oz POM pomegranate juice 1 oz white peach puree ½ oz fresh grapefruit juice

Build ingredients in a Boston Shaker over ice. Shake vigorously and strain into a Collins glass over fresh ice. 22


Black Beauty

1 ½ oz Goslings Black Seal Rum ½ oz simple syrup 3-4 fresh mint leaves Dash of aromatic bitters

2-3 Fresh Blackberries Juice of half a lime 2-3 oz soda water

Muddle the fresh blackberries, fresh mint leaves, simple syrup and the juice of half a lime. Add Goslings Black Seal Rum and shake over ice. Strain into an ice filled rocks glass and top with soda water to taste.

Goslings Orange Cider Martini

Created by Ming Tsai/Blue Ginger Restaurant Cinnamon-sugar 3 oz mulled cider, chilled Splash of orange juice orange twist for garnish

Orange wedge 3 oz Goslings Gold Seal Rum Splash of orange liqueur

Place cinnamon-sugar in a dish. Rub an orange wedge around rim of martini glass and push rim into cinnamon-sugar. In a cocktail shaker, combine all remaining ingredients over ice and shake well. Strain into a rimmed martini glass, garnish with orange twist and serve.

Bella Donna

Created at the Bellagio Hotel (Las Vegas) 3 oz Goslings Black Seal Rum 2 oz Amaretto 3 tbs fresh sour mix (1 tablespoon of each of sugar, water, lemon & lime juice) cinnamon sugar Put Goslings Black Seal Rum, amaretto and sour mix into a ice filled cocktail shaker. Shake vigorously, strain into martini glass rimmed with cinnamon sugar and serve.

The Bermudian

2 oz Goslings Gold Seal Rum 2 oz pineapple juice splash of orange liqueur two torn leaves of fresh mint twist of lime

Into a ice filled cocktail shaker put Goslings Gold Seal Rum, pineapple juice and a splash of Grand Marnier and the mint leaves. Shake vigorously; strain into a martini glass. Garnish with twist of lime and serve. 24

If you think Bermuda is an island, you’re incorrect. Actually, it is 181 islands and islets that cover 53.3 square kilometers (21 square miles). And there’s a good chance you could find Gosling’s Rum on nearly all 181.


CLASSIC COCKTAILS Bloody Goslings

2 oz Goslings Black Seal Rum 4 oz Tomato juice or Clamato for Seal Caesar Spices (Fresh Horseradish, Celery Salt, Black Pepper, Lea & Perrins Worcestershire, Tabasco) ¼ oz fresh lemon juice Build in Boston Shaker, quickly shake. Strain over fresh ice in a pint glass. Garnish with a lemon slice and celery stalk.

Pineapple Pepper Rum Collins

2 oz Goslings Gold Seal Rum ½ oz Falernum (or Simple Syrup) Whole Black Peppercorns

½ oz fresh lemon juice Fresh Pineapple chunks Club Soda

In a Boston shaker muddle 4 chunks of fresh pineapple with the lemon juice and 4 whole black peppercorns. Add ice, rum and falernum. Shake and strain over fresh ice into a Collins glass, top with club soda and stir. Garnish with whole black peppercorns and a lemon wheel.

Rum Negroni

1 oz Goslings Gold Seal Rum 1 oz Sweet Vermouth 1 oz Aperol

Stir over ice and strain into a rocks glass over fresh ice. Garnish with an Orange slice.

Black Seal Manhattan

2 oz Goslings Black Seal Rum ½ oz Sweet Vermouth 4 dashes Angostura Bitters

Stir over ice and strain into chilled Coupe Glass. Garnish with a Maraschino Cherry.

Old Rum Fashioned

2 oz Goslings Family Reserve Old Rum 1 bar spoon of sugar 2 dashes Angostura Bitters

In a rocks glass take sugar and dissolve with a drop of water. Add the bitters and large fresh cut lemon rind, muddle. Add ice and rum, stir until glass is chilled. 27


WINTER WARMERS Bermuda Coffee

1 ½ oz Goslings Black Seal Rum 1 oz Irish Cream  6 oz strongly brewed French roast coffee freshly whipped heavy cream cinnamon sugar for garnish (optional) First, scald the glass with boiling water. Then, add the Irish cream to the bottom of a heat proof glass, then the Goslings Black Seal Rum. Pour in the coffee and top with whipped cream. Garnish with a sprinkle of brown sugar.

Warm Rum Punch

1 quart fresh orange juice 1 stick of cinnamon ½ tsp cloves, whole ½ cup Goslings Black Seal Rum bar sugar

6-8 peppercorns 1 tsp ginger root, peeled, grated ½ cup Goslings Gold Seal Rum ½ cup sweet vermouth

Simmer together the orange juice and spices for 30 minutes. Do not boil. Add Goslings Gold Seal Rum, Goslings Black Seal Rum and vermouth and simmer 5 minutes. Strain into warm heat proof glass cups or mugs into which you have put a ½ tsp of sugar. 28

Tennis was introduced to the United States from Bermuda by American sportswoman, Mary Ewing Outerbridge. After watching British officers play it on her vacation here, she purchased rackets and balls and brought them back to New York. (Sadly, she forgot to bring any Gosling’s Rum.)


SHOTS

Sealed with a Kiss

½ oz Goslings Black Seal Rum ½ oz blackberry brandy Shake both ingredients vigorously over ice, and strain into a shot glass. Garnish with a sugared lemon wedge.

Perfect Storm

1/3 oz Goslings Black Seal Rum oz Ginger liqueur Pour ginger liqueur first into a shot glass, layer Goslings Black Seal Rum on top. 2/3

Black Elephant

Equal parts, Goslings Black Seal Rum and Amarula, chilled.

Bermuda Punch

Equal parts, Goslings Gold Seal Rum, Peach Schnapps and Cranberry juice, chilled.

oz Goslings Gold Seal Rum, 2/3 oz white crème de menthe, chilled.

Bermy Bomb

Drop 1 oz of Goslings Gold Seal Rum into half a glass of Red Bull. 30

~ BERMUDA SHORTS ~

Yes, there really are beaches in Bermuda with gorgeous pink sands. It’s the result of tiny single-celled organisms called red foram that flourish under rocks. When they die, their skeletons are eroded by waves and mix with other particles of shells, coral and sea urchins, which together form grains of pink sand. A great place to pause and toast the little guys with a Gosling’s Rum in appreciation. 37


RUM CAKES

Egg Nog Ecstasy Cake

1 box yellow cake mix 1 four ounce package instant vanilla pudding mix 1 cup commercial egg nog ½ cup (1 stick) unsalted butter, melted ½ cup Goslings Gold Seal Rum 1 ½ tsp grated nutmeg 3 eggs ¼ cup Goslings Black Seal® Rum For glaze: ¼ cup of water ½ cup sugar ¼ cup Goslings Gold Seal Rum Combine first 6 ingredients; mix on low speed in mixer until moistened. Add eggs and beat for 2 minutes on high speed. Pour into a greased and floured bundt pan or tube pan. Bake at 350 F. for about 50 minutes or until a toothpick inserted into the middle of the cake comes out clean. Allow cake to cool in the pan 15 - 20 minutes. While it cools poke holes in the cake bottom with a skewer and sprinkle around the ¼ cup of Goslings Black Seal Rum. Once cooled turn cake out of mold and brush on glaze. Glaze: In a small heavy saucepan bring water with sugar to a boil, stirring until sugar is completely dissolved and syrupy. Stir in Goslings Gold Seal Rum, taking care it does not ignite, and cook another minute. Take off heat. 38


Wicked & Easy Double Chocolate Rum Cake (Courtesy of Edward Bottone)

1 pkg Devil’s Food chocolate cake mix ½ cup (1 stick) unsalted butter, melted ½ cup Goslings Black Seal® Rum

4 oz pkg instant chocolate pudding 8 oz sour cream

3 eggs 6 oz pkg chocolate chips (or more)

½ cup coconut, lightly toasted (opt.) ¼ cup Goslings Black Seal® Rum

For glaze: ¼ cup of water ¼ cup Goslings Black Seal Rum

½ cup sugar

Combine first 5 ingredients; mix on low speed in mixer until moistened. Add eggs and beat for 2 minutes on high speed. Stir in coconut (opt.) and chocolate chips. Pour into a greased and floured Bundt pan or tube pan. Bake at 350° for 1 hour or until the tester comes out clean. Allow cake to cool in the pan 15-20 minutes. While it cools poke holes in cake bottom with a skewer and pour on ¼ cup of Goslings Black Seal Rum. Once cooled turn cake out of mould and brush on glaze. Glaze: In a small, heavy bottomed sauce pan bring water and sugar to a boil, stirring until sugar is completely dissolved and syrupy.
