play; but I write and produce. I produced my last two CD’s. On the Bolton Brothers last project, I was the Executive Producer. It will be out around Father’s Day and it’s called Standing on the Promise.” What was the inspiration behind that? I was in Tuscaloosa, Alabama a few years ago, and they had just had a tornado….not this last storm. I was at a friend’s house and I was reading out of Deuteronomy 28. I was reading about the things that God wrote where He said, “it shall come to pass.” I said, “that’s awesome.” Right there on the spot, I started singing, and that night at church, I started singing that song…Standing on the Promises. Since the brothers are releasing a project, does that mean you are going to do a tour together? Yes, we are going to do some tour dates. We are lining them up right now, and we are trying to do one per month because I have 5 brothers that are pastoring. They have to be at their churches on Sundays. You just had a project released a little while ago, right? Yes. Actually, it was released about 6 weeks ago. God has really found favor in that CD. What’s the title of it? He’s All I Need. The Battle for Better Part 4
sat in a room with about 200 people during a seminar a few months ago. I really wasn't there as a participant. I was there for one of the local newspapers to write a story about the event. But, while I sat in the seminar, I heard a story that delivered a powerful life lesson. It was so powerful, in fact, that I have chosen it as the foundational component of this next installment of my series, “Battle for Better.” I will be honest, because it was a few months ago some of the exact details escape me. But I will do my best to relay the gist of the story with as much accuracy as possible. The room was buzzing with excitement as this noted seminar speaker mounted the platform to deliver her address to the awaiting crowd. Her words were slow and deliberate as she said, “If you are not careful, gnats will kill you.” Everyone looked a bit puzzled about this statement. Then she invited us to travel back with her to a moment in her history where she was driving in her car one night. A gnat had gotten in her car. At first all she heard was the sound as he buzzed by her ears a few times. But before long, it began to make the occasional pass in front of her face. She fanned once or twice, but she kept going. Before long, the gnat's passes in front of her became more frequent, and of course more aggravating. The intensity in her voice grew with each word now as she told us how she began swatting and swatting at the source of her aggravation. She told us how the aggravation was quickly escalating into frustration. The story reached a climax as she told us that all of this was going on while she was still trying to drive to her destination. As she was coming to the bottom of a hill, she was so consumed by this gnat that she missed a stop sign and was almost hit by a semi. “It barely missed me!” She concluded her story by telling the congregants, “I could have lost my life swatting at a gnat. Who would have thought that something so small and insignificant could have cost me my life? The gnat, although it brought aggravation and frustration, was not an immediate threat to my well-being. Yet, when 8
I shifted my focus from the road I was on to something insignificant, I almost lost my life.” Her story is so fitting for this next installment of the “Battle for Better” series that I have been writing for the past few months. I look back over my life and realize how many wasted moments I have spent swatting at “gnats.” The backdrop of this speaker's story was at a warm humid sunset in California; an environment where gnats thrive. I submit to you that in some places in our lives, the gnats are come with the territory. People who lie on you are just part of the territory. People who break the ranks of loyalty and confidentiality to expose your vulnerable moments to the world are just part of the territory. The occasional money shortage is sometimes just part of the territory. The occasional feelings of discouragement are part of the territory. But when you look at the big picture, they are really just gnats! I have discovered something. It came one day when my wife was driving me to work one morning. The night before, we had gone to the grocery store and when we got home had to take the bags out of the car. Because the car doors had been left open while we removed the packages, some gnats found their way into the car. The next morning when we got in, there were about 5 or six gnats flying around the car. I will admit, they were really getting on my nerves. I couldn't stop the car and try to fan them out because it would have taken too long to get all of them and I would have been late to work. I couldn't let them stay in the car with me because it wouldn't be long before what was an aggravation would become a major distraction and potentially cost me (and my wife) our lives. But it was apparent that I had to do SOMETHING. The lesson I learned that day was one I will carry with me for the rest of my life. Gnats can't handle the wind. The best way to deal with gnats when you are going somewhere is to KEEP MOVING and let the windows down. The wind generated by your momentum and your movement will get them out pretty quickly. My oldest son had been lied on by a former friend.
The lie had spread to other members of his circle. That night we sat at the table during the wedding of a family member. I watched the aggravation on his face grow and intensify with each text message that went back and forth to and from his cell phone. Before long, he left the room and went to the lobby to continue his text message argument. I left him alone because this was a learning moment for him. Finally, after all of the festivities ended, I went over to him and told him, “Quit responding to the messages.” “No dad, you don't understand. I am not going to let them lie on me like this...” I told him, “Quit responding and keep it moving. I wasted so much energy on stuff that wasn't even all that important. You were right, it doesn't really matter what they think when I know the truth.” The best way to deal with gnats is just to roll the windows down and keep moving. As you take this journey with me, I challenge you to examine your life [and consider] what gnats have taken your focus? What gnats have almost caused your dream to crash? Make up your mind to quit wasting time swatting at gnats and focus on the road ahead.

Headed to the beach, a pool party or a picnic in the park? Make sure that you and your family are protected from the sun. CDC recommends easy options
for sun protection
• Use sunscreen with sun protective factor (SPF) 15 or higher, and both UVA and UVB protection. • Wear clothing to protect exposed skin. • Wear a hat with a wide brim to shade the face, head, ears, and neck. • Wear sunglasses that wrap around and block as close to 100% of both UVA and UVB rays as possible. • Seek shade, especially during midday hours.
Sunscreen The sun's UV rays can damage your skin in as little as 15 minutes. Put on sunscreen before you go outside, even on slightly cloudy or cool days. Don't forget to put a thick layer on all parts of exposed skin. Get help for hard-to-reach places like your back. How sunscreen works. Most sun protection products work by absorbing, reflecting, or scattering sunlight. They contain chemicals that interact with the skin to protect it from UV rays. All products do not have the same ingredients; if your skin reacts badly to one product, try another one or call a doctor. SPF. Sunscreens are assigned a sun protection factor (SPF) number that rates their effectiveness in blocking UV rays. Higher numbers indicate more protection. You should use a sunscreen with at least SPF 15. 14

Reapplication. Sunscreen wears off. Put it on again if you stay out in the sun for more than two hours, and after you swim or do things that make you sweat. Expiration date. Check the sunscreen's expiration date. Sunscreen without an expiration date has a shelf life of no more than three years, but its shelf life is shorter if it has been exposed to high temperatures. Cosmetics. Some make-up and lip balms contain some of the same chemicals used in sunscreens. If they do not have at least SPF 15, don't use them by themselves.
Clothing Loose-fitting long-sleeved shirts and long pants made from tightly woven fabric offer the best protection from the sun's UV rays. A wet T-shirt offers much less UV protection than a dry one. Darker colors may offer more protection than lighter colors. If wearing this type of clothing isn't practical, at least try to wear a T-shirt or a beach cover-up. Keep in mind that a typical T-shirt has an SPF rating lower than 15, so use other types of protection as well.
Hats For the most protection, wear a hat with a brim all the way around that shades your face, ears, and the back of your neck. A tightly woven fabric, such as canvas, works best to protect your skin from UV rays. Avoid

straw hats with holes that let sunlight through. A darker hat may offer more UV protection. If you wear a baseball cap, you should also protect your ears and the back of your neck by wearing clothing that covers those areas, using sunscreen with at least SPF 15, or by staying in the shade.
Sunglasses Sunglasses protect your eyes from UV rays and reduce the risk of cataracts. They also protect the tender skin around your eyes from sun exposure. Sunglasses that block both UVA and UVB rays offer the best protection. Most sunglasses sold in the United States, regardless of cost, meet this standard. Wraparound sunglasses work best because they block UV rays from sneaking in from the side.
Shade You can reduce your risk of skin damage and skin cancer by seeking shade under an umbrella, tree, or other shelter before you need relief from the sun. Your best bet to protect your skin is to use sunscreen or wear protective clothing when you're outside—even when you're in the shade.

he summer is a fun and exciting time. Kids are on break from school and families are taking vacations together. And of course, spring and summer bring about fresh fruits and vegetables, cookouts, and picnics where we are all prone to eating excessively. While we all love this time of year, it’s also the time of year when we have to be extra careful with managing our diabetes. The summer combinations have a profound effect on your glucose control; so, be sure to check your blood glucose on a regular basis and always check anytime you feel different or "funny." This might be a sign of hypoglycemia which can become serious. If you have hypoglycemia or hyperglycemia, you may have to adjust your medication regimen. Consult your physician, diabetes educator, registered dietitian or pharmacist if you have any questions.
- Signs of hypoglycemia (Low Blood Sugar): Feeling shaky, becoming sweaty, feeling tired, hungry, fast heartbeat, becoming crabby or confused, blurred vision, and sometimes there can be no symptoms at all.
- Signs of hyperglycemia (High Blood Sugar): more hunger or thirst than usual, having
to urinate often, especially at night, dry, itchy skin, feeling tired or run down, blurred vision, frequent infections, and slow healing wounds. Contact your physician, emergency room or health care professional immediately if you notice these symptoms. If you are traveling this summer, pay special attention to your medications and supplies before you travel. Laws vary greatly from state to state and other countries, so picking up an emergency supply while traveling might be harder than expected. Make plans and pick up extra supplies ahead of time. Also, if you are an insulin-dependent diabetic you may have to take extra precautions in storing your insulin while traveling. The inside of an automobile can easily reach 130F (especially here in the south) and this will ruin your vial of insulin. Travel with an insulated travel bag or cooler for long trips. Dick Gregory is coming To Polk County
G
rowing up in the midst of extreme poverty with his single mother, Richard Claxton “Dick” Gregory, learned to work very early in life, shining shoes and acquiring various jobs to help support his family. Surrounded by violence, the African American comedian, author, nutritionist and advocate for health issues became a civil rights activist at an early age. At Summer high School, he protested and led a march against conditions in segregated schools.
Gregory was an inadequate student academically, because of his circumstances at home; but he excelled at running. As a result, he earned a track scholarship to Southern Illinois University Carbondale. While there, he set school records as a runner; but after two years of attendance at the university, he was drafted into the U.S. Army where he began comedy, entering and winning several Army talent awards. Prompted by Dr. Martin Luther King, Jr., he became a civil rights activist, an anti-war leader, and launched an unsuccessful campaign for the U.S. President in 1968. He too, fasted for human rights and began his fight against crime in the neighborhoods of St. Louis. Mr. Gregory has devoted and shared an immeasurable amount of time imparting wisdom about the virtues of a vegan raw food diet for health and prevention of disease with a style that only he can deliver. In the late 1960’s, Mr. Gregory embraced the practice of adhering to plant-based diets (fruits, vegetables, etc.). He supports the argument that health care inequities should be revised. According to Gregory, “Eighty-seven percent of prostate cancer patients are African American males; yet, they make up only twelve percent of the overall population.” Gregory himself is a survivor of cancer. This condition was an issue that was closest to his heart. He said that the doctors had diagnosed him with lymphoma, a report of doom and gloom, but he refused to accept the omnious prognosis. Instead, he fought his cancer valiantly with diet, vitamins, exercise, which he characterizes as “modern devices not 22

even known to the public.”
He penned Dick Gregory’s Natural Diet for Folks Who Eat Cookin’ with Mother Nature in 1973. In an excerpt, he invites Americans to stop and look around and see the results of poor eating habits. Many Americans are aging before their time. He essentially lists numerous health conditions of Americans. They have swollen ankles, varicose veins, pot bellies, bald heads, arthritis, obesity, weight deficiency, ulcers, sinus problems, hemorrhoids, heart conditions, liver ailments, kidney disease, rheumatism, anemia, bad feet, headaches, shortness of breath, insomnia, listlessness, and are couch potatoes who fall asleep in front of the television. He notes that the list is endless. He also asserts that the sad truth is that these afflictions are the result of the American habit of putting “garbage” into the stomach rather than the disposal. rom New York to L.A., and from South Beach to Seattle, the landscape in the lives of America’s teen fathers is a rugged terrain that few dare to traverse. While many projects and programs nationwide address the needs of teen mothers and their babies, few dare to delve into the paradigm that would prepare a young man to parent the children that he has produced. How will he learn to change a diaper, mix a formula, comfort a baby or child-proof a home? He, like everyone else, must be taught. Researchers at Yale University have found that sons of teen dads are 80% more likely to perpetuate this cycle; further stressing the point that it is essential to include boys and not just girls in the interventions targeting teen pregnancy prevention. Mr. Haki Nkrumah has stood on the frontline of this battle for some 20 years, and is well acclimated with the tragedies of the trenches relating to parental preparation of the 21st Century young father. Having previously operated a similar program in Jamaica Queens, NY, Haki’s education, non-profit experience and family mediation background have propelled him once again to the platform of his passion, families and teen fathers. Birthing a new non-profit organization in central Florida in 2006, President and Founder, Haki Nkrumah devotes his energies to mentoring “Gents to Gentlemen” and molding some of society’s potential menaces into young men; more specifically, Young Fathers of Central Florida. In a candid interview, Mr. Nkrumah expresses his unequivocal determination to confront dysfunction, changing the face of fatherhood, breaking the cycle in the lives of today’s teen fathers.
Did you find the climate and culture in New York to be pretty much the same as it is here as it relates to young fathers? Yes. It doesn’t matter where you go. When I published my book, “Young Fathers, the Forgotten,” I went a on a 20-city book-signing tour up and down the east coast, from Boston, New York, Maryland, the Carolinas, all the way down to Miami, and the same thing. My second book is called, “Teen Fathers: The Struggles and Joys of Fatherhood,” and I went more on a mid-west, south, and west-coast swing; and the same thing. Whether we’re in San Francisco or L.A., Detroit, Chicago, New York; it’s the same thing. My Teen Fatherhood Academy Program is the only such program in the country. I’ll be in Washington, D.C. at the international conference in June this year, and I’m doing a presentation on the Teen Fatherhood Academy and there’s just not much, whether it’s here in Central Florida or [the] Carolinas, or New York or wherever. Why do you think that is? A lot of reasons. One is our society, the way it views the role of parenting. They don’t even engage fathers. Every head start program throughout this country is supposed to have fatherhood components, where the fathers are engaged; or the social workers or home visitor workers for these programs for early head start should be engaging fathers. You have probably 20% of them that actually have programs that are engaging fathers. So, it’s the way society looks at it. It’s always easy to help a mother. People look at a father like, “you should know better, you should be able to take care of business. You got that girl pregnant.” So, the woman is usually looked at as the victim. My Teen Fatherhood Academy for example, out of the 15 fathers in one of my schools, 11 of the [teen] mothers live with the young boys. Here the young boy is, the primary parent; in terms of taking care of the child, there are situations where he can’t even get the same services that the mother could if she were the primary caregiver. It’s just the way society looks at men. We could look at my book signing tour. 80% Of the books I sold on my book signing tour were to women. So, it’s just society overall. So, what would you say is the primary objective of Young Fathers? Breaking a cycle. Our mission is to provide services to the young fathers so that they can be productive
to themselves, productive with their children, and with the community. That’s the mission; but our underlying goal is to break a cycle. I have a 14-year old father who has a child due in a few months and I asked him how did he feel, and he said he didn’t feel anything. I said, “what do you mean?” He said “I’m just going to deny the baby.” I said, “you’re going to just deny the child?” He said, “yeah, my no good father…” He said his father did not stay with him and his mother; he abandoned them and he hated his father. So I basically told him “so you’re going to be basically what you just called your father? You’re going to be that in training then? So you’re a no good father in training then? So, you’re getting ready to do the same thing your father did to you? You hated your father, so how do you think your son and daughter are going to feel toward you?” That’s a perpetual cycle that we need to break. We need to realize that these young men need help. They are adolescents, and that’s the thing we don’t look at. How would you describe the young man who would be a perfect candidate for participation in the program? A young man who is a father, who wants to be a better father, who wants to know what manhood is. We work with white fathers, black fathers, poor fathers, any young father who wants to commit to it. We want young men who want help. We don’t have time to chase them down, telling them to pull their pants up. We want young men who want to learn what parenting is; understand what shaken-baby syndrome is, understand what SID is, how to childproof your home, understand that you can’t have the crib right underneath the air duct, understand that you can’t have a thousand toys in the crib with your baby, learn how to feed your child. 80% Of the babies that are victims of shaken-baby syndrome are [cases] done by fathers or boyfriends. Those are innocent lives being affected. How is a father accepted into the program? We interview them, and then we see what it is he wants to do. One thing we do get is…mamas bringing young men down there, dragging them in by the ear. Is prevention or birth control a part of your curriculum? Yes, we have a 6-month program; one of the modules is Healthy Choices. That’s where we talk about everything from condoms to abstinence, STD’s, [and] HIV www .G ospel NOW. net 27
Who stands to gain the most from a young man’s participation in Young Fathers? Society. If we don’t do anything, we’re going to have predators in our community, children in our community who are dying needlessly who don’t have healthcare, who are living in poverty. This young man who has this child, whether he’s 18 or 28, if he’s not providing for that child financially, that child is going to live chances are, in a life of poverty. There are cases where mothers raise their children and they become successful, but chances are if he’s [the father] not being responsible, the child is going to live in poverty and have inadequate healthcare. When we have these children, being raised that way, they are less educated, less productive in their communities and in society. So we’re trying to break that cycle. We’re trying to help these young men become good fathers. If this young man gets a girl pregnant and he’s not helping her at all, chances are she’s not going to be able to do what she needs to do. She is probably going to have to drop out of school and not be able to finish school and things will be difficult for her. Then she’s not going to be able to get a job and she has to struggle back and forth with childcare. He’s not helping her, that’s putting her in a position where she’s not being productive in society and he isn’t either. Then we have two non-productive young people in our society; but if he steps up to the plate, he gets help, he gets some training, some parent-training, some education, some help finding a job, and he gets some skills; then he can help her financially, and help her raise the child. Then she can go out and get a job, [and] go back to school. Then you have two productive young people in our society. That makes our communities stronger, our society stronger, and that makes us stronger as a people. INCAPACITY, DISABILITY OR DEATH:
WHAT WILL I NEED BY SASHA A. WATSON, ESQ.
One of the biggest issues with respect to estate planning, or as I like to call it family planning, for most persons is timing. Everyone is hampered by the proverbial question “when is the right time?� To that, my advice is simple, start thinking about family/ estate planning when you are most unlikely to have to deal with death or disability. It is by far much easier to develop rational and practical plans that effectively reflect our wishes and desires when there is no sense of urgency. The five essential instruments in any estate family plan are:
1) Will 2) Durable Power of Attorney 3) Health Care Power of Attorney 4) Advanced Health Care Directive / Living Will 5) A Revocable Living Trust. WILL. A will provides instructions for distributing your assets to your family and other beneficiaries upon your death. A will does not take effect until you die; and as such, it cannot provide for management of your assets in the case of disability or other incapacity. Wills must go through the probate process. It is ideal for passing on your personal items such as jewelry, crockery and other heirlooms to your beneficiaries. DURABLE POWER OF ATTORNEY. A power of attorney gives another person the power to act on your behalf. The power of attorney is durable in the sense that it will be effective through your incapacity and
will only terminate upon your death. This instrument gives your agent the right to manage your financial affairs; including, but not limited to, handling bank transactions, accessing safety deposit boxes, buying, selling and managing real property, exercising stock rights, disposing of personal property, communicating with government agencies and filing tax returns. HEALTH CARE POWER OF ATTORNEY. This document authorizes someone to make medical decisions for you in the event you are incapacitated. It is limited to your health care wishes and should be discussed closely with the agent as well as your primary medical provider. REVOCABLE LIVING TRUST. A revocable living trust is an arrangement by which you transfer ownership of your property into a trust throughout the course of your lifetime. Without a legal dissertation, the trust allows you to control the management of your assets and financial affairs throughout your incapacity and after your death. It is revocable while you are alive and its instructions can be changed; however, after you die it is irrevocable and not open to changes. The revocable living trust is established by a written agreement or declaration that appoints a trustee to manage and administer the property of the grantor. The trust is a rulebook for how your assets are to be handled when you die. As the settlor, or creator of the trust, you can name any competent adult, bank or trust company as your trustee. Revocable living trusts offer several benefits including, avoidance of costly probate, privacy as it is not filed in court like a will, lessen family disputes and disagreements as persons who protest can be expressly disinherited, reduction of exposure to estate taxes.
LIVING WILL / ADVANCED HEALTH CARE DIRECTIVE. A living will reflects your intentions regarding the use of life-sustaining measures in the event of a terminal illness, including food and hydration. It only states your desires with respect to medical treatment and does not grant anyone the authority to act on your behalf with respect to those desires, nor does it address distribution of assets. It is important to create an Advance Health Care Directive to avoid aggressive medical treatment and unnecessarily prolonged, expensive and emotionally burdensome treatments.

One of the things that New Destiny is known for in the community is that, it is a “family church meeting family needs.” How does this apply to the average family who attends or visits the ministry? New Destiny is a ministry. Ministry is not something that just happens on Sundays. It is every day, 24 hours a day. At New Destiny, 34

As a ministry, we have given away over fifty cars, and with the support of our membership we have helped countless families to close on their dream homes or keep their homes during these unstable times. Just four weeks ago, our ministry family joined together and we decided to save the house of a member named Pedrina Wynn. She has five kids, and was behind over $5,000 in mortgage payments. Is there a “tool or strategy” that New Destiny employs to attract people to the ministry?
New Destiny is also characterized as a “nontraditional” church. What does this mean? We are known by many as the “by all means necessary church.” We simply believe God, and will do whatever it takes to get His Gospel out. We are a very non-traditional church in how we market our ministry. We were one of the first in the city to utilize billboards in helping to get the message out. We took a lot of heat
The answer in a word is LOVE. Love is the UNIVERSAL language. It is hard to misinterpret love. As a ministry, we try to demonstrate God’s love. Love is a verb, not a noun. Love is an action, not a location. When you come to our campus, you find those who are serving with a smile on their face and love in their heart. It starts with our parking lot security, to our ushers in the service. We want people to know that they are in a safe house at NDCC. There are enough people judging. We choose to love the “Hell” out of the person, not just point the finger at the person. People often know what’s wrong with them; but what they don’t know is how to fix it. So our goal in ministry is to offer solutions. You’ve just opened a new location on the east 35
Speaking of balance, you have four beautiful children. As a father, what do you want them to grasp about God and church? The main thing I want them to grasp from me is a sense of purpose. We are very excited about our new “EASTside” location. We call it NDCC East. It’s located at 6000 E. Colonial [Drive], right at the intersection of Highway 50 and Semoran Blvd. When you come, you can expect a miniversion of our “WESTside” location. The praise is radical, and the Word is powerful. God has called all Believers to subdue the earth, and take dominion, and to multiply. Our eastside location is a reflection of our obedience to God’s divine decree.
Most important truth is, this is God’s work and they are God’s sheep. Next is, QUIT is never an option.
With the demands of your itinerant ministry schedule and your local churches, how are you able to keep it all in balance? You are so right in saying that the schedule is demanding. As I sit tonight, it is close to 2am in the morning here in Orlando. We had Bible Study just the night before, and I was out of town the night before that teaching in New Jersey. You ask how do we stay in balance? There is only one way to pull off the many things we do, and that is called Staff. My staff in so many ways, helps me to do what looks impossible. They allow me to have extra hands and feet. Also, kids help me to stay balanced. Kids don’t care about your title or your busy schedule. They just want you, and demand attention. 36

If it is true that we see “further by standing on the shoulders of giants,” whose shoulders do you stand on? Amen! WE all need mentors. Some mentors we actually get to have a relationship with, others the relationship is from afar, but you still grow from gleaning from them. I stand on the shoulders of those like Bishop Jakes, John Hagee, Charles Stanley, Creflo Dollar, [and] Mike Murdock. A couple of years ago, you walked through a very public trial. In lieu of that, what are you absolutely convinced of now, about life and the love of God? Thank God for grace. It was the Fall of 2007 that I experienced hell on earth because of my own immaturity. I have learned that God’s love is completely unconditional. We don’t earn it, we just receive it. I have learned that relationships matter, and that we should do more to protect them. From my brokenness, I’ve become wiser and softer, and now commit my life to helping others even the more.

Father's Day Dinner Flank Steak with Red Wine and Oven Fries Ingredients 3 medium (8 ounces each) russet (baking) potatoes 3 teaspoon(s) olive oil 1/2 teaspoon(s) salt 1/4 teaspoon(s) coarsely ground black pepper 1 1/4 pound(s) beef flank steak, trimmed of fat 1/2 teaspoon(s) dried tarragon 1 medium shallot, minced 3/4 cup(s) dry red wine 1 bag(s) (9-ounce) microwave-in-the-bag baby spinach
Directions 1.
Preheat oven to 450 degrees F. Cut each unpeeled potato crosswise in half, then cut each half lengthwise into 8 wedges.

Spray 15 1/2" by 10 1/2" jelly-roll pan with nonstick cooking spray. Place potatoes in pan and toss with 2 teaspoons oil, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Roast potatoes in oven 25 minutes or until fork-tender and beginning to brown, stirring once halfway through roasting.

Meanwhile, rub steak with tarragon and remaining 1/4 teaspoon salt to season both sides. Heat 12-inch cast-iron or other heavy skillet on medium-high. Add 1 teaspoon oil and steak; cook 12 minutes for medium, or until desired doneness, turning over once. Transfer steak to cutting board. To same skillet, add shallot and cook 1 minute, stirring. Add wine and heat to boiling; boil 2 minutes or until reduced to 1/3 cup.
