It must be said that Thai cuisine is one of the best, perhaps the best, cuisines in the world.
Thai cuisine is known for its magical combination of sweet, spicy, sour, bitter and salty flavors, often finished with aromatic herbs. This creates a flavor explosion with every bite.
Now we introduce you to another popular Thai dish: Khao Man Gai. This dish is popular because of its simplicity and special taste.
It usually contains chicken, fresh ginger and garlic.

Instructions
•Heat the chicken stock and when boiling add the chicken. When boil again let it simmer on low heat for about 45 minutes.
• Meanwhile heat up the rice bran oil and add the chopped garlic. After about 1 minute add the chopped ginger. Stir thoroughly. Add the jasmine rice and keep stirring.
After 3 minutes put the mixed rice/garlic/ginger in the rice cooker and add chicken stock till the desired level and cook the rice till done.
• In a mortar and pestle, pound together garlic, chilies, and coriander stems into a rough paste, then add the sugar, soy sauce, and lime juice. Stir to dissolve the sugar and then stir in chopped cilantro leaves.
Serve rice with chicken and decorate with cucumber and coriander. Serve with chicken broth and the sauce.

Cafe Boran, which translates to "ancient" or "traditional coffee," has a rich history that spans more than 80 years. Its origins can be traced back to a time of hardship during World War II when the scarcity and soaring prices of coffee pushed the resourceful Thai people to innovate. Faced with the challenge of obtaining quality coffee beans, they began experimenting with alternative ingredients to create a distinctive coffee experience that is still cherished today.
To adapt to the limited availability of coffee, Thais developed a unique roasting process that incorporated a variety of grains and other ingredients. As the coffee beans were roasted, they added brown rice, corn, sesame seeds, soybeans, and even tamarind seeds, creating a blend that would stretch the precious coffee supply. The end result was a dark, robust coffee infused with a unique flavor profile, enhanced by the addition of brown sugar and a hint of salt or butter. This creative mixture transformed a scarcity into a flavorful tradition that continues to be enjoyed in modern Thailand.
The preparation of Cafe Boran is an art form in itself. Traditionally, the coffee is often made using instant coffee, which simplifies the process but still allows for an exceptional brew. The method involves placing the coffee into a large filter bag or "sock." Boiling water is then poured over the coffee multiple times, allowing the flavors to infuse into the water. Welcome to our third episode about Chinatown Bangkok, one of the most remarkable areas in the thriving capital of Thailand. In this episode we will describe an unexpected but unique experience: The Opium bar
First let us tell you about the transformation from day to night in Bangkok which is really amazing. Bangkok during daytime is a modern, thriving city with great places to visit and things to do. You can spend days just sightseeing all the highlights. But the thing about Bangkok and especially Chinatown is the way it changes from day to night: Like Dr Jekyll and Mr Hyde, but then in a much more entertaining way.
So, after the sunset we decided to grab some of the great street food at Yaowarat Road. Here you can experience by yourself how the busy streets transform in one of the greatest oriental food markets in the world. After 17:00, under the glowing and flashing neon lights a completely new world is created. A world based on food, more food, drinks and even more drinks. Everything that is eatable is sold here. Boiled, baked, dried, salted or maybe even alive.

After some great snacks and drinks, we opened Google Maps to check the nearby bar’s and cocktail clubs. The night was still young (well, in Bangkok even at 06:00 the night is still young) so we wanted to check out some new places and have a few drinks. One name immediately took our attention, the Opium Bar A name like that reflects some of the old times so we decided to check the place.
After a short, but really fast ride with one of the new Tuk-tuk’s (is the engine nowadays a V8 or something?) we arrived near the Opium Bar. Just with shorts, slippers, t-shirt, well you know, the average tourist outfit. In front of the building there was a lady, well dressed, behind a desk. Huh? What is this? Perhaps we are at the wrong place. Looking to the left, next to the door there are multiple Michelin star stickers. Yeah, this couldn’t be the right place, or could it?
So, we asked the lady, and she confirmed that the Opium Bar was also part of this Michelin star restaurant. And the bar is located on the top floor. Well, dressed as tourists there was no way we could enter the restaurant. That’s what we thought. When we turned around, the lady asked us if we wanted to have a drink at the Opium Bar.

. This is what Bangkok is: Even with shorts, slippers and t-shirt you are welcome in a Michelin star restaurant. That would never happen in Europe or the US.
The elevator is not for the faint of hearted. It’s so small that it’s too cozy for two people. But we managed to make it to the bar. And that was more than our worthwhile. Unique furniture, mixed old with new styles. The collection of drinks has no end and their cocktail card is world class. You can sit inside or outside on a small balcony. We chose the inside, because of the unique interieur.
We checked the cocktail card and decided to take a signature bottle infused cocktail with lots of herbs. So the bartender filled a flat bottle with all kind of herbs, added different kinds of booze. He shaked, stirred and mixed it. Well, it took him more than 10 minutes to create this amazing cocktail. And amazing it was, we never tasted such a delicious and unique cocktail anywhere in the world. So, if you’re in Bangkok and are looking for a great experience and amazing drinks: The Opium Bar is one to check!

When the COVID-19 pandemic hit, Fernanda was locked in her apartment for over three months, a deeply isolating experience. “No one can imagine the feelings unless you’ve been through it yourself,” she reflects. Some people lost their lives during that harrowing period, and Fernanda considers herself lucky to have survived. The ordeal, however, inspired her to channel her emotions into her art. She believes that even in the darkest of times, it is possible to create light.
Her paintings embody this ethos, reflecting a deep sense of purpose. “The best and most beautiful things in the world cannot be seen or even touched; they must be felt through the heart,” she says. Fernanda’s work strives to touch viewers on a spiritual level, offering a glimpse of the paradise within her heart. She hopes her art can bring comfort to those in pain, and serve as a beacon of energy and spirit.
After the pandemic, Fernanda relocated to Chiang Mai, where she redirected her energy into painting. Through her art, she explores a central philosophical theme: the contrast between the “good way” and the “right way.” “Most people choose the right way because it is easy, makes them happy, and feels comfortable,” she explains. “I choose the right way. It is harder, imperfect, and sometimes even painful, but I believe that we can make the world a better place this way.” For Fernanda, life is about more than fleeting pleasures—it is about seeking a deeper meaning.
