Shake off extra, then dip into egg whites and roll in panko until coated. Place on baking sheet and repeat. Bake 15-20 minutes until golden brown and crunchy. In a large sauté pan, add all sauce ingredients except cornstarch. Cook until it comes to a boil then add cornstarch. Stir and cook until boiling again. Stir until thickened and set aside. Once chicken is done, place into saute pan to coat. Serve with rice and broccoli. Garnish with green onion.

tips for PERFECTLY COOKED RICE 1. Rinse or soak your rice before cooking. For most everyday meals, simply rinse your rice in cold water until the water is completely clear. If your rice has been in the pantry for a while, soak it for about 30 minutes before cooking. Make sure to drain thoroughly with either method before cooking. 2. Be sure to use the proper ratio of rice to liquid for different kinds of rice. Let it rest. After all the liquid has been absorbed and the rice is finished cooking, allow the rice to sit undisturbed for at least 5 minutes and as long as 30 minutes with the lid on. This redistributes moisture, resulting in a more uniform texture throughout.

EASY NO-KNEAD

HOMEMADE BREAD Combine 4 cups all-purpose flour, 2½ teaspoons salt and 2 teaspoons baking powder in your stand mixer and stir to combine. Combine 1/8 teaspoon sugar and 1 package active dry yeast in a small cup with ¼ cup water and allow to sit for 10 minutes to activate, then add to flour mixture. Slowly add 2 cups water to flour mixture ½ cup at a time. Stir ingredients to combine. Add 2 tablespoons olive oil and mix again. Add 4 ounces of vodka, the juice of 2 oranges, 1 lemon, ½ lime and 1 ounce of *rosemary syrup. Add a handful of ice to the shaker and give it a few vigorous shakes. Transfer the mixture to a copper mug filled with crushed ice. Top with blood orange soda and garnish with a blood orange wedge and sprig of rosemary. 16 16

*To make the rosemary syrup, add ½ cup sugar and ½ cup water to a saucepan and bring to a simmer, stirring until the sugar dissolves. Remove from heat and add 3 sprigs of rosemary. Cover and allow to sit overnight. Strain and store in an airtight container.
