Starters and main course Glossary of Terms Casutin: is a cheese made from cow’s milk , with a mouldy crust that resembles Brie . It’s from the region of Piedmont North West Italy. Lilliput Capers: come exclusively from Morocco , renowned for their size , hence the name Lilliput which came from the book Gulliver’s Travels , where the people of the island, Lilliput were very small. Preserved Lemon: are lemons that have been packed in salt and brined in lemon juice . Common in Middle Eastern and North African cuisine, they add a savoury tang to everything from stews to braises, dressings and sauces. Confit: is a way of cooking and preserving food . Firstly the food is salted, then slowly cooked in duck or goose fat. The result is an incredibly meat falling off the bone texture. Bottarga: is made from mullet or tuna roe , where it is subtly salted and aged. It adds as a seasoning to fish dishes and pasta. Pork Jowl: is one of the main ingredients in Carbonara In Italy it’s salted and aged. There it’s known as guanciale. Cured Egg Yolk: are egg yolks that are completely covered in salt and left for a few days . After you take them out and rinse them, they’ll have a sort of gummy bear texture. It can be grated on top of meats and it will melt as soon as it touches the heat. Maitake Mushrooms: originate from Japan. Maitake means dancing mushroom in Japanese. These mushrooms are considered to be medicinal and healthy. Miso: is a key ingredient in Japanese cooking. The paste, similar in texture to peanut butter, is typically a cultured mixture of fermented soybeans. Ceps: are big mushrooms with a thick stem, also known as “funghi porcini” . They’re one of the best tasting mushrooms. The flavour has been described as nutty and slightly meaty, with a smooth creamy texture. Bouillabaisse: the legend has it that bouillabaisse was created by Marseille fishermen who wanted to make a meal when they returned to port. They used the less expensive fish like the common rockfish, red mullet and shellfish that were too bony to serve in restaurants, seasoning them with garlic and fennel. Tomatoes were added to the recipe in the 17th century. Dessert Glossary of Terms Amarena: An agreeable sweetness dark coloured cherry which bring us back to the two cities of Italy, grown in Bologna and Modena, Demi – Glace cherries with surprising, primordial and intense cherry wrapped up in sweet aromatic syrup. Cocoa Nib: crumbled bits of dried cacao beans,

which comes from the Theobroma Tree. Fermented, dry and roasted which then crack the beans into small pieces. Cacao nibs are part of the same bean used in chocolate production. Cacao beans are native to the upper Amazon region.

Streusel: a crumbly mixture of fat, sugar, and flour

and sometimes nuts and spices that is used as topping or filling for cake, less dense and typically blended with oats.
