PREPARATION: Preheat oven to 350°F (180°C). Lightly grease six ramekins, each holding (6 oz). Place them into a baking dish that comes up as high as the dishes.

To prepare the caramel layer, pour 2 tbsp (30 mL) water into a saucepot and add 1/2 (125 mL) cup of sugar and lemon juice. Bring sugar to a boil over high heat, without stirring. Boil sugar until it caramelizes, about 4 minutes as it cooks, occasionally brush down the side of the pot with cool water. Carefully spoon this into prepared ramekins and let it cool for 15 minutes. To prepare custard, whisk eggs with remaining 1/3 cup (75 mL) of sugar, then whisk in cream, cinnamon and vanilla. Pour into ramekins.

Pour boiling water around the ramekins, so that the water comes at least halfway up the ramekins. Bake custards until they’re set at the edges but still jiggles in the middle, 25 to 30 minutes. Let the custards cool for 20 minutes in the pan, then carefully remove to cool to room temperature before chilling for at least 3 hours. To serve crème caramels, run a knife around inside edge of each ramekin to loosen custards. Place dish overtop ramekin and invert. Lift away ramekin and serve. Serves 6.

A PLEASANT PAIR Tuna Tartare with Avocado INGREDIENTS: 2 ripe avocados, diced 2 tbsp (30 mL) freshly squeezed lemon juice Salt Freshly cracked pepper 4 tsp (20 mL) sesame oil, divided 1 lb (454 g) sashimi grade Ahi tuna 2 oz (60 g) Tobiko roe * Available at Asian markets. Ask your local grocer for another type of caviar if unavailable.

1 tsp (5 mL) black sesame seeds Âź cup (60 mL) cilantro, roughly chopped 1 handful mixed baby greens

Vinaigrette 3 tbsp (45 mL) balsamic vinegar 5 tbsp (75 mL) good-­quality cold-­pressed olive oil Salt Freshly cracked pepper 1 stainless cylinder mold, 2 1/2-­inch (6 cm) PREPARATION: In a small bowl, combine avocado with lemon juice, 2 tsp (10 mL) of sesame oil, black sesame seeds, salt and pepper. Set aside. Rinse tuna under cold running water and dry thoroughly with paper towels. Using a sharp NQLIH Ă€QHO\ GLFH WXQD 6HDVRQ ZLWK VDOW DQG pepper to taste and drizzle with remaining 2 tsp (10 mL) sesame oil. Divide avocado mixture and tuna into 4 portions of each. Place one portion of avocado in mold and gently pack down. Follow with a portion of tuna and gently press down. Carefully spread 1/2 oz (14 g) of Tobiko over top. Transfer to serving plate and carefully remove mold. Repeat with remaining ingredients for 4 servings. Toss cilantro and mixed greens together. Place greens on top of Tobiko. Prepare vinaigrette, by whisking vinegar with oil and 2 tbsp (30 mL) water in a small bowl. Salt and pepper to taste. Drizzle over each serving. Serve. Serves 4

TASTING NOTES Karlo Estates 2010 CHOA Chardonnay, non-­VQA Prince Edward County ($25.00). It’s not often that something interesting gets done to Chardonnay ... This is an experimental wine from Richard Karlo where he puts the wine in a mixed CHOA barrel which is grown entirely in Prince Edward County, for three months. And what, may we ask is CHOA? It’s a mixed wood barrel made form cherry, hickory, oak and ash ... now that is truly interesting. The nose is toasty with vanilla, baked pear and crème brĂťlĂŠe notes. The palate offers up a vanilla toastiness with lovely white fruits that develop as the wine sits in the glass, with a clean and WDVW\ FUqPH EU€OpH Ă€QLVK ,W¡V Chardonnay with a new spin. Fielding Estate Winery Cabernet Franc 2010, VQA Niagara, ($22.95). Although it’s unquestionably suited to local terroir, Ontario still seems to be searching for a regional paradigm for Cabernet Franc. Fielding proposes a good model to follow with this 2010 release. Aided by the warmth and sunshine of the vintage, it’s open, clean, spicy and TXLWH DURPDWLF ZLWK ORWV RI YDULHWDO LQWHJULW\ ([SHFW SOHQW\ RI VZHHW VSLF\ ZRRG LQĂ XHQFH IRU now, alongside sweet herbs, tobacco, charcoal and fresh ripe blackberry fruit. Colaneri 2009 Insieme, VQA Ontario ($34.95) This captured the award for Top Red Blend as voted by the winemakers at Cuvee 2012. It is a blend of Merlot, Syrah and Cab Franc with some dried/appassimento fruit. Twenty Twenty Seven Cellars 19th Street Chardonnay 2010, VQA Niagara, $30.00. Kevin Panagapka’s virtual winery project is moving from strength to strength. First, some excellent single-­ vineyard Rieslings, then Pinot Noir, and QRZ D FODVV\ DQG Ă DYRXUIXO &KDUGRQQD\ from the vineyard on 19th Street in Jordan, WKH Ă€UVW UHOHDVH WR P\ NQRZOHGJH WR DGG to the range. It’s certainly a smart move as Ontario Chardonnay gains more international recognition. In the context of the two sister wines produced in the same vintage in Oregon and Burgundy by former Le Clos Jordanne winemaker Thomas Bachelder, it rises even further in stature. Pale crystal-­gold, pure ripe aromas of poached pear, crisp apple, and chipped stone with hints of French oak and vanilla. But just hints. The wine’s brilliance lies in its subtlety, its silky texture, its structured delivery, and long, ripe, supple, clean, complete after taste. Drink now to 2018. Rating: 94 points. (Konrad Ejbich)

He is growing Pinot Noir, Riesling, Pinot Gris and Cabernet Franc. This Pinot has impressive colour depth for the 2009 vintage. It’s aromatically impressive too, very piquant if intrusively volatile with crushed sour cherry/pomegranate fruit, along with black pepper and oak spice. It’s a big mouthful, with full fruit plumpness, some dry bitter skin notes, and a powerful alcoholic lift. This stallion needs time to settle down. Juicy apple, hint of lime, touch of peach pit all fall across the tongue, the nice use of oak keep the fruit front and centre. Refreshing on the palate with the merest hint of vanilla.
