his past year has been a whirlwind. It has gone by so fast that there are moments today that I struggle to remember the activities and changes of the past year. Either it was quicker than usual or I’m getting older and my memory is failing me. Overall it’s been a good year, but it hasn’t been without its complications. I’m sure we can all say that on some level. Each year, I tell myself that the next year I’m going to slow down and appreciate where I am for a while. And, usually it lasts through January or February.

shove, my kids kept some unexpected items that obviously meant something to them and let go of other items that surprised me. It was a test for our family. There were disagreements, stalling and overall frustration, but we are much better for it — I’m sure. Thinking about difficult but rewarding transitions, Mary Roszel comes to mind. She is an amazing person. I’ve gotten to know her a little over the last few years just prior to her retirement from the coffee business. She is definitely passionate about BIGGBY, but I would say she’s even more passionate about relationships and people. Mary introduced me to a young man a year ago that is going to LCC for marketing and is an amazing single dad. Although I think he’s great, I was even more wowed by Mary’s selflessness.

I’ve recently fulfilled a goal I’ve had for many years. My husband and I moved downtown into a condo. I sold my house of 13 years where I raised my kids and made so many memories. It was bittersweet of course, but I was ready for the transition and a new chapter of my life. Making the shift from suburbs to downtown will be interesting. What does everyone do with the items in the garage or the extra boxes of Christmas decorations?

Her willingness to help this young man, who she had just recently met, while he is working his way through school showed me that there are people out there who just glow from the inside. She helped him with the kids, gave him some connections and was a general sounding board. Mary is definitely one of those amazing individuals who connect and give and never ask for anything in return. I hope you enjoy her story.

O.K., so maybe everyone doesn’t have a few hundred extra ornaments in their possession. Downsizing has been a bit challenging. I’m of the opinion that you will fill the size home you have. If you live in a 5,000 square foot house, you will accumulate items to fill it. So, taking my items from 2,400 square feet with a basement and garage to 1,800 square feet with no garage or basement gave me a bit of heartburn. I had to let go of items that didn’t hold sentimental value for me. I made tough choices and truly got in touch with what is important to me.

This holiday season, I encourage you to reach out of your comfort zone and help someone. Be the change you want to see in the world. With so many terrible things happening out there in this sometimes-challenging world, it only takes a small act of kindness to give hope and assure that there is good out there too. Our team is actively helping a family going through a really rough time. I hope that our small act of kindness helps them through this difficult season. They should know that people care.

It was also rewarding to see other members of my family doing the same thing. When push came to

THE YMCA OF METROPOLITAN LANSING AWARDED $7,500 GRANT FROM THE PNC FOUNDATION TO FUND LITERACY PROGRAMMING The YMCA of Metropolitan Lansing has received a generous $7,500 grant from the PNC Foundation, the fourth of its kind from PNC in the past four years, to help fund financial literacy programming in the Y’s new Healthy Living Mobile Kitchen. The Mobile Kitchen’s bus will launch at the start of the New Year to help feed and educate children and families within the Lansing community about the importance of physical education and nutrition, while combating childhood obesity. The program itself has already served well over 900 meals since June 15, 2015. The PNC Foundation actively supports organizations that provide services for the benefit of communities in which it has a significant presence. The Foundation focuses its philanthropic mission on early childhood education and community and economic development, which includes the arts and culture. Through Grow Up Great, its signature cause that began in 2004, PNC has created a $350 million, multi-year initiative to help prepare children from birth to age 5 for success in school and life. The YMCA of Metropolitan Lansing has six operating units, including Mystic Lake Camp near Clare, and branches downtown, on Lansing’s west side, in the Oak Park area to the south, in East Lansing and DeWitt. AppleTree Early Care and Preschool East Lansing Owner, Lisa Raths, opened a Gilden Woods school in Haslett on June 29, 2015.

The new state-of-the-art school in Okemos will provide infant and toddler care, full- and half-day preschool, and before and after-school care for children ages 6 weeks to 12 years of age from 6 a.m. to 6 p.m., Monday through Friday. The new school, located at 2190 Association Drive in Okemos employs a total of 30-40 teachers and caregivers, and two directors, allowing for the enrollment of up to 168 children. Three Gilden Woods schools opened in 2014-2015 in Portage, Kalamazoo and Haslett. There are a total of 16 Gilden Woods and AppleTree Early Care and Preschools located in the greater Grand Rapids, Kalamazoo and Lansing areas.

The Capital Area Salvation Army officially kicked off its 2015 Red Kettle Fundraising Campaign with a special holiday event which took place on the steps of the Capitol at noon on Thursday, Nov. 12. WILX-TV anchor Ann Emmerich, the 2015 Red Kettle Campaign honorary chairperson, encouraged the crowd to ‘be a Christmas angel’ this season. The Red Kettle Fundraising Campaign is the Salvation Army's largest fundraising event of the year. Special presentations were given by Emmerich, State Senator Rick Jones, State Senator Curtis Hertel Jr. and Capital Area Salvation Army Coordinator, Major Alan Hellstrom. The Red Kettles will run through Christmas Eve, Dec. 24, Monday through Saturday at local area businesses. The Salvation Army’s Red Kettle fundraising campaign goal is $230,000. The overall Christmas fundraising goal is $960,000, which includes money raised through the red kettles along with various mail appeals. The Salvation Army can only reach its goal through the generosity of the community. Be a Christmas angel by giving a donation online or in a kettle. CAPITAL REGION COMMUNITY FOUNDATION WELCOMES NEW CHIEF OPERATING OFFICER The Capital Region Community Foundation is pleased to welcome Laurie Strauss Baumer as the foundation’s new Chief Operating Officer. Baumer began her work with CRCF on Nov. 2, 2015. Baumer Baumer will be responsible for managing the foundation’s day-to-day administrative operations. In addition, she will provide organizational and systems support for the foundation’s donor relations efforts. Prior to joining the CRCF, Baumer served as the president and CEO of Ele’s Place, a healing center for grieving children. The Capital Region Community Foundation currently has more than $85 million in assets and was created by the community as a vehicle to support the charitable needs and philanthropic interests of people living in Ingham, Eaton and Clinton counties. The Community Foundation receives gifts to establish endowment funds, and the income generated by the more than 400 funds is returned to the community each year in the form of grants. he Autism Society of Michigan has seen its fair share of changes over the last 39 years it’s been around. Founded upon the mission “to assure full participation and self-determination in every aspect of life for each individual,” the Autism Society of Michigan got its start in 1976. For roughly 30 years, Anne Carpenter has been a volunteer with the organization. In 1988, she was diagnosed with autism, and her journey has been anything but easy, but it’s the organization that keeps her busy enjoying life.

The self-described “small but mighty” staff of three: Anne Carpenter, Cathy Gladstone and Kathy Johnson at the Autism Society of Michigan, under President Penny Bearden, work tirelessly providing advice, resources, books, workshops and conferences for families and those with autism. “The goal is to include people with autism in all aspects of society, to help them achieve their potential and to also respect them for who they are in their own right,” said Carpenter. The nonprofit is funded nationally by the United Way, as well as through corporate and individual donations, which keeps it running year after year. The Autism Society of Michigan is an affiliate of the national organization and does not do therapies or treatments, but provides a comprehensive and evergrowing list of resources across the state. It’s an organization extremely close to Carpenter, as her first job was filing and cataloging with the society, then known as the Michigan Society for Autistic Citizens. While some might take for granted that 20-minute drive to work, Carpenter has a much longer morning commute. First she must take a cab to the transit center in Ann Arbor, then she takes the Michigan Flyer bus to East Lansing and lastly the Spec-Tran into the Okemos office.

It makes for a long day, she says, but certainly worthwhile. After her diagnosis at age 30, she knows firsthand the troubles and problems that often arise from learning of disabilities. As the information and referral specialist and librarian, Carpenter is often the front-lines and the first impression of the organization. It’s a role she’s happy to play, and an inspiring one at that — given her own journey with doctor diagnoses. Often times she’s even asked for by callers who are looking for specific resources in their area, as it’s a subject she knows firsthand. The organization’s main goal is to promote a more positive view of autism, a mindset she and Gladstone urge people to adopt. “I’d like them to see more of what’s below the surface,” Carpenter said. “They’ll tell you that someone’s IQ is like, 55; we don’t want to know that. They’ll tell you that the person will never speak … we need to look below the surface and see what that person is really like. Get them an alternative form of communication, help them explore what they’re really interested in and help them to learn and grow and see what’s really underneath the surface.” Sarah Spohn received her degree in Journalism from Lansing Community College. She’s a concert junkie; living and breathing in both the local and national music scene. She is proud to call Lansing her home, finding a new reason every day to be smitten with the mitten.

Distressed Furniture WITHOUT THE STRESS

My mother-in-law had an old piece of furniture she picked up from an estate sale that she didn’t have room for, so I took it off her hands and made a little extra storage in my kitchen for odds and ends such as my ridiculous collection of cookbooks and all of my seasonal candles. Not only does it save space and look pretty, it hides my obscene collection from my husband! Naturally he just thinks that I’m a creative cook with a good smelling house. And it is all thanks to this month’s DIY!

Directions

STEP 1: First I cleaned my piece of furniture and removed all of the hardware and then used my favorite off-white paint (Sherwin Williams Swiss Coffee). I painted the entire piece of furniture and let it all dry. STEP 2: After it was dry, I took an electric sander and started to go over areas where I wanted to reveal the wood underneath. (Another option is to paint one color, let it dry, paint over it with another color and let that dry. Then start your sanding process and reveal the color you’d like. In my case, the wood underneath it was just fine to reveal). Keep using the sander to knick the corners and different areas of the furniture to show different “levels” of distress. Have fun with it, slide it across the surface, hit the corners and get creative! The best part about the distress look is that you can always “cover up mistakes” and paint over it and start over again, because it just adds to your distressed look. STEP 3: Dip your finger in the paint, rub it over some of the deep revealed areas and wipe it clean, leaving a little bit of the wood still revealed but creating different depths of distressed wood all over the piece. This gives your distressed piece some different levels and depths to create a look that will make it look like you bought it that way! This is also another way to “correct” any mistakes.

STEP 4: With white paint, you need to be careful with your seal. Polyurethane can yellow your paint overtime, so I did not seal this piece. It is rustic enough and easy to clean so I left it be. There are many seals out there, just ask your local hardware store what would be best for your project and what you are using the piece for. STEP 5: Add your new hardware and enjoy! I found some new knobs at Hobby Lobby and it helped create a fresh new look!

SPECTRE T

here is almost 50 years of history in the James Bond franchise, including a plethora of different actors over the decades. The newest installment in the famed franchise, Spectre, features Bond bad boy Daniel Craig, and leaves audiences glued to their seats. Picking up where the previous film Skyfall left off, Bond is left with a message from the now deceased M asking him to do one last mission. This mission leads Bond on a search around the world, from Mexico City to Rome, chasing a man who might not even exist. Throughout the film, in classic Bond style, 007 goes up against criminals determined to destroy him, but to complicate the plot even more, he is also up against his own agency. MI6 has merged with a private corporation bent on getting rid of the Double 0 Program and replacing them with drones. The thrilling action helps the audience feel the constant race against the clock as Bond works to uncover SPECTRE’s plan and find a man named Blofeld. This is the fourth installment with Craig playing the famed role of James Bond, and he’s still nailing the part. I would love to see the next installment in this series, but based on how this exciting movie ends, I’m not sure what twist in the plot would come next. No Bond movie is complete without a memorable villain, this time played by Christoph Waltz as Ernst Stavro Blofeld. Waltz brings a strange charisma to the part, which is exactly what I want in every Bond villain. To top it off, the film works as a great throwback to an older film when Blofeld loses an eye and gets a giant scar. Ernst Stavro Blofeld is originally from the films From Russia with Love and Thunderball. They even bring in a giant white cat from the old films.

Dave Bautista plays Mr. Hinx, Blofeld’s henchmen, and is as imposing as ever. I would have loved to see him in a large, more demanding roll, but every fight scene between him and Bond is exhilarating. And of course, what would any Bond film be without a “Bond girl.” You can add the name Madeleine Swann, played by Léa Seydoux, to the famous Bond girl list. The best thing about her character was that she wasn’t just a pretty face. As the daughter of an assassin, she knew how to handle herself and was able to help Bond. The effects of the film were great; a lot of the destruction and shots where believable and helped carry the plot forward. Though there is less cinematography than past films, Spectre does not disappoint on visuals by any means. Even if you haven’t seen the previous 007 films, Spectre is still a film I would highly recommend. If you’re looking for a spy movie to watch this weekend, you can’t go wrong with Spectre. It has everything you could ever want from a Bond film: the obvious international intrigue being solved by a suave character with a license to kill and a mission to save the world.

A

lexa Boyce started her career by focusing on her own fitness and health. When asking about a spin class, she was encouraged to start her own class and become a spin instructor. As she was helping people further themselves in spin class, she received a lot of requests for personal training. At that time, Boyce was uncertified, so she went back to school to get her certification as a personal trainer. She has continued to work in the health and fitness field and has spent three years at Total Health Chiropractic. She loves to inspire and motivate her clients to live healthier lives and help them make the best choices for themselves. “In my approach, I believe in bio individuality, meaning that there is no one answer that fits every body. Every person is different, and I work with them to find a solution that works for them,” Boyce said. In addition to her training, Boyce oversees a weight loss program called Ideal Protein, teaching people to eat correctly in order to lose weight. She has also started a 30-day challenge called the Stark Naked Challenge. It strips down a client’s food to the bare essentials, and instead of focusing on weight loss, it focuses on cutting out foods or ingredients that are causing problems. Boyce has two sons at home, 14 and 5 years old, and loves to be active along with them. When she has down time, she doesn’t like to lounge around, instead opting to run marathons. She ran her 7th marathon in Las Vegas this November. BY KYLE DOWLING

LET YOUR CREDIT UNION KNOW YOU’RE TRAVELING To help protect you from fraudulent purchases on your debit and credit cards, your credit union tracks your spending activity. If your credit union thinks that you are in Michigan and a purchase from Ireland appears in your account, they might place a temporary block on your cards to prevent any further fraud from occurring. If you actually were in Ireland, a block on your card would be inconvenient and cause undue stress. Before you leave, place a travel notice on your account to avoid any mishaps of this sort. A travel notice should be placed on your account for any type of travel: international, across the country, or even within your home state.

BARB WHITNEY EXECUTIVE DIRECTOR OF THE LANSING ART GALLERY

D

eWitt native Barb Whitney is no stranger to art. After attending Kalamazoo College and receiving a bachelor’s degree in art and art administration, Whitney was hired right out of college in her dream field — you guessed it — art.

when I knew that I wanted to pursue the visual arts as a career in one way or another.”

Currently serving as the Executive Director for the Lansing Art Gallery, Whitney has had quite the colorful palate of art experiences in the past, which led to her current career.

Her favorite part about this job was when she was able to work with students, serving as a teaching artist in grant programs in the Detroit Public Schools.

Whitney traveled the country with a performing arts group doing musical theater through college, but it was an art class that really changed her life.

Whitney first started at the Lansing Art Gallery in 2004, and worked there until 2012, when she left to work with the Arts Council of Greater Lansing. In 2014, bringing with her years of experience with nonprofit culture and grant writing, Whitney returned to the Lansing Art Gallery as the executive director, and no day has been the same since.

“I developed a really sincere and deep love for the visual arts when I was in college. I’ve been performing my whole life, so I had a performing arts background,” said Whitney. “But when I took a basic drawing class, it changed my life. That was

After college, Whitney was hired in the arts field, serving as an arts administrator at a pottery place. She worked in the gallery, giving tours and facilitating educational workshops.

Her daily duties include public relations, marketing, fund development, oversight of staff and programs and that’s just the beginning. Regularly scheduled leadership lunches also allow for collaboration, networking and sharing of feedback between local organizations. “I also interface with our board of directors and am responsible for leading the strategic vision of this organization,” she said. One day’s agenda could include grant writing, a ribbon cutting ceremony, press release writing, paperwork and of course, interacting with the many Lansing Art Gallery visitors. Since the gallery is open Tuesday through Saturday and the first Sunday of the month, interaction with the public is just as much a part of her job as is the paperwork. “There’s some work that can be done at home or after hours, and a great deal of that is done that

While there are plenty of back-to-back meetings for this very busy career woman, she’s managed to juggle crammed schedules surprisingly well. On top of the nontraditional hours she works (nights, weekends, lunch breaks, etc.), Whitney also attends U of M Flint for her master’s degree in arts administration. Lansing has a very fruitful and supportive relationship amongst its arts and cultural organizations, providing the ability to network and share feedback — something that makes the area that much more special, according to Whitney. While this passionate, driven leader works diligently for the Lansing Art Gallery, she will be the last to brag or boast. Priding her staff on their dedication to the gallery is what keeps her coming back to work early and prepared to stay late.

“We have an incredible staff and incredible board. Both of those things are very near and dear to my heart,” Whitney said. “They’re the people that I interact with day in and day out, so it makes my job a joy when I feel those closest to the heart of the organization are dependable and considerate and dedicated to this organization in the same way I feel I am. That trust for me is really important.” Putting trust in the surrounding community is also vital for the Lansing Art Gallery. While the organization is 50 years old, they’re constantly changing and drafting up new art exhibits, interactive displays, workshops and programs. Aimed at getting even more people exposed to the wonderful world of art, the Lansing Art Gallery has even more projects in the works. “We have a few pending projects of which I can’t divulge details, but if they come to pass, I think we’ll be really dynamic and engaging next summer involving business, residents and visitors in a way they’ve not been involved with the arts in the past,” Whitney said. If the past year is any indication of how Whitney will successfully lead an organization full of art lovers, here’s a cheers to the next 50 years with the Lansing Art Gallery.

Sarah Spohn received her degree in Journalism from Lansing Community College. She’s a concert junkie; living and breathing in both the local and national music scene. She is proud to call Lansing her home, finding a new reason every day to be smitten with the mitten.

Q: I have had people ask me if it is O.K. to give their dog “human” medication. A: You should always follow the general rule that if it wasn’t prescribed for you don’t take it. All of these “human” rules apply to your dog too. Please be aware that many human medications can be toxic to your dog. Not only is it important that you don’t give human medications to your dog without your veterinarian’s advice, but you shouldn’t leave them out where your dog (or any pet) may be able to get to them. Remember that golden rule of managing the environment: If you don’t want your dog to get to it, put it away. Your veterinarian is the only person who can prescribe medication for your dog — the proper type and dose. Q: Why does my dog shed so much? A: There can be many reasons, but it is completely natural for your dog to shed. Generally in the winter the coat thickens, and the coat sheds in the spring. There are numerous breeds that have double-coats and you may have heard of “blowing coat” — this is a way to describe the shedding of the undercoat. There are a number of environmental and physical reasons that factor into shedding. When the shedding seems to be excessive, watch for some of the following signs: bald spots, red areas with bumps or scabs, open sores or constant licking. These can be signs of a more serious condition. There are so many different issues that can cause excessive shedding, including but not limited to allergies, infections or parasites. As always, it is important to see a veterinarian so that they can determine what tests need to be done for your dog in order to treat him/her properly.

ince I’m still a little new to Michigan, I am always looking for something new to explore in our lovely state, and this year I discovered Christmas, Mich. Have you been? ROM A ONE -ROOM SCHOOLHOUSE TO FOUNDER OF ONE OF THE FASTEST GROWING COFFEE FRANCHISES IN THE COUNTRY, MARY ROSZEL’S WARM PERSONALITY AND OUTGOING SPIRIT ARE THE FOUNDATION OF HER SUCCESS. Growing up in a small rural community and attending school in a one-room schoolhouse gave Roszel a unique perspective on the importance of education and finding every opportunity to learn something new. “I grew up out in the country in a German farming community. I attended school in a one-room country schoolhouse,” Roszel said. “It was a great way to learn and gave me a good background. There were eight different grades all together, so you took every opportunity to learn a lot.” After moving to Ann Arbor with her family in high school, she went from having only five boys in her class to graduating with a class of nearly 800. The transition helped Roszel find her voice and her passion for learning, which led her to attend Eastern Michigan University to pursue a degree in education. Roszel then married and moved into a new role as a wife and mother. She worked to support her family as her husband attended school for dentistry. But her life then took another path. Roszel had her second child the day before her husband was sent to war in Vietnam. Upon his return, the couple struggled and Roszel had to make the difficult decision to leave. She found strength in herself and motivation to provide for her family. “After the divorce I would work during the day and go to school at night. Its what I had to do, so I went to Lansing Community College to become a paralegal. My daughter was in kindergarten and my son was in second grade, and I had wonderful help to watch the kids when I would go to class,” Roszel said. In a twist of fate, while waiting for the bus to school one day Roszel was offered a position at the court, where she stayed for 13 years while her children were in school. As she worked to support her family, she felt a desire for her next adventure.

“When I retired from the court I decided I would go back to school for law. Only when I got there I realized that maybe law wasn’t really ‘me,’” Roszel said. “For some reason I took interest in hospitality business and went to Michigan State University to finish my degree. So I sold my house and quit my job and moved on campus. The funny part is my son was there at the same time.”

From there, Roszel and Fish broke ground in the coffee industry and created something truly special in Biggby Coffee.

“We always encourage our franchises to get involved locally in their communities. Sponsorship is very important. These communities give us so much, we believe we need to give back,” Roszel said.

I started at a little place called Chadwick’s but I left because I wasn’t really getting a chance to be involved or learn. So I applied for a hostess job at Flapjacks. They interviewed me and hired me, and that is where I met Bob Fish. He was a manager there and in the same program as me at MSU,” Roszel said.

Her role at Flapjacks grew from hostess to so much more; Roszel learned the ins and outs of the business. She has earned so much respect at the restaurant that when the owners were looking to build a second location, they asked Roszel and Fish to run it together. The pair became an unbeatable team and found ways to push and encourage each other to do more. Eventually their curiosity to start their own business led them to pursue a new adventure. “We wanted to open a coffee shop and investigated all the opportunities. We wanted to do it right. We traveled to Washington and Chicago to see what others were doing. Everywhere we went we tried to figure out what we could do different or better to set us apart,” Roszel said.

“I always tell young people to get involved in the community. When you become involved and give back you will see new opportunities,” Roszel said. “Recognition of opportunities is important too. They may not always come from where you think they should. Learn to try new things but if it’s not working cut your losses and move on; don’t give up, just find a new way to move forward.”

“We wanted it to be better. We found ways to do things differently and we set standards to make sure our customers felt welcome,” Roszel said. “We wanted to greet our customers within three steps and engage with them in conversation, we wanted them to feel like we were there for them.”

Roszel’s story is an inspiration to women and showcases what dedication and hard work can do. Her impact in the community has been tremendous, and her innovation in business has allowed hundreds of families to realize their own dreams of owning a business. But with all that said, Roszel’s final comment for success is finding time to take care of yourself and your family first.

Roszel and Fish accomplished just that; quickly growing from their first store on Grand River Ave. in East Lansing to having hundreds of franchise locations across the country. But Roszel says it’s not just the coffee that makes Biggby so different, it’s their investment in every community they serve.

“Make sure you take care of yourself and your family so you can enjoy life. It’s really important I think,” Roszel said. “What’s the point of any of this if you never stop to take care of yourself and you get to a time in your life where you could do anything but you can’t. You have to take time for yourself so that you can make time for others.”

THE WHAT HAVE I LEARNED? It’s been one year since I started sharing my dating adventure in CAWLM. As I look back over my previous articles, I’m reminded of all the life lessons I’ve learned while waiting for Mr. Right. I’m optimistic that my dating situation will eventually work itself out, but if it never does, that’s fine too. To be clear, I’m finally at a point in my life that I know how to rock being in a relationship. By “rock” I mean that it can be fantastic, but it can also be rocky: uncertain and unsettling. Still, I plan to continue to take my time, choose wisely and enjoy being single. As for this holiday season, I especially plan on taking advantage of the “enjoy being single” part.

Let’s be honest, human nature is to want what someone else has versus appreciating what’s right in front of you, for example, “If I only had him, I would be happy.” My feelings are simple — I’m currently single and loving it! I’m not saying if Mr. Right rolled up that I wouldn’t ride off happily into the sunset with him. It just means that while he is still on his journey to find me I will focus my time on taking advantage of all the single pleasures that life has to offer.

MY FAVORITE GIFTS Let me take a moment to review some of the reasons that being single brings me happiness. In the spirit of the holiday season, I’ll refer to these reasons as “gifts.” Let’s unwrap my first gift right now: GIFT # 1 (BEING THE REAL ME) I hope this year my articles have demonstrated my willingness to reach out, humble myself and put forth the real me. Like I’ve said in the past, it’s not easy being vulnerable and trusting someone with my most valuable possession — all of me. But the gift to myself and others is the steps I take to remove my inhibitions and bare my soul. Some may view this as a refreshing approach, but I simply call it a relief. GIFT # 2 (SPACE) When I’m by myself, I’m confronted head-on with selfdoubt and fears. If I were to be totally honest, it’s in the moments when I’m alone that I reflect on the current state of my life. By now you’re asking, “So what’s the gift part, Catrice?” Disengaging from distractions and spending quality time with myself has been the spark for some of my greatest decisions. Meaning, space plus alone time can equal good judgment. GIFT # 3 (EXECUTIVE SCHEDULE) This is my absolute FAVORITE gift, and the most desirable one for all of my attached and married friends. The executive schedule can be defined as doing whatever you want to do, whenever you see fit. This gift allows me to focus totally on selfish activities that make ME very happy. I can spend hours on my makeup and hair (looking really good) without feeling the death stare from a mate who thinks we have to be on some stupid schedule. Part of the fun is to remove worry, when possible. KEEP AWAY FROM MY ZEN, fools! Also, I regularly indulge in spa days, shopping trips, parties, getaways, overnights, brunch dates, movies, theatre dates, concerts and the list goes on and on. I’m literally exhausted from the endless outings, all approved by yours truly. To be fair, not having children helps to free up my schedule, but no matter the reason, it’s really nice to set my schedule as I see fit.

WHILE THERE ARE OTHER COUNTLESS GIFTS THAT FUEL MY GRATITUDE, THE OUTCOME OF 2015 IS SIMPLE FOR ME: BE OPEN TO BEING IN LOVE AND BEING SINGLE.

ROCK THAT RELATIONSHIP STATUS While there are other countless gifts that fuel my gratitude, the outcome of 2015 is simple for me: be open to being in love and being single. Surprisingly, these two concepts aren’t mutually exclusive. I’m not advocating a specific relationship status, rather I’m sharing my appreciation for the most valuable part of any relationship status: enjoying life. Learn how to rock the thing in your life that may otherwise prevent you from enjoying yourself and others. Intimate, meaningful relationships can come in all kinds of forms. Try and find the one that works best for you. Just don’t forget to unwrap your gifts while on your journey. GINGERBREAD SPICED CREAM PUFFS For the dough: 1 1/2cups water 1 stick plus 1 tablespoon unsalted butter, cubed 1 teaspoon sugar

CHOCOLATE RASPBERRY TART

1/2 teaspoon salt

Makes one 9-inch tart

1 1/2 cups all purpose flour

For crust:

8 large eggs

5 tablespoons unsalted butter, melted

6 egg yolks

1/4 cup sugar

3/4 cup sugar 1 1/2 tablespoon flour

For filling:

1 1/2 tablespoon cornstarch

1 1/4 cups heavy cream

2 2/3 cups whole milk

9 ounces bittersweet chocolate, chopped

1 1/3 cups heavy cream

2 large eggs

2 teaspoons cinnamon

1 teaspoon pure vanilla extract

1 teaspoon ground ginger

1/4 teaspoon salt

1 teaspoon allspice

1/2 cup raspberry preserves

1/2 teaspoon nutmeg

Fresh raspberries, for garnish

1/2 teaspoon cloves

Confectioners sugar, for garnish

Preheat the oven to 400 F. Line two large baking sheets with parchment paper. In a large saucepan, combine the water, butter, sugar and salt and bring to a boil. Reduce the heat to a simmer. Add the flour all at once and stir vigorously with a wooden spoon until a tight dough forms and pulls away from the side of the pan, approximately 2 minutes. Remove the pan from the heat. In a bowl, beat 7 eggs and add to the dough in four batches, stirring vigorously between additions until the eggs are completely incorporated and the pastry batter is smooth and fall in ribbons. If this consistency has not been reached, add the final egg. Transfer the dough to a piping bag fitted with a 1/2-inch plain tip. Pipe 1 1/2-inch mounds onto the baking sheets, leaving 1 inch between them. Spray the mounds with nonstick cooking spray. Bake the choux for about 35 minutes, until browned and puffed, shifting the sheets from top to bottom and front to back halfway through. Let cool completely. To make filling, whisk the yolks, sugar, flour, cornstarch, and spices together. In a saucepan, heat the milk and cream together until just simmering. Add a full ladle of the heated cream mixture to the eggs and whisk. Repeat this step another two times to slowly warm up the egg mixture without scrambling the eggs. Add the egg mixture into the saucepan with the remaining milk mixture and cook over medium heat, whisking frequently, until thickened enough to coat the back of a wooden spoon.

Pour the mixture into another bowl and cool completely before using. Add the cooled pastry cream to a piping back with a small, plain tip. Using the pastry tip, gently pierce a hole into the bottom of each puff and fill with the cream.

Preheat the oven to 350 F. Mix together all ingredients for the crust and press into the bottom and 3/4 inch up the side of a 9-inch tart pan. Bake for 10-12 minutes and allow the crust to cool completely. To make filling, bring the cream to a boil in a saucepan. Add the chocolate to a heatproof bowl and pour the cream in. Stir the chocolate until melted. In a small bowl, whisk together the eggs, vanilla, salt and raspberry preserves and stir the mixture in with the chocolate until smooth. Pour the filling into the tart shell and bake for 20-25 minutes until the center is still slightly wet. Cool the tart completely and garnish with fresh berries and dusted confectioners sugar.

DULCE DE LECHE PEAR TRIFLE Makes 6-8 servings 3 pears, diced into small pieces 8 ounces dulce de leche, homemade or storebought 2 cups crumbled angelfood cake 3 cups whipped cream, homemade or storebought 1 chocolate-toffee candy bar, crumbled In a small bowl, mix the pears and caramel together. In a trifle bowl or 6-8 individual glasses, layer the cream, pears, and cake until you reach the top of the dish, finishing with whipped cream. Top the trifle with the crumbled up toffee pieces.

Biscotti FROM THE KITCHEN OF CATHY BLATNIK

INGREDIENTS 3 cups white flour

2/3 cups white sugar

2 tablespoons milk

½ cup hot cocoa mix

6 tablespoons unsalted butter, softened

½ cup semi-sweet chocolate chips (optional)

3 teaspoons baking powder

4 large eggs (slightly beaten)

1 teaspoon baking soda

1 teaspoon vanilla extract

DIRECTIONS Preheat oven to 350 degrees and lightly grease two cookie sheets with non-stick cooking spray. In a small bowl, combine flour, hot cocoa mix, baking powder and baking soda; set aside. In a large bowl, combine sugar, butter, eggs, vanilla extract and milk. Beat by hand or with mixer until creamy.

Divide dough in half. Shape each half into a 12-inch long log. Flatten slightly (about 2-3 inches across). Place each log onto the greased cookie sheets. Bake for 25 minutes. Pull the cookie sheets out and let cool for 5 minutes. Cut each log into 12 equal slices and
