It’s time to pack a charcuterie picnic!
The delicious combination of cheese, meat, and sweet and salty accompaniments of a charcuterie board are perfect for this time of year, whether you plan to picnic in a park or on your own deck or patio.
Cheese And Meat
The classic approach to selecting the cheese for your summer board applies:
Aim for a contrast of textures and tastes (ripened, unripened, washed rind, blue, hard, soft, and semisoft), levels of flavor intensity (strong, gentle, and sharp) and milk types (cow, sheep, and goat). Some combinations, for example, could be a soft mascarpone, a full-bodied cheddar, blue cheese, and a bite of salty feta or smoky Gouda. Or try brie, burrata, blue cheese, and aged Gruyère.
Semi-soft cheeses range from mild and buttery to earthy and pungent. Look for Fontina, havarti, Muenster, and Monterey Jack. Semi-hard cheeses such as cheddar are often a favorite on a cheese tray. Hard cheeses such as Asiago, Parmesan, and Romano can pack an intense flavor punch.
Cured meats are delicious served with cheeses and some team up particularly well, such as salami with Gouda or a salty, crumbly Parmesan with prosciutto. Soppressata, a dry salami made with both pork or beef, complements semi-soft havarti. An aged cheddar, Spanish cured ham—Iberico or Serrano— Swiss, and Gouda would work well together.
Pack it!
If you are traveling with your charcuterie, preslice the cheese and fruits so you’re ready to go when you get to your perfect spot. Pack cheeses, meats, olives, and other items in separate containers. Pack a cooler or cooler backpack with ice on the bottom and meat and cheese on top of the ice. Then layer in the fruit and lighter items such as the crackers and bread on top. To make cleanup easier, pack a piece of parchment paper to lay on your board or plate so you can just dispose of the paper at the end of your picnic and have a clean board that’s free of sticky jam or honey drippings to take home.
Accompaniments
A variety of foods that fall into the crunchy, sweet, spicy, salty, pickled, and fresh categories are delicious to include: how much?
Nuts, such as natural or slightly salted almonds, cashews, pistachios, walnuts—and candied or honey-roasted almonds or candied pecans— cover a few categories.
Sweet jam, chutney, or honey are tasty companions, as are assorted olives or pickled beets. Dried fruits, such as dates, apricots, Mission or Turkish figs, cranberries, and cherries, are always a nice touch. Include some fresh fruits such as melon, seedless grapes, figs, pears, or apple slices. Thin slices of baguette, breadsticks, sea salt crackers, or any mild cracker round it out. A bottle of rosé or your favorite white wine also makes an excellent picnic companion. For a twist, try an Aperol Spritz for a light, refreshing drink (see page 56).
If you are serving your charcuterie board as an appetizer or snack, plan on 3 to 4 ounces of cheese and 3 ounces of meat per person. If serving these items as the main attraction, plan on about double the amount of each. For mixed nuts: ½ ounce per person; olives: 2 ounces per person (or 2-3 pieces per person); crackers: 2 ounces olives: person 2 per person.
