WINTER WEATHER TIPS In Oklahoma we’re pretty good at handling bad weather. But here at Oklahoma’s Own News On 6 we want to offer a few extra suggestions to ensure everyone is safe and warm this winter season. During the bitter cold times in Oklahoma, Chief Meteorologist Travis Meyer keeps you advised on winter weather safety tips: • Keep a good supply of rock salt and sand (kitty litter can be substituted for sand) to help with keeping your walkways safe. • Add a snow shovel to your disaster supply kit at home for when the snow is heavy. • Store a good supply of wood for your fireplace or wood-burning stove in case gas and electricity is lost and it’s a two dog night! • Be sure to winterize your home by cleaning gutters, trimming away trees and fixing roof leaks. • Remember to keep faucets dripping during periods of cold weather to keep pipes from freezing. • In case a pipe does burst, have someone teach you how to turn off water valves. • Have a mechanic do a winter weather safety check for your car to keep you protected. • Keep your fuel levels as full as possible, at least half a tank, in case its hard to get to a gas station. • Place an emergency kit in your car. • Before you venture outside, dress in warm layers with the outer layer being water repellent and carry gloves and a hat with you. • Cover your mouth with a scarf to protect your lungs when you are outside. • Please check on neighbors, friends, family and the elderly so that we can keep all Oklahomans safe this winter. 2011 Anchor Holiday Favorites Craig Day’s Peanut Butter Cocoa No-Bake Cookies 2 cups sugar 1/2 cup butter 1/2 cup milk 1/3 cup unsweetened cocoa powder 2/3 cup peanut butter 3 cups quick cooking oats 2 tsp vanilla 1/2 cup chopped peanuts (optional) Place a piece of wax paper or foil on cookie sheet. Combine sugar, butter, milk and cocoa in medium saucepan. Cook ook over medium heat, stirring constantly, until mixture comes to o rolling boil. Remove from heat; cool 1 minute. Add peanut butter; utter; stir to blend. Add oats, peanuts and vanilla; stir to mix x well. Quickly drop mixture by heaping teaspoons onto wax x paper or foil. Cool completely. Store in cool, dry place.
Rich Lenz’s Grilled Orange Basil Salmon 1 1/2 lbs. fresh or frozen salmon fillets 1/4 cup frozen orange juice, thawed 1 Tbsp snipped mint or tarragon 1 Tbsp worcestershire 2 cloves garlic, minced
3 Tbsp olive oil 2 Tbsp water 2 Tbsp basil 4 zucchini
Mix concentrate, basil, mint, or tarragon, oil, water, worcestershire and garlic, lic, set aside. Thaw and rinse salmon, brush h with sauce. Put in pan with a little oil on bottom. ottom. Put on grill; cook at medium for 4-6 -6 minutes or until it flakes. Cut zucchini lengthwise engthwise and place on grill, skin side down, own, cook 5-6 minutes. Serve zucchini with fish. Serves 6.
Scott Thompson’s Roasted Brussels Sprouts, Sweet Onion and Apple Serve with roast pork loin or roast chicken 1 lb brussels sprouts, trimmed salt 1 medium sweet onion diced ground black pepper 1 large Granny Smith apple, peeled, diced 1 cup apple cider 1 Tbsp olive oil 2 tsp unsalted butter 1/2 tsp ground nutmeg 1 tsp brown sugar pecan halves (optional) Preheat oven to 350 degrees. Combine the Brussels sprouts, onion, apple, oil, nutmeg and salt and pepper and pecans in a pan; toss to coat evenly. Cover tightly with aluminum foil and roast for 25 minutes, then uncover and stir. Increase the temperature to 375 degrees. Return the pan to the oven, uncovered, and roast for about 10 minutes or until the sprouts are lightly browned on top.
Travis Meyer’s Jolly Chocolate Peanut Butter Fudge 1 pkg (8 sq.) semi-sweet chocolate 3/4 cup sweetened condensed milk 1/2 cup peanuts chopped 1 pkg (6 sq.) white chocolate 1/4 cup creamy peanut butter
Melt semi-sweet chocolate and milk. Stir until chocolate is completely melted. Stir in nuts. Spread onto bottom of foil lined 8” sq. pan. Melt white chocolate and stir until completely melted. Add the peanut butter and stir until melted. Spread over the semisweet chocolate layer. Refrigerate 2 hours or until firm.
Bring the apple cider to a boil in a small saucepan over medium-high heat. Stir in the butter and brown sugar, u until dissolved. Boil for 10-15 minutes, until it has reduced. Set aside. asid Toss brussels sprouts mixture with syrup in n serving bowl. Seaso Season as needed. Serve warm.

Terry Hood’s Hot Corn Dip 12 oz. cream cheese 1/2 cup milk 4 Tbsp butter 1 tsp garlic salt 2 cans whole green chilies, chopped and drained 4 cans white corn, drained Jack cheese Melt butter, cream cheese, milk and garlic salt in a sauce pan. Stir in green chilies and corn. Pour into buttered casserole. Put cheese on top. Sprinkle with paprika. Bake for 30 minutes, or until bubbly, at 350 degrees.
Lori Fullbright’s Mom’s Punch Bowl Cake 1 box yellow cake mix 1 10 oz. can crushed pineapple 2 boxes instant vanilla pudding 2 8 oz. cartons frozen strawberries 2 bananas 2 8 oz. cartons whipped topping Mix cake as directed on box and bake in two round layers. While baking, mix instant vanilla pudding according to box directions. After cake is cool to touch, place h bowl. Use one of them in bottom of punch ayer. Slice half of instant pudding on first layer. one banana over pudding. Pourr 1/2 can dding. of pineapple over cake and pudding. neapple. Put layer of strawberries over pineapple. d topping. LeAnne Taylor’s Caramel Heavenlies 12 graham cracker rectangles 2 cups miniature marshmallows 3/4 cup packed brown sugar 1 cup sliced almonds or pecans
1 tsp vanilla 1 tsp cinnamon 3/4 cup butter, diced 1 cup coconut (opt.)
Line a 15”x10”x1” pan with parchment paper or foil. Grease foil, if using. You could also use a nonstick pan and skip the parchment paper/foil. It works much easier. Arrange graham crackers in a single layer in pan. Sprinkle with marshmallows. In saucepan, combine butter and brown sugar. Cook over medium heat until sugar is completely dissolved, stirring frequently. Remove from heat. Stir in cinnamon and vanilla. Spoon over crackers, spreading evenly. Sprinkle with almonds or pecans and coconut if desired. Bake at 350 degrees for 15 minutes or until lightly browned. Cool in pan on wire rack. Use parchment or foil to lift uncut bars from pan. Cut into 3-inch squares; cut each in half diagonally. Store in an airtight container in refrigerator for up to 1 week. These freeze well too.
Alan Crone’s Holiday Popcorn Mix 9 cups corn cereal squares 4 cups popped popcorn 1 cup packed light brown sugar 1/2 cup light corn syrup 2 cups chocolate and caramel morsels 6 oz. sweetened dried cranberries
1 tsp vanilla 1/2 tsp baking soda 1 1/2 cups almonds 1/2 cup butter (1 stick)
Preheat oven to 250. Grease large pan. Mix cereal,, p popcorn, p , and nuts in pan. Combine brown sugar, butter, and corn orn syrup in medium saucepan. Bring to boil over medium um heat, stirring constantly. Remove from heat. Stir in vanilla and baking soda. Pour evenly over cereal mixture and stir to coat evenly. Bake for 45 minutes stirring every 15 minutes. es. Cool completely in pan, stirring frequently to break ak apart mixture. Stir in morsels and cranberries.
