GRILL RECIPES In India there are different kind of people living. They like different kind of fast food like (vegetables, chicken, etc.). So Grill Recipes decides to make a website about Indian fast food. this fast food is very tasty and oily also. It contains different kind of masala.


VEGETABLE DISH •INGREDIENTS • ½ packet pasta • 1 onion (cut in cubes) • 1 zucchini (cut in cubes) • 1 green bell pepper (cut in cubes) • 1 red bell pepper (cut in cubes) • 5 to 6 olives • 5 mushrooms (sliced) • Salt as needed • Black pepper as needed • 2 tablespoons fresh lime juice • 2 tablespoons olive oil • For mint dressing: • ½ cup chopped fresh mint • ½ cup plain yogurt • 2 green chilies • 1 teaspoon cumin seeds • Salt as needed • ½ cup roasted almonds for garnishing


INSTRUCTION • Take water in a large pan and add 1 teaspoon salt. Bring to boil then add pasta and cook for 5 minutes or until the pasta is ready. • Drain out excessive water and take out the pasta in a colander, place under cold running water and set aside so that the extra water is fully drained out. • Now take the chopped veggies in a large bowl and season with salt and black pepper. Add lemon juice and mix well until all the veggies are evenly coated. • Heat 2 tablespoons olive oil in a grill skillet and add all of the veggies, grill for about 2 to 3 minutes on both sides or until the veggies are tender but don’t overcook, keep a bit crisp. • Take out the grilled veggies and add to the pasta in a bowl. • In the meanwhile, take mint, green chilies and cumin seeds in a blender and blend well until puree. Add yogurt and salt and whisk well until fully combined. • Pour the mint sauce over the grilled veggies pasta and mix well with wooden spoon until all the ingredients are fully coated. • Garnish with roasted almonds and serve at room temperature.


CHICKEN DISH • INGREDIENTS • 2 chicken breast pieces • Salt as needed • ¼ teaspoon black pepper • 2 tablespoons fresh lime juice • 1 tablespoon barbeque sauce • 2 tablespoons olive oil • ½ teaspoon garlic paste • 2 cheese slices • For balsamic garlic sauce: • 1 cup balsamic vinegar • 1 tablespoon Worcestershire sauce • 2 tablespoons barbeque sauce • ¼ cup tomato ketchup • 1 teaspoon sugar • 1 tablespoon butter • Salt as needed • ¼ teaspoon black pepper • 1 teaspoon fresh lemon zest (grated) • 4 garlic cloves (minced) • 2 tablespoons finely chopped mint


INSTRUCTION • Take chicken pieces in a dish and add lemon juice, barbeque sauce, olive oil, garlic paste and season with salt and black pepper. Mix well until fully coated then place in a refrigerator for an hour or 2. • Preheat your outdoor grill at high. • Now take out the marinated chicken and place on the grill grated. Grill for about 3 to 4 minutes on one side then change the side and again grill for 3 minutes or until the chicken is fully cooked and the grill grated appear beautifully on the chicken pieces. Just before 1 minutes of removing chicken from the grill, place the cheese slice on each of the chicken piece and wait till it melts. Remove from the grill and place in a serving dish and keep warm. • Now for the balsamic garlic sauce, heat butter in a pan and add garlic mince, sauté for 1 minute or until golden and aromatic then add tomato ketchup, sugar, barbeque sauce and Worcestershire sauce, balsamic vinegar and lemon zest, season with salt and black pepper and cook until it begins to boil. Lower the heat and simmer for about 5 minutes. Finally add finely chopped mint. • Now pour about 2 tablespoons of sauce on each of the grilled chicken pieces and pour the rest into a serving bowl and serve with the grilled chicken. Enjoy hot.
