M

esChamorroor Chamorro Month is a special month

when schools, communities, workplace, and even businesses come together to celebrate and appreciate Guam’s unique history and cultural heritage. When you have over 31,000 students, several hundred businesses, and about a dozen villages celebrating all that is Chamorro, an overwhelming madness starts to play in your mind – how can one experience the best of all that is Chamorro?

Lengguahi:Language The best of all that is Chamorro starts with understanding the language. The first step to understanding the Chamorro language is to immerse yourself among Chamorro speakers. Having families and friends that speak the language is the simplest way to understand and eventually speak Chamorro. Invest in a Chamorro dictionary or word book, or go online to Chamorro web-based learning sites. Initiate speaking the language and speakers will automatically respond in Chamorro. If you do not have any families or friends that speak the language, spend some time at Guam’s southern villages and meet with village residents. Southern village residents are one of the most hospitable people you will ever meet. Na’ måolek hoa! Be genuine/good - and you will make many friends.

Gupot Chamorro:Chamorro Celebration To experience all that is Chamorro with all of your senses is to attend Chamorro village fiestas, heritage festivals, barbeque gatherings, and special occasions such as weddings, christenings, and most especially funerals. Remember, always ask “what can I bring to the table?” Na’ geftao hao! Be generous – your return will be ten-fold!

Tano yan Tasi :Land and Sea The Chamorro people believe that together with their ancestral spirits and the land and sea, they collectively make all that is Chamorro. Take time to visit the many ancestral sites on island. Go on heritage walking tours where available. You will learn more when interacting with nature and especially with the people that are nature’s stewards. Na’ måolek mo’na I tano-ta para fama’guon-ta – Together, let’s make our world better forever for our children – our future.

Chamorro Village Fiesta and back kitchen cuisine By Joe Quinata

T

o experience Chamorro cuisine is to attend a local Chamorro village fiesta and/or be discreetly invited to the “back kitchen” where the real authentic cuisine can best be experienced.

The Fiesta Table

The fiesta table stretches to about forty feet with clusters of tables displaying an array of specialty Chamorro foods prepared by the hosting family and relatives, sometimes a month in advance and probably more depending on the hosting families. The fiesta table can spread about forty to fifty different authentic Chamorro dishes as well as other ethnic-influenced dishes infused with Chamorro flavors.

The fiesta table starts with an array of local starches Popular local soups are the corn soup (corn and chicken bites cooked in coconut milk) and Sotangho (long rice, mixed vegetables, and diced beef).

The fiesta table starts with an array of local starches such as red rice, gollai åppan mendeoka (tapioca tubular cooked with coconut milk), gollai åppan aga’ (banana cooked with coconut milk), gollai åppan suni (taro cooked with coconut milk), titiyas ma’ies yan arina (corn and flour tortillas). The list can go on to include ethnic-fusion such as Chamorro/Filipino pancit (egg noodle dish with pork, shrimp, and julienned local vegetables with achoti flavoring), kamuti (sweet potatoes), and dinner rolls baked by the family baker.

Most Chamorro desserts are greatly influenced by Spain, Western/European, and Asia. Other than our local fresh fruits, other popular local desserts are latiya (custard cream on sponge cake), kalamai (corn pudding), guyoria (coconut cookie bites), tamales mendeoka (sweet tapioca tamales), åhu (sweet young coconut cooked with brown sugar, corn starch, and coconut water), and atmåyas (corn porridge - sweet corn cooked with sugar, corn starch, and water).

Following the starch dishes are the meats, poultry, and fish dishes. All prepared by either tunu (barbeque), kådu (cooked with coconut milk), or aflitu (fried). Chamorro specialty fish dishes such as eskabeche (fish with local leafy vegetables and egg plants marinated in vinegar), and katdiyu (fried fish with local string beans cooked with coconut milk and local yellow ginger) are local favorites.

Most popular of Chamorro vegetable dishes are the golai hågun suni (taro leaves cooked in coconut milk) and beringhenas ni ma lechi (barbequed eggplant with coconut milk and lemon). Other vegetable dishes are influenced by the western tossed salads and Asian vegetable rolls.

the back kitchen chesa: chasers

Popular chasers are the variety of kelaguen – chicken, shrimp, fish, beef, and deer – all prepared with lemon, salt, green onions, grated young coconut (optional but adds great flavor), and fresh local peppers. Other chasers are the Filipino-influenced lumpia – egg rolls, Japanese influenced sashimi, Hawaiian poki, and the local shrimp patties (fried shrimp and vegetable fritters).

In most homes celebrating their Chamorro village fiesta, there is the western kitchen (where all baked goods and salads are prepared). There is also another kitchen called the “back kitchen” where the barbeques, frying, and other authentic Chamorro dishes are made. After all dishes are prepared and set-up at the fiesta table, the real local cooking begins. These specialty dishes are reserved for the cooks (close families and special friends). The best meats, fishes, and other discreet dishes are specially prepared and served inconspicuously at the “back kitchen”. Immerse yourself in culture at Sagan Kotturan Chamoru (Chamorro Cultural Center) By Josie Moyer

N

estled on nine green acres overlooking Tumon Bay, the Sagan Kotturan Chamoru, or Chamorro Cultural Center, is a community-based art and cultural center that is focused on promoting, preserving and perpetuating the Chamorro culture. Sagan Kotturan Chamoru comprises eight houses, each one dedicated to one of the diverse and unique identifiers of Chamorro culture such as carving, weaving, dancing, chanting, and more. The center is wholly driven by local artists and community members who share a deep understanding of the importance of preserving the Chamorro language and cultural heritage, and offers various educational and cultural programming for island residents and visitors. Under the guidance of local artisans, visitors can learn basic Chamorro weaving skills, cultural dancing and chanting, and observe live demonstrations of carving, painting, and other arts. Other center activities include apprenticeship programs, cultural events, hikes, featured artisan exhibits, educational workshops, arts and crafts sales and visiting cultural communities. The center also features a gift shop and a small museum that houses fascinating artifacts that date back thousands of years. As you delve into Chamorro history and culture during Mes Chamorro, add ‘Visit the Sagan Kotturan Chamoru’ to your list of activities this month. The Center is located at Ipao Point, just up the hill from the Hilton Guam Resort and Spa in Tumon. The Center is open from 11:00am to 6:00pm Monday thru Saturday, and is closed on Sunday and holidays.
