Biba GSS readers! We are pleased to present you with The Chamorro Month Issue in commemoration of the unique culture and heritage that our island people share. Guam has become a melting pot, and the beauty of this is that no matter your ethnic background, if you have come to love Guam, you have come to love all that is Chamorro, from the food to the language. Josie Moyer has done a great job at putting together your go-to guide for enjoying local eats. You can venture to Tumon to enjoy the island night life and then a helping from Terry’s Local Comfort Food. You can hop over to Maite during the day to partake in classic local dishes from Lemai Café like tinaktak or chicken chalikilis. You can even drive down to Anigua to visit the charm of Chode Mart for some of the best local snacks, pastries and lunch plates. These are just a few, so be sure to flip the pages to find where you can satisfy your craving for some delicious Chamorro cuisine. After you’ve pleased your palate, you’ll want to take in the cultural celebrations for the month, and there’s no place better do so than in the southern village of Umatac. Every March, the village community hosts the Guam History and Chamorro Cultural Festival as well as The Humåtak Heritage Walking Tour. There’s so much to share, but you should really just make the trip yourself to truly capture its essence! It’s Chamorro Month. Get out. Celebrate. Be proud of our island!

Biba! MES CHAMORU By Josie Moyer
I
t’s that time of year when we reflect on our island’s history, heritage, and native culture by devoting a month to festivities and celebrations. One of our favorite ways to celebrate Mes Chamoru is to eat Chamoru. Of course we know that no one cooks better Chamoru food than your Nåna, but here are a few places that serve up tasty local flavors. Biba Mes Chamoru!
THE LEMAI CAFÉ & RESTAURANT Since 2008, Arlene Bordallo and her crew at The Lemai Cafe & Restaurant have been serving Chamorro homestyle favorites made from locally grown and sourced ingredients. At The Lemai Cafe you can get your fix of all the Chamorro favorites you grew up with like kadun pika, tinaktak, chicken chalakilis and more. If you’re looking for flavors that go beyond the typical fiesta plate, try the fina’denne’ sardines for breakfast or the pig feet estufao for lunch. Customer favorites include oxtail and taro in coconut milk, tinala katne and chopped steak. Dine-in customers receive a complimentary dessert. Open: Location: Telephone:
Monday–Saturday, 7:30 a.m. to 2 p.m. 673 Purple Heart Highway (Route 8) Maite, Guam 475-6262
LINDA’S COFFEE SHOP For that late night craving for down home Chamorro comfort food, go directly to Linda’s Coffee Shop in East Hagåtña. Winner of the Best Late-Night Dining award for Pika’s Best of 2015, this 24/7 local diner has served generations of hungry after-hour patrons but also pulls in huge breakfast, lunch and afterSunday-mass crowds. “Ninety percent of our customers are locals. If you want to find the food local people eat at home, you can find it here,” says general manager Andrew Leon Guerrero. The best thing about Linda’s is you can order the corned beef fried rice breakfast at any time of the day. The second best thing about Linda’s is you can order everything else on the menu at any time of the day. Open: Location: Telephone:
24-hours, 7 days a week Marine Corps Drive East Hagåtña 472-6117
TERRY’S LOCAL COMFORT FOOD Originally located in Yigo, Terry’s Local Comfort Food relocated to Tumon last year and offers a delectable menu of Chamorro dishes that are not always found in other island restaurants. At Terry’s you’ll find all the staples of Chamorro cuisine such as red rice, kelaguen and barbecue. Terry’s also offers local comfort dishes such as hagan suni, ham hock and mungo beans, ox tail soup and more. Don’t be fooled by its Tumon location–this is no tourist trap. The majority of the patrons at Terry’s are devoted locals who love the savory menu of Chamorro cuisine that restaurant owner Tessie Bordallo developed with an ardent attention to taste, quality and authenticity. Open: Location: Tel:
Monday–Saturday, 11 a.m. to 10 p.m. Sunday, 10 a.m. to 3 p.m. 916 Pale San Vitores Road, Tumon (next to Holiday Resort & Spa Guam) 646-FOOD
CHODE MART For Chamorro snacks, pastries and lunch plates on the go, check out Chode Mart in Hagåtña, but get there early because Chode Mart is not exactly a secret spot. Insiders say to get there between 7:15 a.m. and 7:30 a.m. to find most of the fresh pastries and savory foods out on the shelves. Chode Mart sells pastries and food catered by outside vendors but also prepares their own in-house snacks and foods. The list of freshly baked goods you can find daily at Chode’s is a mile long: empanada, kelaguen, potu, apigigi, calamai, cookies, guyuria, latiya, roskete, pan tosta, assorted cakes and pies, lunch plates, soups and on and on. You can also order your next party platter from Chode’s Food Service, which offers catering for any occasion. Open: Location: Telephone:
6 a.m. to 7 p.m., 7 days/week 125 9th Street, Hagåtña 477-1524

CELEBRATING CHAMORRO HERITAGE: SOMETHING FOR EVERYONE By Joe Quinata
G
uam’s Chamorro heritage is rich and vibrant and to celebrate the Chamorro heritage takes more than a day or two. In fact, it’s a local law that the entire month of March is dedicated to the celebration of Chamorro heritage in Guam. From delicate crafts to melodic island music, language competitions to cultural chanting and dancing to literary works, all encompass the interpretation and presentation of Guam’s history and culture at its finest. The entire island has shifted into gear to showcase every aspect of Chamorro heritage in Guam. Schools have their respective schedules of celebrations. Businesses have modified their advertisements and surroundings to depict island life. And communities have their own unique festivals and events. One such community lies in the southern end of the island. The community of the village of Umatac, or Humåtak as it is locally called, kicks off the month-long celebration with the

Guam History and Chamorro Culture Festival. The festival opens February 27 – 29 and March 4 – 6, and is associated with Guam’s longest running annual theatrical - the mock landing of Ferdinand Magellan. This popular re-enactment depicts the story told by the residents of Humåtak about the generosity of the local people in caring for Magellan and his crew, and the conflict that resulted in the naming of the island – Isla de Ladrones or island of thieves. The people of Humåtak are great storytellers and every year residents gear up as docents to share their stories about the history and culture of their rich and vibrant village. The Humåtak Heritage Walking Tour is self-guided and starts at 10 a.m. and closes at 3 p.m. The festival offers many activities for everyone – delicious local cuisine, carabao rides, evening concerts, and a chance to witness the making of Guam’s only musical instrument – the Bilembaotuyan, a one-string instrument using a gourd placed on your stomach to make rumbling musical tune.

CHANCE I’m Chance, and I love people; especially those who give me massages, peanut butter, and let me snooze in the sun. I have a favorite spot, right behind my ears, that I like to get rubbed. I get along with the dogs and people I've met here, including respectful children of all ages. I would rather not spend my time jogging or wrestling with energetic dogs since I’m a really mellow guy. I need a house full of soft beds, people who like snuggles, and yummy treats! I do really well on a leash but even better if you were at the lead of that leash. Take me home and I promise you will have a loyal friend for life.
