Experience the sights and sounds of Spectra u Free nightly shows on Main Street! The Wharf will come to life twice a night this summer with more than just a light show — it’s described as a “multisensory immersive experience.” The first water-themed 12-minute show will begin at 8:30 p.m. A second show featuring patriotic music will start at 10 p.m. The show features 19 palm trees covered with LEDs. In addition, there is uplighting on the trees, street lighting from the sides of buildings as well as spinning theatrical lights that offer a wide variety of features, including projecting pirate ships sailing down the street. Add to that a massive surround sound system and you have two blocks of pure excitement. While the show does stretch two blocks, it is environmentally friendly. The LED lighting uses very little electricity. The smoke and fog effects during the show are just water mist.

alloons, live music, free kids activities, hot air balloon rides and canine performers catching frisbees — the Ninth Annual Gulf Coast Hot Air Balloon Festival is back and booming with fun activities for all ages. Although balloons are only visible at certain times during the festival because of wind conditions, festival goers can enjoy free entertainment featuring something for every member of the family.

A special kick-off and glow event is planned for June 13 at Tanger Outlets in Foley. Tanger Outlets, the presenting sponsor, will have hot air balloons on display beginning at 6:30 p.m., sidewalk sales, children’s entertainment and opportunities to win prizes from the stores of

Tanger Outlets during this special event. The balloon glow will begin at dusk, weather permitting.

Events

Spread out your blanket, grab an ice cold drink and enjoy a variety of live music daily, from country to rock and roll. Exciting live musical performances will feature acts like The Tip Tops at 8:30 p.m. on Friday night. Be sure to catch one of the many shows by the World Famous Disc Connected K-9 Frisbee Dog Show, a group of highly trained canine dogs rescued from animal shelters. Toss after toss, you will be amazed as man’s best friend defies gravity to catch their prized flying saucers. Pet a baby alligator, dance like a butterfly to fun kid’s tunes, paint your face like a tiger or try a little familyfriendly game of limbo. The free Kids’ Fun Zone offers hours of fun for any age from 2 to 7 p.m. on Friday and 8 a.m. to 7 p.m. on Saturday. Enjoy a snack while you stroll through the Arts and Crafts Village and Retail Marketplace, featuring local crafters, artisans and retailers. View daily demonstrations from crafters and chefs, find a one of kind piece of art or souvenir. Vendors open from 2 to 8 p.m. on Friday and 8 a.m. to 8 p.m. on Saturday. Shuttle

Avoid festival traffic by riding the free shuttle busses from Tanger Outlets. Festival onsite parking is available for $5 per vehicle, per day. Onsite parking passes may be purchased for Friday or Saturday allowing for unlimited access each day of the festival.

Rides

Hot Air Balloon Tethered Rides are scheduled for Friday and Saturday Night. Hot Air Balloons carry passengers up to 25 feet in the air, giving them a bird’s eye view of the festival. Hot Air Balloons are tied to the ground using ropes while passengers experience a smooth ascent and descent in the balloon.

Balloon ride hours FRIDAY AND SATURDAY: 7-8:30 p.m., or until tickets are sold out. A limited number of ride tickets will be sold prior to and during the festival. Operations are weather permitting, winds must be less than 6 mph and stable. Cost: Adults (13+): $20 per person; Children (6-12): $15 per person; Ages 5 and under, pregnant women, or individuals with health conditions: Not eligible. See rider restrictions on the website for full details. No refunds or exchanges will be given in the event of inclement weather or cancellation of balloon rides. How to pre-purchase hot air balloon ride vouchers: Purchase rides at www.gulfcoastballoonfestival.com. Upon purchase, a ride voucher receipt will be electronically sent to you. The electronic voucher receipt must be printed, taken to the festival on your designated ride night and redeemed at the Balloon Ride Tent on the festival grounds between of the hours of 12-8 p.m.

Water Safety Tips When At The Beach

Baldwin County enjoys an international reputation as a fun-in-the-sun vacation destination. However, whether folks come from near or far, they all enjoy frolicking on the county’s 32 miles of beach- and bayfront. Vacationers know they will find short or long-term rental accommodations they can afford and will meet the needs of their families. Once settled in, they are free to enjoy all the fresh seafood they can eat or catch, all the water-related activities they could imagine as well as all the golf, art and entertainment their hearts desire. Visitors to Baldwin beaches should think “beach safety” as well as beach fun. For detailed safety information, visitors should check with their hotel/motel management, city visitor centers and chambers of commerce. Here are some beach safety tips from the Alabama Gulf Coast Convention and Visitors Bureau:

Check The Flags. The beaches within Orange Beach, Gulf Shores and Gulf State Park have adopted the following flag system to alert beachgoers of surf conditions. Flags are posted at all public beach areas and conditions are monitored throughout each day. The absence of red flags does not assure safe conditions.

Drink Plenty of Water. Even if you don’t feel thirsty, your body needs water to keep cool. Avoid drinks with alcohol or caffeine, which dehydrate you.

Protect Your Eyes. Ultra-violet (UV) rays can damage your eyes. Wear sunglasses.

Beware of Heat Stroke. Watch for hot, red and dry skin; changes in consciousness, rapid and weak pulse; and rapid, shallow breathing. If someone shows symptoms, call 911. Keep the victim lying down and cool the body by placing ice packs or cold packs on wrists, ankles, armpits and neck. Wet towels may also be used.

Protect Your Skin. Always wear a sunscreen appropriate for your skin type, paying special attention to face, nose, ears and shoulders. Most people don’t realize how much sun they’re getting until it’s too late. Protect your lips also.

Jellyfish Sting Relief. Use saltwater to wash the sting. Apply rubbing alcohol or vinegar to the sting area. If the victim experiences difficulty breathing or swallowing, seek immediate medical attention.

Sunburn Relief. Soak in a cool bath or apply cold compresses several times a day. Do not apply petroleum jelly or oil-based lotions. Acetaminophen or Ibuprofen may help relieve pain and swelling.

Always wear sunscreen when spending time outdoors. Find sunscreen that is appropriate for your skintype and pay special attention to your face, nose, ears and shoulders.

Summer’s here and the fish are everywhere. Specks are in the waters north of Dauphin Island around most of the usual spots. Use top water early and sinking as the heat rises. Shrimp or plastics will also work on popping corks. Flounder are also inshore in good numbers. All piers, pilings, sand bars, oyster bars, stumps, etc. are suspect. With specks, it’s always best to net your catch. This is so true with flounder. Their teeth are sharp and do cut mono really easy. Slot red fish should be around all the same places as trout and flounder. Popping corks or tight line with a Carolina rig work great. If fishing on the southeastern side of the bay, be sure to try all the rocks around the Fort Morgan boat ramp and the jetties around Gulf Shores Marina — a good place to fish and eat or get some bait if needed. As far as live bait goes, I would try crickets for the specks, bull minnows for the flounder, and shrimp dead or alive for the red fish. You can use any of these baits for any of these fish. Some are just better suited for the fish listed. South of Fort Morgan Boat Ramp is my favorite place on the Gulf Coast. Its known as the Dixie Bar — named after a ship wreck and has a dance named after it. The dance is the Dixie Bar Shuffle. That’s what happens when four adults hook four adult red fish on the Dixie Bar as you drift with the outgoing current at a speed quick enough to almost ski on it. Mixed in with these 20- to 50-pound red fish is always a few kings, some black drum, a couple of ling-cobia and more sharks than you can count. If no game fish are around, try your trout rods with 12- or 15-pound test line with steel leaders and a chunk of fish for bait on the bottom. The smallish Atlantic Sharp Nose Shark will give you a run for your money on these light set ups and can be a blast to catch. They are good to eat as well. If you move north into the Bay you can find our inshore reefs — Shell Bank, Bon Secour, Fish River, Upper Wreck, Zundel and Point Clear all do often hold good schools of specks. They will stay and feed on these

reefs until a carelessly thrown anchor is splashed into the water or a boat motors across the reef or storage lids are slammed shut and any number of things that make noise in the water happen. Then it’s time to move to another reef. All the navigation light towers hold some good specks during the summer months. Specks will be shallow early and later in the day, around the lights at night, but during the heat of the day they go deep. Around all these reefs will be huge schools of white trout. You can catch these guys up to around 18 inches. Their bite and fight are good and they do cook up great. No limits on size or bag yet, but who needs to clean 100 white trout after fishing all day in the sun. Keep what you want but eat what you catch. They don’t freeze well but they fry up great. When you locate a school of white trout, switch to plastics cut in thirds; and put it on the bottom. These guys will bite the bait in another fish’s mouth causing a double hook up on one hook and one piece of gulp bait. There’s one other game fish in great numbers in Mobile Bay and that’s black fish, a.k.a. triple tail. It is a really strong fish that tastes great and fights like a pit bull. Cast live shrimp on a cork about 5 feet deep around single pilings (like channel markers), legs on gas rigs, crab trap bouys, or anything floating in the bay. These fish look a little like the fresh water Oscar but get up to 15 to 20 pounds in the Bay. Smaller ones are more common. They used to be called the newspaper fish. People would spread out a newspaper in the water and form a mat. They follow the mat across the Bay fishing for Triple Tail. Some would use big thick cane poles as well. Marine Police don’t agree with putting the Sunday Paper on the water. It tends to make a mess. Which brings the final words for this day. Please watch your wake, be kind to other boaters, know the licenses laws, know the size and bag limits, keep enough to eat tonight and remember that those red fish on the Dixie are the future of Alabama’s Red Fish. their 53rd wedding anniversary. In 1964 while at Brookley, Don attended and completed Procurement school, and was assigned to Central Procurement as a buyer. In 1965, under the Air Force Institute of Technology, he was assigned to “Training with Industry” at Rocketdyne, a Division of North American Aviation. Then in July 1966, Don was assigned to the Air Force Plant Representative’s Office at Autonetics in Anaheim, Calif., as Chief of the Industrial Management Evaluation Division. No matter where he was, Don went out of his way to further his education. He took courses wherever available, be it on the base or at local community college offering adult education opportunities. He left active duty in February 1968, and joined Hughes Aircraft Company in Fullerton, Calif. as a subcontract administrator. His initial Reserve duty was with the Naval Training Center in Los Alamitos, Calif. After five years an opportunity came about to return to the Gulf Coast. Hughes had teamed with Bath Iron Works to construct the Navy’s newest destroyer, and Don had worked on this program. However, the Navy awarded the contract to Ingalls Shipbuilding, a Division of Litton in Pascagoula, Miss. He interviewed with Ingalls and was hired. He had a month to sell his house, pack up and move. Don worked at Ingalls for 25 years becoming Manager of a Procurement Department, and served as the Small Business Administrator for the company. In May 1974, he received a letter from Air Force Reserve Headquarters asking him to volunteer for a contracting job at Columbus AFB, Miss., for which he would receive pay. Thinking this would jeopardize his work at Ingalls, he threw the letter in the trash. A few months later a second letter arrived advising that he was now assigned to the job he had refused. He called the Reserve Office and said he understood but Columbus was a 300-mile drive and Keesler AFB in Biloxi was 25 miles, and their contracting program was larger. November 1974, Don was assigned to Keesler as a procurement staff officer. He became Mobilization Assistant to the Director of Contracting and Manufacturing for Research and Development, Armament Division, at Eglin AFB in Florida in June 1977. In 1981, he transferred to Warner Robins Air Logistics Cener in Georgia. There he served as Mobilization Assistant to the Director of Contracting and Manufacturing. Sitting in his office one day, he got a call from General Gill (a head of the Air Force Reserves). He was recruiting for a particular position that needed to be filled right away. It called for a candidate with the grade of General. Don, already at the rank of Colonel, was selected for the job and assigned to Wright Patterson AFT in Dayton, Ohio as the Mobilization Assistant to the Deputy Chief of Staff for Contracting and Manufacturing. He was promoted to Brigadier General in 1986. He served for five years and then took retirement from both the Air Force and from Ingalls. This was 1994 at the age of 60. Since Connie always enjoyed Gulf Shores, and had family here, they bought

a lot and in 1993, built a home. In 1995, they became residents. Don says he was blessed throughout his life, and throughout his career. He honestly feels that God played a major role in his life. One of the things now that holds his interest is KAIROS, an ecumenical (all Christian denominations) prison ministry program. It’s a program managed and operated by laymen that Don Roth Don believes does so much good in the prisons and he has seen it actually turn people around from a life of crime. “We simply share Jesus Christ with 42 inmates chosen by the prison Chaplain, and then watch miracles occur.” It’s Don’s way of giving back some of the blessings he’s received. I can’t end this without mentioning Don’s military decorations and awards which include the Legion of Merit, Meritorious Service Medal, Air force Outstanding Unit award, National Defense Service medal, Air Force Longevity Service award ribbon with six oak leaf clusters, and the Armed Forces reserve Medal with hourglass device. He belongs to the Air Force Association, Reserve Officers Association, and was a Certified Professional Contracts Manager. Don and Connie have three children. The oldest is a son, Steve, who’s Director of Sales and Marketing for Bonded Builders, a warranty provider in the southeast. Don and Connie’s daughter, Susan, is married to Brigadier General Roy Robinson, the Assistant Adjutant General of the Mississippi Army National Guard. He recently received his promotion to General, and Don is very proud of him. Having two generals in one family is something to talk about. Susan taught Special Education and gifted children for 28 years, and has just recently retired. Don and Connie’s youngest daughter, Karen, lives in Ocean Springs, Miss., and owned and managed a uniform store in Biloxi until Hurricane Katrina. Her husband, Rick, is a computer analyst. They have invested wisely, and now own and manage several properties. Don and Connie are proud of all their children and grandchildren. I’d like to end this by saying how fortunate we are to have BRIGADIER GENERAL DON ROTH here ON THE ISLAND, and how fortunate I am to be able to call him my friend.

A Zoo of Evolution n Gulf Coast Zoo offers summer activities for kids and adults; zoo prepares to become self-sustaining By Theresa Corbin Summer is rapidly approaching, and school is already out. When looking for summertime activities for the recently released school children, the Alabama Gulf Coast Zoo is the perfect destination. With a petting zoo, a summer camp, and daily summer shows, kids will be in hyena heaven.

The Zoo offers a summer camp for kids ages 5 to 11. "Campers will explore animal life here at the Zoo, partake in animal enrichment activities, meet our zoo keepers and even greet some of our animal residents personally,” the zoo's website says. “They will also participate in age-specific games, arts and crafts projects and special zoo-related events. There will be plenty of hands-on educational and fun activities carried out in a safe and educational environment.” Zoo Director Patti Hall says the goal of zoo camp is to give children an opportunity to have enriching hands-on experience that will help them develop a deeper understanding and respect for animals. The camp will open June 24 and will run through the 28, and registration is now open. But the zoo, with its house of birds and reptile exhibit, also has the potential to be a perfect adult outing as well. Alabama Gulf Coast Zoo is home to hundreds of animals that include both beast and bird. And animal watching doesn't have to be a children only activity.

The Amazing Green Zoo

The Alabama Gulf Coast Zoo is a great place to escape, but it hasn’t always been that way. The Alabama Gulf Coast Zoo made headlines in 2004 when Zoo Director Patti Hall relocated more than 270 exotic zoo animals, a staff and their families to her inland home to wait out Hurricane Ivan (a category 4 storm). The zoo was destroyed, and while rebuilding, it endured two more unprecedented evacuations 10 months later during Hurricanes Dennis and Katrina. In the aftermath of these trials arose a construction project unlike any other in the world. For the first time in history, a zoo will be built from the ground up that is the ultimate in sustainability and will also provide a new, almost entirely hurricane-proof home to the 400 animals that currently live at the Alabama Gulf Coast Zoo. “We aren’t re-inventing the wheel; we’re simply harnessing the green products and practices that already exist and are successful, and applying them here,” said Dennis Thomas, one of the country’s most pioneering theme-park

designers, in a 2011 press release. And the new zoo, set to open this year, will be the world’s first self-sustaining Zoo. Or as Los Angeles-based producers Ivan’s Ark Productions call it in their upcoming series chronicling the Zoo’s green living, the “Amazing Green Zoo.” The Alabama Gulf Coast Zoo became known as “The Little Zoo that Could” when it faced hurricanes and destruction. The Spectra Light Show light and sound spectacular is happening daily with a water show and a patriotic show. The show features 19 palm trees covered with LEDs. In addition, there is uplighting on the trees, street lighting from the sides of buildings as well as spinning theatrical lights that offer a wide variety of features, including projecting pirate ships sailing down the street. Add to that a massive surround sound system and you have two blocks of pure excitement. According to the City of Fairhope’s newsletter City Sketches, the Baldwin Pops Band Independence Day Concert will begin at 7:30 p.m. in Henry George Park. A variety of patriotic music will be played before and during the fireworks display, which begins at approximately 9 p.m. The north end of Fairhope Municipal Park will be open throughout the day and will remain open until no parking is available. The south end of the beach front park and Knoll Park will be available to spectators. Handicap parking will be available near the fountain but will be limited. Those who wish to park in the handicap area should arrive early and plan to stay until the fireworks are over. WABF 1220 AM will be broadcasting the Baldwin Pops concert live for those who are not able to make it down for the concert. Also this year the band, RockSolid, will perform in the South Beach Park at 3 p.m. The group, made up of senior high school students from all over Alabama, has performed at 4th of July celebrations at Lake Martin, Panama City, Demopolis and Huntsville. Crowds of 35,000-plus people came out for three straight days and the shuttle buses sold out of passes for riders. How to treat a jellyfish sting Nothing can ruin your day at the beach quicker than a jellyfish sting. There are more than 60 different kinds of jellyfish that can be found in Alabama waters, but there are only seven common types. The sea nettle, moon jellyfish and cannonball are the most common types you can run into. These jellyfish aren’t very venomous, but their stings can still be painful. There are a lot of myths about how to treat a jellyfish sting, and it can be hard to know what to do to take care of one. This guide will help you know how to treat that sting, so you can get back to enjoying your day at the beach sooner.

Plan of Action

n Get out of the water to avoid getting stung again n Use seawater to flush away stinging cells from the skin n Use a credit card or other sharp-edged object to scrape over the affected area to remove any lodged stinging cells n Treat the area with isopropyl alcohol (40 to 70 percent) or vinegar to inactivate any remaining cells

n Any medication with lidocaine or benzocaine might help with pain and redness

What Not to Do

n Don’t rub the area. Any stinging cells still on your skin will be spread around, making the affected area larger. n A popular myth is urinating on a jellyfish sting will help it. This is not true, and won’t help you feel better so avoid it. n Don’t use freshwater to flush the area. Freshwater can re-activate the stinging cells causing you more pain. n Don’t ignore the pain. If stung over a large area of your body, seek medical attention. For most people, jellyfish stings are a mild inconvenience. For others, it can be life threatening. While most jellyfish off the Alabama coast are not highly poisonous, some jellyfish stings can be deadly. Some people can be allergic to jellyfish stings. Monitor those who have been stung for cardiac or respiratory problems or shock.

Gulf Shores welcomes Acme Oyster House, unveils Waterway Village development On Wednesday, Gulf Shores Mayor Robert Craft and members of the City Council officially welcomed Acme Oyster House® and unveiled plans for a new development. Waterway Village will soon begin to take shape along both sides of the Intracoastal Waterway and a unique downtown atmosphere will transform some of Gulf Shores’ most historic real estate. Its pedestrian friendly design will feature quaint streets with tree-lined sidewalks, inviting seating areas, decorative lamp posts and a waterfront boardwalk offering residents and visitors a year-round destination for dining, shopping and entertainment. According to Acme Oyster House® Director of Business Development, Jeremy DeBlieux, the City’s vision behind Waterway Village served as a major selling point in their decision to bring the restaurant to Gulf Shores. “We have locations in Louisiana and Destin and knew we wanted something in between. Once we visited Gulf Shores and heard the vision behind Waterway Village, we fell in love,” said DeBlieux. “This area will become an entertainment and dining destination and that’s the business we’re in.” DeBlieux went on to say, “I’ve never worked with a local government more supportive and committed to bringing new business to a community.” While the City is committing significant resources to Waterway Village, leaders say the long-term success of the area hinges on the ability to attract private partners.

“We are excited to welcome Acme Oyster House® as the first addition to Waterway Village,” said Craft. The Acme Oyster House® restaurant concept began in 1910 in New Orleans, Louisiana and enjoys the distinction as one of the oldest restaurants in New Orleans. Their restaurants feature New Orleans style cuisine designed and decorated with authentic French Quarter décor including New Orleans Po-Boy sandwiches, jambalaya, gumbo, red beans and rice, and fried seafood. One of the distinguishing characteristics of the Acme Oyster House® concept is the offering of fresh, hand-shucked raw and chargrilled Louisiana oysters. “Our restaurants have established a reputation for providing guests with a festive dining atmosphere,” said Acme Oyster House® owner Mike Rodrigue. “We look forward to bringing this tradition to Gulf Shores and are honored to be a part of such a wonderful community.” Plans for the Gulf Shores location include 8,450 square foot of interior space; 3,650 square feet of exterior covered space and seating for approximately 450 guests. So why not try fueling up with your own café creations? These tasty Pecan Pie Muffins are an ideal solution. As the name indicates, the brown sugar and chopped nuts harken to a pecan pie. But these treats are not so sweet and gooey that you’d feel too weighed down. These muffins, alone, are an inexpensive exercise

in indulgence that’s ideal for a June beachside breakfast or afternoon pick-me-up. So why pair them with a plain old cup of coffee? Instead, try a Frappucino. It’s cool, refreshing, easy to make and equally inexpensive. All you need is coffee, milk, sugar, ice and a blender. Chances are, you already have all of these items on hand. These two recipes would be a decadent way to enjoy café treats without leaving your home or breaking the budget.

Pecan Pie Muffins

2 cups ice 1 cup strong, brewed coffee 3/4 cup milk (any kind) 3 tablespoon sugar or to taste Optional: Whipped cream, chocolate syrup or crushed peppermint candy Brew coffee. In blender, crush ice. Blend all of the ingredients, except optional ingredients) in blender for about 45 seconds or until smooth. Pour into a tall glass. If desired, top with whipped cream and garnish with chocolate syrup or crushed peppermint candy. Makes two 8-ounce glass-size servings.
