REVITALIZE, REVAMP, REVISIT THE BEACH

&

BY CRYSTAL COLE It’s no secret that the largest boon for communities of Pleasure Island is the draw of tourists to its pristine beaches. Year after year, families take their hard-earned dollars and invest them in a vacation filled with fun to Gulf Shores, Orange Beach or Fort Morgan. In recent years, Gulf Shores has opted to invest right back into its beaches and community by following through with the Gulf Place Revitalization Project. “This project will rejuvenate the face of our community and will provide enhanced opportunities to enjoy our entire half-mile of public beachfront year-round,” said Mayor Robert Craft before construction began. “We are excited to be able to make such a significant investment into the quality of life of our residents, the experience of our visitors and the future of Gulf Shores.” The Gulf Shores public beach-front area at the terminus of Highway 59 and Beach Boulevard is one of the city’s most prominent locations and is the center of economic activity for the community. 8 Beachin’ ● June 2018

Before the start of the project, the property offered a variety of activities that range from active to passive beachand water-based recreation. The location is home to festivals and sports events, and provides access to dining, shopping, and other tourism-supported businesses. Annual events held at the public beach attract over 350,000 visitors and generate an estimated regional economic impact exceeding $100,000,000. Public access and pedestrian safety are critical to the economic success of the region moving forward. In an effort to activate, revitalize, and efficiently manage this important community resource the city developed a master plan for redevelopment of the beach-front area known as ‘Gulf Place’. The overall vision of this comprehensive plan is to develop the public beach area into a safe, accessible, family-friendly destination that serves different activities and acts as a catalyst for economic development. “Our main focus was improved access to the beach,” Craft said. “As much as we are aware of economic return on


investment, we’re also very much aware that citizens need a safe and friendly place to go to the beach.” The project has created public beach access areas with associated amenities and parking on the east and west sides of the city’s public beach area. Amenities include a public boardwalk on the beachside of the parking areas and public green space, walking paths, shade structures, restrooms and attractive landscaping. Sustainable and low-impact development strategies are major components of the project, including on-site stormwater management and reuse. Beach dune restoration has been incorporated into the design to provide habitat and protection from storm surge. The project hopes to activate the downtown area through beach connectivity and preserve, enhance and frame important views to the Gulf. It has created public activity areas at the beach and provide a pedestrianscaled environment that is safe and walkable. Craft said this is the first major redo of this area in more than 50 years. At the ribbon-cutting event for Phase II of Gulf Place, Councilman Philip Harris recounted what led to the project’s inception. “This whole process started after the devastation of Hurricane Ivan and Hurricane Katrina and what those storms did to our beach area,” Harris said. “The silver lining there was what we found to be an opportunity to really come together and revitalize a beach district that had way more potential and opportunity than we were utilizing it for.” Improvements included in Phase II include a 20foot wide beach boardwalk, large open green space,

children’s playground, seating and shade structures, improved pedestrian access and safety, improved traffic flow and drop-off locations, new public restroom facilities, environmentally-friendly lighting and attractive hardscaping and landscaping. Councilman Dr. Jason Dyken said the project had showcased what there is to offer in southern Alabama and Gulf Shores, adding he wanted to make sure to get a good return on investment. “We want to be good stewards of the dollars and make sure that those dollars create future revenue to this city so we can continue to grow in a family-friendly way,” Dyken

said. “I believe with this open space and everything that we’ve created out here, it’s going to be a new city-central area here at the beach.” Looking forward, Phase III has already begun to be bid out. It will include a continuation of the 20-foot boardwalks, more shade structures, dune walkovers, a large parking lot as well as a mixed-use building which will house public restrooms and a police substation. “Our public beach is one of the most important resources we have in our community,” Craft said. “This project will connect our entire half-mile of public beachfront through safe pedestrian- and bike-friendly routes and will provide 10 Beachin’ ● June 2018

significantly enhanced opportunities for our residents and visitors to enjoy this area year-round.” Over the years, tweaks were made to the plan and obstacles had to be overcome, like the BP oil spill of 2010 which all but halted tourists from the area. The city leaders and citizens never lost sight of their vision and the value the project could bring. “We enacted the plan and we voted to spend the money, but you were the folks that got involved,” Harris said. “You showed up at meetings. You emailed us input. You came to town meetings. This is really your plan that we have executed.”

I like taking calculated risks. I’m one of “those people,” with that philosophy of what is life without taking a little side trip to adventure every now and then? Highest, fastest roller coaster in the world? I’m there. Sky diving? Never tried it but sign me up. I’m a walking contradiction who gets skittish when the spotlight hits me but will take a deep breath and jump off the edge of anything. No matter if my heart is pounding, no matter if my palms are sweating, let’s take that risk. My heart was pounding when I arrived at The Wharf one morning, preparing to head into Gulf Coast Adventure, my trip booked on Hummingbird Ziplines. I had never ziplined before in my life, so I won’t lie: I was a little nervous, no idea what to expect. I was also excited, because I was about to find out what to expect. What I found was beyond anything I was thinking. Hummingbird Ziplines was once located at the Gulf State Park, and recently has been moved to The Wharf in Orange Beach. The course is now longer and faster than the original, with eight towers and covers over 6,000 feet, with towers going up to 115 feet. A full trip with ten participants takes two and a half hours, giving each person the trip of a lifetime. During my trip I was with three others, but make no mistake during the tourist season trips will fill-up fast. Our guides were Drayton Rodgers and Tripp Hughes, with some assistance from Course Manager Kyle Shepard on tower six: more on that tower’s uniqueness later. Upon meeting Drayton and Tripp, a few things were instantly clear. They love what they do, they’re knowledgeable about what they do, and they want to share that love and knowledge with everyone who books a trip with Hummingbird Ziplines. The pair were at ease while being alert, cracking jokes with each other and the guests while answering all questions

put their way. For anyone who has never ziplined before, the guides at this place will do what they can to make you feel comfortable and ready to take the plunge. The course begins with your guides helping get everyone geared up, which as a newbie I was grateful for the assist. Afterwards, you’re all led outside and set up on a tiny practice line that’s close to the ground. Here the guides get everyone to zip, showing them how to steer while suspended and teaching everyone how to brake. Then it’s up the first tower, and the fun really begins. I was feeling pretty confident after the practice run, and then suddenly you find yourself up in the trees, staring down to another tower in the distance. Then you’re being attached to the line, and suddenly the edge is there. For a minute, most people would begin wondering why exactly they’re strapped up to a line overlooking a drop off. Bear with me for a short story break. When I was sixyears-old, I was at a theme park with my parents. It was a park I had been to before, but now, for the first time, I was tall enough to ride the adult coasters. Staring at that loop, I was crying my eyes out. My parents sat me down, told me that they wanted me to try it just once, to take that chance and see if I enjoyed it. If I didn’t try I’d never know. That didn’t stop the tears, but they got me on that coaster. The second it was over I was begging them to go again, and I did run and get right back in line to do it one more time, no more tears. Ever since then, I’ve lived my life remembering that moment. If you don’t try, you’ll never know. (Note to parents, this trick doesn’t always work, every child is different! I have friends who still get nervous to hear their parents say, “Hey, we should try this!”) So with that memory, I awaited my guides signal to go, lifted my feet, and suddenly I was sitting in air, sailing June 2018 ● Beachin’ 13


downwards to the next tower. It was exhilarating. Trees were all around me, even under my feet. Wind was coming at my face, blowing my hair back and giving me the perfect view of nature all around me. It was defying gravity if only for a few seconds, and it was wonderful. All nervousness was gone, all fear was replaced by the rush and realization that this is, after all these years, falling with style, and a very protective harness. One guide always remained at the tower to set people up and send then down the line, while the other guide would go first and be there at the next tower to signal slowdowns and welcome everyone. Throughout the course, you’re taken through sprawling forests, by the Intracoastal Waterway, and through a Federally-protected wetland, which was one of the most breathtaking parts to me personally. I have been to The Wharf on many occasions, but I never imagined seeing it from this angle. Zipping through the surrounding forests, free falling on my way from one tower to the next, trees passing by and waterways down below. It was beautiful, the feeling of complete and total freedom and mastery of the air. Oh, and tower six? You arrive there racing. There are dual-lines at that point in your trip, and you and one other person are each strapped to one, then the guide counts down and you’re off to see who can make it to the next tower the quickest. That’s a lot to do with wind speeds and direction and science, but it’s one of the most fun friendly-competitions I’ve ever had. To top it all off, not only do you have guides who are fun and knowledgeable, secure lines and equipment to keep you protected on your journey, and gorgeous scenery, but your adventure is all captured for you to remember forever. A photographer comes along for the ride, zipping ahead of the group to take photos as you zip from one line to the next. Chase Brown accompanied us, and with as much wit and knowledge as the guides, the pictures came out amazing. Not only do you get to make memories, you also get the chance to share them with others later. Ziplining is an amazing adventure, and Hummingbird Ziplines has it all. Great staff, beautiful location, safe and secure lines, and some of the most fun you can find on the Gulf Coast. Check it out for yourself to have the adventure of a lifetime.

Jean McKee

Painting a life she loves BY ALLISON MARLOW In 1973 Jean McKee earned her dental hygienist degree. Though she doesn’t currently practice she is diligent about keeping her license and credentials up to date. She knows she is lucky to make a living doing what she loves. She keeps her practical career at the ready, just in case. “I’ve always made art, in high school and when I worked as a hygienist. I learned pretty quickly that I could stop my day job and focus on art, and that’s what I did,” she said. McKee took her art on the road and became a regular on the outdoor art show circuit, traveling between Mississippi, Atlanta, Miami and everywhere in between. Here her toddler son played behind the display tents, the artists looked out for each other. Everyone was like family. Though her early works, some of her favorite works, she said were done in watercolors, the heavy frames were too much to lug between shows. Glass broke, often. McKee switched to acrylics on gallery wrap canvas that looks as good without a frame and mat as it does with. Her works are brightly colored, coastal scenes: boats cruising along glistening water, shore birds dipping their beaks into the waves and even alligators waiting in the murky deep. “The U.S. has a big coastline and it appeals to me and it appeals to lots of other people too,” she said. “It seems to be a universal theme that people just love to buy and have in their home.” Her most popular works are scenery pieces that depict popular 18 Beachin’ ● June 2018

local hangouts along Alabama’s Gulf Coast: Pirate’s Cove, the Flora-Bama, the Keg restaurant and others. “People want to take a memory home,” she said. “These paintings are frozen moments at places that they love.” Over time, McKee began moving her art into galleries and cutting the number of shows she did each year. Now she only appears at Shrimp Festival in Gulf Shores and the Fairhope Arts and Crafts Festival. The culture of family and fun that she grew to love on the road has largely disappeared, she said. Many festival organizers have made it difficult for artists to earn enough at a festival to cover their travel expenses, let alone a profit. Each of McKee’s works is bright with a dazzling mix of colors, never hemmed in by trends of dark or mundane color schemes. She paints with joy you can feel. “I have tried to do what’s popular now, the mix of grey and beiges but that doesn’t make me happy,” she said. “I like to paint with bright colors. And I think it looks great to have a big spot of color on the wall.” While she take her annual break from the canvas again this year to practice her dental hygienist skills, McKee knows her art, and her fans, will be waiting. And for that, she is thankful. “Painting is what I really enjoy doing more than anything else and it has been very good to me,” she said. “It’s good to be able to make a living on something you really enjoy doing.”

It was a beau�ful summer morning when we le� Fairhope, low humidity and not a cloud in the sky. We were on our way down to Orange Beach to check out a business that many of our friends have told us about, this Englishman who had opened a Hair Salon on the beach with his daughter Emma. My hair is very important to me and ge�ng a good haircut is a must, and that is what Anthony Jones is known for and excellent hair color to boot. We have both been very dissa�sfied with the last few a�empts on designing our hair to suit our lifestyles; most of the so called stylists did not take into considera�on our age or understand that we both want to look great without a lot of fuss and bother. The traffic was a bit heavy due to the summer visitors, but we arrived on �me to this charming yellow and white beach house on the beach road with a fabulous view of the Gulf of Mexico. We were greeted warmly by Anthony and Emma and they ask us if we would like a cold drink or a glass of wine before he started making us beau�ful. Pam, my friend, went first since I was a li�le chicken a�er the last experiences. Anthony directed her to a styling chair and went on to explain the ten most important rules in designing a custom hairstyle to suit her. He first looked at her face shape and explained that there are five face shapes out there and told her her face shape was oval. The next was bone structure and head shape, a�er that was the type of her hair, the texture of her hair, then what sort of condi�on her hair was in, followed by the way the hair grows out of the head, plus cow licks, then her likes and dislikes and fashion. Wow! What a lot of things to get right. So then Emma started with a relaxing shampoo and deep condi�oning, then for the next 30 minutes Anthony’s hands were a sea of mo�on, lastly a quick blow dry with hardly any fuss and presto she was finished! She was so happy and she could not believe the difference in her hair. Now it was my turn, my hair especially in the summer gets 20 Beachin’ ● June 2018

very frizzy and dry; I have tried everything out there for my hair with no success! Anthony explained that commercial hair products are made different to professional hair products. Commercial shampoos are made of mild detergent and the condi�oners are based on petroleum oil. Where professional hair products are pure and natural and give back to the hair, he also went on to say that we should all wash our hair every day and condi�on our hair the same. Anthony explained that at all �mes our hair has to have at least 8% moisture in it the same as our skin, we should treat our hair the same way as we treat our skin, by moisturizing it every day which made a lot of sense to me, since the last stylist told me not to wash my hair every day because in her mind it would dry it out. Anthony explained to me that yes using some drug store products would dry your hair out if washed daily. A�er we went through the ten rules, he took me to the shampoo area and treated me to the best shampoo and condi�oning my hair had ever had. While shampooing, Emma explained to me what I should do in the morning in the shower, again stressing no over-thecounter hair products, that’s why my hair is dry and frizzy. A�er shampooing and before condi�oning, towel blot the hair because the hair is porous like a sponge, pu�ng any condi�oner on one’s hair when it is full of water will not go into the hair itself, so blot it first then apply the product and leave it in while you are washing yourself. Then before you leave the shower, rinse and count up to 10 slowly and stop, just rinse the excess and no more. A�er she explained to me the hows & whys, I understood. They are like hair doctors, if we listen and do what they says it works! Anthony has his own line of products and everything he used on me was his and believe me the stuff works. The cut he gave me was wonderful; I walked out a new woman and so did Pam, no more frizzes! Oh, by the way he used a great product before he dried my hair called “POTION.” It is a gel with a lot of healing features with body, fabulous! I bought a bo�le. Best money we ever spent and yes, we are definitely going back. He is a true professional.

FREQUENTLY ASKED QUESTIONS 1. Tents (no larger than a 10x10 ft.) are allowed on the beach, but they have to be placed behind (North of) the designated sign marker post and should be removed before night. Tents cannot be placed between the sign post and the Gulf of Mexico. This is for designated emergency and safety access.

2. Pets are not allowed on the beach on the Gulf of Mexico or surrounding islands (Robinson, Bird, Walker). However they are allowed at the designated city Dog Park on Canal Rd. (Hwy 180) next to Sportsman Marina. All dogs should remain on a leash within the city limits.

Beach Happenings GULF COAST ARTS ALLIANCE OFFERS KALEIDOSCOPE SUMMER FINE ARTS CAMP AND CLASSES

u m s mer a masterpiece s i h t e k a M National and regional teachers, musicians, visual artists and dancers will all come together to create another unique and fun experience at this year’s Kaleidoscope Summer Fine Arts Camp June 25 - June 29. Sponsored by the Gulf Coast Arts Alliance and the First Presbyterian Church of Gulf Shores, the camp is designed to not only showcase the talents of performing and exhibiting artists, but also to share the journeys which led to their careers in the fine arts arena. Students are able to select class preference for several hands-on workshops, and all will enjoy several live, professional, performances throughout the week, including pianist Kayla Dowling, a special appearance from the University of Alabama Summertide cast of “Pump Boys and Dinettes,” and more. Also appearing this year for the first time will be renowned cellist Della Grigsby. She is a favorite along the Gulf Coast, as she has an exceptional ability to demonstrate the great versatility of the cello like no other. Beginning study of the cello at the age of nine, Della went on to study at the Berkley School of Music and has performed internationally on four of the seven continents. She has played with symphonies, small ensembles, jazz bands and even rock bands in various

locations around the world, including the Long Beach Symphony Orchestra, the International Celtic Music Festival in France and at the Great Pyramid of Giza, Egypt. She is proficient in many realms, including classical, jazz, new age, rock, Celtic and Latin music. Grigsby loves introducing young people to the cello. In 2015, she was selected to teach at the Festival International de Musica Loja in Ecuador, where she was the instructor for 25 students who branded the technique master class, “The Rockin’ Cello Orchestra”. Grigsby has always been fascinated by rhythm, and it shows. “Having had the privilege of performing with Della,” says camp director Pam Winstead, “I would say that she has turned this fascination into an ability to play the cello with what might even be called spunk, and then, when the mood changes on the next piece of music, she plays with soulful beauty. The students at our camp are in for a big treat with both Della’s personality and her performance.” Daily hands-on classes, taught by professional artists and instructors, will include a choice between several genres including visual art, dance, writing, music and drama/theater classes.

Décor on the Shore POINTE CLEAR COTTAGE BY MARY MESSER

C

oastal living comes in many designs throughout Baldwin County’s Sandbox. From a timeless beachfront cottage that has existed through many hurricanes or a condo complex with Gulf views, along the bays and through Bon Secour Inlets, Magnolia Springs where the mail is still delivered by boat to homes on Mobile Bay. It has been such a pleasure to work throughout these areas for 16 years. For the next several months, I invite you to come along with me as we visit some of these locations. Our first stop is Pointe Place Cottage located in the sought-after community of Point Clear. Upon arrival we will be welcomed by Howie, as he sits on the stained concrete and Old Chicago brick porch, taking very seriously his responsibility of greeting guests. 32 Beachin’ ● June 2018

As it is dusk when we arrive, the gas lantern and eve lighting enhance the board and batten exterior, the front porch solid wood stained columns, the exposed rafter tails around the eves, and operable shutters embracing tall double hung windows. Trellis over the garage doors enhances the cottage Messer feel of this home. Various tones of grays and browns were selected as the owners and I poured through color swatches that would complement our selection of brick. As we enter through the double mahogany front doors you will notice the tall ceilings and windows along with hardwood floors enhancing the ambiance of the open space of the living area, kitchen and dining room.


Built-in cabinetry to the ceiling with glass doors above surround the kitchen features including a double island with a built-in banquette and cooktop underneath a beautiful modern hood. Let’s step into the Master Suite with its custom made furnishings created for us by Big Fish Trading Company. We enter the master bath through its pine stained barn door to find custom framed mirrors and cabinetry under lighting enhancements. Two more bedrooms and a bath are located off the living area, with coastal design welcoming family and guests. On our way to view their home office we pass the pine stained barn doors which open into the kitchen pantry with build in cabinetry. Across from it is laundry and a powder room before peeking into the double garage. This is where we lose the guys as the owner shows off his “tool keeping, work room, man cave” located behind the garage. We exit through the dining area into a large screened porch that includes an outdoor kitchen and fireplace looking onto the courtyard and inviting pool area.

Throughout this home are furnishings selected from several establishments in Baldwin County. Although both have very demanding jobs, this couple’s afternoons and weekends were filled with fun times of shopping for local art, which is proudly displayed throughout their home. If you’re in the area at supper time and you come upon a golf cart with all the lights, bells and whistles on it, and the couple are waving and smiling, you can know it’s the funloving owners of Pointe Clear cottage heading to a local establishment to dine. A nationally acclaimed Interior Designer, Mary’s talent is displayed in recognizable designs of residential and commercial properties across the Southeast. 34 Beachin’ ● June 2018

Gulf State Pitcher Plant Bog in full bloom BY ALLISON MARLOW

It’s tough to be a bug on the Gulf Coast. One day you’re just flying along peacefully, you land on a beautiful plant below. You’re enjoying the fresh summer breeze and boom. You’re lunch. Such is the fate of any small insect that decides to rest upon the mouth of the pitcher plant. The exotic looking, vase-shaped beauties are native to the U.S. and southern Alabama. Several of the 80 varieties are considered endangered.

While the bogs are highlighted on hiking trails in many parks around Baldwin County, including Weeks Bay and Graham Creek Nature Preserve, there is a tiny bog hidden in the backcountry of Gulf State Park too, and it is beautiful. Here the pine trees towering above the bog are still black and charred from previous prescribed burns that help keep the bog in check and give the pitcher plants room to grow and spread. Fresh deer tracks are stamped into

the muddy trail that weaves between the plants. The drought has sucked the water from much of the bog, which typically would be mushy and soft under our feet. Dragonflies hover over the plants and dart away. The tiny dive bombers have been recorded at speeds of up to 45 mph, says Park Assistant Naturalist, Kasie Mobley. And at our feet is what we came to see, the pitcher plants. Here the white varieties with purple veins pop through the grassy undergrowth. If June 2018 ● Beachin’ 37

you look closely you can see a spider trapped inside the long, thin cone. Kelly Reetz, the park naturalist, said the pitcher plant lures its victims in with a toxic chemical that basically intoxicates the insect. “I’ve seen a honeybee unable to fly when we tried to free him from a pitcher plant because of the toxins,” she said. Tiny hairs on the inside of the funnel make sure that the victim is unable to crawl out. Enzymes inside the plant digest the bug. Reetz cuts open the stem of a dying pitcher plant. Inside are the exoskeletons of its previous meals and, a surprise: a moth grub crawling and scooting around in absolute delight. The Exyra semicrocea, or pitcher plant mining moth, is resistant to the toxins and instead makes its home inside the plant. In doing so, the pitcher plant becomes browned and paper thin. It’s once regal crested pitcher droops and falls while the grub inside grows fat and prepares to turn into a moth. Not all encounters with the pitcher plant are dooming for insects though. The plant grows a curious-looking purple flower that is complete with a landing area and a protective overhang to keep bugs from falling into the pitcher. Here the bugs that may soon become a meal will first help pollinate their captor. It’s a tough world indeed.

Bronzed Yellowtail Snapper with Citrus Beurre Blanc Sauce My sister, Laurie, who has lived in Montana for most of her adult life, finds refuge from the coldest three months of winter with her husband and her four enormous dogs on Boca Grande, an exquisitely beautiful barrier island between Fort Myers and Sarasota, Florida. Known for its tarpon fishing, Boca Grande’s Gulf waters are turquoise, with pristine white beaches stretching for miles. The quaint coastal town sports the demeanor of what I call “Old Florida,” with mom-andpop stores lining the quaint streets as well as one of my favorite restaurants, the Temptation. Bronzed Fish with a Citrus Beurre Blanc is a Temptation specialty and one of the tastiest ways to enjoy Gulf fish. This is my humble homage to the Temptation and all the wonderful Old Florida restaurants along the Florida Gulf Coast. Serves 6

Bronzed Fish Seasoning

1 tablespoon white pepper 1 tablespoon freshly ground black pepper 1 tablespoon granulated onion 1 tablespoon granulated garlic 1 tablespoon dry mustard ½ teaspoon cayenne pepper 2 tablespoons paprika 1 tablespoon smoke paprika 2 teaspoons dried thyme 3 tablespoons sea salt

Citrus Beurre Blanc Sauce

2 tablespoons finely chopped shallots 1 garlic clove, finely chopped ½ cup champagne or dry white wine ½ cup fresh orange juice ¼ cup fresh lime juice ¼ cup fresh lemon juice 1/3 cup heavy cream 1 cup (2 sticks) unsalted butter, chopped into cubes ½ teaspoon sea salt ½ teaspoon white pepper ½ teaspoon sugar 1/8 teaspoon lemon zest 1/8 teaspoon lime zest 1/8 teaspoon orange zest ½ cup extra-virgin olive oil 6 yellowtail snapper fillets, 6 to 8 ounces each


To make the seasoning:

1. In a small bowl, combine all the seasoning ingredients together and set aside.

To make the sauce:

2. In a saucepan, combine the shallots, garlic, champagne, orange juice, lime juice and lemon juice. Cook over medium-high heat until the liquid has reduced to an almost syrupy consistency. Add the cream and cook until it has reduced some more and is slightly thickened, then reduce the heat to low. 3. Add the butter a few cubes at a time, whisking first on the heat and then off the heat. Continue whisking the butter into the sauce until the mixture is fully emulsified and has reached the consistency of a rich sauce. 4. Season with the salt, white pepper, sugar and zests and stir together. Keep the sauce warm by leaving it in the saucepan on the back of the stove until ready to use. 5. In a large heavy skillet (10 – 12 inches), heat the olive oil over medium-low heat. 6. Season the fish with the bronzed fish seasoning until lightly coated all over. 7. Cook the fillets in the skillet until lightly browned on the first side, two to three minutes, then flip to cook the other side until lightly brown. 8. To serve the fish, place all the fillets on a serving platter and generously top with the sauce, or plate

each fillet individually and top with sauce.
