Let the begin at the “Super” Bowl Chili Cook-Off

or over 20 years, the Flora-Bama has invited chili masters from all over to it's annual “Super” Bowl Chili Cook-off to raise money for the American Cancer Society. Under the tent at the famous Flora-Bama, teams of three will concoct their best chili recipes to win the cut-throat contest for the best chili ever. The winner of the competition will receive an award at the end of the day that has been handed down from past chili masters. If you don’t want to cook the chili, come by and sample the wide variety of masterpieces. The judges of the Cook-off range from celebrities to chefs to local figures. “We have different judges that we bring in every year,” said Jenifer Surface-Ivey, marketing director
for the Flora-Bama. “We kind of mix it up. It could be anyone from a Food Network star to a local mayor. It's never the same and we switch it up all the time.” The event has grown to be one of the biggest fundraisers the Flora-Bama hosts. “We raise over $5,000 every year,” said SurfaceIvey. “Last year we raised over $6,000 to give to the American Cancer Society. They are always here for the event and they are very hands on and awesome to work with.” All proceeds from the Chili Cook-off sign up and

Snowbird Fest
returns to the Gulf Coast
E
ach year, the Snowbirds visiting the Gulf Coast congregate for Snowbird Fest in Orange Beach. Snowbirds enjoy free entertainment, samples and the opportunity to get to know local businesses. Local restaurants, lodging companies and other services aim to cater to the population of snowbirds that are visiting the area. Past Snowbird Fests have featured RV expos, health and fitness expos and boating expos. Each year is different, from the entertainment to the attractions. There will be a variety of exhibitions including insurance companies, golf, vacation rentals and fishing. Snowbirds are encouraged to enter raffles to win giveaways, arts and crafts, local restaurant samples and games. Snowbird Fest is organized and produced every year by The Snowbird Company. There is also an event held annually on the South Carolina coast. “It is our goal to thank our beloved Snowbirds for choosing our coasts to spend a part of their year to call our home their own and enjoy the Southern hospitality that comes along with our scenic coasts.” The 2015 Snowbird Fest promises to be just as exciting as last year's, with great entertainment, delicious food from local hot spots, fun giveaways and door prizes and more exhibitors than ever before. The Snowbird Company is also bringing back the popular car show held on the grounds of the Orange Beach Event Center at The Wharf during the event. Snowbirds are be able to pre-register online to attend the free Orange Beach expo now.

Anthony Jones ... Well Worth A Visit! Voted The Best Salon in Baldwin County in 2014
It was a beautiful summer morning when we left Fairhope, low humidity and not a cloud in the sky. We were on our way down to Orange Beach to check out a business that many of our friends have told us about, this Englishman who had opened a Hair Salon on the beach with his daughter Emma. My hair is very important to me and getting a good haircut is a must, and that is what Anthony Jones is known for and excellent hair color to boot. We have both been very dissatisfied with the last few attempts on designing our hair to suit our lifestyles; most of the so called stylists did not take into consideration our age or understand that we both want to look great without a lot of fuss and bother. The traffic was a bit heavy due to the summer visitors, but we arrived on time to this charming yellow and white beach house on the beach road with a fabulous view of the Gulf of Mexico. We were greeted warmly by Anthony and Emma and they ask us if we would like a cold drink or a glass of wine before he started making us beautiful. Pam, my friend, went first since I was a little chicken after the last experiences. Anthony directed her to a styling chair and went on to explain the ten most important rules in designing a custom hairstyle to suit her. He first looked at her face shape and explained that there are five face shapes out there and told her her face shape was oval. The next was bone structure and head shape, after that was the type of her hair, the texture of her hair, then what sort of condition her hair was in, followed by the way the hair grows out of the head, plus cow licks, then her likes and dislikes and fashion. Wow! What a lot of things to get right. So then Emma started with a relaxing shampoo and deep conditioning, then for the next 30 minutes Anthony’s hands were a sea of motion, lastly a quick blow dry with hardly any fuss and presto she was finished! She was so happy and she could not believe the difference in her hair. Now it was my turn, my hair especially in the summer
gets very frizzy and dry; I have tried everything out there for my hair with no success! Anthony explained that commercial hair products are made different to professional hair products. Commercial shampoos are made of mild detergent and the conditioners are based on petroleum oil. Where professional hair products are pure and natural and give back to the hair, he also went on to say that we should all wash our hair every day and condition our hair the same. Anthony explained that at all times our hair has to have at least 8% moisture in it the same as our skin, we should treat our hair the same way as we treat our skin, by moisturizing it every day which made a lot of sense to me, since the last stylist told me not to wash my hair every day because in her mind it would dry it out. Anthony explained to me that yes using some drug store products would dry your hair out if washed daily. After we went through the ten rules, he took me to the shampoo area and treated me to the best shampoo and conditioning my hair had ever had. While shampooing, Emma explained to me what I should do in the morning in the shower, again stressing no over-the-counter hair products, that’s why my hair is dry and frizzy. After shampooing and before conditioning, towel blot the hair because the hair is porous like a sponge, putting any conditioner on one’s hair when it is full of water will not go into the hair itself, so blot it first then apply the product and leave it in while you are washing yourself. Then before you leave the shower, rinse and count up to 10 slowly and stop, just rinse the excess and no more. After she explained to me the hows & whys, I understood. They are like hair doctors, if we listen and do what they says it works! Anthony has his own line of products and everything he used on me was his and believe me the stuff works. The cut he gave me was wonderful; I walked out a new woman and so did Pam, no more frizzes! Oh, by the way he used a great product before he dried my hair called “POTION.” It is a gel with a lot of healing features with body, fabulous! I bought a bottle. Best money we ever spent and yes, we are definitely going back. He is a true professional.

on fishin’ with Phil Dortch T’was the night before a big day of fishing with my buddies, and all through the house not a creature was stirring, not even my spouse. New line on the reels, tackle box stuffed full with the latest and greatest baits, boat loaded, and I was just waiting for sunrise and the gang to show up. I hardly slept a wink with the excitement of good things to come. We started out the drive and heard such a clatter. My buddies all shouted, “Hey, what’s the matter?” We had a flat tire, springs rusted in two because we forgot to raise the engine. Stuff like that has happened to all of us and though it’s sad to say, it was likely caused by poor maintenance on our part. Two words we are all familiar with are: hope and despair. They go hand in hand with fisherman. It doesn’t matter how well the fish are biting, without a good trailer and properly maintained equipment, you can’t get to the water. With all that said, let’s discuss some check points and products that have been successful for me. Winter is a good time to address maintenance issues. • Check the grease in your trailer hubs on a regular basis. Water can ruin your grease, causing bearings to fail. A simple grease gun and buddy bearings can save a disaster. • Flat tire, no jack or lug nuts rusted? No problem with a little forethought. If you have a tandem trailer, buy a portable tire ramp to simply drive the good tire on, thus raising the flat tire off the ground. “Trailer-Aid” is one I found on the internet that makes jacking up the boat a breeze. • Stores like Harbor Freight and others carry a 1/2inch electric impact wrenches with lug nut size sockets. In your spare time, loosen a few lugs at a time and spray with a good rust preventative. No need to jack up the boat and it only takes about 10 minutes to grease all the studs. • Be aware of tire pressure. It will vary depending on temperature. Incorrect tire pressure will cause advanced tire wear. • Wash salt off underside of fenders and springs. Saltwater fishing is my favorite, but salt is not a friend of your equipment. • Flush the engine every time when finished no matter how late you get home. Leave the outboard motor trimmed down to allow the water to drain to prevent freezing. • If your boat has a fresh water wash down tank, don’t forget to drain it before winter. • Check light connections. Nothing is worse than leaving the boat ramp after dark to discover your lights don’t work, usually due to corrosion. • I personally use my boat year-round and like to keep my fuel tank topped off. I only use 100 percent fuel and still occasionally use an additive just to be sure. If you use gas with ethanol, be sure to use an additive. Water in the gas tank will shut you down. I know from personal experience. Water can come from a variety of sources. A bad gas cap, service station, ethanol or condensation.
• Change the water separator at least once a year and carry a spare and a wrench to remove the old one in case of an emergency. As an extra precaution, I installed a water separator with a valve on the bottom allowing me to drain any water if needed. I also installed a spare bilge pump with an automatic switch in case my primary pump malfunctioned. • Without good batteries, your boat could end up dead in the water. Never run on both batteries thinking you will charge both while running. I had to be towed in during a storm in an old Sea Ray I/O because the alternator failed thus draining both batteries. I have used two gel type batteries for three years without charging either. They are more expensive, but well worth the peace of mind. If your boat sits out, you may want to pull the drain plug to eliminate accumulating rain water. • Be sure to replace the plug before launching next trip. Yellow stains on the hull are impossible to rinse off with soap and water. Hull cleaners such as “The Works or Bar Keepers Friend” work miraculously, but also remove the wax. A product that seems to work to prevent yellow staining is “Aerospace Protectant 303.” Now that all the necessary stuff is done, let’s go fishing. Referring back to my past records, January fishing around the Sand Island Lighthouse provided some good ground mullet. Sheepshead started to show up around Fish River Reef and Perdido Pass. A slip cork with live shrimp, fiddler crabs or ghost shrimp work well when fishing around rocks. One of my favorite recipes is Stuffed Sheepshead Florentine. However, any fish will suffice.
Stuffed Sheepshead Florentine Ingredients • 8 fish filets • 1 package fresh or frozen spinach • ½ onion chopped • 3 garlic cloves chopped • 3 mushrooms sliced • Old Bay seasoning • Salt • Parmesan cheese • Butter • Lemon juice • Parsley flakes (optional) Preparation Saute onion, garlic and mushroom.
Cook spinach and mix with sauteed ingredients. In a Ramekin (small glass or ceramic bowl) spray with Pam and place one filet. Top filet with mixture. Season as desired then add second filet. Sprinkle with parmesan and garnish with parsley flakes. Bake in oven uncovered at 350 for approximately 15 minutes or until flaky. Spoon butter and lemon juice over filets. Serve in individual Ramekins.

ear after year, we count down as the ball drops and we cross the threshold into a new year full of hope. We promise ourselves things will be different this year. We will do better and be better in this bright and shiny new era. And resolutions are made with all the best intentions. But according to Forbes magazine — and life experience — by February, most of us will have failed at our attempts to be resolute in the new year. Despite the fact that many of us have tried and failed at being better in the new year, most of us will pick ourselves up, dust ourselves off, and try, try again. This is a great attitude and the first step in sticking with the promises we make to ourselves for the new year.

10 tips to stick with a new year’s resolution 1. Commit to Change for ____ Amount of Time.
Since the 60s, the myth has spread that it takes precisely 21 days to form a habit. Sounds good, right? It's is not so long that you will lose hope, but long enough to seem plausible. The problem is that it is not exactly true. Phillippa Lally, a health psychology researcher at University College London, found that it takes on average 66 days to form a habit. But explains in her study published in the European Journal of Social Psychology that each person is different. You know how adaptable you are, so set “x” amount of days to break a old habit or create your new habit. And stick to it for that amount of time. At the end of the designated time frame, see if your new habit feels like second nature or if the old habits is a distant memory. Then adjust the time as needed.
2. Don't Jump In
Make one change at a time. Like the frog that jumps out of the pot of boiling water, you too will most likely go back to old ways if you go all in, all at once. Gradually turn up the heat by implementing small changes for your habit forming period. Then do more if you feel comfortable. And increase your efforts until you have reached your goal.
3. Use the Buddy System
Find someone who has the same resolution goals as you and make a pact. You don't have to sign it in blood, but you do have to agree to hold each other accountable. Going it alone is not as effective as having someone to compete with, challenge you, and to check in on your progress.
4. Trade Up
Swap bad habits for good habits. This is obvious when it comes to dieting (replace junk with healthy snacks), but if you are trying to watch less TV, you are going to need something to fill that time. You need to swap your too much TV watching for something more productive like playing a game with the family, reading a book, or taking a walk. Many people use these bad habits like watching TV as a way to relax, find another more productive or healthy way to achieve the same result.
5. Don't Quit Because You Fail
We are imperfect beings and will mess up along the way. But remember that change takes time and will certainly mean that you will have to pick yourself up one, two, three or even 100 times if you fall. Don't quit if you mess up. This may seem obvious, but too many people automatically quit a diet, or exercise program when they slip up. If they had gotten back to it, they would have eventually reached their goals. The only failure is quitting.
6. Reward Yourself for Accomplishments
Set milestones and reward yourself as you reach them. Positive reinforcement can be a powerful motivator. Just remember not to reward yourself with the things you are trying to change.
For the dieter, a prospect of a golf game or pedicure can be a great way to reinforce good behavior. For the smoker trying to quit, treating oneself to a movie after so many smoke free days can be a great incentive.
7. Challenge the Negativity
We all have negative thoughts that pop into our heads when we try to do something that is hard or different. Using the word “but” every time the negativity pops up can be a hugely successful tool. For example, if your resolution is to learn a new language and negativity tells you that it is too hard. Tell yourself, it may be hard, “but” I can try a little harder and see how much I can learn.
8. Withhold Judgment
Another powerful weapon against negative thinking is too withhold judgment. Don't think of the change in terms of will I fail or will I succeed. Instead think of it as an experiment in your life. See how it goes for the time you have alloted to create a habit. Thinking of your life change as an experiment can be helpful because experiments don't fail or succeed, they just have results.
9. Write it Down and Remind Yourself
Write down why you want to affect change in your life. The process of writing it down will help you focus on your goals and make the desired outcome clearer in your mind. Take this statement of change and use it to remind yourself daily why you wanted to make this/these changes in your life. Post it on the mirror, on your desk at work, on the fridge, or on that last pack of cigarettes you bought before deciding to quit.

She is a native of Canada, and has been making pottery for over 20 years. While mostly self-taught, she attributes her introduction to pottery to Toronto potter, John Jarvis and to Marilyn Farrell, who invited her to work in her studio in New Brunswick in the spring of 1998. She works on the potter’s wheel in both high-fire stoneware and porcelain, creating both utilitarian and decorative one-of-a-kind pottery. She and her family currently reside in Magnolia Springs. She earned her degree in Graphic Design and illustration. Mary Lou Nicolai currently resides in Lillian, Alabama. Frequently Asked Questions 1) Tents (no larger than a 10x10 ft.) are allowed on the beach, but they have to be placed behind (North of) the designated sign marker post and should be removed before night. Tents cannot be placed between the sign post and the Gulf of Mexico. This is for designated emergency and safety access. 2) Pets are not allowed on the beach on the Gulf of Mexico or surrounding islands (Robinson, Bird, Walker). However they are allowed at the designated city Dog Park on Canal Rd. (Hwy 180) next to Sportsman Marina. All dogs should remain on a leash within the city limits. 3) Glass in any form (bottle, cup, container, etc.) is strictly prohibited on our beaches and islands. 4) A yellow or green flag posted along gulf beaches means to use caution while swimming in the gulf waters and is permitted. A red flag means danger and one should not swim in the waters. Double red flags mean that swimming in the waters is prohibited by law. Purple means WARNING! A jellyfish or other marine threat. 5) All trails and parks are free and open from daylight to dusk 7 days a week. 6) Fires or flames are strictly prohibited on the beach. This includes grills, tiki-torches, lanterns, open fire pits, candles, fireworks, etc. 7) Jet skis, boats, and any other motorized vessels, are prohibited from launching along the gulf front beaches.

Chicken Salad Lettuce Wraps Recipe submitted by Bill Howard Ingredients n Grilled chicken n Bacon n Celery n Pecans, finely chopped n Dried cranberries n Mesquite seasoning n Cajun seasoning n Habanero lime seasoning n Mayonnaise n Diced onions n Diced tomatoes n Head of Romaine lettuce Preparation Season and grill chicken breast. After cooking, lay chicken on flat sheet pan and place in cooler. Chop celery, bacon, and pecans. In a large mixing bowl, add mayo and spices. Whisk until all spices are
evenly incorporated. Add remaining ingredients and mix. To prepare Romaine leaves: Carefully wash Romaine heads under cool running water. Peel off leaves and remove stem piece. Flip leaf on back side and trim the “spine” of the leaf for better flexibility. Store over a drip set and hold in refrigeration with bagged ice to keep crispiness. Chop excess romaine and use in salads. Place four romaine leaves on an oval plate and fill each with scoop of chicken salad. Scoop diced tomatoes and diced onion onto plate and serve with side of honey lime dressing.
